CORAL SEA SALAD Serves 2 12 micro beetroot, leaves reserved 2 small leaves of kale 2 shallots watercress leaves celery leaves 2 cornichons 6 small pickled onions dill VINAIGRETTE 25ml apple cider vinegar 100ml extra virgin olive oil 1 tsp grated horseradish salt and pepper

Cook beetroot in boiling water for 20 minutes or until tender. Allow to cool. Wearing rubber gloves, rub off skins. Blanch kale leaves until tender and refresh in ice water. Toss shallots in olive oil and roast in their skins; allow to cool and peel. Wash watercress, beetroot and celery leaves. Slice cornichons and pickled onions. For vinaigrette, whisk together vinegar, oil and horseradish, then add salt and pepper. Arrange vegetables and salad leaves on a plate, scatter with dill and dress with the horseradish vinaigrette.
