Welcome to DNfourteen Magazine Welcome to our March 2022 edition of the DNfourteen magazine - I hope it finds you all well. We have some interesting articles in this months edition ranging from a super recipe for Beef Wellington - which I intend to cook for the family next weekend. We have some great tips on how to make your home peaceful and relaxing - I’m sure that is something that we all aspire to. We also have advice on what to do in the garden including what to plant during March for all you green fingered gardeners. We have our usual pick of the best new books to read this month too. As usual we finish off with our regular column from Fiona Dwyer who shares her views on life with us.

Beef Wellington This Beef Wellington recipe can be made in one large serving or several individual servings. Inside a puff pastry case is a succulent piece of prime beef and a rich stuffing of liver pâté and mushrooms. The pastry locks in all the juices and ensures none of the wonderful flavours are lost. Serve with a mushroom and red wine gravy.

When cooking a Sunday roast, there are few dishes as elegant or impressive as a Beef Wellington. They look sensational, require a lot of skill to make and taste rich. Don’t be daunted by their reputation - with the right guidance, you can master this classic British dish. INGREDIENTS 1.5 kg (3 lb) beef fillet, trimmed and tied Salt and black pepper 2 tbsp sunflower oil 45 g (1 ½ oz) butter 1 small onion, finely chopped 250 g (8 oz) flat mushrooms, finely chopped 175 g (6 oz) smooth liver pâté 400 g (13 oz) ready-made puff pastry 1 egg, beaten Thin mushroom gravy, to serve METHOD 1 Season the beef with black pepper. Heat the oil in a large frying pan, add the beef, and cook over a high heat until browned all over. 2 Put the beef fillet in a roasting tin and cook in a preheated oven at 220°C (200°C fan, Gas 7) for 25 minutes for rare beef, 35

minutes for medium, or 40 minutes for welldone. Leave to cool completely. 3 Meanwhile, melt the butter in the frying pan, add the onion and mushrooms, and cook, stirring, for 3 minutes or until softened. Increase the heat to high, and cook until the excess moisture has evaporated. Turn into a bowl and leave to cool completely. 4 Add the liver pâté to the mushroom and onion mixture, season with salt and pepper, and stir well to combine. 5 Wrap the beef and pâté mixture in the pastry (see below). 6 Bake at 220°C (200°C fan, Gas 7) for 45 minutes or until the pastry is crisp and golden. Cover with foil after 30 minutes to prevent the pastry becoming too brown. Leave to stand for about 10 minutes, then slice and serve with the gravy. INDIVIDUAL BEEF WELLINGTONS METHOD 7 Cut the raw beef into 8 slices.

Step 8 Brown the slices in a frying pan, cool, then wrap each one in pastry with a little of the pâté mixture. 9 Bake for 25-30 minutes. WRAPPING THE BEEF IN PASTRY METHOD 10 Roll out 300 g (10 oz) of the pastry to a 30 x 40 cm (12 x 16 in) rectangle. Spread half of the pâté mixture down the middle, leaving

a 10 cm (4 in) border on each side. 11 Remove the string from the beef and place the beef on the pâté mixture. Cover with remaining pâté mixture. 12 Brush the pastry border with beaten egg. Fold the short sides of the pastry over the beef. 13 Fold over the long ends and turn the parcel over. Brush with beaten egg. Roll out the remaining pastry, and cut into strips, 5 mm (¼ in) wide. Arrange in a lattice pattern on top of the pastry, then glaze the strips with beaten egg. Mushroom gravy Melt 30 g (1 oz) butter in a saucepan. Add 1 finely chopped shallot and cook for 2 minutes until softened. Add 250 g (8 oz) sliced mushrooms and cook gently for 5 minutes. Pour in 300 ml (1/2 pint) beef stock, and simmer for about 5 minutes. Add 1 tbsp chopped parsley, 1 tsp chopped fresh thyme, and salt and black pepper to taste

Gardening

Garden jobs for March March is the time for starting off veg, clearing borders and sowing seeds March is the official beginning of spring but it can very cold at times so keep an eye on the weather forecast and wait to do jobs if conditions aren’t right. The clocks also go forward this month so the lengthening daylight hours also help plants to really get growing. Spring bulbs take centre stage in the borders and in patio pots, rewarding your efforts for planting them last autumn Weeding Weeds will be growing as strongly as your plants, so keep on top of them before they can get a hold.

Digging them up with a hand fork is the best idea, as you can get all the roots out. Reserve hoeing for dry weather, as weeds can re-root if the soil is moist. Finish cutting back borders New growth is appearing but there’s still time to cut back any remaining perennials and deciduous ornamental grasses. If you have a garden shredder, feed the old stems through it before putting on the compost heap as they’ll rot down faster and your compost will be less ‘twiggy’. Mulch borders The most effective way of improving the soil in established borders is to mulch the surface with a 3cm-layer of organic matter, such as garden compost. It will also help to suppress weeds and trap moisture in the soil.

If your heap doesn’t produce enough compost to mulch the whole garden, it’s worth contacting your local council to see if it’s possible to buy the compost that’s made from the green-waste collections. Mushroom compost (though not for acid-loving plants, as it contains chalk) and composted bark make good alternatives and can be bought online. Clean the mower Before you make the first cut of the year, check the underside of your lawn mower and grass trimmer and scrape off any old clippings that are stuck to them. It will make the mower lighter to push and more efficient at its job. If there’s one job to resolve to do more often this coming year, regularly cleaning the bottom of the mower is it. Plant hardy veg Whether you’ve grown them yourself or bought in plants, put hardy veg, such as peas, beetroot and lettuce, in the ground as soon as it’s large enough. Cover the plants with heavy-duty fleece afterwards to trap the sun’s warmth and protect them from wind and pests, such as rabbits. Sow veg Broad beans, spinach, lettuce, peas for pods and shoots, onions, salad onions, early brassicas, such as cabbage, calabrese, kohl rabi and cauliflower, turnip, radish, parsley, coriander, dill and beetroot can all be sown in module trays indoors and planted outside when they’re big enough to handle.

Plant them about 40cm apart in rows 45cm apart in the ground. Alternatively, if you’re planning to grow them in pots, use one that’s at least 25cm in diameter and half fill it with a compost for containers. Bury the potato just below the compost surface. As shoots grow, cover with more compost until the pot is full. Cover the young plants with garden fleece if frosts are forecast. Make sure you water the pot regularly so the compost is moist but not wet. By late June or early July, your potatoes should be OK to harvest. Check they’re ready by putting your hand into the pot and gently feeling for the tubers. If they feel big enough, tip out the contents of the pot, otherwise leave them to continue growing.

Thank goodness! Are you looking forward to it as much as I am? I can’t wait! It’s been a dark, damp winter and I’m looking forward to longer days and some warmer weather. Soon, we’ll be waking to the dawn chorus, flowers will be popping up everywhere and we’ll rediscover that spring to our step! Brilliant! That means it’s time for a Spring clean, time to tidy the garden and time for me to stop wearing quite so many layers!

WHAT CAN WE DO DURING LENT?

Spring isn’t the only season in March – it’s also Lent. Are you thinking of giving something up – chocolate, cakes, smoking, alcohol? Even if you don’t follow Lenten traditions, it’s still a good time to consider stopping a bad habit. Or, as my Parish Priest always suggests, you might think of doing something positive, something that would make a difference to someone else’s life? You might spend more time with an elderly relative or some extra quality time with your children. Maybe do a good deed every day. It doesn’t have to be much – pay a compliment, smile at someone and say hello, hold a door open or give

up your seat on the bus. Or perhaps do a good deed for the planet – remember to recycle, think about planting bee-friendly flowers, go on a beach clean – you get the idea.

MOTHER’S DAY Of course, the 4th Sunday of Lent is always Mothering Sunday, which this year falls on March 27th. It’s the first Mother’s Day in 2 years without any Covid restrictions in place! It’s a special day to spoil all mothers (I’m hoping for a bit of that from my two!) so don’t let her cook dinner or do the washing up, flowers and chocolates also work well (just saying!) but most of all spend time together – it’s so precious and costs nothing. And if, like me, your mother has died, it’s also an extra special day for us to remember them and reflect on all the love, guidance and support they gave us. And finally, a Happy St. David’s Day on the 1st March to all you lovely Welsh people – and a Happy St. Patrick’s Day on the 17th to my fellow Irishmen and women. Have a great March everyone!
