Brexit’s impact on UK Food & Drink W
hat Brexit will mean to the UK food and drink (F&D) sector is far from clear at this stage.
While withdrawal from the EU could hurt F&D trading in Europe, it could also free the UK to open closer trading links with other nations. Greg Smith, Head of UK sector exports to Trading at foreign markets like the US, exchange specialists which currently amount Global Reach Partners to £456m per annum, and China, currently worth approximately £258m, could be further expanded. The flip side of this rosy outlook is that the weaker Pound could cause British economic growth to stagger, making it tougher on UK F&D importers, especially within their domestic market. Britain could also see a decline in investment, which would likely put a dampener on growth within the sector. Of even greater concern is the potential for a significant fall in European workers available to fill jobs within UK F&D businesses. The confidence of the sector will likely be determined by the tone of the Brexit negotiations to follow as well as the outcome of other political events across the continent. Further clarity on the prospect of trade barriers across Europe and new future global trading opportunities between the UK and other nations will be essential for the F&D sector going forward. A
timely collaboration between leading pneumatic components experts SMC UK Ltd and innovative packaging machinery manufacturers, Boxsizer Ltd has resulted in the world’s first intelligent random sizing fullment machine, able to minimise packaging waste, optimise productivity and deliver savings of up to 80% on regular e-commerce packaging costs. David Hayward, CEO of Boxsizer explains how this unique and potentially industrychanging machine was brought to market. Boxsizer is actually part of the well established Linkx Packaging Group, based in Suffolk, UK, where there is a hub of industrial packaging manufacturing expertise. About three years ago, we looked at the potential for our business in e-commerce and started to develop ideas for packaging machinery that would best serve this rapidly growing sector. There were already machines available that could reduce the size of a box on the production line but this could only be done to a preprogramed single or twin footprint. That’s fine if you are handling the same item on a continuous basis, such as packs of biscuits, but no good if you have a series of random sized products coming through. That is exactly the issue faced by ecommerce companies, such as Amazon, who are packing sequentially anything from small consumer electronics to furniture on the same line. We are all aware of the recent consumer backlash and media coverage that this inevitable packing waste, additional labour
and environmental impact is causing. At Boxsizer, we have developed a solution to all these issues and customers we have in the United States and Australia are saving literally millions of dollars on their packaging and transportation costs after investing in our Boxsizer machines. Collaboration was key Having identified the need for a machine capable of providing random sized packaging on a continuous basis, we knew we needed a components manufacturing partner to help us develop the equipment. We were already working with SMC Pneumatics on our other machines and after discussing our plans with them we felt confident they were the right people to help us. The Engineering Development and the Product Sales teams at SMC Pneumatics did indeed prove to be the perfect collaborative partners for this project! They not only advised us on the best components for the machine design we wanted to develop but provided additional technical support and refined some standard products to meet particular needs. For example, they adapted their Series CP96 ISO Cylinder into a bespoke self-cleaning cylinder for us that is able to remove adhesive from its shaft so minimising downtime for manual cleaning. “We are very pleased to be associated with Boxsizer and in particular the Intelligent
Working closely with the SMC team in 2013 we built the first demonstrator of the Intelligent Random Sizing machine utilising a range of SMC components including a Series EX260 Serial Transmission unit; Digital Display Sensors; a 5-Port Solenoid Valve; Compressed Air Preparation units; Series CG1 Cylinders and a Cylinder End Lock with Guide. This demonstrator was so impressive that one of our customers, who sell a wide range of kitchen, household and garden products, agreed to take the machine as a test pilot to see how it would work in a real random packaging environment. It proved a great success, delivering a significant ROI in just six months. This company handle a variety of standard Fefco 0201 boxes and they chose to use the Boxsizer because of its ability to accept varying box footprints at random, reduce volume to suit the product inside, fold and seal accordingly. By using the Boxsizer, a typical average volume reduction of around 50% was achieved. We launched the Intelligent Random Boxsizer to the UK packaging industry generally at the PPMA Show in 2015 where it won the Show’s prestigious Most Innovative Automation System and also went on to win the Intralogistics Packaging Award later in the year. Innovative Solution The Boxsizer machine works on a simple but highly innovation solution – it automatically recognises and resizes boxes for random, single or multiple, loose or grouped products on the same production line. So a customer’s stock of standard boxes can be used before investing in a suitable selection of sizes to minimise material costs. Different box size parameters can simply be added to the Boxsizer’s programming. Using a complex system of measurement lasers and cutting blades, it reduces the outer box to the size of the goods being shipped, minimising the surrounding void so that most of the time there is no need for any additional packing filler such as paper or polychips. The box is then crimped, folded and sealed ready for despatch. This reduces handling time, labour and material costs on the production line and the more efficient sizing also means more packages can be fitted into the shipping container or onto a pallet. This cumulative reduction in the volume of individual boxes in turn reduces our customers’ carrier costs as there is much less transportation of fresh air!

Million Dollar Cost Savings Over the last 18 months, we have installed Intelligent Random Boxsizer machines at major packaging and logistics organisations in Australia and the United States where DIM or dimensional weight shipping is already charged. Using our equipment, these organisations are already seeing cost savings worth millions of dollars within six months of starting operations. One of Australia’s largest ecommerce companies whose annual material packing costs were around Aus $2.2m, have now purchased four Random Boxsizer machines able to handle eight different box sizes without any machine changeover and have now seen annual material costs drop to Aus $1.3m. They recently completed an Aus $20m investment to become one of the most advanced automated companies within the ecommerce sector. Part of this investment included Random Box Makers and Random Boxsizing machines, which were chosen after the company evaluated systems from France, Italy, the USA and the UK. akro Labelling UK have received their second order from Kingsland Wines & Sprits in Irlam, Manchester, this time for a Mak 5, 32 platform six labelling station machine, which will be installed on a new line in July. Richard Portman, Managing Director, commented on the latest order, “This second order from Kingsland Wines & Spirits for self-adhesive label application on a 75cl Bordeaux style bottle, will be applying three labels at 30,000 b.p.h. making this machine the fastest that Makro has supplied the UK market to-date. The client was very pleased with the performance of the first machine we installed last year, so we are naturally thrilled to be involved with this latest project. This new line is also a coup for our client as they have won a significant order to bottle a big wine brand here in the UK, which was previously bottled in Italy. Quinoa is primarily harvested for its edible seeds and is recognised as a healthy cooking constituent because it contains all of the essential amino acids whilst acting as a great source of manganese, magnesium, iron, copper and phosphorus. It is also wheat, dairy, gluten and cholesterol free – therefore making it ideal for those in restricted diets – and is easily digestible. The complete protein has a unique texture that has proven an effective supplement in the preparation of drinks, savoury dishes, puddings, and of course, sweet treats such as cakes and biscuits. Fish Smoking Business of the Month
Handcrafted Fish from West Cork T
he Food and Drink Matters team are incredibly pleased to feature Woodcock Smokery as its Fish Smoking Business of the Month. The company’s roots date back more than 35 years, which was when the founder, Sally Barnes, first established the enterprise. At the time the up-andcoming entrepreneur was married to an inshore fisherman and because of this, Sally could make a significant income from her home, selling fresh fish that was sourced direct. In the early days Sally specialised in the supply of wild salmon, which was a very profitable product, particularly during the winter months (because of the increased demand for smoked salmon in the Christmas season). Unfortunately, the many bans put into place regarding commercial fishing for the capture of wild fish caused the businesswoman to encounter difficulty progressing, and the changes incurred resulted in unfortunate employee cuts. “Despite the problems the bans have caused for Woodcock Smokery, I still work exclusively with wild fish,” Sally divulged. “All the products feature on my own table, and as I was cooking for my own children, naturally I wanted them to eat only the purest cured food, with most of the bones removed during the process.”
The artisanal fish smoking organisation is based in Southern Ireland, near a coastal town situated in West Cork. From here Sally buys sustainably caught, delicious-tasting fish that is devoid of any artificial additives or preservatives and has been carefully processed and handcrafted using the necessary filleting, salting, pin-boning and slicing techniques. The premium quality produce is cured in a traditional manner using skill and attention to detail. The award-winning range includes wild smoked salmon, mackerel, herring, tuna, haddock and pollock; fish that has been processed using both hot and cold smoking practices. As well as sourcing stock from her local fishermen friends, Sally makes her own smoked fish butters from wild salmon and mackerel (whenever these are available). The salmon is used because it bruises easily during the commercial fishing, and cutting out the damaged areas ensures that the precious meat leftover isn’t wasted. Sally studied Food Production Systems and
Oceanography at the Open University to become more knowledgeable and is well positioned to teach others about the ways of smoking fish: “It is not as simple as people might think,” she disclosed. “Over-smoked foods are awful! I use a more traditional 'curing' smoke, not a 'cosmetic' smoke, to help give a good shelf-life, and to ensure the food is safe for consumption. After almost 40 years of experience, I have a skill-set which is incredibly valuable in this market. I hope to start smoking courses here soon for individuals and professional chefs, as they are all smoking in their kitchens these days!” Sally has met many inspirational people on her journey with Woodcock Smokery and has attended many events in connection with AKTEA (European Women in Fisheries Network). A partnership with Slow Food (namely Slow Fish) resulted in Sally meeting Kamal Mouzawak, with whom she travelled to Lebanon to demonstrate artisanal fish smoking to groups of women (in order to promote female empowerment as well as food safety and fish sustainability).
Mail-order works well for customers from outside Ireland and is delivered very rapidly by UPS. This is an overnight service; orders collected from the Smokery today will generally be delivered next day. Recently, the organisation started working with ‘Sole of Discretion’ in Plymouth in Devon, a brilliant venture created by Caroline Bennett (MoshiMoshi), online sales of the freshest fish, landed by ‘day-boats’ from Devon/ Cornwall, filleted by Caroline’s dedicated team then blast-frozen ready to send directly by mail order to individual clients. It is a revelation to be offered day-boat fish (boats go out each morning, and land back each evening, something of a novelty these days). Hand Blended Traditional Dukkah Because dukkah isn’t readily available in this country, many people are unsure, or even unaware, of this ingredient. Originating in Egypt, the food is a blend of nuts (specifically, hazelnuts and almonds) which have been dry-roasted on the hob and then pounded with spices (such as cumin, coriander and paprika) and finished with toasted sesame seeds.

Alison Corner, founder, foodie, and self-confessed cookbook addict, set up Dukkah Delights last year and has been striving to raise the profile of this unique condiment ever since. After being made redundant from her position as a procurement manager the budding entrepreneur decided to turn her hand to something completely different. It is traditionally enjoyed as an appetiser; bread is dipped into oil and then dunked into dukkah, which adds an extra flavoursome and crunchy layer to the moreish snack. It can also be used as a breadcrumb as it can coat anything (meat, potatoes, vegetables etc.). It is a great accompaniment for fish – simply spread butter on a slice of cod, top with dukkah and oven-roast to bring out an array of exciting flavours. A notable brand is the Lumper, which before 10 years ago was a thing of the past. Until the Great famine in the 1840’s the Lumper was widely grown throughout Ireland with families relying on the Lumper potato for its nutritional value. When the potato blight took hold it had catastrophic effects for the nation as a whole. Through this period it is estimated that more than 1 million people either emigrated or sadly died from the Island of Ireland. The Lumper’s strength lays in its ability to grow in poor soil and does not need a lot of tending to. Original Lumper’s were large in size, knobby and lumpy with pale brown skin and the flavour was somewhat of an acquired taste. Glens of Antrim Potatoes decided to reintroduce the once loved potato and create a smaller, more appealing and appetising Lumper to suit the modern

cottish haggis producer Macsween has expanded its meat product portfolio with the launch of Macsween Sausages. I
n early 2016, the Schmersal Group founded an independent business division for services relating to machine safety and industrial safety. This business division is called tec.nicum and consists of a global network of qualified and certified Functional Safety Engineers offering a wide range of safety services on an international basis at a consistently high level of quality. Trident Pack and Engineering Co. Ltd in Bangkok is the latest to benefit from tec. nicum’s expertise. The Thai machine manufacturer charged tec.nicum with drawing up a risk assessment for a new packaging system that the company is delivering to the world-leading food multinational Mondelez. It is sometimes a small world - and the same applies to international machine construction. The services division of the Indian subsidiary of Schmersal found via a local machine manufacturer in Pune in the Indian state of Maharashtra that Thai company Trident Pack and Engineering Co. Ltd in Bangkok were in the market for a risk assessment in line with European standard EN ISO 12100. Trident Pack is a medium-sized manufacturer of packaging machines and systems for food, beverages, pharmaceuticals and medical products. Among the leading customers of the Bangkok machine manufacturer is food multinational Mondelez International, which once went by the name of Kraft Foods and is the third largest food manufacturer in the world after Nestlé and PepsiCo. The food multinational makes famous international brands such as Milka chocolate, Toblerone, Philadelphia cheese, Cadbury’s, Halls, Clorets, BournVita, Tang…etc… In Thailand, Mondelez employs around 1400 people and has two production sites, including “Lad Krabang”, the largest sweet and chewing gum production factory in South East Asia. For this factory in a suburb of Bangkok, Trident Pack has developed and produced a new high speed products transfer system for reorienting, collating and transferring “Halls Hard-boiled
Candy” secondary packs from four contributing primary pack lines to a common tray packer and a flow wrapper. Mondelez is the market leader in Thailand in the chewing gum and Medicated hard boiled Candies sector. However, Mondelez demanded that, prior to delivery, Trident Pack subjected the packaging system to a risk assessment in accordance with the standard EN ISO 12100 and validated the safety functions in accordance with EN ISO 13849. “Mondelez takes occupational safety very seriously,” explains Prasad Kulkami, Associate Vice President Business Development at Schmersal India Pvt. Ltd, which supported and oversaw the tec.nicum project at Trident Pack. Therefore, one of Mondelez’s stated aims is to continuously improve health and safety for its employees in all areas. One of Mondelez’ two Thai factories received the Silver Award in the annual “Zero Loss Time Accident” competition held by the Thai Employment Ministry. “We have also realised that many of our customers who are part of global multinationals are introducing their own machine safety standards which then need to apply across all sites worldwide,” explains Prasad Kulkani. This explains why Mondelez is geared towards European standards in machine safety, even for machines which are not to be used in Europe. “Once again. tec.nicum has the advantage that we can offer a consistent global standard of quality when it comes to machine safety consultancy and service and we also have the know-how in terms of standards, whether they are European directives or other national or regional standards,” stresses Prasad Kulkami. tec.nicum’s range of services include training, consultancy services, design and technical planning, plus installation and integration of safety components into existing systems. Depending on their requirements, the customers can utilise the modular services - from the audit of a single machine to the development of complete safety technology system solutions. Once Trident Pack had forwarded the technical specifications of the “Tray Line” packaging line to tec.nicum India, the certified Functional Safety Engineer at tec.nicum India, Siddesh Dalal, carried out a relatively short-notice safety audit on site in Bangkok in mid-September 2016. The standardised

As a rule, risk assessments on machines and systems are broken down into five stages: 1. Definition of the machine boundaries 2. Identification of hazards or hazard situations which could arise as a result of the machine 3. Estimation of the risk 4. Assessment of the risk to determine whether risk reduction is required 5. Removing the hazards or risk reduction If it is not possible to “design the machine to be inherently safe” to remove hazards or reduce the risks associated with the hazards, technical safety measures must be used. In the case of the Tray Line in Thailand, safety doors and flaps are used, plus safety switches with separate actuators, EMERGENCY STOP buttons and safety relay modules which, if the doors are opened, ensure that the hazardous movement is stopped by means of a controller. As the safety machine, here is dependent on a controller, Mondelez insisted that “the design of safety-related parts of controllers” must achieve a Performance Level PL in Category 3 in accordance with EN ISO 13849. This means that the safety technology needs to have fault-tolerance built in, so that a single malfunction cannot lead to a failure and must be detected to ensure switching back on is not possible. Based on ISO 13849-2:2012 tec.nicum creates all necessary documentation (validation plan, fault lists, calculations, etc.) and carries out the validation of safety functions. In this case tec.nicum checks the circuit diagrams of the electrical, pneumatic, and hydraulic systems, as well as calculates the performance level (PL) and the PFHD values for every safety function. The validation results are documented in an understandable manner. In the technical report presented by Siddesh Dalal at the end of the three-day audit, it was confirmed that the safety functions met all the requirements. Therefore, no additional safety measures were recommended to reduce the risk. It made no difference that the safety components used were
not Schmersal products. With this risk assessment, tec.nicum India was once again pursuing its policy of product and manufacturer neutrality which is part of tec.nicum’s core philosophy. When the safety engineers take on the tec.nicum risk assessment, it is purely a neutral assessment of the safety-related aspects of the machines and the safety functions used - there is no emphasize on recommendations to use Schmersal safety products. “Our safety engineer Siddesh Dalal was able to deliver substantial added value to the customer by explaining some of the “softer” aspects in the implementation of the safety equipment,” reports Samir Kanchan, Head of tec. nicum India. “For example, he recommended planning an adequate distance between the control panels and the wall of the building so that the machine operator can easily reach the control panel and the internal components. He also explained in detail the requirements that a Category 3 safety circuit needed to fulfil.” Both Trident Pack and Mondelez were very pleased with tec.nicum’s objective, neutral approach to consultancy – independently of products and manufacturers – and the quick, professional way the risk assessment was carried out. As a result, tec.nicum India received an order for two more packaging lines (complete lines consisting of primary, secondary & tertiary packing for compressed mint products) from Trident Pack in December 2016 to carry out a risk assessment & verification. Originally commissioned to install a replacement softening vessel, after further investigation, Envirogen recommended and installed an upgrade, with a state of the art EcoSave water softener system delivering cost savings and increasing capacity. Finally there was Bevisols wastewater, which was reduced by 80%. The non-beverage manufacturer was exceeding its discharge allowance, resulting in costly tankering. Envirogen devised a water recycling solution that cut waste and incoming water bills. The past few years especially has proved extremely successful for Envirogen, having experienced 30% year on year growth over the past 3 years. We are also different because we focus largely on the aroma of our drinks; our sense of smell accounts for 95% of the overall flavour impact, so we pay a lot of attention to how the botanicals affect smell.” The first of the three tempting flavours is Zesty Citrus, which combines the fruity and zingy tastes of fresh limes and blood oranges. The Persie Gin brand was established by Simon Fairclough, a determined entrepreneur who created his own line of alcohol after setting up Glenshee Craft Distillers Ltd in 2014. Whilst working as a marketing consultant for Johnnie Walker, Simon became fascinated with distilling and his deep-seated interest encouraged him to get more involved with the production process. Because of his background in the marketing industry Simon realised the importance of building on solid research to boost business success and subsequently arranged his own study in the form of Gin Club Scotland, the world's first touring gin club. Simon explained: “We wanted to find out what gin lovers discerned about the gins they tasted and what they liked about them, so we obtained feedback from 4,000 individuals whilst touring Scotland with gins

The Herby & Aromatic gin is a more savoury option that has a warming botanical mix of juniper, basil, bay leaves and rosemary; gentle spices that are enhanced when served on the rocks or with tomato juice and a drop of Tabasco sauce as a ‘Bloody Herby’. The final beverage available is the Sweet & Nutty Old Tom Gin, which evokes feelings of nostalgia with its seductively sugary scent of vanilla ice cream and butterscotch sauce. The creamy gin has a nutty gingerbread finish and makes for a perfect digestif when poured over ice. The tantalising flavours of vanilla and almonds can be enjoyed with the inclusion of root ginger for extra indulgence, and the gin is a great alternative to liqueur as an after-dinner tipple when drank with ginger ale. Established in 2014, the family-run company was started by father-and-son team Pat and Peter McKeever. Nestled in the heart of the apple county, operations are controlled from their very own farm, which is situated in Portadown, N Ireland. The supplier specialises in the provision of delicious craft cider, still & sparkling apple juice and apple cider vinegar; all-natural and gluten-free products that contain no concentrates, colours or artificial flavourings, this is reflected in their motto “From Plant to Pour”. They are lovingly made on the Long Meadow home farm; the site on which they grow and harvest their own apples. “We are an award-winning, family run business with over three generations of apple farming so we know only too well the importance of high quality apples within high quality ciders,”
detailed Catherine McKeever of Long Meadow Cider. “Our fermentation process is extremely slow (from 4-6 months). We reduce the alcohol levels after fermentation by adding apple juice from the farm as opposed to water, resulting in ciders produced from 100% apple. Our limited edition Oak Aged is then further matured in oak aged barrels for 12-18 months after fermentation resulting in a dry, boisterous cider.” The popular range comprises three unique variations: the crisp and thirst-quenching Medium (4.5%), the elegant and smooth Blossom Burst (4.5%) and finally, the Limited Edition Oak Aged Cider (5.5%), which is characteristically dry. There is also a festive flavour available in the form of Mulled Cider (4.5%), which, as a warming Christmassy beverage, blends winter spices, cloves and orange peel.
