HEALTHY PACKED LUNCHES Are you a fussy eater? Are you scared of trying new foods? Do you find your packed lunches boring eating the same every day? You might need bento in your life! Foreword MUMS & DADS I wanted to take this opportunity to explain a little about this magazine, and why it has been created, in the hope that you will support us in providing a better, healthier future for our children. As the number of children being described as overweight or obese grows, so does the number of children falling ill with serious illnesses. The HEART Magazine has been created to provide children with a fun and free way to access information on healthy living, with ideas and recipes to do together as a family. When engaging children in the healthy and fun activities, they are more likely to try different things to adopt a healthier lifestyle. This is the first issue of the magazine and it is with great thanks to MEND that we are able to publish this for our children. We would really appreciate any feedback you may have. All writers in this magazine are fully qualified in their field of work and we hope you and your children enjoy it as much as we have enjoyed putting it together. Thank you for your time and support. ROAST LEG OF WELSH LAMB WITH SPRING GREENS

INGREDIENTS (Serves 4) Preparation: 30 minutes Cooking: 90 Minutes 1.5 kg leg of Welsh lamb Large handful of fresh rosemary, roughly chopped 3 garlic cloves, crushed 3 tbsp extra virgin olive oil 150ml good red wine 100ml veal or beef stock Sea salt and pepper 50g butter Spring greens METHOD

1) Preheat the oven to 350 째F / 170 째C / Gas Mark 4. Open out the joint of lamb skin side down and lay flat to the board. 2) Combine rosemary, garlic, olive oil, salt and pepper and coat the inside of the leg of lamb. Roll back up and tie with string. 3) Place leg in a large roasting tray an cook for 1 hour and 20 minutes for medium. (Deduct or add 15 minutes for rare or well done) 4) Leave the leg to stand for 10 minutes. Whilst this is resting, steam the spring greens and make the gravy. 5) For the gravy, use the stock from the lamb, add extra beef stock and wine. Bring to the boil, adding some flour to thicken if needed. Mix in the butter. 11

Cherry Tomato, Mozzarela and Avocado Salad with Balsamic Glaze Total Time: 5 min Prep: 5 min Level: Easy Ingredients:

Directions

Put the romaine lettuce leaves at base of bowl. Add cherry tomatoes, avocado and mozzarella. Season with salt and pepper and toss. (Or for more fun, mix with your hands). Sprinkle with fresh basil, squeeze lemon juice over and drizzle the balsamic vinegar.

Handful of red and yellow cherry tomatoes, halved Avocado, chopped Mozzorella balls or chopped Romaine Lettuce Sea salt and freshly ground pepper 1/2 Lemon Freshly Squeezed Fresh basil leaves Drizzle of Balsamic Vinegar

Sweet and Spicy Grilled Salmon Total Time:35 min Prep:15 min Cook: 20 min Level: Easy Ingredients: 1 red chilli chopped 1 heaped tablespoon dark brown sugar 1 teaspoon smoked paprika 1/4 teaspoon cayenne pepper 2 tablespoons light mayonnaise 1 tablespoon snipped chives 8 stalks celery, very thinly sliced in half moons on an angle 1/2 small red onion, very thinly sliced Four salmon fillets Sea salt and freshly ground black pepper Extra Virgin Olive Oil

Directions Add all your dry ingredients together in a bowl, in a separate bowl combine all the wet ingredients. Combine your wet to your dry ingredients. Get your hands in the bowl and mix together until you form a dough. Once you have your dough, split into 6 equal pieces and roll into small balls. Cover a baking tray with baking paper and place your dough balls making sure you leave room for them to grow (roughly 10cm apart). With a sharp knife score your crosses. If you find this a little difficult keep a glass of water by the side of you so you can dip your knife in it and use on the dough. This will make it easier to score the dough. Place the buns in the oven for 25 minuites or until golden brown. Place your Cross Mix into a blender and blend until it’s a smooth paste. Once it’s smooth scoop it into a piping bag. When your buns are baked place them on a cooling rack for 15minutes then pipe your crosses on the buns. Serve with refined sugar free jam or a spread of your choice and enjoy. Cariad Mawr Jin a Matt

Jins Paleo Hot Cross Buns Total Time: 70 min Prep: 45 min Cook: 25min Level: Easy Ingredients: 300g Almond Flour 2 Tsp Apple Pie Spice Mix 1 Tsp Baking Soda 2 Tsp Raw Honey 1/2 Tsp Vanilla 60g Coconut Oil Melted 2 Eggs 1 Tbs Palm Shortening (Or Ghee) Cross Mix: 1 Oz Almond Milk 1/2 Tsp Vanilla 4 Oz Pitted Dates

BonAppetit Directions Preheat griddle pan on medium high. Mix together the chilli, brown sugar, paprika and cayenne in a small bowl. Transfer 1 tablespoon of the mixture to a large bowl and whisk in the mayonnaise; set aside the rest of the sauce. Add the chives, celery and onions to the bowl with the mayonnaise and toss well. Sprinkle the salmon with salt and pepper. Brush the grill grate lightly with oil. Lay the salmon on the grill, skin-side up, and cook until distinct grill marks appear and the salmon releases easily from the grate, 2 to 3 minutes. Turn and brush the fish with some of the reserved sauce. Continue to cook the fish, brushing the pieces periodically with the sauce, until the salmon fillets are glazed and just cooked through, 13 to 15 minutes more. Transfer the fillets to individual plates and serve with the celery slaw.

CHOCOLATE EASTER NESTS As we all know, the most popular Easter tradition is to give Easter eggs. Traditionally, Easter eggs are given to symbolise new life – if you are religious they symbolise Jesus coming back to life after dying on the cross. If you’re not, they can simply symbolise new life in Spring – and of course, almost everyone loves chocolate, so it’s just the excuse we need. I’m all about cooking from scratch & making as much as possible myself – this way I know exactly what’s gone into it and what I’m eating. But, one thing I don’t make is chocolate. I make my own chocolates – truffles, caramels etc., but I do buy chocolate to melt down in order to make them. But, even with this I can be particular with the chocolate I buy – what added ingredients does it contain over & above cocoa? Is it Fairtrade, organic etc. I even check for soya lecithin these days. Don’t worry – I don’t expect you to make your own Easter eggs (although please do if you want ). Here is a simple recipe to make with your parents – after all, you’ll probably have more than enough eggs! This is a really easy recipe, which you can change to suit your own tastes & more importantly, control what goes in it. Making something with your parents is a fantastic thing to do:  You spend valuable time together  You are learning when you are cooking  You’ll have a pride in what you have produced  And let’s face it – it can be a cheap way of filling a rainy afternoon without sitting in front of the TV What equipment do you need?  Muffin tin  Muffin cases  Bowl  Saucepan  Mixing Spoon  Tablespoon  Teaspoon What ingredients do you need?  100g/4oz Shredded Wheat (or use cornflakes, Rice Krispies etc.)  200g/8oz milk chocolate  50g/2oz unsalted butter  2 tablespoons golden syrup  Chocolate mini eggs (or another sweet of your choice) What do you need to do? 1. Pop the muffin cases into the muffin tin. 2. If using Shredded Wheat or cornflakes, break them up on a plate. 3. Break the chocolate into pieces & put in the saucepan with the butter & golden syrup. 4. Melt over a medium heat, stirring occasionally. 5. When melted into a lovely sauce, take off the heat & mix in the cereal. 6. Spoon into the muffin cases – use the teaspoon to make a dent in the middle. 7. Leave to cool – once cooled top with the mini eggs or sweets. 29
