Selling a vacant home or going on vacation requires a certain amount of planning and preparation, but one element that is often overlooked is home safety. Just like you create a packing list, homeowners should have a home safety checklist that they follow before leaving a home vacant for any length of time. It’s well worth homeowners’ time to prepare for the vacancy rather than deal with the consequences of a burglary while they are away. A burglary occurs every 16.4 seconds in the United States, resulting in approximately $4.5 billion in property loss, according to the FBI. The average loss per burglary is $2,322 for individual homeowners.

Slow cooking has grown in popularity in recent years, and perhaps no dish is more synonymous with slow cooking than ribs. While it helps to be a professional or seasoned amateur when preparing ribs, you don’t need to be a proficient pork preparer to enjoy the following recipe for “Coriander Spare Ribs With Cilantro Butter” from Andrew Schloss’ “Cooking Slow” (Chronicle Books). release any trapped air through the opening. tablespoons ground coriander tablespoons raw sugar tablespoon ground cumin Sea salt and freshly ground black pepper Finely grated zest and juice of 2 limes cup chopped fresh cilantro racks of pork ribs, about 4 pounds each, preferably St. Louis cut tablespoons unsalted butter garlic clove, minced
Combine the coriander, sugar, cumin, 1⁄4 cup salt, 2 teaspoons pepper, and 2 cups water in a large zippered plastic bag. Seal and shake until the sugar and salt dissolve. Open the bag and add half of the lime zest and juice and half of the cilantro. Cut the rib racks in half and put in the bag with the brine. Seal the bag again, but leave a corner open and push on the bag to make sure you
zipper completely. Massage the liquid gently into the meat and refrigerate for at least 6 hours and up to 12 hours. Preheat the oven to 200 F. Put the ribs in on a rack in a large roasting pan. Pour enough of the brine from the bag into the pan so that it covers the bottom of the pan but doesn’t touch the rib meat. Cover the pan with aluminum foil and steam until the rib meat is falling-off-the-bone tender, about 6 hours. Raise the oven temperature to 450 F, remove the foil, and bake untilt the ribs are browned, about 15 minutes. While the ribs are browning, put the butter and garlic in a saucepan over medium heat and cook until the garlic sizzles, about 1 minute. Add the remaining lime zest and juice and bring to a boil. Remove from heat and stir in the remaining 1⁄4 cup cilantro. Taste and adjust the seasoning with salt and pepper. Cut the racks into individual ribs and serve drizzled with the cilantro butter. Ribs can be stored for up to 3 days in a refrigerator. Reheat gently in a low oven.

But as any cook knows, the side dishes can make just as big an impression as the main course. Few side dishes are as versatile and beloved as mashed potatoes. When making your next feast, consider the following recipe for “Irresistible Basil Mashed Potatoes” from Marlena Spieler’s “Yummy Potatoes” (Chronicle Books).
Irresistible Basil Mashed Potatoes Serves 4 to 6
2 pounds floury, baking-type potatoes, peeled and cut into chunks Salt 2 to 3 cups fresh basil leaves of any type (2 to 3 ounces -- a nice big bunch) 2 cups heavy (whipping) cream or half-and-half 4 tablespoons butter Black pepper 12 homes.newsminer.com
1. Place the potatoes in a saucepan and fill with water to cover. Add a big pinch of salt. Bring to a boil and cook, covered, for about 10 minutes, or until the potatoes are just tender. Drain, return to the heat and shake for a few minutes to dry them out; turn off the heat, cover the pan and keep warm. 2. Meanwhile, blanch the basil. Plunge it into a saucepan of boiling water, cook a moment or two until the leaves wilt and slightly change color and lift out of the pot using a slotted spoon, then plunge into a bowl of ice water. Leave for about five minutes or until it turns brightly colored, then lift from the ice water. 3. Heat the cream in a saucepan until bubbles form around the edge of the pan. 4. Squeeze the basil in your hands gently to rid it of excess water from cooking. Place in a food processor and whirl to puree. Slowly pour the hot cream into this pureed basil and whirl until it forms a fragrant, pale green cream. 5. Coarsely mash the potatoes with a masher, then add the basil cream and mash it in; work in the butter, and season to taste with salt and pepper. If you’re serving duck or lamb, serve the potatoes with a drizzle of the port reduction around the edge.

The Lot
Before you pick out your floorplan and colors you should pick out your lot. The lot and location are important for the type and color scheme of the house.
The View Lot
Usually located in the hills, this lot usually points to a valley or city lights. I have a 6,000 sqft house that overlooks everything from North Pole to the University. On clear days you can also see the Alaska Range, including Denali Mountain. The temperature in the summer is about 10 degrees cooler than downtown Fairbanks. During the winter the temperature up in the hills can sometimes be 20 to 30 degrees warmer. This inversion can help save money on oil and can help to make the winter easier to handle. The southern slopes of the hills boast sunshine year-round. However, because of the angle of the sunsets the people living in town may not get as much sunlight. Around Thanksgiving, those who live in the hills may get to witness the beauty of the sun setting behind Denali. However, buying a southern exposure view lot comes at a high price. Some of the lots cost $50,000 an acre with a 2 to 5-acre minimum, ouch.
The Lake/River Lot The lake lots are few and far between. Many of them get passed down from
generation to generations. Lake lots are often located a long distance from town and are used as a weekend location. Snowbirds sometimes live at Harding Lake in the summer and in the lower 48 during the winter. Living on the Chena River is much more convenient. Due to the flood control project, it’s almost certain your home will not be flooded. While houses along the river often come up for sale, lots rarely come on the market and can be expensive. However, there are a few lots for sale between Pike’s Landing and the Tanana River.
The answers to all your questions will dictate the lay of the landscape and house. The lot may also dictate color schemes of roofing, siding, windows, etc. Once you picture your house on the lot you can decide if the outside will be brick, stucco, log, wood, timber-frame, conventional, etc.

Protect pipes
from freezing this winter Freezing pipes are a concern for homeowners who live in cold climates. When temperatures dip below freezing, the risk that pipes will freeze rises. Should a pipe burst, the damage that results can be extensive and costly. Any pipe can freeze, but those that are directly exposed to the cold are the most vulnerable. These include pipes that feed outdoor hoses, swimming pool supply lines, pipes in unheated indoor rooms (i.e., basements or garages), and any pipes that run close to the outdoors through uninsulated walls. Water expands as it freezes, and that expansion can place pressure on whatever is trying to contain it — including pipes. To avoid serious damage, homeowners need to prepare for the arrival of colder weather and be smart about how they protect pipes.

Dry ice
Dry ice is the solid form of carbon dioxide. It is a good coolant because it can reach temperatures below that of ice and it will not leave a puddle or damp residue behind. Dry ice changes from a solid to a gas with no liquid form, through a process of sublimation. Place dry ice in punch bowls or beverage glasses. Or use dry ice in any other liquid to create billowing plumes of vapor that add to the spooky effects. Just be sure to handle dry ice very carefully and make sure it is inaccessible to curious kids.
Faux cobwebs
Purchase spiderweb kits at retailers or make your own with cotton. Pure cotton balls can be pulled apart and stretched over various items in the house to create a spiderweb effect.
Accent lighting
Drape a nonflammable piece of fabric over a lampshade to cast different hues around a room. This also dims the brightness in the room, creating shadows here and there.
Smoke machine
Rent or purchase smoke machines, which can be found at party stores or big box retailers, to add to your eerie atmosphere. Dim the lights and have smoke rolling through the party room or by the front door.

Healthy foods that may cause weight gain
A desire to lose weight compels many people to pursue healthy lifestyles. Foods dubbed as “healthy” foods may not help people lose as much weight as they hope. Consumers should realize that, while there are many healthy options available, even foods billed as healthy can cause weight gain if overdone.
• Cereals: Many cereals contain
whole grains and a bevy of nutritious ingredients, but many are also high in sugar and other refined grains that aren’t nutritionally sound. Always read food labels to review ingredients before purchasing new foods. Don’t go by what the front of the package says or any “healthy” buzzwords used. The nutritional information will be telling, listing the amount of sugar, calories and refined carbohydrates, which can derail healthy eating.
• Juices:
Juice seems like a healthy choice, but whole fruits are the better option. Juices may not retain the peels of the fruits, which tend to contain the fiber and the bulk of the nutritional
content. Juice may also be loaded in calories, whereas whole fruit tends to be low in calories.
• Granola:
Granola is full of healthy ingredients, but it also may contain other ingredients that can be high in fat, like oils or nuts. Granola is best when eaten in moderation.
• Good Fats: Certain superfoods
contain a lot of nutritional benefits, but may be high in fats as well. For example, avocados contain fiber, vitamin C, vitamin E, and potassium, among other antioxidants, and can be quite filling. However, they also are calorically dense, so keep an eye on serving sizes.
• Wine:
The health benefits of red wine have been widely touted. People who consume wine may be at a reduced risk for heart disease, Alzheimer’s

disease and certain cancers. Red wine also may help keep weight gain in check. But it’s important to avoid overconsumption of red wine. A fiveounce serving is roughly 130 calories, and too many glasses of wine can impair your judgment.

labels on your favorite yogurts. Yogurt is a great source of protein, but that may be offset by sugar or chemical additives. Plain Greek yogurt is a smart choice, and you can supplement yogurt with fresh fruits.
