Ontario is Canada’s largest icewine producing province with the main region in Niagara on the Lake.

-10°C Icewine is made when the grapes are naturally frozen on the vine. In order to be icewine certified in Canada, grapes must be harvested at -8°C (17.6°F) or colder, have no artificial refrigeration and no added sweeteners. At Lailey Winery, we wait until at least -10°C (14°F) before we harvest our premium icewine grapes.

THE HISTORY BEHIND IT ALL While most are aware of the natural wonder the city is named for, it’s the fascinating history and rich cultural heritage across Niagara that have helped shape Canada as a nation. One of the most interesting places to explore is the Fort George National Historic Site, the headquarters for the War of 1812. It offers visitors the opportunity to recapture the experiences of soldiers stationed there 200 years ago. Continue the war history by visiting Old Fort Erie, the scene of the United States’ declaration of war on Upper Canada. The Laura Secord Homestead continues to enchant visitors as guides retell the stories that made Laura Secord a historical icon. Explore all the area’s history at The Niagara Falls History Museum, located steps from where the Battle of Lundy’s Lane took place,

considered the bloodiest battle of the War of 1812. Niagara roots also extend to the Underground Railway, as those escaping slavery were ferried across the Niagara River to safety. Visitors to the Niagara Freedom Trail can take in a collection of landmarks that highlight this important time.
