Join Our Board By Dennis Smith, Board Director Greetings fellow owners! I am writing to you as the Chairperson of the Nominations and Elections committee to invite you to take part in the leadership of our Co-op. As many of you know, I have been a regular shopper for over 20 years, but just joined the Board of Directors this past fall. This brief time on the board has been one of my most enriching personal experiences in recent memory. I have had a chance to work alongside highly motivated and creative board members, in concert with our hard-working, professional store management team, to solve problems and chart the future of New Leaf Market. As we all know, this year has seen lots of changes, and I have felt honored to be a part of the leadership team in place to help us respond to these changes.
Our nomination cycle for Board membership is now open and I strongly encourage all interested owners to reach out to me to discuss serving on the Board. Dave Watson and I, with Board approval, recently updated the Board of Directors Nomination Booklet for 2018. I encourage you to go online and read the booklet at https://bit.ly/2tmbN1g. It will provide you with everything you need to know about serving on the Board, as well as a calendar of key dates and deadlines. It might not be a North Florida thing, but we could soon have South Florida rice available! Reintroduced to the Everglades Agricultural Area in the late 1970’s, rice is now an integral part of a sustainable crop rotation. Only a few companies are currently packaging for sale, but production is increasing yearly. In the meantime, try our bulk Organic Wild Rice blend in Seward Community Co-op’s Wild Rice Burger.

If you can't get your hands on Minnesotan Bison, a local, lean ground beef will be just as tasty! Because of its higher fat content—even in lean cuts—beef takes slightly longer to cook than Bison. The trade-off is that it's less likely to dry out and become tough due to overcooking.
Our friends up in Minneapolis, at Seward Community Co-op agree that burgers are the tops, as far as summer fare goes. They've shared four flavorful recipes for some non-traditional takes. A summer grilling favorite for many, burgers are adaptable and offer an opportunity to experiment. We start with ingredients from local producers rooted in Seward’s Ends Statement and cooperative values, piling buns high with products that taste good and do good. For us, that means connecting with producers that care about the health of our bodies and the earth. • Gathered by members of the Ojibwe Nation and parched in Sawyer, Minnesota, traditional wild rice is an essential part of Anishinaabe culture, which is grounded in a respect for and relationship with the earth. • Also indigenous to Minneapolis, bison is a lean, flavorful option for meat eaters.
• Look for the Fresh From Florida mark to find the freshest options for a DIY fish patty. If trout is not to your liking, try making with cod, salmon or catfish. •
• Fish is a healthy, quick-cooking option you can also throw on the grill. • This season, we’re also reaching for St. Pete’s Blue cheese from Caves of Faribault, located about 50 miles south of our co-op stores and café. 6

We could be biased (we definitely are), but Sweet Grass Dairy's Asher Blue is always our go-to for blue cheese. This award-winning cheese has been recognized worldwide for it's subtle, earthy taste and mild, salty finish.

Serves: 4 Prep time: 8 hours (30 minutes active) 2 Tbsp. extra virgin olive oil 2 Tbsp. Champagne wine vinegar 1/2 tsp. salt 1/2 tsp. mustard seeds 1/2 tsp. chipotlé pepper
4 medium Portobello mushroom, stems removed 4 slices smoked cheese, optional 4 leaves butter lettuce 4 slices tomato
Preparation In a cup, whisk the olive oil, vinegar, salt, mustard seeds and chipotlé pepper. Place mushrooms gill side up in a container and drizzle with marinade. Marinate for an hour or overnight. Grill the mushrooms gill-side up on the grate (oiled) with the lid closed for 10 minutes. Use tongs to pour out any liquid in the mushrooms; flip and smoke for 10 minutes. Flip them again and fill with smoked cheese. Grill covered for 2 minutes or until cheese melts. Serve immediately with toppings.
Serves: 6 Prep time: 45 minutes 1 can white cannellini navy beans, liquid reserved 2 Tbsp. olive oil, divided 1 onion diced 3 stalks celery, thinly sliced 2 cloves garlic, minced 1/2 tsp. paprika
1/4 tsp. ground black pepper 1/4 tsp. ground cumin 1/4 tsp. dried oregano 1 Tbsp. almond butter 2 cups cooked wild rice 2 large tomatoes, sliced thickly sliced red onion
Preparation Preheat oven to 350°F. Drain beans; keep some liquid. Spread out and bake on greased baking sheet until beans split open and crisp (20 minutes). In a skillet with olive oil, cook onion, celery and pinch of salt 4-6 minutes until translucent/softened. Add garlic. Cook for 1 minute. Stir in remaining seasonings for 30 seconds. In food processor, pulse sauté mixture with beans and almond butter until doughy. Add half of the rice; pulse. Transfer mixture to bowl, season to taste with salt and pepper, and stir in wild rice. If dry, add tablespoon(s) bean liquid. Make 6 patties. Cook in skillet with olive oil for 5 minutes on each side.
Tip: Champagne wine vinegar is very mild and can be substituted Serving suggestion: Pairs well with tomato and red onion.

1 lb. ground beef or bison 1/3 cup crumbled blue cheese 2 Tbsp. Worcestershire 2 Tbsp. spicy mustard 3 green onions, finely sliced salt and pepper
1/2 red onion, finely diced 1 tomato, finely diced 2 avocados Spinach leaves butter
Preparation Mix diced red onion and tomato together in a bowl, set aside. Mix bison, blue cheese, Worcestershire, mustard, green onions, salt, and pepper. Form into patties and cook on a grill or a frying pan. Spread each bun with a thin layer of butter or oil and broil on high for 2 minutes, or until toasted. Arrange spinach on the bottom bun, then avocado. Place bison burgers on top of the avocado, then top with the onion and tomato mixture.
1 lb. trout, deboned and skin removed 1/3 cup panko bread crumbs 1/3 cup mayonnaise 1 Tbsp. each fresh chives and cilantro, chiffonade 1 small shallot, diced 1 chili pepper, diced 2 tsp. lemon or lime juice
zest of lemon or lime 2 tsp. prepared mustard 1 tsp. cumin 1 tsp. prepared horseradish or Sriracha salt and pepper, to taste 1 Tbsp. capers, drained and diced
Preparation Cut fish into bite-sized pieces. Pulse a few times in food processor until chopped fine; don’t over-process. Combine bread crumbs, mayo, herbs, shallot, chili and seasonings. Add fish and mix thoroughly. Form four burgers. Chill an hour. Grill fish patties over direct heat and cook 3-4 minutes on each side or to desired doneness. Tip: No trout on hand? Try substituting cod, salmon or catfish.

But like many of The Jim Henson Company creations, she subtly imparted her wisdom; teaching us to care for ourselves, our loved ones and our planet. Summer is here and with it comes all of our favorite, juicy fruits! This time of year it’s easy to get your vitamins in delicious, colorful little packages. Usually, we have tasty regional delights to look forward to, but Mother Nature had different ideas this year. Due to major storms in the region (Irma for one), melons, citrus and berry crops are scarce, so be sure to snag any local produce you come across this season. We’re working to get as much of the local stuff in as we can! Even with limited crops in Florida and Georgia, we can still enjoy all the summer flavors we’re accustomed to, while lending a helping hand to our friends on the West Coast, who are recouping from losses from the 2017 wildfires.
High temps and Melon go hand in (sticky) hand. A nice slice of watermelon is so refreshing when the sun is blazing, which is precisely why it’s a staple at BBQs and beach trips all season long. We’ve already been snacking on these, and should have plenty available through August, at least. Cantaloupes can’t be beat for a sweet addition to salads, prosciutto wrapped hors d’oeuvres, or a final touch to a full, southern-style breakfast. Be on the lookout for: mini seedless watermelons, cantaloupes, red seedless watermelons
One local treat we can count on in July/ August is Muscadine Grapes, from Lady Bird Organics. Did you know you can actually make pie with these bad boys? Technically, just the skins. That means you can enjoy their sweet-tart flesh, and have your pie, too. Who knew? Muscadines are a southern specialty and a locally grown superfruit! The antioxidant value of muscadines surpasses even blueberries and pomegranates. Much of the nutritional value is in the skin and seeds though, which many people spit out. Try this instead: freeze the muscadines whole and add to your morning smoothie to get the full nutritional benefits.
Oh, Irma. We’ll continue to see the fallout from this massive storm for years to come. One of her many disastrous effects was an estimated $2.5 billion in damage to Florida’s agriculture community. That means we’ll need to look elsewhere for the majority of our Citrus this year. Luckily, California citrus supplies are steady and already heading our way. Be on the lookout for: lemons, navel oranges, Valencia oranges, limes, grapefruits
From apricots to mangos, to olives, to coconuts, Drupes (or stone fruits) are an eclectic group. While some of these are available fairly regularly, others are strictly seasonal. Peaches may be the most temperamental of the bunch, only available fresh until around mid-August. Nectarines, plums and pluots are also at their prime during summer months.

Florida strawberry crops are doing great this year, despite cold spells and rough storms. Georgia crops of blackberries and blueberries did suffer from the rain, however.
