replace energy-hungry appliances Home improvement projects often involve remodeling. But homeowners can improve their homes without ever picking up a hammer. Upgrading a home’s appliances with products that are more eco-friendly can add value to a home and make the home more attractive to buyers who want their homes to look good and pay dividends for the environment. The United States Department of Energy says the average American family spends about $2,200 each year for energy costs, and large, inefficient appliances no doubt contribute heavily to those expenditures. Appliances that are several years old, including refrigerators, washing machines, dryers, and even ovens, may no longer meet the stringent energy-saving specifications required of new items. There are many simple ways for homeowners to reduce monthly expenditures and realize savings, and the easiest place to start is with your monthly energy bill. Here are a few changes you can make that can have a lasting impact on your wallet and the planet.

Cool your house with a ceiling or electric fan and open the windows at night. Ceiling fans cost about 1 cent per two hours of use, compared to 67 cents to a dollar for central air. Use your AC only when necessary and be sure to turn it off when you’re going to be away from home for long periods of time.

Invest in a programmable thermostat. It will automatically ad-

just the temperature in your house, saving you energy while you’re away or sleeping.

Use insulation with a high R-value. Experts and professionals often use a stone wool product called Roxul ComfortBatt, which can be used to top up the insulation in your attic. Topping up insulation to a depth of 16 inches or an Rvalue of 50 will help to keep your house cool in the warm

weather and take the stress off your air conditioning unit.

Check the tightness of your refrigerator seal by closing the door on a piece of paper. If it’s held in place, the seal is still good. If not, it’s time to replace the seal or fix the door’s alignment.

Only do laundry or dishes when you have full loads. If you have smaller loads, make sure to

use the correct settings. If you only have a couple of items, wait it out or wash them by hand.

Cottage Pie

celebrate St. Patrick’s Day with a staple of Irish pub fare St. Patrick’s Day may be a celebration of the man who brought Christianity to Ireland, but one need not be Irish to don green and enjoy the festivities each March 17. Irish culture is on display each St. Patrick’s Day, and few can resist the opportunity to indulge in some green-clad revelry. While parades and music garner much of the attention on St. Patrick’s Day, food also plays a big role. Cottage pie, often referred to as “Shepherd’s pie,” traces its origins to the United Kingdom and Ireland. The dish can now be found on the menu at many Irish pubs, but St. Patrick’s Day celebrants can prepare from the comforts of their own kitchens thanks to the following recipe from Laurie McNamara’s “Simple Scratch: 120 Wholesome Homemade Recipes Made Easy” (Avery).

Cottage Pie Makes 6 servings

For the filling: 3 tablespoons unsalted butter 2 cups diced yellow onion 1 cup diced carrot 1 cup diced celery 3 cloves garlic, minced 2-1⁄2 pounds ground round 2 tablespoons tomato paste 2 tablespoons unbleached all-purpose flour 1⁄4 cup Pinot Noir (or any good dry red wine) 2 cups beef broth 1⁄4 cup Worcestershire sauce 4 sprigs fresh thyme 1 bay leaf 1-1⁄2 teaspoons kosher salt 1⁄2 teaspoon freshly ground black pepper 1⁄2 cup frozen peas For the mashed potatoes: 3-1⁄2 pounds russet potatoes, peeled and cut into large pieces Kosher salt 1-1⁄4 cups whole milk 4 tablespoons unsalted butter 3⁄4 cup grated sharp white cheddar cheese 1 tablespoon minced fresh flat-leaf parsley 1 teaspoon chopped fresh thyme leaves 16 homes.newsminer.com

To make the filling: In a Dutch oven, melt the butter over medium-low heat. Add the onion, carrot and celery. Stir to coat the vegetables in butter, cover, and cook, stirring occasionally, for 15 minutes, until soft. Add the garlic and cook for 1 to 2 minutes more. Use a spoon to transfer the cooked vegetables to a bowl. In the Dutch oven, cook the ground beef over medium heat, breaking it into small crumbles as it cooks, until cooked through. Return the vegetables to the pot and stir in the tomato paste and flour. Pour in the wine and cook for 2 to 3 minutes. Pour in the broth and Worcestershire sauce and add the thyme sprigs and bay leaf. Season with salt and pepper and cook, stirring occasionally, for 30 minutes. Stir in the peas and pour the filling into a 3- to 4-quart baking dish. While the filling is cooking: Make the mashed potatoes. Preheat the oven to 400 F. Place the peeled potatoes in a pot and add cold water to cover by about 2 inches. Add a generous pinch of salt, cover, and bring to a boil. Crack the lid and cook the potatoes for 15 to 20 minutes, or until fork-tender. With the lid askew, carefully drain the water from the pot with the potatoes. Return the pot to the stove over low heat. Add the milk and butter to the potatoes, cover, and simmer the potatoes in the milk and butter for 10 to 12 minutes. Season the potatoes with 3⁄4 teaspoon of salt and mash with a potato masher or mix with a hand mixer. Add the cheddar and stir to combine. Taste and season with more salt if needed. Use a spatula to spoon the mashed potatoes over the filling in the baking dish and spread them out evenly. Use a fork and drag it along the top of the mashed potatoes to make ridges. These will crisp up and brown in the oven. Place the cottage pie on a rimmed baking sheet and slide it into the oven. Bake for 20 minutes, or until the top of the potatoes is golden and crispy and the filling is bubbling. Combine the minced parsley and thyme. Serve large spoonfuls of the cottage pie in bowls with a sprinkle of the parsley and thyme.

Versatile and available in various flavors, hummus can be whipped up at home for those who prefer to make their own dips. The following recipe for “Garbanzo-Carrot Hummus with Grilled Yogurt Flatbread” from James Campbell Caruso’s “España: Explore the Flavors of Spain” (Gibbs Smith) includes some Moroccan flavors that give this easy-to-prepare recipe a truly unique taste.

Garbanzo-Carrot Hummus with Grilled Yogurt Flatbread Makes 2 cups

2 medium carrots, peeled and chopped Salt 1 cup cooked garbanzo beans, drained 4 teaspoons chopped cilantro plus 1 teaspoon for garnish 2 tablespoons chopped red onion 2-1⁄2 teaspoons ground cumin 1-1⁄2 teaspoons ground coriander seeds 2 tablespoons lemon juice 4 teaspoons olive oil 2 teaspoons chile flakes 2 teaspoons Moroccan Spice Blend (see below) Coarse salt and freshly ground black pepper 1 batch Yogurt Flatbread (see below)

Moroccan Spice Blend Makes about 2 tablespoons 1 1 1 1 1 1 1

teaspoon ground cumin teaspoon ground turmeric teaspoon saffron threads teaspoon ground coriander teaspoon ground cinnamon teaspoon ground smoked paprika teaspoon finely grated lemon peel

In a small resealable glass or plastic container, combine all of the ingredients.

In a medium saucepan, combine the carrots with 2 quarts water and 2 teaspoons salt. Bring the mixture to a boil then reduce the heat and simmer for 8 to 10 minutes, until the carrots are tender. Remove the pan from the heat and allow the carrots to drain and cool in a colander. Combine carrots and remaining ingredients, except for Yogurt Flatbread, in the work bowl of a food processor and puree until smooth. Season to taste with salt and pepper and garnish with the remaining cilantro. Serve with fresh, hot Yogurt Flatbread cut in wedges. Yogurt Flatbread Serves 4 1 1⁄4 1 2-1⁄2

Sift the flour, baking powder and salt into the work bowl of a stand mixer fitted with the dough hook. Add the yogurt and mix on low speed for 2 minutes. Cover the work bowl and allow the dough to rest at room temperature for 30 minutes. Preheat a gas or charcoal grill to medium. Scrape the dough from the work bowl and turn it out onto a lightly floured surface. Roll the dough into a long log and divide it into 12 equal pieces. Roll each piece into a ball and use a rolling pin or tortilla press to flatten it into a 1⁄4-inch-thick tortilla shape. Brush each “tortilla” lightly with olive oil.
