Sweet coconut rice pudding
1 1/2 cups whole milk 14 ounce can coconut milk or 1 3/4 cups 1/3 cup white rice 1 stick of cinnamon bark, or 1/4 teaspoon powdered 1/2 teaspoon of lemon zest or 2 long strips of lemon rind 2 teaspoons ground anise seed or 1 star anise 1/4 cup white sugar or equivalent amount of piloncillo 1/2 teaspoon vanilla extract 1/4 teaspoon almond extract Garnish: orange slices, lightly toasted shredded coconut and/or sliced almonds In a medium saucepan, combine milk, coconut milk, cinnamon and
lemon rind. Bring to a boil. Add salt, rice, anise and sugar. Stir. Add the almond and vanilla extracts. Cook on low heat, uncovered, for about an hour. Stir occasionally. Remove the cinnamon stick and the lemon rinds if you added them. Divide into serving dishes and chill. Add the garnishes before serving. Serves four. ••• Sarah Ringler is a teacher at Lakeview Middle School, where she has worked on the school’s newspaper, “The Eagle Times,” and other subjects. She worked as a cook for eight years before teaching. She comes from a long line of serious cooks and has passed the tradition on to her children, grandchildren and many students.
Poached salmon with vodka sauce
pound salmon fillet or 1 steaks salt and pepper to taste 1 cup fish stock, Japanese instant dashi and water or clam juice are good 1/4 cup dry vermouth juice of one lemon juice of one orange 3 green onions, washed and trimmed 3 sprigs of parsley 3 springs of fresh dill, or 1 teaspoon dried 1/4 cup vodka 2 tablespoons unsalted butter Steamed asparagus Wash and dry salmon. Sprinkle with salt and pepper. Place stock, vermouth and juices in a saucepan that comes with a lid. Put the steamer basket over the stock. Arrange the green onions on the steaming basket or rack. Sprinkle the salmon with the parsley and dill
and place the fish over the green onions. Cover the steamer and bring the liquid to a boil. Reduce heat immediately and simmer for about 8-10 minutes. The temperature of the fish should be 125 degrees. The meat should be firm, opaque but not hard. If you are cooking a fillet, follow the Canadian rule, measure the salmon at its thickest part and cook for 8 minutes per inch. For a one-pound fillet, that means you are cooking it for about 8 minutes. Remove the fish from the saucepan and peel off the skin. Put it on serving platter and keep warm. Pour the liquid from the steamer into a small saucepan. Add the vodka and bring to a boil. Reduce to 1/2 cup. Whisk in butter a little at a time until the mixture thickens. Serve with steamed asparagus.

Round steak braised in tomato sauce and broccoli cheese stuffed baked potatoes
Fish Tacos á la San Diego
1 pound round steak 1 medium onion, sliced 1 garlic clove, minced 1 cup tomato sauce or chopped fresh tomatoes 1/2 cup red wine 1/2 cup stock or water Bay leaf Flour Cooking oil salt and pepper Wash and dry the beef. Put some flour on a plate with a little salt and pepper. Put the meat in the flour and cover both sides with a layer of flour. Heat the oil in a frying pan that comes with a lid over medium heat. When the oil is hot, add the steak and brown on both sides. When the meat is brown, remove from the pan and set aside. Add the onions and sauté until they are soft. Return the meat to the pan and pour in the tomato sauce. Bring the liquid to a low boil. Add the water, bay leaf, salt, pepper and the wine. Cover and let cook for about two hours.
Broccoli and cheese stuffed baked potatoes 2 large russet potatoes 1 cup broccoli flowers, lightly steamed 3 tablespoon butter or more 1 cup grated cheddar cheese 1/4 cup evaporated milk or cream salt and pepper Wash potatoes and stab a few times with a sharp knife. Bake at 350 degrees for about an hour until soft. Remove from the oven and let cool for about 15 minutes. With a large knife, cut each potato in half lengthwise. Carefully scoop out the insides into a bowl. Set the shells aside. Add the butter, milk and 1/2 cup of the cheddar cheese to the potatoes. Mix well. Add salt and pepper to taste. Fold in the lightly steamed broccoli flowers. Spoon the potato-broccoli mixture into the shells. Cover with the rest of the grated cheese. Put back into a 350 degree oven for about 15 minutes.
In order to make a great taco, you need fresh tortillas. Luckily, in Watsonville, that’s an easy task. Deep fat frying is always a challenge and needs to be taken seriously because of the pain and damage it can cause. The beer in the batter makes for an especially crispy coating. •••
Rubio’s Style Fish Tacos
Batter: 1 cup flour 2 tablespoons cornstarch 1 teaspoon baking powder 1/2 teaspoon salt 1 egg 1 cup beer 2 cups of frying oil like peanut, safflower or sunflower Sauce: 1/2 cup yogurt 1/2 cup mayonnaise Juice of one lime 1 jalapeño, seeded and minced 1/2 teaspoon oregano 1/2 teaspoon cumin 1/2 teaspoon dill 1 teaspoon cayenne salt and pepper 1 pound rock fish like cod or snapper 1 dozen fresh tortillas shredded cabbage salsa, fresh or your favorite bottled salsa Lime or lemon slices
Make the sauce. Adjust taste. Thinly slice the cabbage. Refrigerate both until the fish is done. Wash and dry the fish. Cut into bite sized slices. Set aside. Prepare an area to deep fat fry. Use a heavy bottomed saucepan or wok. Put a colander or strainer in a bowl to catch the fish as it comes out of the fryer. Finally, put some paper towels on a cookie tin to put the fish after it comes out of the strainer. Make the batter by first combining the flour, cornstarch, salt and baking powder. Beat the egg in a small bowl. Add the egg and the beer together. Stir to mix. Do not over mix. Leave some lumps. Cook the fish as soon as possible. Just before you are ready to serve, heat the oil in the saucepan at just below high heat on an electric stove and medium high on a gas stove. Never leave the stove once you start heating the oil. Drop a little batter in the oil. When it sizzles, the oil is ready. Dip the fish in the batter and carefully set it in the oil. You may do several slices at once. Cook on both sides until golden brown. It should take around 4-6 minutes. When done, set to drain and continue until all the fish is fried. Heat the tortillas and serve the fried fish with the sauce, cabbage, lemon or lime slices and extra salsa, if desired.
