hat a summer! Heatwave, World Cup, Wimbledon, Golf, Hosepipe bans, Brexit, School holidays and now the new potato season for our fish and chip shop fryers. For those operators in holiday and tourist locations, now is the time to get everything right and make the profits to sustain the business over the winter months, and for others, it is a time to take stock, maybe a rest and make any investments and changes for the coming months. It may also be a great time to plan your campaign in the various National Fish and Chip Awards process which are now well under way. This is just one of a series of developments of Fast Food Professional both in digital and print formats that we are currently working on. In addition to a simplified and more streamlined online entry process, one of the major changes to this year’s awards program is the revamped judging format for the latter stages of the flagship Fish and Chip Shop of the Year Award – with the introduction of an exciting ‘free draw’ element for the Top 20 judging stage. Instead of the previous format of shops within a defined region competing against each other, names of shops will be drawn from the Top 20 listing in order to pair respective shops that will be judged against one another. For example, allocating a letter of the alphabet against each individual Top 20 shop, shop D could be drawn to compete against shop K, shop P could be drawn to compete against shop E, and so on, etc., etc.. This judging stage will determine the overall Top 10 shops in the UK that will progress to the national final judging stage.

Top Tips from the Fryers It’s Getting Hot in the Kitchen Business is booming, and everyone’s holiday dreams are coming true. Fish, chips and fun filled days are here. Well, we certainly hope that’s the case! Frymax and fryers just love it when things get busy. So why not make the most of this boom time while you can?
Busy busy busy… A busy oil is a happy, long lived oil. Every batch of chips that enters a fryer gives the oil a little steam clean. Water from the chips is forced out as steam and dissolves some of the water soluble impurities which build up when the hot oil is not in use. As you get through more batches of chips, you will also need to top up more often, so your oil is constantly being refreshed. I’m sure you’ve seen it, but when you have a busy day, you don’t end up with dark unappealing chips, it’s when they can be at their best! Now you might have a weekly routine you keep to – getting fresh oil in on a Wednesday or Thursday so it’s fresher but still tasty for the weekend. But it’s worth doing a bit of research. If you have had a really busy week and weekend, it may be that you could reduce how often you go for a full oil changeover. How about two changes in 3 weeks instead of three? But never forget it’s the quality of your food which brings your customers back, so always be guided by the look and taste of your final fried products.
Hold onto the salt… As you cope with this busy season, make sure over-enthusiasm and speed don’t start damaging your oil. Salt acts as a catalyst making oil break down rapidly, so make sure that when you are busy salting food, or customers are applying it themselves that no salt gets into your pans. Where possible, having closed lids on your fryers will also help to keep out any stray salt from over-enthusiastic sprinkling. Another catalyst which has a really bad reaction with oil is copper. Make sure if you’re having any repairs done or buying any new equipment, it’s vital that you avoid any fittings or utensils made with copper as your oil will break down exceptionally quickly. he range was developed by businessman Brian
BJ Sauces of Lisburn in Northern Ireland are eagerly looking for UK mainland distributors for their range of exciting products
Agnew and his father James who owned a number of successful Fish and Chip shops in Northern Ireland for almost 30 years. As they sought ways to differentiate their
business and get an advantage over their competitors, Brian developed a range of sauces and gravies in the back of his shop in Antrim Street, Lisburn, known as BJ Fast Food. Although no longer the owner of this shop, it continues to trade as Northern Ireland’s first ‘Chipmongers’ franchised shop. Brian successfully developed a range of sauces which he sold initially from his own shops. In 1998 a small factory was set up and subsequently his products were shared with other Chip shop owners across Northern Ireland. The BJ Sauces/ Superchip brands had been born. The business, which is still very much a family owned business, continued to develop and moved in the summer of 2017 to a new ‘state of the art’ premises in the Altona Industrial Estate in Lisburn, where Brian’s son Stephen manages production. The company has installed a very comprehensive “HACCP”
