The Sharing Project Takes on Sustainability

The past several years have been filled with fear and uncertainty, prompting many young adults to ask the question: what can we do to help? West Morris Mendham High School (WMMHS) senior Emily Borinshteyn may have the answer: The Sharing Project.
Founded by her brother Matthew Borinshteyn, a WMMHS graduate, this 501(c)3 non-profit organization uses sustainable gardening practices to feed families in need. Partnering with local farmers and gardeners, The Sharing Project has donated almost 3,000 pounds of fresh produce to local food pantries since its founding in 2020.
For Emily, The Sharing Project is not only a way to connect to and provide service to her community: it acts as an outlet for her passion for gardening, sustainability, and the environment. As a leader of this organization, Emily has arranged several fundraisers to cover necessary costs, including the implementation of a fence at the garden being constructed in Mendham. Her responsibilities also include recruiting and training new student volunteers. She teaches them to prepare, plant, maintain, and harvest produce at each of The Sharing
Project’s local gardens. This year, the volunteer crew—Gairick Bhattacharjee, Nicholas and Gracielynn Leo, Anushka Elavia, Thomas Bulzachelli, and Lexie Pallis—grew to include Aidan and Lexi Farver, Nathan Kvares, Carolina Gavilanes, Raeed Chowdhury, Jess Fromme, Emily Schleifstein, Nathan Shluper, and Francesca, Sofia, and Giovanni Lombardo.
As the current Student President, Emily has added her own touch to the organization. Driven by her passion for the Earth, she has expanded The Sharing Project’s focus on sustainability and environmental enhancement. Under her leadership, the volunteers practice organic gardening— the produce is grown without herbicides or pesticides. The Sharing Project also reuses water bottles as containers to grow seedlings in to find a new purpose for this plastic waste.
Now, Emily, along with Gairick Bhattacharjee and James Fourie, a local Eagle Scout, is working on implementing a rainwater collection system at the Mendham Garden. “This system will be used to water the plants at the garden because currently we have to bring gallons from home to water the plants there,” Emily says. “This will be a huge step
in conservation for The Sharing Project!”
Beyond her role as Student President of The Sharing Project, Emily teaches the importance of gardening and sustainability to the youths of her community.
Along with her friend Anuska Elavia, Emily founded the Young Gardener Club, a non-profit community outreach program designed to captivate elementary and middle school citizens. In the two years that Emily has led this club with Anushka Elavia and Lexie Pallis, she has formulated, developed, and
taught an engaging curriculum focused on organic gardening, sustainability, healthy nutrition, and social responsibility to help the environment. To create a diverse learning experience, Emily has even coordinated with guest speakers—Mrs. Amalia Duarte, Dr. Rekha Mandel, and Sustainability Hero Ms. Julie Crawford—to inspire and educate her young gardeners.
“One of the reasons why I was interested in starting the Young Gardener Club was that I wanted to provide younger students with an opportunity to connect with
nature, learn more about the joys of gardening and healthy nutrition, and to understand the importance of our community and the environment,” says Emily. “We would also be able to nourish a love for community involvement in them as well as concern for the Earth.”
Emily’s environmental involvements are more than just extracurricular activities: they are her passions come to fruition. Along with her student volunteers and young gardeners, Emily is changing the world, one seedling at a time.

Its name is MUM’s Thrift Shoppe, but it doesn’t sell flowers. MUM stands for the Mendham United Methodist [Church] and its shoppe sells a wide variety of items. Shoppe volunteer Elaine Warren, of Chester, sees the shoppe as a “win/win” for the church and the community. “Not only do the proceeds benefit the church [running of the church, as well as enabling it to do mission and outreach work in the community], but having a wide variety of items for sale benefits those who shop, enabling them to purchase very nice merchandise for a fraction of what they would otherwise pay.”
The shoppe is located in the church building at 10 East Main Street in Mendham and is open on the second and fourth Saturdays of each month, from 10 a.m. until 2 p.m.
The shoppe (the old fashion spelling of the word is used) was started in 2014. “[It] was the dream child/vision of one of our church ladies, Joan Palmieri. Joan and her sister-in-law, Terry Provenza, are the two people who have really worked so hard to get the shoppe started and to keep it going. Along with one other person, Ethel Ann Mosher, they are the heart and soul of the shoppe,” said Warren. Warren herself has been volunteering there since it
began, taking on various roles: salesperson, merchandise pricer and arranger.
The shoppe has clothing, small appliances, home goods, holiday decorations, and more. “We have merchandise for other holidays, but we do have a pretty large selection of Christmas items,” noted Warren. Items are donated by individuals. Warren noted that there are people who come in fairly regularly to drop things off, or items are left on the church porch. While many are donated in good used condition, Warren noted that, “we do sometimes receive upscale items, as well as items that are brand new, with tags still on.”
The shoppe doesn’t have a list of what it will or won’t take for donations. Warren noted the shoppe will take most items as long as they’re in good condition and can be used. They prefer not to be given items that are broken or torn, or that are missing pieces. For things like appliances, the shoppe asks that they be in working order.
Items donated don’t go to waste. If the shoppe finds it can’t sell an item, it does find it a “home”. “Some items, such as clothing and shoes, go into the donation shed at the back of the church that is sponsored by Turnkey Enterprises. The items they collect are used in a variety of ways to
benefit people who are in need, both in this country and overseas. For other items, we try to find an agency or someone who may be able to use them,” explained Warren.
When asked what she enjoys most about being a volunteer at the shoppe, Warren
said, “I enjoy meeting the people who come through the shoppe, whether they’re first time shoppers or repeat customers. It’s fun to talk with them and let them learn a little more about who we are.”

Morristown Native and Wife Tag-Team to Raise Awareness for
yan O’Connor’s life knew no major health hiccups until some time after his thirty-sixth birthday where, without the slightest warning, the former Army cook was diagnosed with epilepsy. Scanning his family’s own medical background, Ryan and his wife Marissa were flabbergasted to find that no such history of epilepsy existed.
“I just started having seizures all of a sudden,” says Ryan, “and they diagnosed me in 2011. Completely out of the blue.”
In 2014, Ryan switched over to a Keto diet—a highfat/low-carbohydrate diet therapy known to reduce the effects of epilepsy. This helped tremendously, and he saw his situation improve for the following four years. Then, in 2018, while driving on a road trip to North Carolina, he suffered a massive seizure. It was the last time Ryan would ever drive again.
“With epilepsy, you really learn what it’s like to have your freedom taken away,” Ryan says. “I have to wait for other people if I need to go anywhere because I can no longer drive. It’s just too risky.”
Life in general for the O’Connors since 2011, and especially after 2018, turned into an endless game of pingpong with medical professionals hell-bent on pushing medication to treat the epilepsy.
Ryan recalls, “All doctors wanted was to put me on meds, until in 2020 we finally agreed to go in on a
brain surgery implant.” The implant was a responsive neurostimulation (RNS) implant, which places the device underneath the scalp and within the skull, and is then connected to two electrodes.
The couple keeps a blog on Ryan’s condition, as well as his progress on his latest endeavor: the Journey of 1,000 Miles—a foot-trek up from Florida to Missouri to help raise awareness for epilepsy, begun in October. As Ryan walks, Marissa drives the RV and remains available for him at a moment’s notice, parking five to ten miles up ahead at a nearby rest stop and monitoring him via satellite GPS constantly, so that if she sees there is a sudden stop in his rate of speed, she acts immediately. As of this writing, the couple was making its way up Ocala, Florida.
“Knock on wood,” Ryan says, “we haven’t run into any major obstacles yet. The sun and the lack of shade is a bit of a problem, though, especially coming up central Florida.”
In researching epilepsy to feed the blog, Marissa noticed the lack of federal funding for the condition.
“It is hands-down the least funded chronic condition,” she says. “It gets less than $50 million in federal funding, which is not a lot compared to, say, breast cancer which receives upward of $500 million.”
The reason for this funding disparity according to her? Semantics.
“It’s just not a sexy-sounding disease,” she says. “Most epileptics don’t call it a disease, even. They call it a
condition. But the truth is that no epileptic is the same, and there’s not one kind of seizure. Everybody sees the epilepsy portrayed in films and television. But what a lot of people don’t know is that there are also things called blank seizures and abdominal seizures—which showcase zero symptoms. To train for the Journey, Ryan started walking outdoors, but quickly realized he had to move things indoors to remain consistent. He installed a treadmill at his desk (literally tucked underneath it and extending outward, so that he could walk as he worked), and burned through two of them before realizing he needed a commercial treadmill to train at the level he envisioned. His goal was originally to keep to a 40-mile-per-day standard, but very quickly into the reality of things, he found the pace too taxing to keep up.
“I cut back to 20, maybe 25 miles a day,” says Ryan, “because it’s just too much of a grind to consistently aim for 40. Of course, the walking element is only a portion of the things you have to worry about. We have to figure out where to park our RV to camp each night.”
There are benefits to walking so much, of course. Ryan estimates that he
is burning through about 5,000 calories each day. To replenish, he sticks mostly to a high protein diet and limits his carbohydrate intake.
“My body does better with low carbohydrates,” he says.
The O’Connors hope to bring greater awareness to the general public on not just the disease itself, but the commonality of it in the general population, where one in every 26 people will develop it, and one out of every ten will have a seizure.
“We have to get the government to fund it better, because there are far better ways to tackle epilepsy than through medication currently available,” Marissa says.

Allison Larena, President & CEO of Mayo
Performing Arts Center (MPAC) in Morristown, was honored Friday night, Oct. 14, by the Morris County Board of County Commissioners for her 20 years at the helm of the arts organization.
Commissioner Deputy Director John Krickus presented Larena with a framed “Resolution of Honor” inside MPAC’s Starlight Room just prior to the performance of “Croce Plays Croce” at the theater on South Street.
“I am grateful for the recognition by the Morris County Board of Commissioners in honor of my 20th anniversary at MPAC. MPAC is fortunate to be located in a county that recognizes the value of our cultural institutions and how they contribute to the quality of life for our residents. The Commissioners support of our education programs this past year has been a vital lifeline to helping these programs return to enrich the lives of thousands of children every year,” said Larena.
The resolution notes that Larena has been instrumental in transforming the Morristownbased theater into a world class performing arts center and for growing its annual operating budget from $1.5 million to more than $13 million. Under her tutelage, MPAC operations grew from about 50 events annually to over 250 events, welcoming more than 240,000 patrons
each year and generating over $9 million in ticket sales, while simultaneously having an estimated impact of $15 million dollars on the local economy.
“On behalf of the Morris County Commissioners We are pleased to present you with this resolution recognizing your 20 years of leadership of Mayo Performing Arts Center. MPAC is a crown jewel for Morris County,” said Deputy Director Krickus.
“Morris County was proud to provide MPAC with $600,000 of funding for education programs as part of the recovery from COVID, and also recently approved $24,000 of historic grant funding for the plans to renovate the historic facade to the theater,” he added.
MPAC, which operates out of a 1937 theater designed by Thomas Lamb, has served more than 40,000 children through education and outreach programs, and Larena is credited with launching innovative programs during the COVID-19 pandemic to keep the arts accessible.
Among the programs were the first outdoor drive-in concerts, the first limited-capacity concerts and the first livestreams in New Jersey as she kept the theatre active and relevant, while creating a safe environment for people to enjoy an indoor arts experience.

Much like the three wisemen who brought their gifts to the baby Jesus, the Port Morris UMC (United Methodist Church) has hosted a yearly “Christmas Through the Arts” advent program where area churches bring together their gifts to tell the story of the nativity. This year marks the 20th anniversary of the program through which the scenes of the nativity story are portrayed through song, instrumental music, puppetry, liturgical dance, chancel drama, chancel comedy and more. This year’s program is on Sunday, December 4th at 5pm at Port Morris UMC on 296 Center Street in Landing (parking on the street and in the back parking lot on Main Street).
“I am excited to be part of the 20th Annual Christmas Through the Arts program at the Port Morris United Methodist Church. Beginning Advent in a way that brings together not only the members of my own church but members from many different churches and denominations enables an expanded sense of community as we prepare for the
Christmas season. It’s always a pleasure to see, hear and feel how each church expresses its excitement and joy as they await Christmas Day,” shared Richard Boyer, Jr. of Budd Lake, director of the Port Morris UMC’s a capella choir.
The program started in 2002 as the result of a chance “how’s your week been” conversation between a pastor and parishioner at the Port Morris church. The parishioner had a part time job which brought her in contact with a number of small churches. She told the pastor, the late Rev. Karen McMartin, of how she’d learned these churches each seemed to have a different talent which they utilized to make their worship special, much like the Port Morris church had with its a capella choir. The other churches had liturgical dance, mime, chancel drama and bells. McMartin noted that though the holiday season was many months off, she’d been thinking of having something special one Sunday in Advent. She seemed to be thinking of asking one of the churches to share its talent. Before she could say anything, the parishioner started to suggest asking them all! It could be a
nativity program.
However, not every church had nativity costumes. Thus, it was decided not to use those but at the beginning of each year’s program, the audience was asked to use their imagination as each church

performed its scene. That tradition has been followed since then with only a few costumes being used now and then. Also, that first year showed it was difficult to get churches from different areas to be able continued on next page

to rehearse at the same time. Thus, each church prepares its scene on its own with narration linking them together during the program.
The first program shared the talents of St. James Episcopal Church (Hackettstown), Abiding Peace Lutheran (Budd Lake), Christ Episcopal Church (Budd Lake), Teabo United Methodist Church (Wharton), and the Port Morris church.
Over the years, churches have joined in sharing their talents while others took a break. Usually between five –nine churches take part each year. Besides the churches already named, others which have been represented in the program over the years include St. Margaret’s of Scotland (Morristown), Flanders United Methodist Church (Mt. Olive), Drakestown United Methodist Church (Hackettstown), St. Michael’s Roman Catholic Church (Netcong), Stanhope United Methodist Church (Netcong), Valley View Chapel (Long Valley), Grace Church on the Mount (Netcong), St. Mary’s Roman Catholic Church (Wharton), Trinity United Methodist Church (Hackettstown) and Wharton United Community Church (previously St. John’s UMC).
“I am really looking forward to participating again in this year’s 20th anniversary of Port Morris United Methodist Church’s Christmas Through the Arts service in December. In past years, I have enjoyed this unique
and creative ecumenical service which shares the Christmas story through a variety of performing arts with participants from many different churches…. A great memory was when our Stanhope UMC Jazz Trio performed in the service [ playing “We Three Kings”]. This year I will be performing with some of my instrumental music students from Bedminster. We are hoping to put together a jazz duet and a jazz trio. My students and I really enjoy performing together. Last spring, we were fortunate enough to put together a jazz quintet for Stanhope UMC Mardi Gras Jazzy Worship Service,” shared Scott Lefurge of Byram, a music teacher in the Bedminster school system and member of the Stanhope United Methodist Church.
The mix of talents can be different each year and different kinds of “gifts” having been offered, such as singing and signing in American Sign Language done by the St. James Episcopal Church. However, one recent mainstay of the program has been “Camille the camel”. An over-the-top diva, Camille is a puppet that helps introduce the audience to the program each year and would tell you that the camels with the wisemen were the most important part of the story.
In addition to coming together to tell the story, a sense of community and sharing has resulted from the program. Jack Amato of Landing, known by many in the audience as the “piano man” attends St. Michael’s Roman Catholic
Church in Netcong. Amato often brings friends who are singers with him, but also always does a piano solo for the program. A participant for many years, Amato notes that he loves doing the program and ,“I love working with all the other churches, especially Port Morris United Methodist Church.” As a result of his connection with the program, Amato has also come to the Port Morris church to provide special music a few Sundays a year. Another example of sharing came from the director of the Abiding Peace Lutheran Church’s Messenger Dancers last year. When they couldn’t attend the program, the director taught someone from another church a liturgical dance so the program would not go without one.
The participants, as well the as audience, look forward to coming together to share the nativity story with each other. Katie Williver, of Oak Ridge, reflected on the program: “For the past five or six years I have been participating in the annual nativity program at Port Morris UMC. I have enjoyed participating because it has given me the opportunity to sing with my nieces and my son. Furthermore, it is such a beautiful program because people from all denominations come together to celebrate the birth of Christ. There are so many talented people involved in this nativity program; it is a beautiful night of music and storytelling.”

Historic Bridge on Jockey Hollow’s Grand Loop Trail Restored with Funding from the Great American Outdoors Act
unded by the Great American Outdoors Act (GAOA), a $79,876
trail bridge reconstruction project in Morristown National Historical Park was recently completed through a partnership with Stephen T. Mather Building Arts & Craftsmanship High School. The project was a priority due to the age of the bridge supports and the erosion of soil and stones along the stream bank that supported the bridge.
“We are so appreciative of the hard work and craftsmanship by the students and interns, which will allow the thousands of visitors and equestrians who use our trails to have a structurally sound and historically accurate bridge to cross for many years to come,” said Park Superintendent Tom Ross at a recent ribbon cutting ceremony to mark the completion of the project.
The work is part of ongoing efforts by the the National Park Service (NPS) to preserve, restore and rehabilitate park infrastructure and facilities. The bridge is located on the Grand Loop Trail (White Trail) where it crosses the Primrose Brook within the park’s Jockey Hollow Area. After
Congress established the park in 1933, the Civilian Conservation Corps (CCC) constructed the original trail bridge in 1939 when they built hiking trails throughout the park. The bridge was most recently rehabilitated in 1993.
Mather is a career and technical education school located in New York City. In partnership with the NPS, its students can receive hands-on experience in building and landscaping trades that emphasize high-quality craftsmanship and specialized building arts. For five weeks this summer, students, recent graduates, and teachers from the school worked with NPS Maintenance Action Team (MAT) staff from the regional Historic Architecture, Conservation, and Engineering Center and the National Parks of New York Harbor to rebuild the bridge and complete other trail repairs in the park.

program is an immersive experience in the historic trades where young people gain critical on-the-job experience

Working with them was another Mather graduate, Joshua Rivera, Class of 2018, who is currently training to become a career and technical education teacher at Mather High School. Rivera joined the project to gain field experience in preservation carpentry to better prepare him to convey those skills to students in the classroom.
The other students were part of a Student Conservation Association Community Crew, which provided an opportunity to apply and expand their curriculum from Mather. Matthew Jacobs, who manages the Mather partnership and program for the NPS, emphasized how important student work is to our communities and to public service.
“I think it’s really impressive that now, in 2022, this group of young people have been able to make their mark and continue the legacy of the CCC,” Jacobs said. “This project, and all the projects Mather youth have completed over the past 10 years, are all reminders of the amazing difference young people can make when they are given a chance.”
Infrastructure funding from GAOA, the Bipartisan Infrastructure Law, and other
construction funding sources are part of a concerted effort to address the extensive deferred maintenance and repair backlog in national parks. Supported by revenue from energy development, GAOA’s Legacy Restoration Fund provides up to $1.3 billion per year for five years to make significant enhancements in national parks to ensure their preservation and provide opportunities for recreation, education and enjoyment for current and future visitors. Approximately $14 million from the fund is supporting geographically based MAT projects in 59 national parks, including Morristown National Historical Park. MATs train people in traditional preservation trades and provide cost-effective solutions to complete maintenance and repair work on historic structures.
Last year, 332,000 park visitors spent an estimated $21.6 million in local communities while visiting Morristown National Historical Park. These expenditures supported a total of 244 jobs, $13.1 million in labor income, $21.0 million in value-added, and $32.2 million in economic output in local communities.

Larry Walsh of Mendham, now 60 years old was working as a sales manager for a local pharmaceutical firm when his entire world changed four years ago. Things seemed to be going well as he oversaw close to 100 sales representatives. However, when he arrived at his job for another normal day in 2018, he was greeted with the news that he was being let go. It was nothing personal, but he was included in a large restructuring which included massive layoffs.
Walsh who is now a prominent author in the state having published two books, the latter coming out this past October, was not sure what direction his life would take upon hearing of his termination.
The news was quite shocking as he was providing for himself, his wife, and three children. There were also other obstacles. Walsh said, “I had been dealing with depression since 2007, so I lost selfconfidence and was spiraling a bit.”
He was unsure as to what his next career move would be. Walsh said he is not built like a professional athlete, but played sports when he was younger, and always kept in shape. He started riding his bike in Mendham and the surrounding area and the idea came to him to ride cross country.
To his surprise, both his loving wife and wonderful children supported his decision and shortly thereafter he trekked over 3,100 miles from California all the way to Florida.
He came home and after much thought, sat down and wrote about his journey. The result was a book published in 2021 called “Suit to Saddle: Cycling to Self-Discovery on the Southern Tier.”
This book was a tremendous success both with readers and critics alike. However, Walsh still had an itch to ride again, and he explains his journey in his newest book which came out last month titled “Forty to Finish: Cycling to Victory on the TransAmerica Bike Trail.”
In this account, he details his longer ride of over 4200 miles from Oregon to Virginia. This trail is a difficult one as only 300 cyclists have completed this route in the last ten years. Many riders burn out and give up and call for assistance to get back home safely. However, this gritty fitness enthusiast and former military soldier crossed the finish line.
Looking back on his trips, Walsh said “The life I’ve lived has been incredible and it took me to go on a ride to reflect on how incredible it is. It’s about the journey, not where you’re at. And that was my aha moment.”
Walsh also said that after his first trip he was unsure what was next, but he still had a yearning to ride. “I knew there was
something more challenging out there that if I didn’t do it now, I’m never going to do it.”
The TransAmerica bike trail encompassed many small towns, meeting many people, and seeing historic sites. Though he loves all these aspects, he said the story is focused more on his own personal journey on this tough trail.
Walsh has also evolved professionally. He is no longer trying to get ahead in the corporate world but is giving back by helping veterans. He is employed by the state and helps veterans who have had difficulties land jobs with employers who find their background a natural fit.
During the last few weeks, Walsh has been promoting his second book by giving talks in libraries and various community centers throughout his local area. He admits he gets two different types of readers in the audience. The first being cyclists and other athletes.
However, the latter group is comprised of people in the middle of their life, perhaps at a cross-road with their own job seeking advice.
Walsh admits the most challenging thing about a cross-country bike ride is the time involved and how mentally taxing it could be. But he is supportive of people who have the availability and want to pursue this tremendous goal.
He advises such people that they should not worry about finding the most optimal time in their life to do it. According to Walsh “you’re never going to be fully prepared, so you just have to do it. You have to believe in yourself and enjoy the journey. Don’t overthink it.”

Morris County Hope One Dedicates New Van
Morris County Sheriff James M. Gannon unveiled a new Hope One vehicle at a ceremony on Court Street in Morristown attended by human services and mental health professionals, law enforcement leaders, Superior Court staff and county employees.
The new vehicle, dubbed the “mini” Hope One truck, will help to expand the popular Hope One program, transporting the team to community events and client visits throughout the county. Launched in 2017, Hope One is a highly successful and often replicated mobile outreach program by which teams travel Morris County, offering critical support for individuals and families struggling with mental health and substance use disorders, and providing Naloxone (Narcan) education, training and kits in the community.
Since the beginning, the Hope One team has stopped at over 900 locations, marking over 30,000 contacts in the community. Hope One has distributed over 5,800 Narcan kits to family members and friends of those struggling with substance use disorders, free of charge. Narcan is
used to immediately treat a known or suspected opioid overdose emergency, and 114 people have reported using the Narcan kits distributed by Hope One to save or attempt to save a life.
“Hope One works because we go out into the community, we publish where we are going and we have a plains clothes sheriff’s officer, we have a mental health clinician and we have a certified peer recovery specialist who go out into the community and talk to people where they are,” said Sheriff Gannon. “We truly deal with people where they are at, and we have been very successful.”
During the initial height of the COVID-19 pandemic, the Hope One Project witnessed an increase of individuals who required access to critical public services. It became clear there was an elevated need for an additional Hope One vehicle to serve the community.
However, due to production delays, the Morris County Motor Services Center could not obtain a new van.
The Morris County Board of County Commissioners stepped in to provide the Hope One Project a 2019 Ford Transit
passenger vehicle, which was converted into the “mini” Hope One vehicle dedicated this morning. All three vehicles now used by Hope One van were on display today.

and poverty. It’s why the program has been replicated throughout the state,” said Morris County Commissioner Doug Cabana, the board liaison to Law and Public Safety.
The Morris County Sheriff’s Office, in partnership with the Morris County Department of Human Services, the Mental Health Association and the Center for Addiction Recovery Education and Success (CARES), staffs Hope One units with a plain clothes Sheriff’s Officer, a Certified Peer Recovery Specialist and a Mental Health Professional. In 2019, the team was awarded the International Association of Chiefs of Police, Michael Shanahan Cooperation in Public and Private Partnership Award.
The simple yet effective Hope One model has been replicated in eight (8) other counties across the State of New Jersey.
The Morris County Sheriff’s Office Hope One Project expanded in 2021 with the launch of the Hope Hub.
The Hub is a multidisciplinary panel made up of law enforcement, social
services, mental health services, healthcare providers, treatment providers and recovery specialists. Struggling individuals and families are referred to the Hope Hub and connected to life-changing services.
To date, the program has offered assistance in 295 situations, reducing what is called acutely elevated risk (AER) in 97% of those cases.
Since Hope Hub’s inception, the Interfaith Food Pantry Network has donated a total of 17,603 pounds of food and Nourish NJ has provided Hope Hub with over 300 meals! Sheriff James M. Gannon is pleased to announce that the Interfaith Food Pantry Network & Nourish NJ’s logos have been placed on the newest Hope One van.

Make Dinner Memorable with Manicotti
Few cuisine styles are as diverse and beloved as those that have been exported from the Mediterranean nation of Italy. From pasta to pizza and everything in between, the rich and savory flavors of Italian cuisine are enjoyed across the globe.
Italian restaurants can be found in many cities and
towns throughout the world. However, it’s just as easy to create traditional, mouthwatering dishes at home with simple ingredients. Manicotti is a popular pasta dish that can be filled with cheese or other ingredients, and topped with a traditional tomato sauce or other saucy creations. The word “manicotti” is the plural form of “manicotto,”
which translates to “little sleeves” in Italian. They’re meant to be stuffed and baked.
While manicotti may seem complex, they’re rather easy to prepare. Enjoy this recipe for “Mom’s Homemade Manicotti with Crepes (Crespelle)” courtesy of the blog 3 Italian Sisters (www.3italiansisters.com). They present well for the holidays or any special occasion.
Mom’s Homemade Manicotti with Crepes (Crespelle)
Yields approximately 20 crepes
Serving size: 2 to 3 crepes per person
Crepes
4 extra large eggs
1 cup flour
11⁄4 cup whole milk
2 tablespoons vegetable or olive oil
1 teaspoon salt
Butter for pan
Ricotta filling
3 pounds part skim or whole milk ricotta cheese
1⁄2 cup fresh parsley, minced
1⁄2 cup grated pecorino romano cheese
2 extra large eggs, scrambled
1 pound mozzarella cheese cubed
Salt and pepper to taste
Premade tomato or meat sauce
Put all the crepe ingredients into a blender. Blend till smooth; scrape sides if necessary and blend again till all ingredients are blended well.
Melt a little butter in a 9” nonstick frying pan over medium heat.
Pour in small amount of batter and swirl to cover bottom of it with a thin film. Cook for approximately 20 seconds and turn to the other side and cook for another 20 seconds. Transfer crepe to plate. Continue until all batter is finished. Crepes can be stacked on top of each other. If you aren’t using them right away, wrap them tightly in plastic wrap and refrigerate them for 3 days or freeze for up to one month.
Ricotta filling: Mix all ingredients together in a large bowl and set aside to fill crepes.
Take 1 tablespoon of ricotta filling onto each crepe and roll gently and place on a cookie sheet, seam side down.
Preheat oven to 350 F.
Layer large casserole pan with your favorite tomato or meat sauce. Place single layer of rolled manicotti in the casserole pan on top of sauce. Ladle thin layer of sauce on top of manicotti and sprinkle with additional mozzarella cheese.
Bake in the oven for 25 minutes, or until sauce is bubbling and cheese is melted.

Bring large pot of cold water to boil. Salt water heavily.
Cook dry pasta according to package instructions until al dente. Strain pasta, reserving pasta water.
In large saucepan over low heat, warm pasta sauce 3-5 minutes. Add 1-2 tablespoons pasta water.
Transfer cooked pasta to saucepan.
Stir and toss pasta approximately 30 seconds over medium heat to integrate it with sauce. Add pasta water as needed for creamier texture.

Servings: 6 1/3 cup extra-virgin olive oil 3tablespoons finely chopped fresh basil, plus additional, for garnish 3 cloves garlic, minced 2 teaspoons kosher salt 1/2 teaspoon ground black pepper
1/2 teaspoon dried oregano 6thinly sliced boneless, skinless chicken breast cutlets (about 1 1/2 pounds) 1large onion, thinly sliced 1 jar (24.7 ounces) Bertolli d’Italia Marinara Sauce 2 cups multi-colored grape tomatoes, halved 2 stems cherry tomatoes on the vine 1/2 cup shredded Parmesan cheese 2 tablespoons balsamic glaze
Preheat oven to 400 F. In small bowl, whisk olive oil, basil, garlic, salt, pepper and oregano until
combined. Combine 2 tablespoons oil mixture and chicken in resealable plastic bag. Let stand 5-10 minutes at room temperature to marinate.
In medium skillet, heat 2 tablespoons oil mixture over medium heat. Add onions; cook 3-4 minutes, or until crisp-tender. Stir in marinara sauce. Pour mixture into lightly greased 13-by-9-inch baking dish. Arrange chicken breasts in dish, overlapping if necessary. Top with grape tomatoes and cherry tomato stems. Spoon remaining oil mixture over tomatoes.
Bake, covered, 25 minutes, or until chicken is done (165 F) and tomatoes start to burst. Sprinkle with Parmesan, drizzle with balsamic glaze and garnish with fresh basil leaves before serving. (Family Features)

Food insecurity isn’t a new problem in the United States, but the economic upheaval created by the COVID-19 pandemic accelerated the problem.
During the pandemic, households in the United States with children experienced an increase in food insecurity, despite overall rates of food insecurity staying the same. In 2019, 13.6% of households with children were food insecure, but by 2020, that number increased to 14.8%, according to data from the U.S. Department of Agriculture.
In general, child food insecurity rates are higher than overall food insecurity rates, according to the annual Map the Meal Gap study conducted by Feeding America, a nationwide nonprofit network of food banks. According to data from the Children’s Defense Fund, this is particularly prevalent among low-income families, single mother households and Black and Hispanic households.
What Food Insecurity Means for Children
Food insecurity and hunger are closely related but not quite the same. People who are food insecure don’t have reliable, ongoing access to an adequate supply of affordable, nutritious food. Hunger is a physical condition; food insecurity reflects barriers to obtaining food such as finances, physical location and transportation.
Infants and toddlers are particularly vulnerable to nutrient deficiencies because their nutrient needs are high, especially in relation to the size of their stomachs and appetites. Caregivers in food-insecure households may have little choice but to settle for cheaper, energy-dense but nutrient-poor foods. As a result, foodinsecure infants and toddlers are not receiving adequate nutrition even when they may be receiving enough calories to satisfy hunger.
Even if a child isn’t physically starving, inadequate nutrition can negatively affect health in numerous ways, including immune system function, low weight, learning and developmental delays, vitamin deficiencies and more.
Ways to Help Promote Better Nutrition
Support good nutrition during infancy and toddlerhood for your own children and others in the community with these practical tips:
Participate in (or introduce those in need to) aid programs. Government
nutrition assistance programs help provide essential nutrition needs during infant and toddler years. One example is the Special Supplemental Nutrition Program for Women, Infants and Children (WIC), which provides a variety of resources including food and health care referrals to support mothers and young children at nutritional risk, including pregnant, breastfeeding and post-partum women, as well as infants and children up to age 5.
Another example is the Supplemental Nutrition Assistance Program (SNAP), which provides benefits low-income families can use to purchase nutritious foods. For children and adults who are enrolled in certain care programs, the Child and Adult Care Food Program (CACFP) helps ensure they have access to nutritious meals and snacks.
Make purchases that work extra hard. In addition to producing foods that encourage better nutrition for children, some brands also make contributions that help offset food insecurity. Volunteer at a food bank. Getting hands-on by donating your time at a local food bank can help you understand the complexity of food insecurity. Many nutritious selections are perishable, and transporting and storing perishable goods is costly. Volunteers help offset a food bank’s operational expenses by contributing labor to sort donated items, prepare deliveries and more.

A Thanksgiving Story: The Precious Remembrances of My Beloved Grandfather

One of the most endearing and cherished memories of the Thanksgivings of my childhood and youth is that of my beloved grandfather, heartily and enthusiastically celebrating this wonderful holiday. I remember, all so dearly, how Grandpa loved to carve the turkey after he took it out of the oven of the old Mabey Homestead in Lincoln Park. It was a task upon which Grandpa held as a most high honor.
Grandpa was a man who was governed by detail and precision. As a young man, Grandpa held the honor of serving as the Chief Engineer of Incline Plane Ten East of the infamous Morris Canal. The need to be detailed oriented, plus having raised his family in the heart of the Great Depression, gave Grandpa the wisdom to carve each slice of turkey with great care.
“You never want to cut the slices too thick, Dicky Jim. But on the other hand, you don’t want the family to leave the table hungry,” Grandpa would tell me with a bit of a song in his voice. My grandfather was the man who bestowed me with the nickname of Dicky Jim. He was the last person to ever call me by that name. I would greatly protest when I got to be about 11 years old and my aunts and uncles would call me by that nickname. But, Grandpa was a different story.
It is all so hard to put into words what Thanksgiving Day was like at the old Mabey Homestead. When I was a young boy and my great grandmother, Dora Mabey, was still alive,
there had to be at least 50 people congregated within the warmth and love of the dear old farmhouse that my great grandfather had built when he was just a young man.
Great Grandma Mabey worked hard to keep Thanksgiving Day all so organized. There was the old, stately dining room table, which could only seat six people. So, on Thanksgiving Day, my dad and my uncles would set up four or five additional tables. These extra tables were made up of old pieces of plywood resting upon carpenter’s wooden horses. It was as down home as you could ever imagine. I remember the touch of class that Great Grandma would add to the long procession of plates, glasses and silverware. Great Grandma would have these folded oak tag nameplates, for every single member of the Mabey clan. Great Grandma would decide where you would sit at that table and nobody dared to argue with the proud matriarch.
After the Thanksgiving feast, the women would clean up and wash all the dishes. Most of the men would congregate onto the enclosed front porch and tell remembrances of growing up in Lincoln Park. And Grandpa would sit in the big, easy chair in the southwest corner of the big living room. My cousins and my sister Patti and I would all sit upon the floor at Grandpa’s feet. Then, dear old Grandpa would tell these wonderful and colorful stories of his remembrances of life along the old Morris Canal.
There were no video cameras back then, in the 1950’s and 1960’s. Oh, how I regret that none of Grandpa’s
enchanting tales were not videotaped. My grandfather was an incredibly talented story teller. He would hold us all spellbound with his voice flexion,

dramatic timing, facial expressions, and lively hand movements. I would do my absolute best to engrave Grandpa’s stories within the fibers of my mind and the deepest chambers of my heart.
Grandpa’s stories did not just center upon his work on Incline Plane Ten East. For when Grandpa was a boy and then through his teenage years, he worked with his father, William Mabey, at the old Mabey Ice House that stood along the banks of the Morris Canal, just a few yards to the east of Incline Plane Ten East. Great Grandpa Mabey had an agreement with Mr. Franciso, who owned the sawmill that was located just to the northwest of the end of Mabey Lane. Great Grandpa and his sons, Watson and Earl, would fill wheelbarrows with the sawdust from the mill and walk them over to the Mabey Ice House. In exchange, Great Grandpa would provide free ice for Mr. Francisco.
As a boy, and then later as a teenager, during the winter months Grandpa and his brother would cut ice blocks from the frozen water of the canal. They would tie a rope around the big block of ice, drag it to their father’s ice house and then thickly pack it with sawdust in the icehouse. It was
far from being the easy life.
In memory, I return to those wonderful and loving Thanksgiving Days. During my childhood and youth, I never really realized just how precious they were. An era has now long past. Like grains of sand slipping through the crevices of my fingers, time has passed all too quickly. Now, at 69 years old, I long to relive just one more Thanksgiving Day of that magical era.
To see Grandpa proudly carve the turkey. To see Grandma stirring gravy at the old stove. To see my father, young and proud. To see my mother, carefully placing the top crust onto an apple pie. To see my cousins all running around the old Mabey Homestead. To see my Great Grandma firmly, but lovingly, commanding everyone to different tasks. To see my aunts cutting up green beans and carrots. And to see my uncles, all gathered upon the enclosed front porch telling tall tales of their youth. And, for one more time, to be able to see and hear Grandpa tell just one of his colorful tales of life along the old Morris Canal.

5 Steps to Properly Manage Blood Pressure
(Family Features) Nearly half of all American adults have high blood pressure, or hypertension, according to the Centers for Disease Control and Prevention. Of those, about 75% don’t have it under control, and many may not even realize they have it unless they experience other complications.
In fact, high blood pressure is a leading cause and controllable risk factor for heart disease and stroke as well as other issues such as kidney failure, vision loss and sexual problems. However, the American Heart Association recommends taking these simple steps to help control your levels and manage risks.
Know Your Numbers
In most cases, normal blood pressure is 120/80 mm HG or less. Readings consistently higher than 130/80 are considered high blood pressure. Have your blood pressure measured at least once a year by a health care professional and regularly monitor it at home with a validated monitor then discuss the readings with your doctor. Getting accurate readings can help ensure the most appropriate treatment should any problems arise.
Maintain a Healthy Weight
If you’re overweight or obese, you’re at increased risk of high blood pressure. Losing just 3-5% of your body weight can help improve your numbers. There are an abundance of plans and programs available that can assist with weight loss, and taking positive steps with a friend or family member may help with motivation.
Get Active
To maximize health benefits and help keep blood pressure in the normal range, the American Heart
Association recommends adults get at least 150 minutes per week of moderate activity, 75 minutes of vigorous activity or a combination of the two. Try activities like brisk walking, swimming, bicycling or dancing. For example, the Get Down with Your Blood Pressure campaign uses music and dance to help remember the four easy steps to selfmonitor blood pressure:
Get It – grab your self-monitoring blood pressure (SMBP) device
Slip It – slide the SMBP cuff up your arm Cuff It – wrap the cuff snugly, but not too tight Check It – check your blood pressure on the device
Eat Well
Making small, simple changes to your eating habits can go a long way toward keeping you and your family healthy. Eating fruits and vegetables, such as mangos, avocados and blueberries, can lower blood pressure over time. Other smart choices include nuts and seeds, whole grains, lean proteins and fish.
Reduce Alcohol and Tobacco Usage
Smoking compounds risk factors for heart disease, such as high blood pressure and diabetes, and the chemicals in tobacco smoke can harm your heart and blood vessels. Similarly, consuming alcohol excessively (more than two drinks per day) is associated with high blood pressure. Limiting alcohol consumption and stopping smoking – or avoiding secondhand smoke – can help reduce your risk.

Monitoring Your Blood Pressure at Home
Knowing how to correctly check your blood pressure is important, especially if your doctor recommends regular self-monitoring at home.
Be still. Don’t smoke, drink caffeine or exercise during the 30 minutes before measuring your blood pressure. Empty your bladder and take at least 5 minutes of quiet rest time before measuring.
Sit correctly. Sit with your back straight and supported. Keep your feet flat on the floor and your legs uncrossed. Support your arm on a flat surface, such as a table, with your bicep at heart level. Place the bottom of the cuff directly above the bend of your elbow. Never take measurements over sleeves or other clothing.
Measure at the same time every day. For greatest consistency, take readings at the same time daily, such as a set time in the morning and evening.
Take multiple readings and record the results. Each time you measure, take 2-3 readings approximately 1 minute apart and record the results to share with your doctor.
