April 2016
THE HEALTH & WELLNESS NEWSLETTER FOR KEIRO NORTHWEST STAFF
WHAT IS SPECIAL ABOUT APRIL 22, 2016? WELL… IT’S EARTH DAY, OF COURSE! APRIL IS NATIONALLY RECOGNIZED AS “EARTH MONTH”. THE BIRTH OF THE EARTH DAY MOVEMENT WAS ON APRIL 22,1970. THE IDEA BEHIND EARTH DAY WAS TO HAVE A NATIONAL DAY TO FOCUS ON THE ENVIRONMENT. FOUNDED BY GAYLORD NELSON (AT THE TIME, U.S. SENATOR FROM WISCONSIN) WHO WANTED TO INSTILL A PUBLIC CONSCIOUSNESS ABOUT THE AIR AND WATER POLLUTION. ON APRIL 22, 1970, 20 MILLION AMERICANS HELD PROTESTS FIGHTING AGAINST OIL SPILLS, POLLUTING FACTORIES, RAW SEWAGE, TOXIC DUMPS, THE LOSS OF WILDERNESS, AND ETC. TODAY, ENVIRONMENTAL CHALLENGES STILL DO EXIST AND THEREFORE, THE IMPORTANCE OF EARTH DAY IS JUST AS IMPORTANT AS IT WAS IN 1970. “EARTH DAY HAD REACHED INTO ITS CURRENT STATUS AS THE LARGEST SECULAR OBSERVANCE IN THE WORLD, CELEBRATED BY MORE THAN A BILLION PEOPLE EVERY YEAR, AND A DAY OF ACTION THAT CHANGES HUMAN BEHAVIOR AND PROVOKES POLICY CHANGES.”
VISIT WWW.EARTHDAY.ORG FOR MORE INFORMATION AND TO JOIN THE MOVEMENT!
HOW CAN KNW CELEBRATE EARTH DAY? We all know that it is the small things that can make a big difference! Well, here at Keiro Northwest, we may not be able to prevent oil spills in the ocean or help endangered species survive in the wilderness, but we can start with KNW. The Safe and Clean Campaign is back! In recognition of Earth day and in efforts to keep KNW Safe and Clean, we will be celebrating on… Friday, April 22, 2016 from 10am to 1pm Refreshments will be provided & wear GREEN to clean! TIPS TO KEEP KNW CLEAN • SEE IT > OWN IT > SOLVE IT • Leave a place cleaner than you found it • Wipe down counter tops • If you see a small mess, clean it up, do not wait for someone else • If you see a big mess, find a housekeeper or maintenance staff TIPS TO KEEP YOU SAFE • Use the buddy system! • Make eye contact: let people know you see them • Do no wear too many loose items: scarves, lanyards, etc. • Sit at the front of the bus, with your personal belongings on your lap • Do not leave valuables in your car • Have cell phone accessible, call 911 if you see suspicious behavior • Be alert, observe your surroundings KEIRO NORTHWEST FAMILY NEWS

Ingredients: • 2- LBS. skinless chicken breasts • 1- Small red or orange bell pepper, sliced • 1- Small yellow bell pepper, sliced • 1- White onion, chopped • ½- Cup chunky peanut butter • 1- Tablespoon lime juice • ½- Cup chicken broth • ¼- Cup soy sauce • 2- Tablespoons of honey • ¼- Cup crushed peanuts (Optional: for topping) • ¼- Cup cilantro (Optional: for topping) Get Cooking! 1. Place peppers and onion at the bottom of crockpot. (This will act as a “stand” for the chicken, so it doesn’t dry out.) 2. Next, place chicken on top. 3. In a bowl, mix together peanut butter, lime juice, chicken broth, soy sauce, and honey. Pour sauce over chicken. 4. Cook on HIGH for 3-4 hours or LOW for 6 hours. When 15 minutes remain of cooking time shred chicken with two forks. Cover and continue cooking for the remainder of the time. 5. Remove from crockpot and serve over rice, noodles, or lettuce – for lettuce wraps! 6. Top with crushed peanuts, cilantro, and ENJOY!
