Welcome to the June edition of the magazine I hope that you are all well and have had an enjoyable Jubilee bank holiday. I am a huge supporter of the Queen - she has dedicated her whole life to this country and is to be applauded for making such a huge sacrifice. As a nation we will never see the like again - God Bless Her. We have an interesting and varied range of topics in this edition for your enjoyment ranging from Travel Ideas from Marion Owen, in the House & Home column we look at the do’s and don’t of decorating. Royal Jubilations in Beverley’s Past Bunting, Union Jacks and street parties galore! This month we are celebrating the historically-significant occasion of our Queen’s Platinum Jubilee. It is a momentous milestone, as Her Majesty The Queen is the first monarch in British history to reign for 70 years. Previously, Queen Victoria was the only other British monarch to reach the Diamond Jubilee milestone at 60 years, back in 1897, whilst over 200 years ago, George III was the first to reign 50 years in 1809. The East Riding Archives hold many stories relating to royal coronations and jubilees celebrated by Beverley residents from the past. In 1821, Beverley rejoiced the coronation of George IV with a grand procession across the town involving the Corporation,
societies and ‘respectfully invited’ individuals. In 1897, to mark the Diamond Jubilee of Queen Victoria, Saturday Market was full of excitement as children from St Mary’s School gathered. Meanwhile, on the Westwood, sporting events took place including a ‘climbing the greasy pole race’ that earned the winner a copper kettle; a half-mile flat race, with the winner receiving 18 gallons of Jubilee Ale, and finally, a wheelbarrow race, which rewarded the fastest pusher with … a wheelbarrow! On the 13th June 1953, the Goths Lane estate held a party to celebrate our Queen’s coronation with the Beverley Borough Council wishing everyone “enjoy the party wholeheartedly”. Remember when to stop There is an abundance of pattern and colour and the temptation can be to keep adding more and more but rooms need to breathe visually. Consider practicality Remember that what looks great in photos may not be liveable with. Decorate your home for the longer term rather than just with online trends in mind. Experiment with light Try paint colours at different times of the day and night and in different areas of the room. Many people paint on cards or boards to try out but I find daubing new colours on my walls more exciting. Plus then I am committed to repainting. You can always test the paints behind a picture or a curtain so they are not visible all the time. Recycle and upcycle Think about recycling anything you are disposing of from a building project. Can someone you know use a second hand fridge or old curtains or recycle them for upholstery? Something old, something new is not just for weddings!

Copy from the wrong person Don’t try to copy a look for a completely different type of house than yours. Try to do something appropriate to your home and to the style and date of architecture. Work with it rather than against it. I have an old house in Swanland, which is much easier to decorate with colour and pattern than the modernist house I have in Leeds, which has very strong opinions about what it likes and doesn’t like! Settle for shoddy curtains Be careful not to buy expensive curtain fabric and then get them

Use grey It’s so depressing to look at and sucks in the light and there are so many beautiful colours to choose from. House prices have climbed over 2000% since Queen’s Silver Jubilee
A fascinating insight into how house prices have changed between the Queen’s Silver Jubilee in 1977 and today has been released by Mortgage Advice Bureau.
The housing market today is almost unrecognisable from what it was 45 years ago, when the Queen celebrated 25 years on the throne. Now, in the Queen’s Platinum Jubilee year, it is interesting to take a look back at how the UK property market has changed over the decades. Mortgage Advice Bureau has pulled together the statistics using Land Registry data to look at the state of UK house prices with each royal milestone year. It starts with 1977, when the Queen had already spent 25 years on the throne, and the average property cost just £10,926. Fast-forward to today, and this has risen to a whopping £276,755 – an increase
of 2432%. But a lot has also happened in the years in between. House prices at each milestone The biggest jump in house prices from one Jubilee milestone to the next was between 1977 (Silver) and 2002 (Golden). During this 25-year period, property values shot up by 937%, from £10,926 to £113,304. Over the next 10-year gap, though, they climbed at an even faster rate annually. By 2012, the Queen’s Diamond Jubilee, prices had climbed by £102,378 to £170,049 – 1456% from where they first started. The next milestone was just five years later, in 2017 (Sapphire Jubilee), but house prices had again surged to £221,833. This equates to a 1930% increase since 1977, according to Mortgage Advice Bureau.
Finally, the report notes the 2432% increase that has brought today’s property prices up to £276,755, which is £265,829 from where they first started. Buyers shouldn’t be disheartened While the growth in house prices has been positive for homeowners and property investors over the years, it may be daunting to new buyers. However, with price rises being maintained over such a long period of time, ultimately any property you own is likely to increase in value in the long run. Ben Thompson, deputy CEO at Mortgage Advice Bureau, said: “Mapping out the average house prices in each landmark year of her reign just shows the massive surge that has happened, and many will be questioning how much further house prices will rise. “It’s important that buyers don’t get too disheartened by the fact house prices have continued with their extraordinary growth rate, and that there are ways to get onto the property ladder”. Tips for first-time buyers Alongside its report, Mortgage Advice Bureau has revealed its top five tips for buyers who want to maximise their savings to get onto the property ladder.

Cut costs: Prioritising your spending is a good way of saving, says Mortgage Advice Bureau. “Any extra cash you have leftover can then go into a savings account to put towards that all-important deposit.” Save little and often: “Even saving small amounts here and there will make a difference to long-term savings goals. It can be as simple as buying one less take-out coffee a week or going for a less expensive option at the supermarket.” Work out what you can afford: Working out your incomings and your potential outgoings when you secure a mortgage is crucial. There are calculators online to help with this, or you can speak to a mortgage adviser. What You Need to Know
Rob Walls and Janette Wilkinson share their love of all things collectable... There are many things that can easily confuse an antiques enthusiast when their journey into this world begins. I could have done with a small book full of all the perplexing terminology that everyone seemed to know except me. Here’s a few jargon busting tips: A/F When you are looking to buy an item the ticket may read A/F. This means ‘as found’ or ‘at fault’. There will be a small problem with the item such as a small chip, crack, or a missing piece. The price should reflect the damage and may still be a bargain to the buyer. Charlie Ross, on Antiques Road Trip, once bought a damaged Staffordshire elephant for £8, and it sold at auction for £2700.
925 This is seen on jewellery and sometimes other small objects and it means that the item is made from silver. The item may not have an English silver hallmark, but 925 means it is 925 parts silver to every 1000 metal. Items with 925 but no hallmarks can be bought much more cheaply than an item with hallmarks. Sterling silver can be described as American silver. Again, it will not carry a full set of hallmarks.
E.P.N.S. Electroplate Nickel Silver, meaning plate. This is often used for cutlery and tableware. There is a lot of it about and items can be picked up with little cost.

800 can be described as Italian or German silver, it is a lower grade silver (800 parts to every 1000). It will not have hallmarks and can be bought at a bargain price.

R and J Top Tips l Take care when polishing silver. It is a soft metal and if you over polish it, you can rub away the hallmarks. Just try using a soft cloth and not the metal polishes available. Once the hallmarks are over polished, they can not be read and it may affect the value of the item.
WMF This is German silver plate – Wurttembergische Metallwaren Fabrik. This is highly collectable as it is seen as high-quality plate. It is often used for tableware and decorative items and will fetch a good price compared to other plated items.
l Buy a pocketbook of Hallmarks. The internet is good for researching but not so useful in a shop especially if you cannot get a signal.
BPNS This means British Plate Nickle Silver. This plate is used on cutlery and table ware. If you examine it closely you can see the copper or brass under where the silver plate has worn away.
l Don’t be in a rush to scrap items (gold, silver etc) for a quick sale. Stick to scraping broken or unmarked items. The retail value of a good piece will always be above the scrap value. Once an antique piece has been scraped, there is no getting it back.
White metal - this is known as unmarked silver, an item can be tested for its silver value. Indian silver is not usually marked and it’s difficult to tell it apart from plate. If in doubt, take it to a jeweller or gold/silver trader and they will test it for you. When scratched and nitric acid applied it will show red if silver and green if not. This applies to all silver and gold items. Bear in mind that the jeweller will scratch your item with a small file. If you are selling it as scrap, then that’s alright, but you may be upset if it is a special piece of jewellery or item that has now got a scratch on it.
l Silver is silver. 925, British hall marks, Indian silver will all fetch the same price when selling for scrap.

Kia get sporty!
It’s long been a popular model, but for 2022 Kia has introduced a new and better Sportage SUV. Roy Woodcock reports . . . Kia’s biggest-selling car in the UK, the Sportage, has always ticked a lot of boxes for me. It’s a great family car, with loads of cabin and luggage space and that high-up riding position that’s so favoured these days, plus it’s a great workhorse when you need it to be and, despite its relatively large size, is immensely manoeuverable in quite tight situations. The original Sportage was launched in the UK in 1995 and it’s very true that for many years the likely choice would be one with a diesel engine. For the all-new fifth generation version, just making its presence felt on UK roads, the pendulum is swinging very much away from the black pump and towards the electric plug. Yes, there are a couple of diesel options still available in the range (one with mild hybrid technology) but the total choice is now very wide and those looking at some assistance from the national grid can either specify mild or full hybrid as well as, for the first time, a plug-in hybrid version which turns out
to be the most powerful model, delivering 261 brake horsepower. At this stage, there are no plans to offer an all-electric Sportage. I was able to test drive two of the full hybrid models - one with twoweel drive, the other a 4x4 - at a recent event for northern motoring writers in North Yorkshire. And both performed spectacularly well over the quite challenging roads we chose - narrow roads with lots of twists and turns and steep climbs to deal with. The first thing to strike me as we approached our first drive was just how sleek the Sportage now looks, complete with its distinctive new Kia badging, but exuding a muscular stance, too. The new model is actually longer, wider and fractionally taller than the outgoing Sportage, so there’s better head and legroom for passengers as well as more carrying capacity - with all the seats in place you get up to 591 litres of luggage space with a maximum boot area of 1,780 litres when folding the rear seats down. But it’s inside the car where it really scores . . . a high quality, high-tech, driver-centric interior that has been designed for European customers, the first time such a focus has been made in the model’s history. The urban SUV’s cabin fuses together advanced technology, luxury features, premium materials, and modern style, ensuring occupants remain comfortable, engaged, and connected on every journey. On entry, drivers are greeted by a bold, integrated curved display featuring twin high-definition 12.3inch screens, delivering a near-cinematic experience. The digital instrument cluster directly in front of the driver benefits from the latest liquid-crystal display technology for incredibly precise and clear graphics. In the centre is a hightech touchscreen that caters for all driver and passenger connectivity, functionality, and usability requirements.

The ergonomic centre console is optimally positioned for the driver and front passenger to provide further flexible storage. For example, by simply pressing a button, the cupholders located in the centre console rotate outwards, and can be pushed back in when not needed, giving occupants a larger, more practical space in which to store items. The centre console also features the striking shift-by-wire transmission dial. A smartphone charging bay offers high-speed 15W wireless charging – the fastest wireless charger fitted to any new Kia model. Furthermore, the cabin is finished in the highest quality materials, designed to appeal visually and be more sumptuous to touch than in any previous generation. Prices for the new models range from £26,745 for the grade ‘2’ front wheel drive 1.6 petrol and rise to a hefty £43,795 for the top spec (GT-Liner S) 4WD PHEV plug-in hybrid model. In between these
two at GT-Line and Sportage 3 and Sportage 4 but the two extremes will probably qualify for the majority of sales. The Sportage ‘2’ can be identified by its 17-inch alloy wheels, black side sills and wheel arch mouldings, and silver garnishes for the bumpers, upper front radiator grille, doors, rear skid plate and roof rack. This is contrasted by the bodycoloured door mirrors and exterior door handles. The specification also includes automatic headlight control and rain sensing wipers, electrically folding, adjustable and heated door mirrors with LED indicators, LED headlamps and daytime running lights, and a rear high mounted stop light featuring LEDs. Inside, there’s an electronic parking brake, electronic chromic mirror, electric windows all round, steering wheel controls for the audio system, and remote central locking with fold-away key. Sportage ‘2’ models are equipped with black
Motoring premium cloth seats, a driver’s manual seat height adjuster, and leather steering wheel, with a metallic finish to the centre fascia and door garnishes. Android Auto, Apple CarPlay and Bluetooth with music streaming are fitted as standard to all versions of the Sportage, Front and rear parking sensors are bolstered by a reversing camera system that displays on the integrated touchscreen and there’s an impressive raft of safety systems. As you go up the range the “goodies” keep getting bettersmart cruise control, heated front and rear outer seats just two of the things I would pick out but what really impressed me were some of the additional safety features on the two top-range specs. Blind-Spot Collision-Avoidance Assist (BCA), for instance, provides a warning to the driver when operating the indicator, if there is a risk of collision with a rear-side vehicle. After the warning, if the risk of collision increases, BCA actively controls the car to help avoid a collision. BCA is also active in situations such as parallel parking manoeuvres, further helping to avoid collision with rear-side vehicles.
They also feature Kia’s Blind-Spot View Monitor (BVM) system, which further enhances safety and driver visibility when changing lanes by displaying a real-time rearside image of the vehicle in the instrument cluster when the driver indicates. Finally, for navigating into and out of tight parking spaces, drivers can call upon the Sportage’s Remote Smart Parking Assist (RSPA) system to take the hassle out of parking entirely. RSPA is a feature that enables the vehicle to park itself autonomously, whether or not the driver is in the vehicle (from outside the car the manoeuvre is carried out via the key fob). Using surround view cameras and ultrasonic sensors, the Sportage can be driven forwards or backwards in and out of a parking space of a suitable size, with automatic control of accelerator, brakes and gearshift. The technology comes fitted to hybrid ‘4’ and ‘GT-Line S’ models.

Life is meant to be enjoyed! 2 Nurture life None of us would be here without the care, nurture and great generosity of our mothers and mothering figures in our lives. Life is a gift from our mothers, from our ancestors, from the evolutionary process, Mother Earth. When we understand life is a gift, we can begin to understand that caring for others should be an ideal for us all. 3 Trust your body Have you been taught that your body is imperfect? Our bodies are ourselves, and they respond to pleasure and pain and communicate important
information to our minds. When we are dominated, violated or punished, we close the connection to the wellsprings of knowledge our bodies offer us. Then we need healing therapies. Being schooled to obey our parents, teachers and other authorities, we may learn to ‘shut up’, but when we keep silent, we allow ourselves and others to be harmed. When we live fully in our bodies, and when our bodies are connected to our minds, we will find ways to break the silence. 5 Take only what you need Our culture is based on consumption, but in fact everything we eat and everything we buy is part of a process of ‘taking’ from others in the web of life. Indigenous traditions understood this. What would it mean if we as individuals and communities thought about what
we really needed and thought about the lives of others too? Some of us would become vegans or vegetarians, some of us would work less and enjoy life more, some of us would give even more of what we have to others. 6 Repair the web If life is meant to be enjoyed, why is there so much pain in our individual lives, why are so many people poor and hungry, and why is our world
riddled with war? We have been told that suffering is necessary, that it is part of life. Some degree of conflict is inevitable in a world with more than one individual in it, but we human beings have created a great deal of unnecessary suffering ourselves. As John Lennon sang: ‘Imagine all the people living life in peace”. If we all dared to join together, we could create a different, better world for all of us.

World of Wines While sparkling wines are now made worldwide, only wines from the Champagne region of France can legally be called Champagne. French vintners have been jealously defending their proprietary right to the name “Champagne” for over a hundred years. The exclusive use to the name was included in a clause in the Treaty of Madrid (1891), the Treaty of Versailles (1919), and— most recently—has been enforced by order of the European Union. Wines can sparkle, fizz, bubble, and pop, but unless they’re made in Champagne, they’re not Champagne. Today, worldwide, we positively guzzle sparkling wine. Consumption is up 40 per cent in the past 10 years (as opposed to seven per cent in still, non-bubbly, wines). The universal popularity of Champagne and its fizzy relatives owes a lot to widows. The renowned champagne Veuve Cliquot, for example—veuve is French for widow—is named after Barbe-Nicole Cliquot. Widowed in 1805 at the age of 27, Madame Cliquot took control of her husband’s winery and turned it into an international business, inventing and popularising pink Champagne, and devising the technique of “riddling,” which effectively removed sediment from Champagne bottles.
Equally influential was Louise Pommery, who assumed leadership of her husband’s winery in 1860 and created the first vintage brut in the history of Champagne. Today this revolutionary dry style is now the standard in Champagne and rapidly replaced the earlier, sweeter, dessert-type varieties in the international marketplace. So canny and clever were these widows that dozens of Champagne wineries scrambled to name their vintages “Veuve.” Another race amongst the Champagne houses has been taking place in recent years namely to be the first to launch its own English fizz. Claiming victory is that very same Louis Pommery. There are other producers in the wings (with Taittinger planting vines with the intention to release wine by 2023) but this is the first one to market.
Wine Dash is a 5k route through the South Cave vineyard, up and down part of the Wolds Way countryside with the views only interrupted by the wine stations. At each station participants will visit a different wine region and taste wine from across the world, courtesy of House of Townend – it’s a great chance to get friends and family together for a walk with a difference. Set to take place on Sunday June 12 you can choose a start time of 11am, 12pm or 1pm for the 5K. An alternative 15 mile walk sets off earlier in the morning. The cost to take part is £30 per person, if you plan to enjoy the wine, or £15 for those wanting non-alcoholic refreshment. A Dove House spokesperson told me: “Wine Dash is my favourite event, the view from the vineyard is
phenomenal and, touch wood, we have always had beautiful weather. Everyone returns to the vineyard from their walk so happy, it’s such a good atmosphere! It is a great day out whether you are a walker, runner or just there for the wine. And during all of this you are raising money for Dove House Hospice and ensuring that the care provided can continue.” To sign up visit: www.dovehouse. org.uk/winedash * The UK’s largest wine brand, Hardys, is this month launching three new varieties in aluminium cans to tap into the on-the-go market. There will be a rosé, Chardonnay and Shiraz (RRP £2.25 for 250ml). Lindsay Holas, brand manager at Accolade Wines, expects the flexible and convenient format will appeal to younger shoppers, opening up whole host of drinking occasions and audiences for an on-the-go format. “Offering a convenient and easily recycled option, we’re expecting the cans to be a hit at festivals in the next few months, whilst also performing well in retail, with their compact size making them perfect for picnics and outdoor summer occasions,” she said. “Hardys cans uphold the same taste and quality as our standard full sized formats and following on from our new TV advert and marketing campaign, we’re sure they will be a hit with consumers this summer and beyond.” There’s been a 46 per cent growth of light canned wine consumption since 2020, which is now worth around £11.4m a year. * Now then, this sounds like a great idea - a walk in beautiful countryside where you can also partake in a glass or two of wine while raising money for that very good cause that is Dove House Hospice in Hull, who are once again organising their popular “Wine Dash”. It explores the Yorkshire Wolds with a walk through the picturesque Little Wold Vineyard, tasting wines from different regions along the route.
Pommery first started producing English sparkling wine in 2014 in collaboration with local Hampshire wine makers and was the first wine to be sold by a Champagne group under the Louis Pommery England brand, and continues to do so. In 2017 the first vines were planted at the Pommery-owned vineyard Pinglestone estate near Alresford, and now, the resulting fizz has been brought to market - ideal, surely, to be raising a toast to Her Majesty in this, her Platinum Jubilee year. Their winemaker, Clément Pierlot, has applied the same traditional method he uses in Champagne using a classic

blend of Chardonnay/Pinot Noir and Meunier – but this time in Hampshire. And although it’s pricey (currently £35.99 with Ocado and Majestic) this is a lovely sparkler - It’s crisp and concentrated, with notes of waxy lemon, Granny Smith, freshly baked bread and honeycomb. Fresher than most non vintage Champagne, it delivers long and vital fizz.

Erkans’ slow-roasted salmon with potato salad with a dill and mustard mayonnaise Erkan Sahindal - business owner at the Olive Tree on Lincoln Way, Beverley - and accomplished chef shares this super salmon dish with us this month. You can serve up to 10 with this salmon side, or feed even more by buying a larger piece of salmon and cooking more potatoes. SERVES 8-10 PREP 15 mins COOK 1 hr EASY Ingredients 1 lemon, finely sliced small bunch of thyme reserved dill stalks (from the mayonnaise recipe below)
side of salmon (about 1-1.2kg), cut from the tail end 1 tbsp olive oil For the potatoes 1.5kg new potatoes, halved if large 1 tbsp Dijon mustard 1 lemon, juiced 3 tbsp olive oil For the dill & mustard mayonnaise 200g mayonnaise 1 tbsp wholegrain or Dijon mustard small bunch of dill, leaves picked, stalks reserved Method 1 Heat the oven to 120C/100C fan/ gas 1/2. Scatter the lemon slices, thyme sprigs and reserved dill stalks over the base of a large, shallow roasting tin or baking tray. Season the salmon generously with salt and pepper and rub half the olive oil all over the fish. Lay the salmon skin-side up on top of the lemon and herbs. Roast for 45-50 mins until the fish feels firm
and a corner of skin peels away easily. If you have a digital thermometer, the salmon should be at about 55C when ready. Leave to cool slightly in the tin. 2 While the salmon is cooking, tip the potatoes into a pan of cold salted water and bring to the boil. Reduce the heat to a simmer and cook for 10-15 mins until just tender. Drain. Mix the mustard, lemon juice and olive oil together in a large bowl, and season with salt and pepper. Tip the hot potatoes into the bowl and toss to coat in the dressing. Set aside. Can be served hot or made a day ahead and chilled. 3 Carefully lift the salmon onto a serving platter, if you like (it can also be served directly from the tin). Peel away and discard the skin, then use a cutlery knife to neatly scrape away the grey meat on top, leaving the pink flesh underneath. The salmon is now ready to eat warm, or leave to cool completely and eat at room temperature.
Will keep chilled for up to two days. Can be served cold. 4 For the mayonnaise, mix all of the ingredients together in a small bowl. Can be made a day ahead and kept chilled. Just before serving, brush the rest of the olive oil over the salmon and season with sea salt. Serve with the potato salad and dill & mustard mayonnaise on the side. GARNISHING THE SALMON If you like, brush the salmon lightly with Dijon mustard, then scatter with a small handful of dill. You could also garnish with cucumber or lemon slices. EASY MAYONNAISE If you want to have a go at making your own mayonnaise, tip 2 egg yolks and 1 tbsp Dijon mustard into a jug, then pour over 250ml sunflower oil. Blitz with a hand blender, moving it up and down until the mixture has emulsified and thickened. Season. Add 1 tsp white wine vinegar or lemon juice and whizz again.

Easy Ways To Eat Healthily Use these no-fuss kitchen hacks to turn your most-loved dishes into healthy favourites Becoming healthier doesn’t need to be one, big dramatic lifestyle overhaul. The easiest changes to stick to are the simplest ones. Whether that means consuming less meat, choosing wholegrain carbs over their white counterparts or even just upping your intake of leafy green vegetables, there are plenty of ways you can tweak your diet to give your health a boost, as nutritional therapist Kate Arnold explains. 1. Lentil bolognese “One way of reducing your consumption of red meat is to use puy lentils in place of beef or lamb mince in a shepherd’s pie or bolognese sauce,” says Kate. “You can still include all the usual ingredients (think: onions, carrots, tomatoes and mushrooms) but just replace the mince with dried puy lentils and cook them up with the vegetables for around 25-30 minutes. Lentils provide a good source of protein to support energy balance and are full of fibre to benefit the overall health of your gut. 2. Root veg mash Scoring high on the glycaemic index (GI), potatoes – particularly when mashed – release sugar quickly causing a rapid rise in blood sugars, followed by a subsequent ‘crash’. “Swapping your favourite mash potato to a lower GI option made from sweet potato or celeriac can make you less inclined towards winter hibernation,” says Kate. “Sweet potato is also an excellent source of beta-carotene,
an antioxidant which the body converts into vitamin A to support healthy skin, immune health and vision.” 3. Cauliflower rice/pizza “Cauliflower is another useful ingredient and you can use this to replace rice by either grating or blitzing it in a food processor and placing into a frying pan, cooking it gently with a bit of coconut oil or stock until it’s soft,” explains Kate. “You can also use cauliflower to replace a flour pizza base by grating or blitzing it, cooking it for five minutes and then squeezing all the moisture out of it with a clean tea towel. Mix with 100g of ground almonds, two beaten eggs and some dried Mediterranean herbs. Line a baking tray with baking parchment and grease with oil. Place the cauliflower mix into the centre of a baking tray lined with greased baking paper, then spread out into a circular shape. To make a ‘crust’, just make it a little thicker at the edges then bake in the oven for 15-20 minutes until golden. Then you can add your yummy topping and heat up in the oven. Cauliflower is a cruciferous vegetable and contains lots of gut-friendly fibre and immuneboosting vitamin C. Replacing a normal pizza base with cauliflower helps to reduce your intake of commercial white wheat flour and is a lovely low-carb option for an evening meal – and a neat way to increase your overall daily vegetable intake.” 4. Kale crisps Kale crisps are a fabulous potato crisp replacement and are tasty and simple to make. “Cut the leaves from the kale stalks and then rip the leaves into smaller bite size pieces,” says Kate. “Massage with olive oil and spread out onto a baking tray – bake in the oven for 10 minutes on 180C/350F/Gas 4. Then add a little sprinkle of salt
before serving. Kale is another cruciferous vegetable containing fibre, vitamins C and K, iron and calcium. Unlike commercial crisps, homemade kale crisps aren’t ultra-processed either, so won’t contain any added sugar, salt, fat or preservatives which have been linked with obesity, type 2 diabetes and high blood pressure.”
5. Courgetti Another way of increasing your vegetable intake is to use courgetti or courgette strips to replace spaghetti or linguine. “Use a vegetable peeler to peel strips of courgette and blanch them in some boiling water for a couple of minutes before heaping over some delicious bolognese sauce,” says Kate. “Again, this is a lower carbohydrate option than pasta and also increases your daily intake of vegetables. Courgettes have a high water content, so they can support your hydration. They also contain potassium, which may help to support heart health.”
6. Quinoa “Quinoa makes a wonderful replacement for couscous, long grain and Arborio (risotto) rice,” says Kate. “While it may take a bit more time to cook, it is a complete source of protein – containing all nine essential amino acids – and is packed with fibre, vitamins and minerals. You can use it cold for salads or warm with tagines like you might do with couscous. By adding herbs, finely chopped vegetables and cooking it in a little stock, you can give it a more intense flavour.” 7. Creamy cashew sauce Blitzed cashew nuts can make a healthy alternative to a creamy pasta sauce. “Just soak 150g of cashew nuts for a couple of hours and then blitz up in a food processor with 473ml of water or stock and a clove of garlic,” advises Kate. “Add extra ingredients to draw out the flavours, such as pesto or chilli flakes. Heat and dollop over some of the lovely courgette pasta mentioned above! This creamy sauce is a great vegetarian or vegan option for pasta. Nuts are a good source of vegetarian protein and
healthy fats, which contribute to a varied nutrient intake. They are also high in fibre which helps to support gut health and have an abundance of minerals such as magnesium which is required by every cell in the body.”

We visited the Krka National Park . this was a highlight for me. A 2km trail along a boardwalk through a natural habitat for wildlife and fauna whilst amid stunning landscape flowing with waterfalls from all directions. Fish is a staple food and on a visit to a local indoor market in Split we were fortunate to experience sales in full swing. Our Captain was there buying muscles for our evening meaI. It was great to see their produce and mingle with the locals buying fresh fish. Restaurants offered many fish dishes and one I particularly enjoyed when eating ashore one evening was Cuttle Fish Stew served with fried polenta. We also noticed garlic was used in abundance. Freshly made pasta and a good choice of risotto's where always available in most restaurants along with a selection of meat & vegetarian options. Ice-cream is also a big thing with all generations and what a choice of flavours. We had a fellow traveller who enjoyed 3 in one day! We dropped anchor several times in deserted bays for a dip in the turquoise sea. Although very clear it was deep and the bottom often rocky with sea urchins. Beaches are mainly pebbly with a lack of sand. There are over 1000 islands along the coastline so even staying on land a day trip to a nearby island is easy to arrange a the quays are lined with pleasure boats. Our ship carried us in style Lady Eleganza is certainly the right name for her. Everyone returned back to the UK saying it was so good to have been out of the country and had very much enjoyed the change of scenery and for most it was a long time since travelling through an airport which actually was a very smooth process. Let’s get back to travelling this year, a change is definitely as good as a rest and I would recommend a break as a great tonic. There are so many options available to travel around our wonderful world including the UK. We look forward to the opportunity of sending you away and creating wonderful memories for you to treasure. How to create light shade for your garden during the summer Once summer is in full swing, a bit of shade in the garden for sitting out and dining is an absolute must. Garden designer Garry Barker advises on how to do it. One really common request I have from clients is that they’d like somewhere to sit and dine in dappled shade. In a big garden this is easy to accommodate; you can have multiple areas for dining that can be used depending on what the weather is doing and what time of day it is. But in a smaller garden, or if you’re looking for an affordable and straightforward option, it’s a little trickier to get right. If space is limited and you already have shade cast from neighbour’s trees or other buildings you might want something more flexible.
or shaded as desired, dependent on design.” Parasols There’s something really whimsical and timeless about parasols in gardens. “They’re a great idea for small gardens when you want shade for dining but want the flexibility of more sun throughout the day to help your planting thrive” says Garry. I’m a particular fan of the ones with elaborate patterns underneath that look super simple from a distance. A fun surprise when you come to sit down!
The good news is; there are many very pleasing solutions to this, from beautiful parasols to small trees and pergolas. Below are tips for getting light shade in your garden – no matter how big or small your budget and how much space you have to work with. Pergolas Pergolas can have heavy or light frames – both visually and literally. If you go for something sturdy but lighter then it will let more light in and won’t seem like such a big feature in a smaller garden. I often encourage clients to put their dining areas away from the house so you can be more immersed in planting when you’re eating and entertaining. These can also be used to create focal points – in a long thin garden you could centralise your pergola and create a lovely planted vista towards it. “In an urban garden I would be inclined to put up an iron arbour or pergola and grow a climbing rose over it which you can prune so it doesn’t create too much shade” suggests Garry. “Rosa ‘Phyllis Bide’ is a beautiful rose with small flowers and which grows quickly.” Other good options for pergola climbers include “wisteria, clematis, roses, even grapes. Either strung off the house, or free-standing if space allows, they can be as open

Roof form trees Many trees can be trained into all sorts of shapes and sizes, creating a natural living pergola. “The perfect blend for shade and privacy are parasol trees”. “Available in many different species including hornbeam, mulberry, London plane, and ornamental pear to name but a few. “Not only are you protected from the midday sun, but also from overlooking buildings, whilst creating a verdant habitat for bees and insects. All these trees are deciduous, so when the leaves fall, there is obviously less canopy, but also less glare from the sun.” I used roof-form Morus alba in our home orchard project last year, where they create an inviting dining area away from the house. Roof form trees and other living structures like this have a wonderful architectural quality of their own which is an element often missing from smaller gardens. They also add height to

the wider planting, which can help create an illusion of more space, and look brilliant lit up at night.
colour. Dappled shade from silver birches in a small garden are also great.”
Small trees “Trees are the obvious answer for light shade but the tree’s habit should not be too dense” continues Garry. “For example in larger gardens, a cut leaf beech tree casts good shade as does Zelkova serrata and Acer japonicum as they all have an open shape, which filters light along with daintier leaves.”
Potted plants Another option is to use tall potted plants. We often plant up large pots full of bamboo, which creates beautiful dappled shade. Pseudosasa japonica (below) look lush and lovely in pots (but are very vigorous out of pots so beware planting in a planting bed without root barriers). We found our favourite pots at Bell Mills Garden Centre out at Driffield (see their advert on page 17) - which is well worth a visit.
For a smaller space Garry also recommends decorative trees which let light through. “Amelanchier lamarckii is lovely as a a small multi stem specimen tree. April brings a perfusion of star shaped white flowers with bronze tinged young leaves, followed later in the year by striking red autumn

Garden jobs for June
The start of summer signals long days and heaps of sunlight, making it perfect to do a spot of gardening Summer is here and we can’t wait to share with you our tips for making the most out of your garden this June. The sun is shining, fruits are ripe and flowers are in full bloom which means your garden will be attracting admirers both wanted and unwanted! Pests will be lurking to feast on ripe fruits so make sure your garden is protected, whilst you should also take action to make sure that your plants are getting the food and care they need to flourish. 1. Snip off and spray your roses June is the perfect time to deadhead your roses after they have flowered. This is a quick and easy job which stimulates the growth of new blooms and extends the flowering season. Make sure you snip off the old flower at the base of the bloom, this will encourage the plant to send new shoots from the leaves near the top of the bush, producing smaller flowers. Don’t forget to spray your roses too to ensure they remain healthy throughout the drier months.
2. Protect ripe fruits from ravenous pests! Your garden is looking particularly vibrant, packed full of exotic colours and scents, which mean it won’t just be friends and family flocking to enjoy it, but plenty of wildlife too. Birds and other species will be seeking out fruits and seeds to snack on, so be ready to protect your produce. Mesh netting is a great, non-chemical solution to deter pests and allow your fruit to fully ripen. Remember, it’s important to wait until the bees and butterflies have worked their pollinating magic before you cover your plants. 3. Plant out tender vegetables Make sure to plant tender vegetables such as cucumbers, courgettes, and peppers. June is the perfect time to plant up these vegetables as there is a significantly reduced risk of wind

and frost, conditions which are detrimental to the growth of tender vegetables. The hot weather provides the perfect conditions for these vegetables to grow, ready to harvest in the following months! 4. Start feeding and pinch out tomatoes Pinching encourages branching on the tomato plants as by cutting off part of the main stem you encourage the plant to grow two new stems from the leaf nodes below the pinch. Simply use your fingernails to pinch off the new growth at the end of the stem (if you don’t want to use your fingers you can always use a sharp pair of pruning shears!). 5. Feed baskets and containers Check baskets and containers every day to avoid drying out in the hot weather. Ensure that they remain moist but not soggy as over-watering leads to poor quality plants. Make sure to also apply a liquid fertiliser once a week to ensure the containers and baskets maintain optimum conditions for plant growth. 6. Offer your support! June is the perfect time to support your tall-growing perennials. During these warmer months perennials are in full bloom and therefore vulnerable to collapse as their long stems and heavy heads make them top-heavy and prone to flopping. Make sure these plants have plenty of support to stay upright and prevent damage during windy or rainy days by using frames or canes and tying the stems securely using twine. Ideally, you should put any supports – such as bamboo canes – in place before you plant. If you need to put supports up near a wall or fence, place them around 5cm away. 7. Lift tulip bulbs June 21 is the longest day of the year, and the extra light and warmth encourages the garden to

grow. Take softwood cuttings and collect ripe seeds of any flowers you want to grow again next year. Tulip bulbs can also be lifted now, or replanted in a cool, dark spot. 8. Snip, sow and dry herbs Pick and sow herbs. They’re so easy to grow, whether in beds, borders, containers or on windowsills. Herbs grow best with full sun and light, well-drained, moisture-retentive, fertile soil with plenty of organic matter incorporated. 9. Cut lavender for drying If you are thinking about drying your own lavender to make into fragrant pillows and sachets for your drawers and wardrobes, you need to pick the flowerheads before they open – that way, your lavender should retain its strong scent and vivid purple colour. Tie a bunch from the base of the stems with a rubber band and hang in a cool, dark and dry place like an under-stairs cupboard or garage. Leave it for two to four weeks, then it should be ready to use. 10. Harvest and sow salads Cut-and-come-again lettuces, mizzen, rocket and mustard are great options. Snip with scissors, then watch them regrow. As you pick others salads to eat, sow more, to provide you with a constant supply throughout the summer. 11. Put out exotic plants Potted exotics can be fully brought out into the garden. Cannas are a good option for planing out. Place them in a sunny, sheltered spot I’m prepared, fertile, well-drained soil. Their foliage makes a strong statement and they will flower from July to October.
12. Deadheading & cutting back Extend the flowering season of your garden by deadheading and cutting back plants once they have flowered; it may sound brutal but the action will in fact encourage the plants to grow back and to flower again. 13. Cut back beech hedging Start pruning any trained fruit trees and bushes. Before you start cutting your beech hedges and clipping any evergreen hedging, check for any nesting birds; at Highgrove, the clipping and cutting does not begin until July, to leave wildlife in peace for as long as possible. 14. Transplant winter crop seedlings Although early June can be quite wet, night frosts should be well and truly over and any winter crop seedlings can be safely transplanted out into your vegetable beds. 15. Check for bee swarms Insects thrive at this time of year. Check for honeybee swarms – in most cases, the bees shouldn’t bother you if you don’t bother them, but if the nest is causing a real problem, the British Bee Keepers’ Association can put you in contact with a bee collector, who will usually take away the swarm free of charge.

CELEBRATING YOUR WINS Do you every look back on your day, your week or your month and ask yourself: “What have I done well? What have I achieved?” To be honest, it’s not something I’m very good at myself, but it’s something I want to get better at because when you do reflect on what you’ve done, you realise that you should actually be pretty proud of yourself. At that point, though, you have to work out how you’re going to celebrate your win. And when I’m talking about ‘wins’, I’m talking about small wins as well as big ones. Yes, it might be that you’ve won a new client or two at work or you’ve successfully completed a project (and that’s brilliant!) but it might also be that you’ve helped your son or daughter learn to ride their bike or you’ve been there for them, supporting them, as they’ve been revising for their exams. If you’re struggling, feeling down about something or you’re grieving, it might be that you’ve managed to get out in the fresh air today and go for a walk in the woods or your local park. Or maybe you’ve lost a couple of pounds because you’re eating healthier foods and exercising a bit more. Whatever it is, celebrate your win. Fist pump the air, dance to your favourite song in the kitchen (for me, it’s most things by Abba or currently I’m enjoying Shake it off by Taylor Swift! What can I say? My daughter’s a Swifty and it’s kind of caught on!), go out for tea, treat yourself to a chocolate éclair, have a bubble bath. It can be anything, just make sure you do something. You’re doing great!
PLANTING MY HERB GARDEN Many years ago, I lived in York for a few years and I planted a little herb garden. I don’t know why, but when I moved over to the East Riding, I never thought to take cuttings and I’ve never got around to recreating it – until now! I told you last month about the outdoor kitchen my husband is building for us (and I love it!) and I’m finally going to plant a new herb garden. I am so excited! So far, I’ve got rosemary and basil. I use them such a lot in my cooking. I’m thinking I need some thyme, sage and oregano next as well as coriander, parsley and mint. Maybe even some chamomile – I like a soothing cup of chamomile tea. Do you grow herbs? What are your favourites and how do you grow them? Pots? Window box? Raised bed? If you have any tips, I’d love to hear them.
WHAT ARE YOU WATCHING AT THE MOMENT? I really need to go to the cinema. I’ve missed the new Downton Abbey film and haven’t seen the latest Dr Strange instalment either. I also need to see Top Gun Maverick as soon as possible! There’s been a lot going on and I haven’t had the chance. In the meantime, I’m looking forward to watching the new Obi-Wan Kenobi series on television, then later in the year, the Game of Thrones spin-off House of the Dragon and the Lord of the Rings series (although I’m a bit worried I won’t like it because the films were so amazing!).
