LOVELY LAMB!

Lamb is a tasty and versatile meat. Here are three recipes using different cuts, all easy, delicious and inexpensive. Enjoy!

MOUSSAKA

500g minced lamb 2 tbsp olive oil (plus oil for brushing) 2 aubergines (500g) - sliced 1 onion - sliced 2 garlic - finely chopped 400g tin chopped tomatoes 1 tsp cinnamon red wine - splash 50g butter, 30g flour & 350ml milk 1 egg - beaten 100g grated cheese (cheddar or parmesan) nutmeg - grated salt & pepper method Pre-heat oven to 200°C. Brush augergine slices both sides with olive oil and place on a large baking sheet. Bake for 10 mins then turn and bake for another 10 mins. They should be soft and golden brown. Meanwhile - gently fry the onion and garlic til soft. Turn heat up and add the lamb. Break up and brown. Then add the cinnamon and red wine - boil til liquid is absorbed. Add tinned tomatoes and season to taste. Simmer gently for 20 mins while you make the white sauce. In a small pan melt butter - add flour and stir for a minute. Remove from heat and gradually stir in milk. Over a medium heat stir until the sauce is smooth and thick. Add 2/3 of the cheese and 1 tsp grated nutmeg. Leave to cool slightly while you assemble to dish. Grease an ovenproof dish and place a layer of aubergine slices on the bottom. Pour over the lamb sauce and top with another layer of aubergines. Then beat the egg into the white sauce. Pour over the top of the dish and sprinkle with the remaining cheese. Bake for 45 mins in oven.

Lamb and Spinach Curry

This recipe is based on a dish from a book called “Curry”. 3 tbsp sunflower oil 300g boneless lamb leg steaks - cubed 350g bag spinach 2 x onions - chopped 1 x garlic clove - crushed 400g tin tomatoes 1 tsp chilli flakes 1 tsp turmeric 1 tsp cumin seeds salt to taste method Heat the oil in a pan and cook the onions until soft. Add garlic, tomatoes, chilli, cumin seeds, turmeric and lamb. Cover and cook gently for 40 mins. Meanwhile wash spinach and place in a pan until wilted. Drain and once cooled, chop. After 40 mins add spinach to the pan. Remove lid and simmer for a further few minutes until you have a thick sauce. Check for seasoning and serve with rice.

Moroccan Meatballs 500g minced lamb 1 x onion - finely chopped 2 x garlic cloves - finely chopped 2 tsp ground cumin 2 tsp ground coriander 1 tsp cinnamon breadcrumbs - good handful 1 egg 1 dsp tomato puree salt & pepper method Either use a food processor or manually mix the ingredients until well blended. Roll into walnut size balls and shallow fry until browned all over. Delicious with couscous and tomato sauce or stuffed in pitta bread with coleslaw.

Arnold’s newest Indian restaurant and take-away is situated at 107 High Street - a building with a, how shall I say...interesting past! Unless you have been living in a cave you will probably have heard rumours about the goings on that took place at this venue ages ago and while it was under different ownership. Well we are here to ask you to scrub all doubt from your mind, put the rumours to rest and go visit Sitar! Sitar is owned by the delightful Mr Choudhury, a restauranteur with years of experience. The whole place has been gutted and given a lovely makeover. We were given the guided tour as Mr Choudhury is very keen to show his gleaming kitchens and the newly built stage for live music

(sitar, of course!). The presence of a sitar player really adds to the ambience of the evening and Mr Choudhury is very proud of this unique feature of the restaurant. Top billing for the evening was without doubt the food. We ordered a Mixed Platter to start (£5.50 for two people) that included tender chicken tikka pieces, crisp onion bhajis and spicy seek kebabs. For our mains we chose Akbori Gosht (£9.50), a distinct lamb dish packed with flavour and the classic Chicken Tikka Massala (£6.75). After seeing Mrs Choudhury making the Nan Breads (£2.50) by hand in the kitchen we tried a couple of different varieties. They really were first class. With eyes way bigger than bellies, Sitar were happy to box up the leftovers for a very happy babysitter. In fact I have to say that the staff at Sitar could not do enough for us and we had a great evening. So much so that the following night we ordered a takeaway from them and took up the 20% discount!

Over the last few decades one of the major improvements to the healthcare of our pets has been the development and use of effective vaccines to immunize our pets against a variety of serious and life threatening illnesses. Some horrible diseases like Feline Enteritis and Canine Distemper are now thankfully extremely rare. Others such as Cat Flu and Canine Parvovirus are mainly seen in unvaccinated animals. Outbreaks of contagious illness such as Canine Kennel Cough and Myxomatosis in rabbits can be limited by vaccination. Generally your Dog, Cat, Rabbit or Ferret requires an initial primary course of inoculations as a youngster and then an annual booster throughout it’s life to maintain it’s protection. As your pet gets older it’s immune system is less efficient and it is more important to keep him or her vaccinated. It is especially important in a breeding female to have them fully vaccinated so as to pass on that immunity to their newborn. Importantly alongside his annual booster your pet will also get a thorough health check which often is a time when any other problems, such as early heart or dental disease,

can be picked up and treated. It is also an ideal time to check that your pets worming and flea control is up to date. Unfortunately recently vaccination in people and animals has had a bad press such as the use of MMR in children. However the modern vaccines used are carefully tested and licensed to ensure they are safe to use. As with any immunization you can get temporary mild side effects but major problems are extremely rare. If you have any concerns your vet will be happy to discuss them with you. In these times of potential hardship owners are often tempted to not vaccinate their pets or let their boosters lapse but this can be a false economy and potentially life threatening to your beloved. To help clients with this many practices have schemes to help you spread out the cost of routine health care such as our Pet Health Club, which gives you the option to pay a monthly direct debit to cover the costs of routine health care such as vaccination, flea and worm control alongside a list of further savings such as discounts on dentals, neutering and life stage diets. CARLTON FORUM SWIMMING CLUB Hello and welcome to all things swimming from your local club here in Carlton. It has been a very busy start to 2012 with several competitions in January and the County Championships from early February to March. Many of our swimmers are competing and there will be a full report in the next edition. British Gas Donation / Swim 21 Development: In January the club was very proud to have local international and Nova swimmer Sasha Matthews come and present us with a £500 donation to help with our coaching development.Pictured right are club swimmers Russ Crawford and Vicki Reckless posing for the cameras with Sasha. We thank Sasha for attending our club night and wish her the best of luck for the forthcoming Olympic trials. Swim 21 is a benchmark award given to clubs who prove they meet strict criteria for swim development but there are multiple levels. Melanie Reckless holds the important role of Swim 21 Coordinator and her excellent work has been rewarded through the club gaining its re-accreditation at the higher level of Skill Development. Melanie was also central to obtaining this funding from British Gas and the club thanks her for everything she is doing. Melanie is pictured left with Coach Graham Linley showing off the award.

Nottinghamshire Competitions:

Youth County Championships - congratulations to Elliot Woodward for some excellent swims at the December Youth Champs despite feeling a little under the weather. Highlight was the final of the 200m IM where he finished in 3rd place. Also at the Champs were India Linley, Adam Glossop, Sam Sutton and Craig Booth. Sports Centre League 2011 – the team could not quite pull it off in the final round. We finished 2nd overall and remain in Division 2 for the coming year. Notts & District 2011 – the A-Team were beaten into 2nd place by 4 points as Kimberley took the crown. It was an exciting final gala and all credit goes to Kimberley - just too strong on the night. The B-Team had a great result with 3rd place in the B-Final. Stage 1 2012 – there is a new format in place for all ASA competitions this year and this 12/under event was the first. A good performance in a strong first round in January saw us just beaten into 3rd place. The next round is at the end of the year. The club is very appreciative of Kirk Contracts, Nottingham for sponsoring our County Championships tee-shirts. STOP PRESS: Congratulations to Ralph Wills, Luke Mitchell, Asher Huffen and Jak Winfield who make up our 10/U boys freestyle team which became County Champions at the relay gala on 5th February. Fed up with trips to the loo? As men head towards fifty, the prostate gland that has been nestling unnoticed around the neck of the bladder often starts to make its presence felt. Swelling a little more each year, it makes it increasingly difficult for urine to leave the bladder effectively. Due to this constriction of the urinary tract, there can be some discomfort and a persistent feeling of a full bladder, whilst trips to the loo yield a disappointingly small amount of wee for the effort required. If this is happening at night, as it frequently does, disrupted sleep adds to the feeling that life could be better. This state of affairs is known as Benign Prostatic Hypertrophy (BPH) – or simply an enlarged prostate. It’s not a disease, but it has quite an impact on your quality of life. The first thing to do is to check with your doctor that these symptoms are indeed due to an enlarged prostate. If it is then you can consider using Saw Palmetto. The oil from the Saw Palmetto berry is available in a onea-day capsule that is believed to help reduce the swelling that restricts urine flow. Simple to take, it could mean less traipsing to the loo and more comfortable time in bed. Check with your doctor for confirmation of BPH, as the symptoms may be due to other

conditions such as: • Prostatitis, a bacterial infection that can be treated with antibiotics • Overactive bladder muscles, which can often be treated with medication to relax the muscles • Diabetes, which can cause increased urination and needs to be caught as soon as possible An American study has shown that men who have a high intake of vegetables, especially those rich in beta-carotene, lutein and vitamin C have a reduced risk for BPH. [1] So eat all the green, leafy vegetables, sweetcorn, yellow and orange-coloured vegetables such as peppers, kiwi fruit and grapes, to get these nutrients. Another study showed that eating four or more servings of vegetables daily, reduced BPH risk by 32%, and eating more fatty foods increased the risk. one caused by a build up of grease behind the fan blade cover and another in an oven with an integrated grill which was caused by a build up of grease on the roof of the oven. Many people do not realise the danger of a dirty oven until it’s too late. “The majority of ovens will have been used a lot over the Christmas period and debris and grease will have built up which affects an ovens efficiency. The Lazy Gardener.... gets down and dirty

As I explained in the last edition I am at best a reluctant gardener, however I harbour romantic notions of tiptoeing through the veggie beds picking plump cabbages and lovely comedy shaped carrots....so we have dedicated a third of our garden over to growing our own food. Using offcuts of tanalised decking and other odds and sods of wood that we found we have fashioned four small raised beds. Digging the soil over and sieving the pebbles out was the best upper body workout I have had in ages. After covering with heavy duty polythene to warm the soil (advice from a library book) we are ready to plan exactly what to grow. Sarah Mulholland, a Grow Your Own enthusiast whose partner discovered allotmenting in his late thirties and now runs a small veg box scheme; Red Earth Organics (01636 812105) has kindly offered the following advice on picking seeds; “Seed buying can be confusing. There are hybrid or heritage seeds, organic and non-oganic. Put simply, hybrids are developed by crossing two different plants from the same family but with different qualities like colour, size or flavour. Heritage (or heirloom) seeds come from plants that were grown historically but have not been used in modern agriculture on a large scale. Heritage plants can be selected for their ability to grow in specific soil or because the flavour or appearance is appealing. From experience I can recommend the following heritage crops: Tomatoes - Brandywine and Ivoty Egg Beans - Cosse Violette Lettuce - Marvel of 4 Seasons and Black Seeded Simpson Hybrids are widely available and tend to assure reasonably certain results, predictable crops and familiar flavours, whereas heritage can give less uniform results but offer unusual flavours, colours and variety. By checking the preferred conditions of heritage you can optimise yield by selecting seeds best suited to

your soil and weather. Heritage fruit and vegetables can be relatively easy to grow and by doing so you are also helping to preserve the gene pool and prevent monoculturism. Do be prepared for mixed results. That is both the joy and the frustration of moving from the staple hybrid seeds available everywhere and the delight in discovering a new lettuce, an unfamiliar tomato or beetroot easily outweighs the frustration of a seed batch that does not flourish as you hoped.” WOW! I had no idea....

In my dreams!!! With raised beds it is better for the soil to rotate crops on a four year cycle and also to grow similar crops in each bed. So we will have carrots, parsnips & celeriac in one bed, kale, calabrese, radish and rocket in another, spinach, swiss chard beetroot and lettuce together and french beans and peas in the last bed. We are growing potatoes in a special grower and plan to use grow bags for tomatoes. After hearing what Sarah had to say about seeds I am going to try and grow some heritage crops as well as hybrids and report back. As I type there is snow on the ground so all work has stopped and we are doing plenty of research using library books and the internet to plan the various types of each vegetable we plan to buy. Are you bored with your kitchen? A re-vamp needn’t cost the earth. Carefully remove the old doors and take off the handles and hinges. Ascertain what the doors are made of, treat with an appropriate primer and paint them for a new look. There are many companies who will make new doors inexpensively to fit. Be sure to pilotdrill new handle holes first. Your existing handles may clean up well with a good soak in the appropriate product. Replace tired worktops; remove your old tiles first, then carefully remove the old worktops, use to template and replace for new. The less experienced DIY’er needs professional help here especially if there are mitred corners. New tiles; tiling is easy as long as you prepare well. If your old tile was good, you will likely be able to achieve a good DIY result. If the wall is not flat, even the most experienced tiler will have difficulty. Apply new sealant to the joint between worktop and wall and while you are at it check your bathroom for old and mouldy seals, remove, treat with thin bleach solution for a day and re seal. Inspector Alan Pearson: Over the next three months drug dealing, antisocial behaviour and vehicle crime will be among the top priorities for beat teams in the area. These were the issues you highlighted to officers in Neighbourhood Priority Surveys, during meetings, surgeries and when we visited your home. We listened to your concerns and used the feedback to shape our three Neighbourhood priorities which were set at a recent meeting. An increase in reports of drug dealing also prompted the issue being listed as one of our priorities and we have a plan in place to tackle this. High visibility patrols are to be conducted in known hotspots, this will hopefully help prevent and detect offences and reduce the amount of calls being received about the issue. Beat officers, PCSOs, Special Constables and council wardens will be working together to combat incidents of antisocial behaviour – the second priority on our list. Friday and Saturday nights, from late afternoon until 11pm, have been identified as peak times for reports including large groups hanging around, disturbances at licensed premises and reports of criminal damage. Positive action will be taken against anyone who is disturbing the peace and any young person found under the influence will be taken home and their parents spoken to. We are working closely with our partners at the council’s licensing department and Trading Standards to monitor licensed premises with test purchase operations planned to ensure the law is not being breached. The third priority for the next three months is vehicle crime. Again high-profile patrols will be carried out in hotspots and letters will be sent to the registered keepers of vehicle where property is left on display as part of efforts to prevent future incidents. You too can help us by ensuring that your vehicles are locked and secure and that items are not on display, removing temptation from opportunist thieves. The same goes for your homes. Please ensure that doors and windows are secure. Leaving them unlocked or slightly ajar makes it easy for an offender to nip in, snatch whatever they can see and run off without anyone really noticing.
