LOCAL TALENT MEETS HAVANA CLUB - REECE GIBB
This issue, we shine the light on the oft-overlooked bartenders that help make your night out. In an era of MasterChef and Bake Off, the abilities of chefs and pastry chefs are revered, but the same could be said for high-level bartending. Last month, Nitelife was invited to sit on the judging panel at the illustrious Havana Rum Club Gran Prix. A global bartending competition in search of the ‘next Cuban classic’ using, very specifically, either Havana 3YO, Especial, 7YO or Seleccion De Maestro.
For me, bartending is massively about personality. You could be the best technically in the world, but if you have no social skills, I don’t think you’d get very far. But it wasn’t just the opportunity to drink lots of rum that made us clear our diary… From atop our bar stool, we get a glimpse into the serious world of mixology. 10 contestants from Birmingham, Bath, Exeter, Cardiff and Bristol have just five minutes each to present and mix their creation. Up for grabs is a place at the UK Final in London, with the potential to go on to the Grand Final in Havana, Cuba; where over five days the best in the world will compete for the global title — an opportunity that could rocket launch someone’s career. It was 22-year-old Reece Gibb who walked away with the regional title, a big coup for the Bristol barman who,
LOCAL TALENT // 27
unbelievably, has been bartending for little over a year. “For me, bartending is massively about personality. You could be the best technically in the world, but if you have no social skills, I don’t think you’d get very far. “I’ve always been someone who wants to talk to people, in everything I’ve done. I studied sports therapy at university and my tutor said to me, ‘You’re not the best academically here, but you could be the best because of your people skills’. It’s all I’ve ever been told; I just love talking to people.” While he might play down his technical skill, it’s clear he knows what he’s talking about when it comes to mixing drinks. “Every week or month, I set myself my own competition — to constantly aspire to make new drinks, learning things about different spirits. Because the best way to make a drink is to learn about the spirit and learn the different flavour profiles, the history, the background and what works with it.” Reece moved to Bristol last year for the opening of Her Majesty’s Secret Service (HMSS), a speakeasy-style cocktail bar in Clifton run by his friend Ben Alcock, and which has already made the pages of GQ Magazine and Grazia, thanks its quirky cocktail offerings like ‘Sauvignon Private Ryan’ and ‘Welcome to Kentucky, Have a Nice Day’, which is served with a garnish of noodles. “I start my day at 2pm, sometime earlier, to deep fry noodles in sugar and syrup for one of the garnishes, make candy floss,
skewer marshmallows, seal little tins for the ‘Scouts Honour’… There’s two and a half hours of my day prepping before we open at 4pm, and we serve until 12am weekdays and 1am on the weekend, then a two hour clean up. “Bartending is an unsociable job, but a sociable job. You meet so many people but you don’t get to socialise with them after hours because you finish at three or four in the morning. “Winning would be massive for me. One of the reasons I came to this job was to travel and see new parts of the world, because I’ve never been outside of Europe, so going to Cuba is a definitely part of it. And this is my first comp win, so it’s a big really deal. “This competition is very much first the steps toward having my own cocktail bar one day. It’s a dream of mine, and my dad’s as well, to own a bar off some shore, making cocktails and living the ideal life. He’ll sit on one side of the bar and I’ll make the drinks – I think he’s very much penciled that into his retirement plan.”
Follow Reece’s progress in the competition at havana-club.co.uk or pop in and try one of his creations at Her Majesty’s Secret Service on Whiteladies Road, Clifton.

JUST JACK 10TH BIRTHDAY MOTION, 7TH FEBRUARY
Next month, Bristol house music institution Just Jack will celebrate their 10th Birthday. They’ve planned an all night long extravaganza at Motion from 10pm-10am, and in an unusual twist, they’ve decided to keep the line up completely under wraps until the event. The first tier of tickets to the event sold out in less than a minute, so clearly the house lovers of Bristol trust them to put on an amazing party. We caught up with Tom Rio, co-founder of Just Jack with his friend and fellow DJ / label owner, Dan Wild, ahead of what promises to be one of the biggest nights of 2016.…
We take people having fun at our night very, very seriously! How was Just Jack born? C-Section. The illegitimate love child of David Bowie and Jeff Mills, pulled out of the belly of Bristol kicking and screaming. 10 years on, has your vision been fulfilled? If I’m honest we never really had much of a vision in the beginning. We started because we wanted a party in our hometown that offered the music we loved. There was a gap and we filled it, but it was never a long-term plan. We were a bunch of complete chancers, and a total shambles for the first five years at least! Everything that’s come since then has been a massive bonus.
Are you primarily DJs, party throwers or record label owners? I think Dan and I would both always like to be seen more as DJs, but the lines definitely get very blurry. What’s been the biggest moment in Just Jack history for you? Ricardo Villalobos playing in front of a giant projection-mapped clowns face was definitely a moment for me, it had been a long-term goal to get him to Bristol and he definitely delivered, great guy, too — he really lived up to our expectations. The 10th birthday is going to be the one though, 10 years is a long time, a massive milestone for us, and we can’t wait to celebrate everything we’ve done up until now. What’s has been your favourite party moment ever? Oooh that’s a tough one. In terms of Just Jack I think it’s probably when we ran a secret after party on a boat. We rounded everyone up at 7am from the club and said, “Come with us if you want to party”, then set off down to the waterfront. No one knew where we were going. We got on a boat and set off down the river. We had two of the DJs down from Back to Basics, Buckley and James Barnsley and they played until we got closed down by the police. It was a lot of fun! Outside of Just Jack I went to a super intimate party in a storage cupboard at a mate’s house once, capacity was strictly limited to two people at any one time but it really booted off. Great vibe, the crowd was amazing. Why did you decide to keep the line up under wraps this time? We wanted to do something different I guess. It’s our 10th
WIN TICKETS TO JUST JACK 10TH BIRTHDAY ON PAGE 21
birthday and just doing a big line up at Motion seemed a bit predictable. We wanted to avoid running a big night of hyped acts where people are in and out to see one act or another and instead create something really special, where people turn up to dance and lose themselves, stay for hours, have a right old party and maybe see someone they wouldn’t have expected. Your teaser line up poster revealing the hometown of each of the headliners got people in a bit of a frenzy... Will you be giving away any more clues? Most definitely. It’s too much fun not to! We’ve got a few lined up for the next few days actually, we’re posting them to the Facebook event so click attending to make sure you get all the notifications and stay up to date. How do you decide on your line ups? It’s quite a fluid process normally, we all sit around as a team and chat (I say chat but really it’s like a friendly argument) for a while about a handful of people who we’d really like, then I go out and see who’s free. If a few of them come back then we slowly add bit names bit by bit, making sure the balance as a whole is right with every new addition. This tends to go on for a while until we have something we’re happy with. It’s tricky, because we’re quite picky and we always want to do something new and not just rehash old ideas. First tier tickets to the event sold out in less than a minute. Why do you think your Just Jack parties are so popular? I’d like to think its because we’ve always put our all into every event. If we sell more tickets, we put that extra cash into our artist budget, or we build a giant clowns face with the extra money, or we put on a cabaret show in a tent out the front.
PREVIEW // 29
We argue for hours about who should play when or what room they should play in so that we get the programming just right, we literally waste hours thinking about the minute details like this, we always try to go that extra mile in any way we can to make the most out of what we have available to us and I’d like to think people have picked up on that and that they trust us now. We take people having fun at our night very, very seriously! 10pm - 10am?! How are you going to keep the party going? HOWSE MUSIC AW NIGHT LAWG YEAH! This isn’t our first rodeo remember, we’ve learnt a thing or two over the years… What’s next in the pipeline for Just Jack? More of the same I’d like to think. More parties, more music! The dream would be to do more smaller events, we’d love to do a more regular thing somewhere where we can just do one guest each time, playing extended sets. We’ve had some bad luck with licensing of interesting unlicensed spaces which has put us off going down that route for a while but if we could find a great 500 capacity space then that would be the dream really.

THE INFLUENCERS // BEHIND THE SCENCES WITH
LUKASZ KAMINSKI Lukasz Kaminski Age: 36 Job title: Photographer
This month, we turn the lens around on Nitelife magazine’s own cameraman, Lukcasz Kaminski. He’s been photographing your nights out for the past six years, and seen all sides of Bristol’s nightlife, for better or worse. With a degree in ecology and very varied work history (including a brief stint as a shepherd with a flock of 60 sheep), Lukcasz now works full time as a photographer. He’s even had his camera tattooed on his arm, so he’s in it for good, he says. “I was never interested in photographing architecture or nature; I’ve always been interested in people. I like to save memories. Recording moments in life.” Take a leaf through the pages of Nitelife and you’ll see that Lukcasz has a special talent for capturing the personalities of all of his photographic subjects, it’s not just groups of people grinning.
I’ve seen some things you wouldn’t normally see at work… “When people are natural with themselves, they look beautiful. It’s not about smiling and looking happy, necessarily. “When I was a kid, I saw my cousin doing pictures at a family party. And when I saw the pictures blown up in black and white I was blown away. “I found my father’s old camera lying around the house. It was a FED, a Russian camera, and I bought a film loaded up, took the first film and after that I was hooked on photography. “At that time I couldn’t afford to buy films, so I left it for a while. Then when I was in high school I met a girl who was studying photography. “I picked my camera up again and bought all the gear and chemical I needed to develop my films, and I set up my own dark room in my father’s house.” Lukcasz moved from Poland to Bristol 10 years go with a job and, like most people spend any time in Bristol, decided to stay. “I love Bristol. I love the people here. I got involved with Nitelife magazine after picking it up on a night out, I saw an ad for photographers and got in touch. I never thought I would be able to make photography a full time thing, but I’ve been doing this for six years now. “I’ve seen some things you wouldn’t normally see at work… I was at a student party once and the only light in the place was coming from my camera. I saw a group of people standing in a circle shouting and they called me over to take a photo. I was snapping away, when I saw the image on my screen. There was a guy with his trousers around his ankles and a girl on her knees! “I’ve seen the same people through their Freshers’ Week and then out celebrating their graduation three years later. “It can be lonely at times, because you see the same people all the time, but you don’t often get a chance to stay and socialise. Sometimes I’ll have a beer with people, but I always want to get the next photo. Every photo I take, I want to make it my best. “But I’ve got to know all the club owners really well and met a lot of great people through Nitelife.” With so many people calling themselves photographers today, you might worry about sheer volume diluting what is essentially an art, but Lukcasz doesn’t think that’s the case. “Either that person will stop taking photos, or they will learn. “I wouldn’t pick up a book about photography, I would pick up
a book about optics. It’s all about light and you need to know your camera like the back of your hand, so when you see a situation, you’re ready to take the shot. You need to know how your photo will look before you take the shot.” “If someone was interested in becoming a club photographer, I would tell them to start with their friends. Choose an event you want to photograph and give it a go. “Don’t go out straight out and buy expensive equipment – because it’s not cheap! And skilled photographer will take a better photo on a cheap camera than “It takes a lot of years to get it right, and I’m still learning. Every photo I take, I think to myself, how can I do this differently or make it more interesting?
“My favourite thing about photography has always been giving the photos to people, my friends and family.” “The thing I like most about my job is giving people a memory to keep. Moments fly away and in two years you might not remember them, but a photo will always be there.”
