Inspiration Belgian Dark Ale

This beer gets its name from a new hop variety named “Mosaic,” which is predominantly where the immense, raw hop aroma and flavor is derived. Mosaic IPA has a noticeable malt backbone to help soften the high level of hop bitterness and flavor, while keeping the body fairly light.

This warm weather libation is brewed it traditionally using unmalted wheat as our base and lightly spice the kettle with freshly ground sweet and bitter orange peel and coriander seed. The hops are minimal, keeping the focus on the wheat, spices and the unique character contributed by authentic Belgian yeast strains.

In honor of all things inspirational, we offer this Belgian Style Dark Strong Ale. The deep ruby hue comes from the use of several English and Belgian crystal malts as well as a touch of roasted malt. The rich malt character is balanced by a high ABV, a blend of highly attenuative and expressive Belgian yeast strains, and just the right amount of hops.

After years of bastardization and watering down, mostly by earlier American brewers, the style has been taken back to its former glory world wide. We’ve decided to take it further and reinvent American-style Pilsner. Unfiltered, dry hopped, mashed with rye malt and brewed with American hops of noble Germanic descent.

With summer fast approaching, we wanted a beer in our lineup that we could drink all summer long. Neato Bandito to the rescue! Neato is Deep Ellum’s interpretation of a Mexican Style lager. Light in color, but big in flavor, Neato Bandito wants to help you enjoy all of your summertime activities! Viva la RAZA!

These brews are usually only wine-like in alcoholic content, they are all beer. In fact they are biggest baddest brews in the Pale Ale family. Malt flavors, hop bitterness and aroma, yeasty esters, everything has been turned up to ’11’. Our Numb Comfort is the continuation of the American interpretation of the style originally of British origin.

Abbey’s Single Belgian Pale Ale

Weissenheimer Hefeweizen

A Belgian-style abbey ale crafted like those that Trappist monks brew for their own session beer. It is light bodied, light in color and relatively lower in alcohol with spicy phenolics and complex fruity esters of cherries, nectarines, peaches and bubblegum with a characteristic slightly tart and dry finish from the Belgian yeast.

Our Leipzig-Style Gose undergoes a spontaneous fermentation and exhibits a complexity of acidic, flavor and aroma contributed by wild yeasts and bacteria in the fermentation. Gose is pale gold in color, has a fuller mouthfeel from added oats, and its hop character and malt flavors & aromas are negligible.

The aroma and flavor of this classic hefeweizen are decidedly fruity with clove, nutmeg-like and even vanilla-like phenolics. Banana-like esters are also present. This beer is made with over 50 percent malted wheat, and hop rates are quite low, with hop flavor and aroma being absent.

Opal is an unfiltered interpretation of the classic saisons that originated from the 18th century farmhouses of southern Belgium’s Wallonia region. In true agrarian beer fashion, Opal is loaded with rustic grains and spicy Belgian yeastiness, with a hazy namesake opalescence in the glass.

DBA is the trailblazing flagship beer that started it all in 1996. Partially fermented in our patented Firestone Union oak-­b arrel brewing system, DBA quickly took the Central Coast by storm and set the pace for future beers to come. Pale malts create a smooth middle with ribbons of caramel, English toffee and toasted oak.

A riff on the familiar Black IPA style, Wookey Jack is gnarly on the outside yet refined on the inside. Malted Rye and a dash of Cara Rye impart a spicy grain quality to the palate, while double dry-­ hopping with Citra and Amarillo hops brings a citrusy dimension to the aroma profile.

World Tour Belgium Belgium Ale

Franconia’s early spring beer is a light golden German style Pils. Brewed with traditional Cech Saaz Hops and a german Lager yeast, this a true German pilsner with a nice hop aroma and dry finish.

A German “Dunkel” (dark) brewed as a Lager with Two Row Malt, Munich Malt and some Roasted Malts. Spiced up with German Hops from the Hallertau and a German Lager Yeast gives this Brew a nice dunkel (dark) color and some Malt sweetness with a nice finish of balanced Hops and a little chocolaty tast for the finish.

Belgium is the next stop on the World Tour. Brewed with a mix of pale and pils malt, a traditional yeast strain and a single hop variety, this beer is fruity and funky, with a touch of spice. The funky comes from the yeast while the fruit and spice comes from the hop known as Nuggetzilla, which gives the ale a pop of pineapple flavor.

We ran the wort through 50 pounds of whole leaf Chinook and Columbus using our giant hop back. And then generously dry-hopped with Chinook and Columbus in the fermenter.

Our American Pale Ale is golden in color, mildly bitter, and characterized by floral/citrus-like aromatics which are the result of an additional dry hopping with a very large amount of Cascade Hops. Crisp, crystal clear, and completely enjoyable. Currently, the top selling beer within our Nebraska brewpub.

This medium to fullbodied beer, pale to golden in color, is most accurately described as a Bavarian wheat beer. The aroma and flavor of this unfiltered beer is decidedly fruity and spicy evoking tastes and aromas of cloves, nutmeg or sometimes vanilla with banana-like esters. Somewhat sweeter in style with a barely noticeable tartness.

Our version of the classic English-style Brown Ale has a blend of six different malts and a hop schedule that results in a low hop character. The unique malt character brings to mind the taste of a blend of various nuts. Coffee, toffee, caramel tend to come to mind in this excellent session Ale.

This titanic, immensely viscous stout is loaded with inimitable flavors of chocolate-covered caramel and coffee and hide a hefty 65 IBUs underneath the smooth blanket o f malt. Ten FIDY (10.5% ABV) is made with enormous amounts of two-row malt, chocolate malt, roasted barley, flaked oats and hops.

Our “Velvet M-80” is a hefty, dry hopped double-red ipa with a nose full of aroma, a sticky mouthfeel, a malty middle and unctuous hop flavors. G’Knight sports a surprisingly sensuous finish for a beer of its size. It’s brewed in tribute to a fellow Colorado craft beer pioneer and Vietnam vet.

This drinkable IPA uses several varieties of hops to target the ever-evolving flavor. With tropical fruits, citrus juices, pineapple and spice berry up front in the aroma and flavor, the biscuit & toasted bread at the back balance out all the hops and make a great finish to go on to your next can of PINNER. It’s the perfect beer for a little sip, sip, give.

Hatter is crazy about time, and about finely crafted beer. The Rabbit Hole Brewing 10/6 English IPA features a prominent English hop character supported by a smooth, bready malt backbone. This Rabbit Hole Ale is crafted with the finest floor-malted Maris Otter winter barley and flavored with three different varieties of English hops.

This ale was inspired by the most august of abbey brews and is a mystery worth exploring. A bounty of dried fruits, subtle roastiness, and a surprisingly dry finish combine for an ale of delicious dark complexity. All of this is complimented by the spiciness and fruit character provided by our house Belgian yeast strain.

Inspired by the pilsner beers of Northern Germany, Hans is crisp, brightly hoppy and full of flavor. At 50 IBUs and featuring Tettnang hops, it’s even hoppier than many pale ales. The German malt helps create a nice pale golden color and provides the perfect companion to the hops.

This noble brew evolved from its common cousins, porter and stout, by necessity to endure the long voyage to the Russian royal court. Colossal additions of American hops are used to balance the robust malt character and infuse this ale with their distinctly citrus-like qualities. The Commissar can be consumed now or laid down for further enjoyment.

Bishop’s Barrel 13 Belgian Quadruple

Boiler Room is a light bodied but surprisingly flavorful sour wheat beer. The sourness is created by souring the wort prior to boiling and fermentation (unlike Belgian-style sours which sour during fermentation and have active bacteria in them when packaged).

A double IPA, the color is deep amber with a light, creamy head. The nose starts off with a touch of citrus but then turns decidedly into peaches. This beer is best enjoyed at 45° or even a little warmer. Though the recipe and style indicate this beer to be enjoyed fresh, we expect this beer to develop interestingly over the years.

Saint Arnold Brewing Co., the oldest craft brewery in Texas releases Saint Arnold Bishop’s Barrel No. 13, the latest offering from the brewery’s barrel aging program. This is a Belgian Quadrupel, originally released three years ago as Divine Reserve No. 13, that has been aged for 13 months in bourbon barrels from Woodford Reserve.

On our search for the perfect warm weather beer, we wanted something light bodied and thirst quenching, yet filled with complex and interesting flavors. We stumbled across the fruit of the prickly pear cactus. This tangy fruit is a great complement to the tart and refreshing traditional gose style beer, combing prickly pear cactus with a hint of grapefruit.

Since their invention in the 1840s, Pilsener-style beers have become the world’s most popular style. Summerfest is brewed to feature the best of Bohemian nature. Crisp, golden, dry and incredibly drinkable, Summerfest has a delicate and complex malt flavor and spicy and floral hop character—the perfect warm weather beer.

Bigfoot is a beast of a beer, brimming with bold flavors of bittersweet malt and heaps of aggressive wholecone Pacific Northwest hops. First introduced in the winter of 1983, Bigfoot is a cult-classic beer brewed in the barleywine style, meaning a strong, robust, bruiser of a beer with the refined intensity of a wine.

Buried Hatchet Imperial Stout Dark brown in color, this monster smells of coffee and chocolate. The taste is much of the same, with hints of creamy toffee and roasted malt. Smooth and delicious, this medium bodied ale is all about the malts, but has enough hop bitterness to be balanced.

D efi ni ti ons Alcohol by volume: Amount of alcohol in beer in terms of percentage volume of alcohol per volume of beer. Ale: Beers distinguished by use of top fermenting yeast strains, Saccharomyces cerevisiae. The top fermenting yeast perform at warmer temperatures than do yeast’s used to brew lager beer, and their byproducts are more evident in taste and aroma. Fruitiness and esters are often part of an ale’s character. Barley: A cereal grain that is malted for use in the grist that becomes the mash in the brewing of beer. Bitterness: The perception of a bitter flavor, in beer from iso-alpha-acid in solution (derived from hops). It is measured in International Bitterness Units (IBU). Body: Thickness and mouth-filling property of a beer described as “full or thin bodied”. Carbonation: Sparkle caused by carbon dioxide, either created during fermentation or injected later. Dry-hopping: The addition of dry hops to fermenting or aging beer to increase its hop character or aroma. Ester: Volatile flavor compound naturally created in fermentation. Often fruity, flowery or spicy. Hard Cider: A fermented beverage made from apples. Hops: Herb added to boiling wort or fermenting beer to impart a bitter aroma and flavor. IBU: International Bitterness units. A system of indicating the hop bitterness in finished beer. Lager: Beers produced with bottom fermenting yeast strains, Saccharomyces uvarum (or carlsbergensis) at colder fermentation temperatures than ales. This cooler environment inhibits the natural production of esters and other byproducts, creating a crisper tasting product. Malt (ing): The process by which barley is steeped in water, germinated, then kilned to convert insoluble starch to soluble substances and sugar. The foundation ingredient of beer. Mead: Meads are produced by the fermentation of honey, water, yeast and optional ingredients such as fruit, herbs, and/or spices. According to final gravity, they are categorized as: dry (0.996 to 1009); medium (1010 to 1019); or sweet (1020 or higher). Wine, champagne, sherry, mead, ale or lager yeasts may be used. Mouthfeel: A sensation derived from the consistency or viscosity of a beer, described, for example as thin or full. Yeast: A micro-organism of the fungus family. Genus Saccharomyces.


Beer St yles What’s an Ale? This category of beer uses yeast that ferments at the “top” of the fermentation vessel, and typically at higher temperatures than lager yeast (60°-75°F), which, as a result, makes for a quicker fermentation period (7-8 days, or even less). Ale yeast are known to produce by-products called esters, which are “flowery” and “fruity” aromas ranging, but not limited to apple, pear, pineapple, grass, hay, plum, and prune. American Ales

What’s a Lager? The word lager comes from the German word lagern which means, “to store”. A perfect description as lagers are brewed with bottom fermenting yeast that work slowly at around 34 degrees F, and are often further stored at cool temperature to mature. Lager yeast produce fewer by-product characters than ale yeast which allows for other flavors to pull through, such as hops. American Lagers
