arewashing machines are vital to any commercial kitchen, and their installation and maintenance should be undertaken by qualified engineers. Many factors need to be considered when setting up a glass or dishwasher, such as their location within the kitchen, water type for the area, expected frequency of use and the type of menu being offered as certain food and drink residues need specialist machine programmes to get properly clean. The correct set-up of a machine will

result in its optimum operational efficiency. Derek Maher from Crystaltech advises, “We recommend that any installation company should use a company that is SsiP approved and its engineers should hold the relevant industry standard qualifications. Our nationwide team of more than 50 engineers are all DBS approved and are on call 24/7 as we know how important it is to minimise the downtime of any machine in a busy bar or foodservice environment.”

As an expert within the industry, Derek and his team are passionate about achieving flawless results as dirty glasses and tableware reflect poorly on the cleanliness of a pub, bar or restaurant. The hotel has been in Suzy’s family for three generations, and James told us, they have been dealing with Armstrong Commercial Laundry Systems for as long as they can remember. The basement laundry handles all the washing for the 23 bedroom hotel including bed linen, towels, bathrobes, table linen for the restaurant as well as events and weddings, kitchen items and personal laundry for residents if

Laboratory scale spray dryer T

he Labtex ESDTi laboratory scale spray dryer is a self contained unit designed to produce powders from liquids in seconds! It is compact in design and quiet in operation. The unit incorporates all parts necessary for the spray drying process and allows control of inlet temperature, liquid sample flow, drying air flow and compressor pressure. The ESDTi spray dryer is manufactured using the highest quality materials including 316 stainless steel, PTFE and borosilicate glass 3.3. A compressor is included inside the unit. How spray drying process works Spray drying involves three fundamental processes: liquid atomisation, evaporation and separation/collection of the dried product.

2

The material to be dried is sprayed into a vertical drying chamber. At the same time a large volume of hot air is fed into the chamber to evaporate the liquid content of the sample. On completion of drying, the hot air and solids are separated in a glass cyclone. Applications The most successful drying applications for spray dryers are for solutions, slurries and pastes which a) cannot be dewatered mechanically b) are heat sensitive and cannot be exposed to high temperatures for long periods or c) contain ultrafine particles that will agglomerate and fuse if dried in any state other than a dilution. Manufacturing & Machinery Matters

The latest developments in Advanced Process Control in evaporator/spray drying S

pray drying is used in the manufacture of a wide range of high-value items, from dairy products to food flavourings to pharmaceutical ingredients. This is a complex and energy-intensive process, using fixed assets that are difficult and costly to upgrade or replace, as demand increases. Perceptive Engineering has developed a suite of software and engineering tools to increase the yield, throughput and efficiency of the entire drying process, resulting in lower energy consumption, more consistent product quality and less waste. This software-based upgrade is a low-cost, low risk alternative to capital expansion, typically offering a return on investment of 3-6 months. Both the dryer and evaporator have three key phases of operation: the crucial start-up phase, when product feed is first introduced to the process unit; normal operation, when disturbances such as tank changes and shifts in ambient temperature or humidity give rise to process and quality upsets; unit shut-down, when the feed product transitions from concentrate back to water. This article will describe one of the solutions developed to address the first critical stage: process start-up.

Each production unit is brought online through a series of small, carefully-controlled step-changes. With the Evaporator, the challenge is to avoid conditions that increase the risk of fouling. An over-aggressive start-up on the evaporator will increase fouling very early in the production run; this will shorten overall run-time before cleaning is required, reducing overall equipment effectiveness. In the dryer, aggressive starts frequently lead to either scorched product which fails quality tests, or over-moist product which blocks the dryer. Either way, production capacity is severely compromised and waste or re-work rates are high. Model predictive control (MPC) has been used in the optimisation of spray dryers and evaporators for more than twenty years. Through a series of response step tests and using sophisticated modelling techniques, MPC can determine in advance the sequence of control moves necessary to push the evaporator or dryer closer to their

constraints, and then keep them there. MPC is able to execute multiple coordinated control moves continuously during production. This constant fine tuning of the process would be impossible for an operator to replicate, which is why more manufacturers are exploiting the technology to gain a competitive edge. Perceptive are renowned experts in deploying MPC programmes for a wide range of global clients. They have been selected by Abbott Nutrition, Danone and Wyeth as APC provider for the manufacture of high-value infant formula in North America, Europe, Singapore and China. Perceptive Engineering has now perfected the techniques for taking control of both the evaporator and dryer much earlier in the production cycle, by modelling – then optimising

– each unit as it moves through the start-up phase and on to stable operation. This expertise has been captured in the latest release of Perceptive’s award-winning software. Perceptive’s system enables faster start-up and shorter times between batch or grade changes, enabling more agile manufacturing. Pushing the process closer to constraints, without compromising quality, provides an increase in powder rate of up to 15%. Tighter process control reduces product variability, increases yield and reduces specific energy. As a result, these advanced control schemes normally return their investment within 3-6 months. Global Producer of Ice Cream R

&R Ice Cream, the World’s third largest ice cream manufacturer, has completed a four year, £25 million investment programme at its Leeming Bar factory in North Yorkshire which includes an on-site effluent treatment system, designed, built and commissioned by filtration specialists, Axium Process. The investment programme helped R&R to increase its production capability at the site by more than 20% and meant that the capacity of Axium’s on-site effluent treatment plant had to be increased from 600,000 litres to 1.5 million litres per day. The effluent treatment plant was expanded with very little disruption to R&R’s daily production and uses primarily both Ultrafiltration (UF) and double pass Reverse Osmosis (RO) separating technology. The 2.5 fold expansion scope of supply also incorporated fully automated additional processes designed, installed and commissioned by Axium Process to further enhance the quality and condition of the raw effluent entering the membrane system; removable sump debris catcher, aeration and mixing of large effluent holding tanks, triplex liquid solid separator pre-filtration, vertical shell and tube pasteurizers system (powered using excess heat from an onsite CHP plant), temperature controlled air cooling system and a pH adjustment tank were all new additions to the plant and located on the same size foot print as the old plant. Temperature and humidity data loggers T

he OM-90 Series of portable, batteryoperated temperature (OM-91) and temperature/ humidity (OM-92) data loggers are available from Omega. Temperature is measured to an accuracy of ±0.3°C across the range 5 to 60°C and ±2.0°C over the full range of -30 to 80°C. Relative humidity is measured to an accuracy of ±3.0% RH over the 20 to 80% RH range and ±5.0% RH over the 0 to 100% RH range. Both temperature and relative humidity are logged at a user configurable logging rate which is software selectable. These data loggers are suitable for transportation applications where it is necessary to document that the material in-transit has stayed within particular environmental limits. High/low alarm limits can be set – above or below which LED indicators will be activated. Each data logger can be assigned a 16 character name. This can be helpful in applications where multiple data loggers are used and there is a need to distinguish between them (for example based on location). The data logger includes an easy-to-use software application. This is used for configuration of the logger, extraction of logger data, graphically viewing data, spread sheet analysis of data and saving data to file (typically in comma separated value CSV file format) for third party applications such as Microsoft Excel. Dairy Supplier of the Year

Enabling Local Supply on a National Scale I

DC Limited has been selected as the company most deserving of our prestigious Dairy Supplier of the Year award, we are most pleased to announce here at Food and Drink Matters. We are subsequently keen to tell our readers more about the organisation and its services whilst paying particularly close attention to one of its most prominent divisions, Café-milk. Satisfying the needs of cafés, coffee shops and tea rooms, Café-milk supplies fresh milk daily to independent establishments across the UK. Having worked with local dairies since 1995, the company was set up to provide better prices and better service to businesses both large and small. “The most important thing for any café is to have a daily supply of fresh milk,” commented Tim Marland, Business Development Director at Café-milk. “Our many dairy partners throughout the UK allow us to supply fresh milk as well as other dairy products to coffee shops nationwide. “Over the last 12 months, a growing number of independent cafés and tearooms have joined Café-milk for the supply of this most essential ingredient. The UK is home to around 18,000 cafés, half of which belong to the big groups and the other half are independent. Our aim is to help the independent cafés compete with the large groups by providing improved buying power.” As well as being a dedicated supplier of cafe products, the company strives to reduce administrative burdens through single statement and payment. Customers receive weekly statements that will allow them to check purchases and with extended credit, are able to enjoy better payment terms as well as improved profit. When discussing the organisation’s performance in recent times, Tim told us that he was very happy with the progress made thus far, “We are pleased to confirm that our sales have increased by 22%, which is actually a whole 7% ahead of our forecast,” he said. “Despite this success, however, we must admit that 2016 has been a very tough year. We are currently in the middle of a hard fought price war between the supermarkets which in the early part of the year saw retail prices slashed to a 10 year low. “These unrealistically low prices make it tough for farmers to profitably produce while at the same time squeezing margin for suppliers because of the impractical supermarket comparison. The weakened pound means it is easier and more profitable to export

milk and milk products; this will result in less milk being available in the UK, which, when coupled with the increasing fuel and packaging costs, can only lead to increased milk prices for the end user.” In other news, Café-milk is now able to cover individual catering and cleaning requirements, enabling customers to purchase grocery products such as bacon, eggs, cheese, tuna, baked beans and many more through utilising their personal Café-milk account. The Café-milk contract is one of the most significant partnerships that IDC (formally the Independent Dairy Consortium) holds. Operating in the interest of the customer, consumer and the supplier combined, the Buckinghamshire-based business is a commercially driven entity that provides structure and support whilst forming connections between small enterprises and big clients. The company is renowned for distributing fresh milk and other supplies to not only cafés and coffee shops but also to restaurants, schools, nurseries, care homes, hospitals (basically, anywhere that requires such products and wishes to benefit from these exceptional services). Organising deals in relation to dairy products, fruit, vegetables, meat and baked goods, IDC boasts years of experience trading with independent dairies and prides itself on working with an extensive supplier network comprising hundreds of local and regional suppliers.

If your business requires regular deliveries of fresh milk, fruit, vegetables, meat or any other grocery or cleaning products and you wish to take advantage of this fantastic service, please don’t hesitate to get in touch with their business development or customer service teams who will be more than happy to assist with any questions or enquiries. Day of debate at Fruit Focus 2016 F

“This year’s Fruit Focus has again showed us that technology and research is strong in our sector, driving season length, quality and innovation. We saw tremendous interest from visitors in our new instore Coolio unit which has proved very effective in driving impulse purchases at supermarket checkouts.”

ruit Focus 2016 brought sharp attention onto Brexit and how the industry is formulating its position; ensuring those charged with creating the UK’s new agricultural policy understand and takes account of the sector’s key issues. Under the hot July sun the fruit industry came together in record numbers to share views, test new technology, debate new research and gain knowledge and connections. With an attendance of over 1,300 visitors, Fruit Focus again delivered a backdrop for the sector to demonstrate its vibrancy and seek to take advantage of the enormous opportunities that exist. “Consumer demand for berries continues its significant growth,” commented Nick Marston, Managing Director of Berry Gardens. “The

market is now worth over a billion pounds, with growth of 17.7% in value year on year with significant opportunities across many categories.”

This is our first pick of the best exhibitors from this year’s show, listed here in alphabetical order: Actionpoint, Agrimac UK, Biobest Group, Britama Forklifts, Carolus Fruit Trees, Clemens Online, Engage Agro Europe, I Water Group, James Hutton, Legro, McAirlaids, Oro Agri & RBSM. Further details are found on the next page and a half. www.fruitfocus.co.uk

Forklifts on the Frontline C

olchester-based Agrimac UK is the sole approved importer of the full range of Agrimac rough-terrain equipment, dumpers, forklifts, mini tractors and two-wheel tractors. The forklift range has a 1,600-3,500kg lift capacity and duplex or triple masts with various lift heights up to 6m. It’s made in Western Europe with well-proven components such as Perkins engines, Deutz on the larger machines and Bosch Rexroth transmissions. Selectable 2 and 4wd is standard, as are road lights and a side-shift function, while a full cab, heating and air conditioning are

available as options across the range. Fulfilling a demand for compact, manoeuvrable machines, the forklifts are capable of working where space is restricted: the most compact TH-175C version is just 1,300mm across, while the others are 1,600mm wide. They're designed to be user and mechanicfriendly, with no electronics. This makes them ideal for aid work and TH-210s have been deployed in the aftermath of disasters in Nepal and the Philippines, for example, as part of a four-year contract to supply the UK Government with these 4x4 models. Forklift retail prices start at £21,000 for the

entry-level model. Full technical support and spare parts are available. Contact T +44 (0)1206 795111 info@agrimacuk.com www.agrimacuk.com

oft fruit growers worldwide are increasingly opting for cultivation on substrates to optimise production and yields. Legro produces highquality, user-specific substrates for each crop. Growing strawberries in substrates has two big advantages: strawberries can be grown anywhere and it is easier to control the crop. “On substrates you can give every plant the optimum amount of water and nutrients,” says Dorus Verhoeven from Legro Sales. “This improves their development and creates healthier plants, which produce a more consistent crop and higher yields.” Strawberry plants place high demands on a substrate. Legro

Legro also carried out extensive research into the optimum blueberry substrate, aiming to develop a substrate which could grow blueberries for at least six to eight years. This has been successful. Condensation a problem? C

ondensation in retail food packs is a growing problem due to longer shelf life demands, wide temperature variations and new packaging styles. Berries for example continue to breathe after packing, and weather conditions during picking can raise humidity in packs. Moisture is released into the air, and new MAP techniques to extend shelf life make it difficult for this to escape. Condensation forms on the punnet walls and lidding film, dripping onto fruit, and the net results is poor aesthetics and faster mould growth. To combat these problems, McAirlaid’s developed FreshGuard HC – humidity control

pad. Our main goal was to maintain the quality of berries while reducing mould and improving pack appearance. FreshGuard HC does this by actively absorbing water vapour in packs, plus absorbing any liquid that condenses. It offers the same excellent cushioning protection and absorbency of berry juice as the successful FruitPad. Extensive testing has proven a significant reduction in condensation in MAP packed berries with resultant reduction in mould and fruit waste. Similar waste reduction and presentation benefits can be achieved for other food groups suffering from condensation. McAirlaid’s FreshGuard HC runs on all

industry standard machinery and is available now in rolls or cut pieces. T +49 (0)2552 93340 www.mcairlaids.net

Luke Pollard, Director of Actionpoint said, “We want to cater for large and small producers alike. eedsbased Samuel Grant Packaging is delighted to announce their new collaboration with the United Bank of Carbon – a registered charity run from the University of Leeds that helps forge partnerships between businesses and international conservation initiatives.

Committed to helping companies to reduce packaging waste, and therefore their environmental impact, Samuel Grant Packaging’s consultants conduct audits of companies’ complete packaging processes. In doing this, they are able to point out potential reductions in the need for packaging; suggest leaner processes; standardise products; reduce deliveries; recycle more; and reduce waste. There is no cost for the audit. Following the audit, and subsequent reductions in both cost and CO2 emissions caused by excessive packaging and waste, the United Bank of Carbon will suggest ways in which the financial savings could be partially invested in environmental projects both in the UK and internationally. These partnerships with environmental projects can be used to offset the company’s carbon emissions, and further raise their Corporate Social Responsibility (CSR) credentials. www.samuelgrant.co.uk www.unitedbankofcarbon.com

ackaging manufacturers are working smarter than ever before to develop packs that are lighter, stronger and more recyclable. Packs also need to be fit for purpose in terms of protecting, preserving and presenting bakery products. But what is the best material to use? Fresh food packaging manufacturer LINPAC takes a look at the benefits of Polyethylene Terephthalate (PET) for the bakery sector. The challenge for packaging manufacturers is to develop pack solutions that address the protection and presentation needs of delicate bakery and patisserie products, whilst minimising their environmental impact. LINPAC believes the packaging material

that provides the best presentation and protection to fresh, chilled and delicate bakery products is PET. PET is renowned for being a strong, lightweight and high barrier material that is fully recyclable. Its distinct crystal clear nature also ensures products look fresh and attractive to consumers.

The LINPAC commitment to innovation has been recognised at the 2016 UK Packaging Awards. The company has been shortlisted in three categories: Packaging Company of the Year, Rigid Plastic Pack of the Year and Resource Efficient Pack of the Year. The recognition is partly due to the launch of the LINPAC poultry split pack developed in collaboration with Tesco and Cargill to provide convenience to the consumer through portion control and to address food waste issues. The company's response to the core societal issue of food waste is particularly pertinent in today's market. A recent international survey by Euromonitor found that 64% of respondents try to have a positive impact on the environment on an everyday basis. However, whilst most consumers actively try to have a positive impact, they still place financial constraints, logistical issues and convenience over helping the environment.

With its novel Tesco Cargill split pack, LINPAC offers the consumer both strong environmental credentials and outstanding pack performance. Dr Roberts commented, “As advanced as our expertise in packaging is, we need to stay abreast of wider societal and economic developments. “Rather than innovation for innovation sake, we need to continually listen to the market to enhance our core offer and maintain a market leading edge. Our focus on true innovation is the driving factor in allowing us to support retailers and brand owners in growing consumer satisfaction and conversion.” The LINPAC Tesco Cargill split pack has a specially designed perforation that allows the consumer to split the tray into two separate sealed compartments. This gives the householder the option to exercise portion control as well as prevent food waste by saving one chicken breast for later. The introduction of the new design did increase the weight of the pack by 6 grams. However, the pack is predicted to deliver a net carbon saving of up to 12, 4,000 tonnes, offsetting the impact of the additional material used. In addition, the MAP tray is manufactured from high levels of supercleaned, postconsumer recycled PET and is fully recyclable at the end of its life, supporting the wider circular economy. Dr Roberts added, “To have a far reaching effect, LINPAC innovation should address core environmental and sustainability issues whilst minimising resources and adding value. Premium Pie Producer of the Month

Multi-Award-Winning Pies A

t Food and Drink Matters, we enjoy promoting the most successful businesses positively impacting the marketplace and so we are most delighted to feature Topping’s Pies as our duly deserved Premium Pie Producer of the Month. The family-run company, which is currently in its third generation, has roots dating back to 1961. It all began with Bill Topping in South Yorkshire, who set up his own butchers shop in a quaint suburb of Doncaster. Many years later current owner Roger Topping decided to diversify the offering available with a selection of homemade savoury pies, effectively responding to the industry decline experienced in the 90’s. Roger’s wife Maggie, a passionate baker, proceeded to develop a line of traditional pies using original family recipes inspired by historical periods (namely the Tudor and Victorian times). The range of handfinished pies and quiches proved to be a great success, and so in 2000 the team joined the Yorkshire Pantry and became a wholesale business operating with its own 5,000 sq. ft. bakery. Further growth ensued and Topping’s Pies is now a multi-award-winning enterprise – having won 45

trade awards (including the prestigious 3 star Gold Great Taste Awards granted by the UK’s Guild of Fine Food) – that occupies a production facility spanning 11,000 sq. ft. This popularity has enabled the group of experienced butchers and bakers to competently fulfil the needs of retailers, independents, wholesalers and exporters (upmarket delis, farm shops, supermarkets, cruise ships and garden centres included). When asked about the secret of the organisation’s success, Roger commented, “I would say we stand out for the great amount of attention we pay to our products. We use only the best British ingredients – including British Red Tractor pork and British diced Chuck – because we want to offer food of the highest possible quality to our customers. A completely different eating experience is also offered with Topping’s Pies because we produce a different kind of pastry; as opposed to the typical shortcrust, we prefer to use hot water pastry.” The mouth-watering selection of products includes quiches, pork pies, specialty dinky topped pork pies, speciality pork pies, speciality cutting pork pies, celebration pork pies, hot eating pies & savouries and a specially adapted line of Christmas-themed creations. The premium snacks, which are made using

locally sourced meat and poultry, have graced the deli counters at Selfridges, Harrods and Booths. When asked to discuss what lies ahead for Topping’s Pies, Roger was keen to discuss product expansion in particular, “Next year, we are looking at developing a new range of quiches and hot pies,” he informed us. “We are considering recipes with ham hock and smoked salmon, and we are looking into the possibility of using butter pastry. “Our other plans for 2017 involve a predominant

focus on targeting the garden centre market – we have experienced a surge in this sector with the successful acquisition of an 11ft counter at Bents Garden and Home in Warrington – and we are currently in the midst of extending our bakery to better cope with the increased demand. Excitingly we are now doing business with Jersey and Guernsey, so we are looking forward to branching out even further with the support of our new contacts.” T +44 (0)1302 738333 www.toppingspies.co.uk

undits, a unique chocolatier, recently attended the Speciality and Fine Food Fair as one of the most anticipated exhibitors. The company prides itself on using no sugar in their products without compromising the great taste of chocolate, meaning you can indulge to your heart's content! Created out of a love for everything food, Pundits understood that high levels of unneeded added sugar, salt and other foodstuffs had to go. There's also a vegan friendly range, so no one has to miss out!

Extremely popular in the Pundits range is the Nutella like chocolate hazelnut spread and a chocolate peanut butter spread. s a farmer and cider enthusiast living in Northamptonshire, I always wondered why more cider was not produced in my local area. It has good conditions for growing trees, sandwiched between the big cider producing powerhouses of the West Country and the East coast. After painstaking research into cidermaking and producing I came up with a blend which incorporates the best of both worlds – a blend of dessert fruits from the east and dry cider apples from the west to produce a perfectly balanced cider that I enjoy drinking. I use apples from orchards in Herefordshire, as well as our 1,000 tree orchard which is stocked with the

varieties I need to produce great cider such as Black Dabinett, Yarlington Mill and Kingston Black. This orchard was planted in 2012 the year of the Queens Jubilee and hence it has been named the ‘Jubilee Orchard.’ I have since planted a further 2,500 trees as the cider’s reputation grows. I decided to make fruit ciders because I

Botonique – ‘The Champagne of Health Drinks’ T

here is a lot of talk about the resurgence of adult soft drinks these days, but the reality is that most are still very sweet and fruit based. For someone whose tastes have been formed drinking wine and other fermented drinks where the sugar has turned to alcohol – even if they now avoid alcohol – these drinks can seem very sweet and lacking in the complexity they are used to.

vitamins, minerals and amino acids that alcohol depletes. So every time she or fellow wine lovers replace a glass of wine with a glass of Botonique, they are doing themselves a doubly good turn. The ingredients are variously anti-oxiodant, antiinflammatory, alkalising, detoxifying and hydrating. Hence the nickname ‘The Champagne of Health Drinks.’

Wine Merchant Hilary Marsh, the creator of Botonique, ‘The Botanical Soft Drink For Wine Lovers’ has taken a different approach. She

“I use Botonique to top up my nutrients and to help me take two nights a week off wine, the minimum that we all should. But for me it’s real superpower is that I can happily switch to Botonique after drinking a couple of glasses of wine, something I have never found possible with other soft drinks. With a bit of alcohol inside you, you’d swear there was alcohol in the glass. I find it totally satisfying.” Hilary continues “I also use Botonique as a wine spritzer, mixed with an ordinary inexpensive wine to create something much more interesting with a half or a third the alcohol.”

Hilary Marsh, Creator of Botonique has focussed on capturing the dry refreshment, complexity, mouth feel and length of finish that wine lovers are used to, but has achieved this using not grapes but a host of botanical extracts, sweetened with just a touch of pear juice. No artificial sweeteners, colours, flavours, preservatives etc. The resulting sweetness level (2.1g sugars/100ml) and looks are that of a dry Prosecco. Though the taste is unique, fellow wine merchant Liz Bateman calls it ‘a soft drink with all the pleasure of wine.’ Hilary Marsh describes the flavour as ‘reminiscent of dry white wine with notes of gin and vermouth.’

“When I have the right garnishes, I especially enjoy our ‘Sterling Serve’ – on the rocks with cucumber, mint and lime. Really refreshing. And I’ll sometimes add a splash of spirit to that – gin, Jamesons, tequila, Bourbon, Pimms are all good and bring out a new dimension. I love my wine but I’m also a mixologist at heart.”

However Hilary herself has no intention of stopping drinking wine. “My personal motive in creating and drinking Botonique is to ensure that I can continue drinking wine safely into a ripe old age! I’ve seen too many people forced to give up because the alcohol has done them such an injury. I want to look after myself.”

Here at Food & Drink Matters, we are big fans of Botonique. It has even helped us through a pregnancy. So we weren’t surprised that yet again it was one of the busiest stands at the Speciality & Fine Food Fair.

Which is why she has added to Botonique a good dose of Prelixir® Nutrients – a special blend of

Preserving Specialist of the Month

Working Hard to Preserve Preserving H

ere at Food and Drink Matters, we are excited to reveal that Rosie Makes has been chosen as our Preserving Specialist of the Month.

The business, which is based in Oakham, Rutland, was established in 2006 by founder Rosemary Jameson and her husband. The online company www.lovejars. co.uk specialises in the supply of jars and other such specialist preserving equipment for home producers and artisans whilst the Rosie Makes enterprise focuses on the educational side; teaching, demonstrating, writing and proceeding with dedicated recipe research and development.

maintained her passion for the craft by experimenting with various ingredients, flavours and methods. As well as developing a range of easy to follow recipes, the talented entrepreneur contributes editorial content to magazines and educates people about preserving whilst delivering engaging talks and demos. Rosemary is the also founder of the Guild of Jam and Preserve Makers, a trade body supporting members with regulatory information and advice regarding insurance and other important aspects.

“Placed within the food & drink sector we are predominantly concerned with the preservation of food at ambient temperature,” Rosemary told our team. “We are producers ourselves and this is something that is relatively unique in the industry. Because of this we know what is needed, what works, and essentially what is irrelevant.”

The Love Jars business surrounds packaging excellency as an online retailer of jam jars and jam-making equipment for both home cooks and commercial professionals. The impressive portfolio includes jars & bottles, ointment, storage & cosmetic jars, small packs & decorations, tamper seals, gift packing & display goodies, jam jar labels and specialist ingredients (such as allspice berries, rock salt, mustard seeds, beeswax and Seville oranges).

Rosemary’s interest in preserving stemmed from her childhood when she helped her mother in the kitchen making jars of jam ready for the winter season. Striving to make the most of produce harvested, she has

The most recent additions include uniquely developed floral jar lids – a commissioned line which is therefore exclusive to Love Jars – which was created to coordinate with the Summer Frocks Collection in Rosie's

Pantry. The cutesy lids, which come in a variety of feminine patterns, are of the metal twist-off type with an integral PVA seal. The organisation has also innovated Label Designer Pro, a service which ensures that artisan and home producers can easily and economically design and print labels unique to their products at a time most convenient for them. The software has incorporated all of the necessary regulations to ensure that the customer can correctly brand their stock, whether for home storage or commercial handling. “Our products are suitable for everyone interested in preserving, and also those who simply want to keep things organised in jars,” Rosemary continued. “We are proud to be a family business that is always evolving, responding appropriately as the market dictates. “We are always planning ahead and are looking forward to participating at a trade visit titled ‘Source British’ which will be held in Los Angeles next March. Attending the Country Living Fairs provides us with a good return on our investment so this is also worth our efforts.” Please consult the websites provided below if you would

We encourage everyone to be well informed about the health implications of their food, eating habits and drinks intake,” Nichi Boca, FOP’s Founder and Managing Director, commented when speaking exclusively to Food and Drink Matters. “With this philosophy to naturally nurture our family members, we undertook the mission to propose carefully selected organic, high quality premium products, embarking together with our distributor and retail partners, to both delight and support UK & Ireland consumers’ healthier lifestyle.” A particularly significant addition to FOP portfolio is AQUA Carpatica, natural mineral water, both still and sparkling, exclusively imported and distributed. Sourced directly from the Carpathian Mountains springs; the water is free from human interference, nitrate pollution or any other chemical, microbiological and physical impurities. After 40 years of natural filtration during the underground journey of the water, AQUA Carpatica springs as a premium quality mineral water, naturally sodium and nitrate free, natural Ph alkaline. Its unique clean and crisp taste is courtesy of the water’s pure composition and BPA free plastic or glass bottles. Yes, water purity at no compromise is achievable! While water means Life, high quality natural mineral water means

Health. AQUA Carpatica is a nature given gift and its health benefits are of note; as well as providing complete hydration and robust nutrition, the water natural bicarbonate stimulate digestion, diminishes symptoms associated with heartburn and helps with bone structure progression and maintenance. Perfect for the most demanding health conscious people, expectant mothers, newborns, high blood pressure sufferers and those pursuing low-sodium diets. “Water is one of the healthiest and most affordable ways of being hydrated,” Nichi continued. “Consumers look for premium water products, but the presence or absence of additives, natural origins and the location of the source remain of key importance. According to the International Bottled Water Association (IBWA), consumer demand for bottled water looks likely to remain very strong in the years ahead and will most probably overtake carbonated soft drinks, which, being full of sugar, are the biggest enemies for our health. “Our strategy for AQUA Carpatica is to build distribution in UK and Ireland in stages. After initially being available in the organic/health channel, supplied by our key partners Harrods, Wholefoods, As Nature Intended, as of this month, AQUA Carpatica reaches full national coverage thanks to our partnership with Ocado. ‘At FOP,’ continues Nichi, “we strongly believe that AQUA Carpatica is a ‘must’ presence on any table, due to its unique crisp taste and health benefits. Together with our strategic distributor

18

partners will continue boosting regional coverage of high street independent retailers and convenience stores so as to have this unique water brand closer to consumers.” As a young brand in the UK market, AQUA Carpatica challenges supermarkets and national mass-market retail accounts to push category boundaries to better serve consumers’ choice for health while delivering growth & profitability to their soft drinks category. Foodservice and delivered wholesale to hospitality business seems growing due to AQUA Carpatica premium and unique glass bottle design. Considering the current UK sales growth by retail account, FOP shows confidence that British consumers will welcome and positively respond to the water clean taste and health benefits “AQUA Carpatica is already a leading brand in its home market, overcoming well established water brands. The brand success resides in the loyalty of our consumers and in our commitment to never sacrifice water purity. It is consumer experience with the brand, their love at first sip that has made and will make this unique water brand successful,” concluded Nichi. Maximise your capacity

Flexi Narrow Aisle: Saving Space and Increasing Efficiency

S

choeller Allibert has launched an enhanced vehicle fill calculator which has been developed to help customers reach maximum transport capacity to provide a more costeffective and efficient use of vehicle space.

T

he extensive range of articulated truck based intralogistics solutions designed and built by Narrow Aisle contributes to the safe and efficient operation of many e-fulfillment centres.

The calculator covers 93 models from its range of RTP and all vehicle sizes with load lengths from 5m to 13.6m. You can calculate the maximum number of containers that can be carried on both delivery and return journeys.

Narrow Aisle’s Flexi range of articulated warehouse lift trucks operate comfortably and safely within storage aisles where customer order picking activity is being carried out.

Users enter their vehicles’ length and height, then select pallet size and container model, and the tool calculates the number of pallet spaces per vehicle and the number of containers per pallet – both when full and stacked for delivery and when empty and when nested or folded for the return trip. The calculator forms part of the company’s site survey, which is a full review of a customer’s supply chain tailored to individual specifications.

Qimarox introduces standard, high capacity OEM Ringwrapper Q

imarox has released a fast and reliable stretch wrapper, which, like its palletising modules, is sold exclusively to OEMs and system integrators. This versatile ring wrapper can reliably wrap up to 100 pallets in foil per hour (optionally dustproof and waterproof). Because the OEM Ringwrapper can be easily integrated in combination with the palletising modules of Qimarox,

the integration and hardware costs of final packaging lines are even further reduced. Qimarox’s Highrunner mk7 is selling well at the moment. The Highrunner mk7 is a modular, serially produced palletiser, which is often used in conjunction with a stretch wrapper. Expanding the product range with a standard ring wrapper will reduce integration and hardware costs even further. After all, similar to its palletising modules and other components, Qimarox’s OEM Ringwrapper is supplied without a control system. This allows system integrators to combine the control system of both the palletiser and the ring wrapper (and any other system components) in a single control unit. Qimarox distinguishes itself from other material handling manufacturers who deliver their components with control cabinet as standard. The result of this is that each component of a packaging line from these other suppliers has its own completely unnecessary control unit, while a single control box for the entire system would in principle suffice. The Qimarox components furthermore allow system integrators to simplify the control and integration of the various components. T 0031 341436700 info@qimarox.com www.qimarox.com

This is an important consideration for fulfilment centres where the ability to quickly and accurately collate picked goods has a direct link to system efficiency, lower operating costs and customer satisfaction. At sites where a high degree of ground level order picking is required, it is important that forklifts and order pickers can work alongside each other efficiently and safely. However, there is growing concern that traditional guided very narrow aisle materials handling products compromise both picking efficiency and health and safety at sites where low level order picking needs to be carried out. But, Narrow Aisle’s Flexi trucks are perfectly suited to working alongside low level order picking staff without

creating a health and safety issue. As a result, low level order picking personnel can work at ground level in the same aisle as Flexis safely and efficiently. This means that operators do not have to be separated from the trucks in the way that HSE rules require them to be at those facilities where guided VNA truck systems operate. and kerb stones the vehicle would encounter on its many trips.

ith application advice and support from MH Group, Nexen Lift Trucks has supplied a FBXT 18 X-Range lift truck to Three Oceans, a supplier of high quality white-fish to the foodservice sector.

MH Group’s Andy Tuffnell says, “Working with Nexen to meet the customer’s requirements was a breath of fresh air. They went above and beyond what was required to ensure that cable connectors, wiring looms, motors and controllers were all protected from the weather and operating environments.”

To cope with the narrow aisle environment and ensure zero emissions, a three-wheel electric lift truck was essential for Three Oceans. So too was weatherproofing and IP protecting, as the company had been faced with substantial maintenance bills for its previous electric forklifts. Additionally, the lift truck needed good ground clearance to cope with the steep cambers

Distiller of the Month

Certified Organic Distillers B

ioSpirits BV, we at Food and Drink Matters are pleased to announce, has been recognised as an enterprise most commendable as an achiever of our respectable Distiller of the Month profile. We are therefore delighted to tell our readers more about this exemplary brand with this deservedly dedicated feature. In 2012, Frans Erdmann set up BioSpirits, a contemporary company based in the Netherlands that is, in essence, the only certified spirit manufacturer in the country. Three years later Thomas Erdmann joined the business, helping to grow the brand further as an organic distillery specialising in the production of a broad range of certified beverages. BioSpirits is pleased to supply a tantalising selection of drinks as an exclusive processor of organically formulated materials. The team of hard-working craftsmen are well practiced in employing longstanding distillery techniques and are subsequently competent in the development of flavoursome spirits (namely genever, gin, rum, vodka and eau de vie) and liqueurs (the key varieties being whiskey, beer, coffee and Apfelkorn).

“Our products are 100% certified organic,” Ivan Kennedy, Managing Director of Kennedy’s International Distribution informed us. “They are also traditionally crafted, which gives us a high quality and noticeably rich flavours that make us stand out. With a lot of patience and old-fashioned craftsmanship, we can achieve a taste and quality that for industrial distilleries is no longer achievable.” The remarkable array of aromatic alcoholic beverages have proven popular with both retailers and distributors alike and can be sold directly to consumers as well as organisations working within the hospitality branch and dedicated wholesalers. Promising quality without compromise, the environmentally focused team can offer their customers great tasting drinks that are not only delicious but also more authentic in the respect that they contain all natural ingredients. “We try to focus on offering a broad range of organic products to the consumer,” Ivan concluded when asked to provide insight in relation to the company’s ongoing goals and recent movements. “We are currently in the process of moving to a larger facility and upscaling our production in order to better respond to the increased demand for our drinks and

we are looking forward to launching more exciting product lines such as our new organic soft drinks and premixed cocktails. “Trade show attendance is also important for us – we have exhibited at several over the course of the last year, some situated abroad but most of them being hosted in Holland. Our appearance at the Natural Food Show, which was held in London, was a great success and resulted in the acquirement of a distribution contact for the UK.” For additional information about the exceptional product portfolio or even the company itself, then please don’t delay in contacting BioSpirits at your earliest opportunity. Should you wish to find out more about the distillery methods employed then this can also be arranged – a knowledgeable and enthusiastic spokesperson will be more than happy to assist no matter your enquiry, as all questions are welcomed and responded to accordingly. Specialist Drink Supplier of the Month

Discover a Hug in a Mug with Chalo C

halo is an exciting and unique brand that we, here at Food and Drink Matters, are most pleased to present with our highly prestigious Specialist Drink Supplier of the Month profile.

“Chalo is Hindi for ‘let's go, let's move forward together’,” Gita concluded. “We are always innovating because we want to inspire people with flavours and recipes from other cultures and climates – our aim is to bring a traditional product to the market in a funky and rebellious way.”

CEO and Co-Founder of the company Gita Van den Boer grew up in Belgium but during her time as a volunteer in India she discovered the delights of chai, a hot beverage embracing the distinct masala flavour. Finding it to be incredibly comforting, Gita was disappointed to find that the delicious drink wasn’t readily available back at home.

T 0032 32911060 info@chalo.eu www.chalo.eu/en

Her determination to address this issue led to the development of Chalo along with her business associates Peter Goethals and Simon De Clerck. Gita explained, “The chai products I did come across lacked the great authentic taste and spiciness of the varieties I was originally introduced to. With the help of a contact from India – who had the production knowledge required to source the best ingredients – we started up our own brand of chai.” 2015 saw the official launch of Chalo, an innovative business by means of a comprehensive web shop and dedicated direct. Despite being such a newly established enterprise it has already proven popular with customers

gorgeously fragrant with an aroma similar to that of freshly baked cookies. Finally, the Masala Chai Latte contains mixed spices and herbs, with the inclusion of ginger, cardamom, cinnamon and black pepper adding a piquant punch to the blend.

across 11 European countries: Belgium, the Netherlands, Germany, Ireland, Italy, Poland, Hungary, Sweden, France, Denmark, Singapore, Nigeria and the UK. In fact, the team is now looking forward to expanding further afield by entering the American market! Chalo is best known for its range of Indian Chai Lattes. Available in four distinct flavours, the natural drink is made using an intriguing combination of black tea and cool spices. Although based on an authentic formula, the traditional product has been effectively enhanced with many exciting ingredients that have added a contemporary twist to this timeless recipe. The first option is the warming Cardamom Chai Latte, which encapsulates the bitter and sweet notes of this indulgent Indian spice. The Lemongrass Chai Latte, meanwhile, is refreshing on the palate with a prominent tang of sweet & sour, whilst the Vanilla Chai Latte is

20

According to Gita, the chai latte mixes are perfect for the everyday individual, “The all-natural drink is clean of additives and is therefore a good, less caffeinated alternative to coffee,” she insisted. “What’s more, because of the type of sugar used the consumer doesn’t even have to stir! It dissolves immediately once the hot water is added, and this user-friendly quality is important because customers prefer their drinks to be made quickly and easily.” What makes the drink stand out the most from other chai brands is the fact that it contains no milk. This is a unique yet useful characteristic because it allows users to add the milk of their choice (whether skinny, dairy, vegan, soya or coconut infused) whilst making it accessible to both vegans and the lactose intolerant. The Chalo team is looking forward to releasing their range of Funky Feel Good Food products later this year. They are currently in the midst of finalising their selection of ‘Funky Chunks’: dried fruits and nuts that will act as a healthier replacement for biscuits, and Salty Peas: edamames, green peas, chickpeas and mixed beans with funky flavoured coatings.

Platinum Service Award

Passion for Pumps H

ere at Food and Drink Matters, we make it our foremost responsibility to celebrate the successes of both up-and-coming businesses and well established enterprises that have proven to have made a real difference to the all-important and ever-growing food and drink industry. A core example of one of these companies is Verder, whose passion for pumps has been tangible ever since its foundation more than five decades ago. We are therefore most excited to present the team behind the brand with our prestigious Platinum Service Award whilst telling our readers more about their achievements, ideals and plans for the future. With over 50 years’ experience in the industry, Verder are renowned specialists in pumps and pumping solutions. The family run company supplies high quality equipment and cost-effective fluid handling solutions throughout the world to a variety of industries including water and wastewater, printing, chemical, food and beverage, construction, pharmaceutical and many more. Founded in 1959 by Andre Verder, the organisation started as an entrepreneurial trading company in different industrial and laboratory products. From these humble beginnings Verder grew substantially over the years – now operating worldwide from 27 sites in 20 countries, employing more than 1,000 staff with a strong presence in Europe, America, Africa and Asia. “Innovation and technology have been our leading criteria from day one when selecting products and suppliers,” commented Sales Manager, Duncan Brown. “Our exceptional pump technology is very different from anything else on the market as we design and produce speciality products. Our customers benefit from their ease of use allowing for fast, efficient operation, less maintenance and advanced technology. We put our heart into pumps and ensure each customer is extremely satisfied with our product and the level of service they receive.” New to the ever growing range is the Verderflex Vantage 5000. The cased tube pump offers superior levels of dosing accuracy, at high

productivity in the future, as he told us, “As we continue to expand, our core aim is to be a successful business which means investing in our growth in both the short and long term. It also means that we care for our customers, employees and suppliers and other business partners as well as for the environment.

discharge pressures exceeding 7 bar (100psi). Miss Lekha Bodhe, Verder’s Marketing Manager, was keen to tell us more about this particular product, “Our new product launch this year was the Verderflex Vantage 5000,” she explained. “Vantage 5000 is newest technology in pump industry and is the only pump in the market with touch screen technology and highly accurate dosing capabilities. The Vantage 5000 has been designed for wide spread applications including water and waste water treatment, paints, brewing and many more. Its features include a state of the art touch screen through which the system is programmed and a USB port which allows for back up giving the user massive security. Easy to set up, the unit requires no manual which is a major step forward in this industry!” The Verderflex Rollit is another notable product in the range. The dry running roller pump is ideal for those who are concerned with contamination. As the pump requires no lubrication, contamination is animated. The intelligent system has high flow rates and is designed to operate at low temperatures. Unlike similar systems, if the Rollit runs dry it will not brake but still run until it is refilled.

This saves a great deal of time and money and systems can be costly to fix. In addition to this quality range, the Verder Service team provides first rate pump repair, maintenance and overhaul services plus end-to-end project management. If you require a chemical dosing or a pumping solution, the Verder Service team can provide consultation, design and drawings, build and installation, commissioning and contract maintenance. When asked to discuss Verder’s performance in recent times, Lekha was incredibly positive about the organisation’s progressive path, “The company has continued to follow growth trend with regards to sales and new product development. Sales have been good this year and our product launches have attracted a lot more attention and brilliant sales numbers over the course of 2016 – we are hoping to keep this momentum through the next year. We believe that change in the key to success. We have recently made incredible changes within our organisation with differences to the structure and way we work as a team. Now it is noticeably more dynamic and product-oriented, with greater focus on our customers, providing a consistently excellent service overall.” Duncan was also optimistic about enhanced

“Our focus is to continue to make plans as the market stabilises after the referendum. We believe the world of business won’t stop and there will always be a need for people and services. We are confident we will overcome the short term turbulence and continue to provide a great service to our customers.” Why not find out for yourself just how effective Verder’s solutions can be? Based in Leeds in West Yorkshire, HpE Process is a dedicated supplier of first-rate hygienic process equipment. With its pioneering design ability and innovation, its cost-effective products have been extensively appreciated by some of the world’s leading brands for a number of years. Its reputation as a trusted partner nurturing longstanding working relationships is the result of decades of experience and an ongoing determination to resolve complex industrial problems. 26 years ago the business was established by Founder and current Managing Director Andy Allman, who was keen to tell us more about his motivations in doing so, “HpE Process was set up to provide a good independent service for customers, providing sanitary and hygiene equipment predominantly for manufacturers operating within the food industry,” he explained. “The equipment we provide meets all national and international standards – which is a given for food production companies – and we pride ourselves on

Andy Allman, Managing Director at HPE Process Ltd choosing the best products for the job. This is one of our key differences when compared to our competitors; we stand out because we provide suitable advice after listening to individual requirements. Most other organisations have specific targets to meet but we operate with the aim to provide purposeful solutions as opposed to just making quick suggestions in order to meet sales figures.”

“Most of the growth we have experienced to date is simply through word of mouth so we would like to take this opportunity to thank our customers, which includes everyone from dairy groups and OEM’s to machinery manufacturers and project engineers. We are now focusing on marketing our products, making more people aware of who we are and what we do – following this we can arrange consultations for potential clients should they need further support.”

he Synergy Grill is a pioneering chargrill that uses 52% less gas. This gas saving equates to an average of £12,238 every five years, helping cultivate a carbon neutral kitchen. It also uniquely has no fat tray to clean and restaurants don’t have to responsibly dispose of the fatty waste creating ‘fatbergs’ that are plaguing capital cities. These benefits have been adopted by top chefs and snagged top prizes for innovation at The Takeaway Expo which joined our Gold Winner Innovation prize at The Commercial Kitchen Show where the

Heat ‘atomises’ the natural fats that are released during cooking which are misted back into food making it incredibly succulent. “It's what every chef won’t believe until they see it.” Richard O’Connell, Executive Chef at Tom's Kitchens “Having used this I think it’s the nuts. HEY Commercial & Kitchen Cleaning Machines T

he HEY Safe Cleaning Solution is the most innovative, safe, and efficient Kitchen Extract Cleaning System available, ensuring that Kitchen Extraction Systems are consistently cleaned to the TR19 standard. An Integral part of the HEY Solution is the Tegras system, the most innovative brushing and foaming system for cleaning canopies, fans and ductwork. It reaches areas that traditional kitchen duct cleaning methods simply cannot reach.

Using a low PH ‘bag in box’ foam system that doesn’t damage the seals and joints in ductwork the system also includes a video system that provides evidence that out of sight areas have been cleaned and can also be used for identifying otherwise hidden issues. Cleaned kitchen ductwork is then sealed with RZ Ecoseal – an innovative water resistant and fire retardant sealant that eliminates leakages as well as unpleasant smells escaping into areas within the premises.

RZ Ecoseal is applied mainly to the inside of ductwork to seal joints in the system that has been damaged by the previous use of harsh chemicals, hand scraping and climbing through ductwork. These gaps allow grease and in the case of a fire, more oxygen to mix with the flames to create a catastrophe. T +44 (0)1924 856390 enquiries@heyuk.co.uk www.heyuk.co.uk
