Create an
energy-efficient home for the holidays ‘Tis the season to be festive, and that usually means stringing up hundreds of twinkling lights to create a welcoming glow on dark winter nights. Some people view the holiday season as their chance to go all out with regard to decorating their homes with an abundance of lights, inflatable lawn ornaments and maybe even some mechanical figures. While these decorations certainly may be symbols of the season, it’s easy to forget just how much energy and resources they consume. A typical strand of lights uses around 300 watts of electricity. Multiply those figures by the dozens of strings of lights people use and it’s easy to see how quickly energy usage can add up.

In addition to lights, lit candles, animated dolls, wreaths, trees, and scores of imported ornaments contribute to the energy consumption per household. Even so, environmentally conscious individuals need not skip the holiday décor and entertaining. Fortunately, there are various ways to be energy efficient with holiday décor this season.

cups dried black beans bay leaf teaspoons dried oregano teaspoons chili powder, plus 1 tablespoon teaspoon ground cumin ancho chile, dried 14.5 ounce can tomatoes tablespoons olive oil cups coarsely chopped onions large green bell pepper, seeded, deveined and finely chopped cloves garlic, finely chopped Salt and freshly ground black pepper
Topping 1/2 cup unbleached all-purpose flour 2/3 cup yellow cornmeal 2 tablespoons sugar 1 teaspoon baking powder 1/2 teaspoon baking soda 1/4 teaspoon salt 2/3 cup buttermilk 1 large egg 1 tablespoon corn oil Reserved 1/2 cup cooked vegetables from filling above
To make the filling: 1. Wash the beans in a strainer and check for any debris or small pebbles. Put the beans in a large bowl, cover them with water, and let them soak overnight. Or, put the beans in a medium saucepan, cover them with water, and bring to a boil. Turn off the heat and let the beans sit for one hour. Drain the beans. Put the soaked beans in a large saucepan with water to cover them by about 2 inches. Add the bay leaf, 1 teaspoon of the oregano, the 2 teaspoons chili powder, the cumin, and ancho chile. Cover and cook for 30 minutes. Add the tomatoes with their juice and cook about 45 more minutes, or until the beans are tender. Taste a bean to check that they are done. 2. Have ready a baking dish with an 8-cup capacity. In a medium skillet, heat the oil over medium heat for 1 minute. Add the onions and cook until softened, stirring often, about 5 minutes. Add the bell pepper and garlic and continue cooking until the pepper is soft, about 8 minutes. Remove 1/2 cup of the vegetables and reserve them to add to the topping later. Stir the remaining 1 tablespoon chili powder and 1/2 teaspoon oregano into the vegetables in the skillet. Stir the vegetables into the beans. Remove the ancho chile and bay leaf and discard them. Remove 1 cup of the beans, put it in a food processor and puree. Return the puree to the beans and stir them together. This thickens the chili. Season with salt and pepper. Pour the chili into the baking dish and set aside. 3. Position an oven rack in the middle of the oven. Preheat the oven to 375 F. To prepare the topping: 1. Into a large bowl, sift the flour, cornmeal, sugar, baking powder, baking soda, and salt. In a medium bowl, stir the buttermilk, egg, oil, and reserved cooked vegetables together to combine them. Pour the buttermilk mixture into the dry ingredients and stir slowly with a large spoon for about 20 strokes just to combine the ingredients. There will be a few small lumps. This is fine. Carefully spoon the batter over the chili in the baking dish. 2. Bake until the topping is golden brown and firm, about 35 minutes. 1. Coat a stovetop griddle with oil and heat over medium heat until almost smoking. Add 1 tortilla and sprinkle 1/4 of the cheese and a few avocado cubes over half of the tortilla. Fold the tortilla in half and press the edges lightly together. Brown over medium heat for 1 to 2 minutes, then turn the quesadilla and brown the other side until golden, about 1 minute. 2. Remove from the heat and place on a paper towel to cool slightly. Repeat with the remaining tortillas, adding more oil to the griddle as needed. HOW TO AVOID REAL ESTATE CYBER SCAMS Phishing, hacking, wire fraud – these are all ways people attempt to steal from others online. As real estate searches and transactions move more and more online, the chances of being caught up in a cyber scam have become even greater. By now most people have heard of the Nigerian prince scams or phishing emails asking for social security or banking information, but many people don’t know that they need to watch out for possible scams when buying or selling their home. Cybercrimes have become increasingly sophisticated over the years and the people perpetrating them focus on situations where a lot of money is changing hands, making real estate transactions an ideal target. The National Association of Realtors® recently warned its members and consumers about one example, a wiring scam during the closing stage of the home buying and selling process. Hackers will break into the email accounts of consumers and real estate professionals to get details about a real estate transaction. The hacker will then send an email pretending to be the buyer, seller, real estate agent or someone else involved in the closing process and say there has been a last minute change and provide new wiring instructions; the instructions send the closing costs funds directly into the hacker’s bank account. While it may seem like there are hundreds of ways for a criminal to take advantage of a consumer online, there are just as many ways consumers can protect themselves. Here are a few tips from the Greater Fairbanks Board of Realtors® to help home buyers and sellers recognize and avoid real estate scams: Do not send sensitive information via email. Do not send banking information, your social security number or anything else that could be used to comprise your identity over email. If you absolutely must send personal or sensitive information via email, only use encrypted email. Do not click on unverified email. If you do not recognize the name or email address of the sender, do not open the email. Beware of any attachments or downloadable files from unknown email addresses; they can contain viruses or provide a way for a hacker to access your computer. Do not use unsecured Wi-Fi. It may seem harmless to check banking information using the free Wi-Fi at your local coffee shop, but using an open connection can leave you vulnerable to hackers and scammers. Only access sensitive information on your home computer or on a secured network.
