For William Winn, operations manager of Berkshire Mountain Distillers in Sheffield, sourcing grain, herbs, spices and fruit for the spirit maker’s line of craft gins, whiskeys, rums, and more leads him to area farmers with “respect for the product and respect for the land.
“We put that back into our product,” he says. In fact, 80% of the corn used in making their whisky comes from a farm in Hudson, NY.
The distillers have been turning out award winning products since 2007, and their Greylock Gin was rated the #1 craft gin in the country in 2012 by industry experts. Their Ethereal line of gin has become their calling card, with 17 different limited production runs — one a year — each with unique characteristics and flavor profile. Winn says the recipes change to match trends in the culinary world, what flavoring components are being grown, and what might be seasonally appropriate.
Winn adds that unlike wine pairings, where the menu is often formulated to support the wines, with spirits, it’s “how you manipulate the drink to go with the food.”
Earthy flavors are the things to drink for fall, Winn thinks. He says their Stormy Ethereal Gin, with its notes of “clover, cardamom, black peppercorn and grapefruit and orange peel to provide a citrus balance” will get you in the mood for leaf peeping and cooler nights. It’s available at the distillery and at restaurants and liquor stores throughout the region.
In the distilling area, bunches of purple shiso, a basil variety that smells like sweet plum and licorice when the leaves are crushed, is drying in anticipation of being incorporated into their Garden Gin. The distillery has fields and greenhouses on site where many of the herbs and flavorings used in the products are grown. Next to the shiso is pineapple sage — it smells like citrus — a light pineapple aroma to be exact.
Berkshire Mountain Distillers’ staff get together to taste and discuss new combinations of flavorings. About 10-15 different recipes are made, and the group whittles down their pick to one that can be produced successfully and meets the criteria for culinary trends and available raw ingredients.
This is the process that will begin when the staff starts work on their 18th Ethereal Gin batch, which they anticipate will be available this spring.
If alcohol isn’t your thing, the distillers also make a maple
syrup that is aged in whiskey barrels where it picks up charred and vanilla notes according to Winn. It is a combination of sap gathered from the distiller’s trees and sap from local farmers. Winn says in addition to slathering it on your pancakes,
if you do drink, mixing it in cocktails provides a new and different flavor. Ask Winn what he’s drinking these days and he’ll tell you it’s rye whiskey. He thinks its resurgence, as opposed to the most popular bourbon whiskey, is a
bit of a nostalgia craze. Their Race Brook Rye, he says, has a cleaner and more spicy taste than traditional rye whiskeys.

Winn was secretive when asked about new products on the horizon. All he will say is that Ethereal Gin #18 will be released this spring, and to check back to find out about other new ideas they are working on. Winn is hoping his products reach more people who live in the Berkshires as well as visitors. “Even now,” he says, “after 17 years, there are people in the county who haven’t had our product.”
Spirits have been around for at least 2,000 years, Winn says. For a taste of now, and of a unique Berkshires made product, the line from Berkshire Mountain Distillers awaits.
