FOREWORD With a passion for great food and drinks, a love for Wales and a desire to shout about these from a roof top, CARU FOOD was born! This magazine has been created to support as many of the awesome companies within the Food & Drinks industry, particularly in Wales, to land on your doorstep free of charge, showing you where to eat, where to drink, or where to buy from. With so many franchises selling processed foods, so many added nasties hidden in mass produced products, and so much worry over ethically sourced ingredients, switching to a local, independent business will not only support the local economy, but you can know exactly what you eat and drink! Let’s give our farmers, producers, brewers and manufacturers a stronger voice. We are very new and welcome all feedback. In the meantime we do hope you enjoy reading!

SPOOKTACULAR RECIPES STUFFED PEPPERS INGREDIENTS:

500g Turkey Mince 1 Cup Basmati Rice 1 Onion Diced 2 Tsp Cumin 1 Chilli (Seeded if less heat required) 2 Garlic Cloves Minced 1 Cup Chicken Stock 2 Tsp Rapeseed Oil Handful of Corriander Salt and Pepper to taste

METHOD:

Heat oven to 170°C. Add oil to pan and gently sautÊ onion, garlic and chilli for 2 minutes. Add in turkey mince, cumin, salt and pepper and cook until lightly browned. Pour in chicken stock and leave to simmer. Meanwhile, bring rice to the boil and then combine rice with turkey mince. With your pre-carved spooky Halloween pepper, add the turkey mince and rice, garnish with corriander and bake for 30 minutes. Serve immediately.


HALLOWEEN CAKE POPS INGREDIENTS (Lollipop sticks required)

Vanilla Sponge: Buttercream: 180g Self-Raising Flour 150g Unsalted Butter 180g Caster Sugar 300g Icing Sugar 180g Unsalted Butter 1Tsp Vanilla Extract 1Tsp Vanilla Extract 2Tbsp Milk (more if needed) 2 Large Eggs Orange Food Colouring Orange Food Colouring

METHOD:

Preheat oven to 180°C. Grease a 20cm round tin. Cream the butter and sugar until fluffy and peaks then add the vanilla extract. Gradually beat in the eggs one at a time. Fold in the flour and combine. Add orange food colouring to suit desired colour. Pour in tin and bake for 40 minutes. Leave the cake to cool on a wire rack and prepare buttercream. Whisk the butter and slowly add icing sugar. Combine with vanilla extract, milk and orange food colouring as required. Crumble the cake mixture into the buttercream and mold into a ball. Roll balls in sugar, insert stick and place in refridgerator. Decorate as desired with fondant or sugar paste.

HIDDEN GEMS Porro, Llandaff, Cardiff - 3 courses, £21 per person Porro is an Italian-inspired gem hidden in plain sight on the High Street in Llandaff. The team behind the restaurant have taken great care to create an environment that is smart and relaxed, where you can enjoy a leisurely breakfast, a rapid lunch or an evening out depending on your mood. Exposed red brick walls, leather seats and dark wooden tables provides a warm atmosphere where you can enjoy simple Italian cuisine elevated to an elegant, sophisticated dining experience focused on quality ingredients cooked to perfection. I opted for buttery cod cheeks to start, accompanied by a luxurious salsa peppered with little pieces of bacon. My wife chose haddock croquettes with a pea puree and pea shoots and both dishes brought smiles to our faces and nods of satisfaction. Although the menu is seasonal, it was with great reassurance that the ever present ox cheek pappardelle was available. It’s a deep, flavorsome ragu with meat that just falls apart in your mouth, which I was fortunate to be able to taste before my wife devoured it.


I chose Pizza pollo – roast chicken, olives, pepper, rocket and chilli. It had a great base, great sauce and really fresh toppings and, to my joy, I learnt that they now provide a takeaway menu! To finish, we shared a chocolate torte with hazelnut ice cream, which was velvety smooth, gooey and provided that intense chocolate hit needed after a good meal. Porro is building on its success with its takeaway menu for pizza and pasta, a children’s ‘Bambini menu’, and a second restaurant which is about to open on Wellfield Road, Roath. You can’t have too much of a good thing and I’ll definitely be going back for more.

Hare & Hounds, Aberthin are on the look out for 2 new bar staff to join their small team. We are looking for experienced bar staff for our busy dining pub just outside Cowbridge. The pub is a cosy local watering hole, important to the local community. We pride ourselves on our guest ales, interesting wines and spirits and homemade seasonal drinks. The bar provides a small daily changing menu, with a slightly longer, daily changing seasonal menu also being served in the dining room next door. Applicants will need pub experience, including cellar management and opening / closing responsibilities. Preferably you’ll also have some craft beer interest and knowledge, and any wine or spirit knowledge or training is a great bonus. Our bar staff love getting involved in making seasonal drinks and helping with other jobs that help make our pub unique in the area. Responsibilities will include, but not be limited to, cellar management, opening / closing the pub, making and serving drinks to a high quality, serving food within the pub and advising customers on food and drink.
