Data Breach As the summer of 2017 drew to a close, news broke of a data breach at the credit monitoring agency Equifax. Reports suggested the breach might have compromised the sensitive personal information of as many as 143 million Americans, or roughly half the adult population of the United States. Data stolen as part of the Equifax breach included names, social security numbers and birthdates, among other personal information. Fire up the grill for fresh veggies

Vegetables are more versatile than many people may know. Steaming or sautéing vegetables might be among the most popular ways to cook veggies, but grillmasters know that it’s not just main dishes that taste great when cooked over an open flame. As the following recipe for “Charred Green Beans with Lemon Verbena Pesto” from Karen Adler and Judith Fertig’s “The Gardener & The Grill” (Running Press) can attest, grilled vegetables make for simple yet satisfying side dishes.

Charred Green Beans with Lemon Verbena Pesto Serves 2 to 4

Green Beans 1-1⁄2 pounds slender green beans 2 teaspoons olive oil

Lemon Verbena Pesto 1 cup fresh lemon verbena leaves (substitute fresh lemon balm leaves) 2 garlic cloves 1⁄4 cup grated Parmesan cheese 1⁄4 cup pine nuts or English walnuts 1⁄2 cup olive oil Fine kosher or sea salt and freshly ground black pepper to taste

Prepare a hot fire in your grill. Toss the beans with olive oil and place in a perforated grill basket or wok set on a baking sheet. For the Lemon Verbena Pesto, combine the lemon verbena, garlic, cheese, and nuts in a food processor and pulse to puree. Slowly add the olive oil with the processor running until the mixture thickens and emulsifies, about 1 minute. Season to taste with salt and pepper. The pesto will keep in the refrigerator for 7 to 10 days, or it may be frozen for up to 3 months. Place the grill wok or basket directly over the fire and stir-grill, tossing the beans with wooden paddles or grill spatulas until crisp-tender, about 5 to 8 minutes. Transfer the grilled beans to a large bowl and toss with about 1⁄4 cup of the Lemon Verbena Pesto or to taste.

Grilled Green Tomato “Sandwiches” with Herbed Cream Cheese Serves 6

Herbed Cream Cheese 1 8-ounce package cream cheese at room temperature 1 garlic clove, minced 2 tablespoons chopped fresh basil 1 tablespoon snipped fresh chives Tomatoes 4 large green tomatoes (about 11⁄2 pounds), sliced 3⁄4-inch thick (to make 12 slices) Olive oil, for brushing 2 teaspoons Seasoning Salt (see below) or kosher salt Ground black pepper

Prepare a medium-hot fire in your grill. Place a well-oiled perforated grill rack over direct heat. In a bowl, blend the cream cheese, garlic, basil, and chives together until smooth. Set aside. Brush the tomato slices with olive oil on both sides and season with seasoning salt and pepper. Place the slices on a baking sheet and bring out to the grill with the bowl of Herbed Cream Cheese and a knife for spreading. Grill all of the tomatoes on one side for about 3 minutes with the lid open, then flip and grill on the other side for 3 minutes more, or until the tomatoes have good grill marks. Remove the tomato slices from the grill and allow to cool slightly on the baking sheet. Spread Herbed Cream Cheese on half of the slices, top with a second slice and set the sandwiches on a platter. Serve the sandwiches hot, with oozing cream cheese filling. Variation: Grill all of the tomato slices as above and top each grilled tomato with a dollop of the cream cheese and serve open-faced.

Grill up hot dogs with the works

Backyard barbecues simply would not be the same without hot dogs. While many people may not eat hot dogs during much of the year, come summertime when the grills are fired up, hot dogs take center stage. Hot dogs make great additions to backyard barbecues because they can be tinkered with to provide a host of different flavors. Those who really want their hot dogs to pack a flavorful punch can try the following recipe for “Hot Dogs Stuffed with the Works” from Andrew Schloss and David Joachim’s “Mastering the Grill” (Chronicle Books).

Hot Dogs Stuffed with the Works Makes 6 servings 2

Gas: Direct heat, medium high (425 F to 450 F); Clean, oiled grate Charcoal: Direct heat, light ash; 12-by-12-inch charcoal bed (about 3 dozen coals); Clean, oiled grate on lowest setting Wood: Direct heat, light ash; 12-by-12-inch bed, 3 to 4 inches deep; Clean, oiled grate set 2 inches above the fire 1. Heat the grill as directed. 2. Mix the mustard, ketchup and sauerkraut in a small bowl. 3. Slit the hot dogs lengthwise, forming a deep pocket end to end in each one. Fill the pockets half-

way with the sauerkraut mixture. Put a stick of cheese in the center of each and top with the remaining sauerkraut mixture. Wrap a bacon slice around each hot dog to hold it together, and secure the ends of each bacon strip with wooden toothpicks. 4. Put the grill screen on the grill and coat it with oil. Wait a minute or two, until the surface is hot. Grill the hot dogs until the bacon is cooked through and the hot dogs are browned on all sides, about 2 minutes per side. 5. To toast the buns, put them cutsides down directly over the fire for the last minute of cooking. Serve the hot dogs on the buns.

When the eggs have cooled, carefully crack the shells and peel under cold running water. Slice the eggs lengthwise and remove the yolks, being careful to leave the whites intact. 5. Combine the avocado and egg yolks in a small bowl, and mash together with a fork until smooth. 6. Add the avocado mixture to the mayonnaise mixture and blend thoroughly. • 1765:

The Passage of the Stamp Act marked the first major form of taxation on British colonists living in what is now America. The act imposed taxes on printed materials to help offset the costs of British troops in the colonies and replenish British debts. Colonists were upset they had no say in how taxes were levied or how the money would be spent.

• 1767:

After repealing the Stamp Act, Britain imposed the Townshend Acts, a series of taxes on various British goods, including tea. Again, colonists were outraged, spurring a boycott on British goods.

• 1770:

The Boston Massacre involved a crowd of colonists and a collection of British soldiers. The soldiers opened fire on the crowd, killing five and wounding six others. This incident helped increase anti-British sentiments in the colonies.

• 1775:

The British governor of Massachusetts sent several hundred British troops to seize military supplies from the colonists at Concord. When the colonists discovered the plan, they sent their own militia to intercept the forces at Lexington. The British would win at Lexington but were defeated at Concord. Throughout 1775, many other clashes between colonists and British troops took place, eventually culminating in an event that would forever change American history.

• 1776:

On July 4, 1776, the Second Continental Congress adopted the Declaration of Independence, which formally proclaimed American colonies independent from Britain. However, Britain was not willing to bend to colonists’ wishes.

• 1776-1783:

Several battles took place during this time period, including Moore’s Creek Bridge, Sullivan’s Island and Fort Washington. France was brought into the war in 1777. A successful sea-andland campaign of American and French armies led to the surrender of British troops at Yorktown.

• 1783:

Nearly two decades after colonists began voicing their displeasure with British laws, the American Revolution formally ended on September 3, 1783 with the Treaty of Paris. The British Empire accepted defeat and recognized the independence of the United States of America.

• 1773:

A few years after the Boston Massacre, colonists boarded British ships in the Boston harbor and threw the tea into the sea as protest against the Tea Act. Known as The Boston Tea Party, this event proved a catalyst for revolution.

After the Intolerable Acts aimed to punish colonists for The Boston Tea party, delegates from 12 of the original 13 colonies met illegally to form the First Continental Congress. They convened to discuss plans for dealing with various British offenses. Congress also developed political statements against the British and urged people to boycott British goods. The first president of this congress was Payton Randolph. John Hancock was appointed president the following year after the monarchy ignored the first Congress’ petition.
