ummer Is Here! After such a challenging year, this Summer will be more special than ever. I cannot wait to gather together again with friends and family to celebrate hot summer days and warm summer nights. Pool parties, backyard BBQ’s, ball games, beach days, NJ boardwalks, boat rides and so much more make summers in NJ so special. So many of us take pride in our home ownership by sprucing up our yards with bright colorful flowers and fresh new landscaping. This year my vegetable garden is full of a variety of lettuce, tomatoes and peppers as well as eggplant, squash, broccoli, and tons of herbs. I am ready and waiting for these vegetables to flourish so I can make delicious summer salads, grilled vegetables and amazing sauces with all the home-grown ingredients. For me, there is nothing like walking out your back door, picking what you need, creating something fresh and delicious and then sharing it with others. Here are two simple summer dishes we love at our home: (Add a crispy grilled piece of bread lightly brushed with olive oil and salt to both) Fresh Jersey Tomato Salad: Fresh Jersey Cherry Tomatoes sliced in quarters or halves Fresh celery diced very small
What Are Your Summer Plans?
Two or three cloves of garlic smashed to release flavor Large bunch of basil sliced Extra Virgin Olive Oil (high quality) Salt and Pepper Mix ingredients together Drizzle aged balsamic or balsamic glaze on top Grilled Eggplant: Heat grill on high Slice eggplant into thin circles and lay out on flat surface or sheet pan Lightly salt and let sit for 10 min (this process brings out the sweetest flavor in the eggplant) Rinse off the salt and pat dry Lay out flat on sheet pan and lightly spray with olive oil and sprinkle with salt Now you’re ready to grill! Place slices directly on grill and keep flipping until eggplant is golden brown Place hot slices in bowl and let cool slightly (just about 3-5 min) Mix together with one or two smashed garlic cloves and fresh chopped mint Drizzle extra virgin olive oil to coat eggplant Sprinkle with salt and pepper if needed Mix well and let sit room temperature for at least 30 min to an hour Eat as is or with a crispy piece of bread ENJOY! ■

t has been more than 30 years since brothers Andrew and Jimmy DePiano made the bold move to start their own company, and A&J Flooring Outlet continues to set the standard in the industry It may not have been so obvious in the moment, but looking back now it becomes crystal clear: 1989 was a turning point in the lives of the DePiano brothers. Working at the time for an established flooring company— where Jimmy ran the day-today operations and younger sibling Andrew was an experienced installer—they easily could have been content to stay the course and likely would have carved out long, successful careers in the industry. But they had loftier goals in mind. “You have to be a leader, not a follower. That’s true in life as well as in business,” Jimmy DePiano says. “If you show me a follower, I’ll show you a failure.”
Armed with that mantra, and the belief that they could offer customers the vast knowledge, affordable prices and pleasant experience they deserved, the brothers confidently took the leap to venture out on their own and founded A&J Flooring Outlet. More than three decades later, the company continues to set the benchmark for quality in carpet, hardwood flooring and much more. About 10 years ago, the company also branched out into kitchen and bath remodeling to meet the high demand for these services. Local Gym Gets Crushed By Pandemic
I
n 2004, Mandy & Cary Huggard started a Sports Performance Training company in conjunction with their Physical Therapy clinic, The Training Room. Over the past 17 years, they have worked with thousands of youth athletes between the ages of 7-18 in their Cherry Hill facility. When COVID struck in March of 2020, the Sports Performance program was hit hard. They tried to move it outdoors and online, but had limited success. The business was forced to close for over 4 months. Although they’ve been able to reopen, the COVID restrictions placed on the business impacted the way athletes were able to train. The staff spent their time figuring out how to best serve the athletes under these restrictions. It’s been over a year since their full Sports Performance Programs have run, but a huge announcement was recently made. THE HUGE ANNOUNCEMENT Founders, Mandy & Cary Huggard announced that they are bringing back their speed classes and have developed an updated curriculum with smaller more individualized programming for their youth athletes. The new programs include Fundamental, Junior Varsity and Varsity Classes to serve local youth athletes ages 7-18 who want to perform better at their respective sports. Owner, Cary Huggard was

asked why it was so important to reopen and continue to serve the athlete community and his answer was very inspiring. THE STORY THAT STOKED THE FIRE During the quarantine time, Cary received an email from a high school athlete who had his lacrosse season shut down. He was a HS junior and was very upset that all the hard work he had put in at TTR was not going to be put to the test on the lacrosse field. The young man expressed his desire to train again this summer and come back for his senior year stronger, faster and better than ever. That email inspired Cary to forge forward and create the best program possible to help athletes pursue their dreams. “So much has been taken from these young athletes that I want to do my part in making sure they can come back next season and enjoy and excel in their sports” said Cary. A VIRAL REPSONSE FROM LOCAL PARENTS The announcement of the return of speed classes and the personalized strength programs had an overwhelming response. Due to this response, they only have space for 40 more athletes during their summer program. They expect to be fully sold out by mid-June.
