COOK VEGGIES @ HOME — TOFU FOUR WAYS
Have you always wanted to learn how to knit or crochet? This is the class for you! The instructor, Marcia Almassy, will provide yarn and knitting needles or crochet hooks for your first project (a scarf). Then, she will help you choose your next project including selection of patterns, materials, needles/hooks, etc. Tofu is a good source of protein yet low in calories, containing iron, calcium, and other minerals. Tofu has been consumed in Asian countries for over 1000 years and now is popular as a healthy food in Western countries. The instructor, Yuka Honda, will show how to make tofu at home and explain the different types of tofu (soft, medium, firm, extra firm) and how to enjoy. Cooking demo recipes will be teriyaki tofu with orange soy sauce glaze, hiyayakko (Japanese traditional chilled tofu with toppings), eggless egg salad sandwich using tofu as an egg substitute, and tofu cheesecake using tofu as a dairy substitute. “Meatless Mondays” is a real thing as people look for ways to prepare tasty meals without using meat. In this class you’ll learn and taste just how good dishes can be without using meat. Come learn about and enjoy a complete meal that includes vegetable dumplings and vegan Pad Thai and finishes off with a simple sweet potato dish that will become a staple in your holiday meals. Learn how to make a cherry blossom (sakura) & plum blossom (ume) flower using mizuhiki cords. You can make the flower into a brooch pin or several for a small arrangement in a vase. Using the basic design, there are variations to creating new flowers. You will learn the basic cord-knotting technique from Kathy Carmichael and Rebecca Durham. Meanwhile, maintaining social connections is one of the best things we can do for our health and quality of life. Momentia is local movement that empowers persons with memory loss and their loved ones to remain active and connected in the community. APPLE IPAD AND IPHONE: TEXTING AND FACETIME BASICS
Do you want to use the iPhone or iPad to connect with friends and family? If you have taken the iPhone/iPad orientation class, or have a basic understanding of using the iPhone and iPad, then this class may be for you. This class will focus on the basics of text messaging and video calls (FaceTime). We will start by walking through some of the features, and then we will try it ourselves. SATURDAY MORNING TAI CHI & MEDITATION
ENHANCEFITNESS IN SEATTLE A full hour of fun with lively music! EnhanceFitness focuses on dynamic cardiovascular exercise, strength training, balance, and flexibility—everything that active older adults (55 & up) need to maintain health and function as they age. This class is highly adaptable for all fitness levels and includes the option to use a chair for support. Weights are provided. A certified EnhanceFitness instructor will guide your progress. We recommend taking the class at least twice a week. New students will be asked to complete some forms after enrollment.
Start the day with the gentle, energy-enhancing movements of Tai Chi led by our talented instructor, Edward Moore. Ed has studied under the famous 5th Generation Master of the Yang Family of Tai Chi, Master Yang Jun, since 2000. You will become acquainted with Tai Chi philosophy through this slow, graceful exercise that calms the emotions, clears the mind, and rejuvenates the body. Tai Chi also makes an extraordinary continuing contribution to our health and joy of life. This class fits all levels. Beginners are welcome. PICKLEBALL CLASS
Pickleball is a popular activity which doesn’t require previous experience. It is a reduced version of tennis with a smaller court, a little larger racquet than a ping pong paddle and a whiffle ball. Play is like tennis, but the ball does not travel as fast as a tennis ball. It’s played with partners so it’s less strenuous than singles. The class will be five weeks on Thursdays from 9:30 am to 10:30 am. At the end of the classes, you will be free to join the main players on Tuesdays and Thursdays. Participants are all novices learning in a hands-on manner; active participation is expected. IMPORTANT INFORMATION REGISTRATION: Fall quarter starts the week of September 12, 2016, with the exception of some tours and classes. PAYMENT: Payment by check, credit card, or cash is accepted. We accept Visa, MasterCard, Discover Card, and American Express. MEMBERSHIP FEE: $30 annual membership fee (non-refundable) is valid from September 2016 through August 2017. PARKING: For classes at the Seattle Buddhist Church (SBC), students may use the church parking lot on the corner of 16th Ave. S. and S. Main St. For classes at Nikkei Manor, parking is limited. For classes at Bellevue Children’s Academy, parking is available on site. Please carpool or use public transportation whenever possible. Nikkei Concerns is not responsible for any loss or damage for parked vehicles and/or contents at any location. TOURS: Most tours depart from the SBC parking lot (SBC/PL) on the corner of 16th Ave. S. & S. Main St. Return time is always approximate. Only those with confirmed reservations will receive a reminder telephone call from Nikkei Horizons staff prior to the tour date. CLASSES: Classes are scheduled for 8 to 10 weeks, unless otherwise specified. CANCELLATION: Nikkei Horizons reserves the right to cancel a class, workshop, or tour if it does not meet minimum participation requirements. In general, for a class or workshop, the minimum number of participants is four to five students. For tours, the minimum varies.
REFUNDS & CREDITS: Nikkei Horizons reserves the right to cancel any class, workshop, or tour due to insufficient registration, cancellation of venue, or withdrawal of an instructor. In the event of a cancellation, a refund or a credit will be provided. Full tuition credit will be granted for classes, if you withdraw before the start of the second class. For workshops and local tours, you must withdraw 10 days before the date of the workshop, in order to receive full tuition credit. A credit will not be granted after the second class, except in the case of a medical emergency. In such cases, a copy of a doctor’s order is required. Credits are valid until they are used up to take other classes. Refund checks take 2~3 weeks to process. Annual membership will not be refunded or credited in any case. WAIVER: All participants must sign a Nikkei Concerns Waiver on the registration form each quarter before attending any class, workshop, or tour. IMPORTANT NOTES: Registrations are processed on a first-come, first-served basis.
