e are living through increasingly bizarre and eerie times with the coronavirus spreading through our country, state and county. The recent shelter-in-place orders implemented by several jurisdictions have indeed changed everyday life for most citizens. It has also put many local TONY NUNEZ businesses in a financial pinch. The breweries we know and love have been called on to close, and so have the theaters, bars, entertainment venues and coffee shops. Restaurants, too, have been limited to takeout and delivery, a move that will put a huge financial burden on their front-of-house staff. We know that we will eventually overcome this. It might take weeks, though it sounds more likely to be months. In the meantime, our local businesses will be hurting. A few weeks without sales could shutter businesses forever. Some businesses will bite the bullet and close until the order lifts and things return to normal. Others, however, might stay open and hope to make just enough money to stay afloat. Help from the federal government seems to be on the way and I hope that it is enough to hold over most business owners. But as members of this incredible community we do have a responsibility to help them however we can. That includes frequenting restaurants for takeout when/ if possible, buying gift cards to local shops for later use and spreading the word about each business’ hours and offerings. That’s what we hope to do in this edition of Pajaro Valley Magazine, and in future editions. Stay safe and wash your hands.

s the second day of Santa Cruz County’s shelter-in-place order dawned Wednesday morning, Watsonville Yoga, Dance and Healing Arts owner Phoenix Artemisia was busy setting up for class—just not as she normally does. Artemisia’s mat was unrolled on the ground of her studio on Main Street, angled in front of a small table that had her phone propped up on a yoga block, with a Tibetan singing bowl nearby. She was preparing for a livestream of her Beginning Yoga class.

“It’s so important… in situations like these, to find ways to stay calm,” Artemisia said. “To have some sort of normalcy. It’s a big comfort.” Watsonville Yoga is one of many yoga studios across Santa Cruz County that are offering live streams of their scheduled yoga classes. The studios have gradually transitioned online the past week. In Artemisia’s case, it was necessary to find a way for her students to have yoga available to them. “Our community loves each other,” she said. “This is a way for them to come together… to keep

that bit of a connection.” Watsonville Yoga will be offering online classes free to the public, as well. “Of course we ask if people can continue their memberships—this is a tough time for us as a small business,” she said. “We also know it’s a financial burden right now… and no one will be turned away. But if you can contribute, we’d really appreciate it.” North in Aptos, Yoga Within instructor Amey Mathews has also started teaching virtually. Her studio, which she co-owns with instructors Karen Zelin and Karyn Bristol, began online

classes immediately Monday morning. “I threw myself into it,” Mathews said. “For three days I did a crash course in all the technology. My friends and family helped—my husband has been doing troubleshooting. It’s been a steep learning curve… But it’s so worth it.” Mathews said that a new introductory yoga class had started just three weeks ago, and that she was determined to keep it going. “We have an amazing group of people who have been coming consistently,” she said. ➝ 8

cores of restaurants across South County have been hit hard by the outbreak of COVID-19. With shelter-in-place orders in effect, residents are asked to stay inside and limit their time near crowds. This includes going to sit-down restaurants, coffee shops, breweries and the like. As such, small business owners are having to close their doors, losing valuable revenue and shifts for front-of-house staff. But many of these locally-owned shops are already taking steps to survive—and also serve their community—through the coronavirus crisis by setting up systems such as online ordering, door delivery and to-go pickup. “That almost never happens with intro classes. I couldn’t stand to pull the rug out from under these people.” Every teacher at Yoga Within will eventually have their classes online. Class fees will be lenient and on a sliding scale, as the instructors know how difficult things will be financially for a while. Mathews said that so far, the “turnout” to the classes has been good—and that she has even had students from far away participating. “If there is any silver lining to this strange situation we find ourselves in,” Mathews said, “it’s that I’m making

connections with people from all over the world. My friends from Oakland, New Hampshire, even Denmark have logged on and taken my classes. It’s been amazing.” Mathews said that yoga is something that nearly everyone can benefit from, especially in times of stress. “We need yoga now more than ever,” Mathews said. “Not just my students, but me as well… seeing all these people I love. After my first class, I felt the best I had in 10 days.” Artemisia had a similar sentiment. “The world is quiet,” she said. “It can be an opportunity for transformation. 1 small egg 1 teaspoon white wine vinegar ½ teaspoon salt 1/3 cup very cold water, or more if necessary

FOR THE CREME PATISSERIE OR CUSTARD: 3 egg yolks 1 1/3 caster sugar, or regular sugar ground until fine in a blender or food processor 1 ½ cups milk 1 ½ teaspoons plain flour 2 tablespoons cornstarch 1 ½ cup plus 1 tablespoon unsalted butter, softened 1 ½ teaspoon vanilla extract To make the pastry, pulse the flour and butter together in a food processor until you have a uniform crumb with no lumps of butter within the flour. Transfer the crumbed mixture to a bowl. In another bowl beat the egg, vinegar and salt together. Then

stir into the crumbed mixture, incorporating it quickly and thoroughly. Add enough of the measured cold water for the mixture to come together and form a ball, then knead together until you have a workable dough. Divide the pastry dough into 8 equal balls, wrap each in clingfilm and refrigerate for a few hours until firm. After refrigeration, preheat the oven to 425 degrees. Roll out each portion of pastry on a lightly floured work surface into an even circle, about 6 ½ inches in diameter and as thin as a French crepe. Transfer to a baking sheet and prick all over with a fork to keep the pastry flat. Bake for about 10 minutes until the pastry starts to brown. Leave to cool on a wire rack. To make the custard, mix together the egg yolks, sugar, milk, flour and cornstarch in a saucepan. Bring to a boil, stirring constantly. Take off the heat and let cool slightly. Beat in the softened butter a few tablespoons at a time to avoid lumps forming, along with the vanilla extract.

You may need to return the pan to a low heat if you notice that the custard is cooling down too much. The custard should be thick enough to spread with a knife. To assemble, generously smother each of seven layers of pastry with the custard and stack them up. Set one pastry layer aside and, once all the

other layers are in place, crumble the reserved layer on top of the cake--to resemble the snow that sealed the fate of Napoleon and his army back in 1812. Let the cake rest in the refrigerator overnight. Sprinkle with powdered sugar if desired. Cut with a serrated knife serves eight to ten people.

This is for all you circling birds: firsttime flyers, empty nesters and standard garden-variety homing pigeons seeking a place to land. Well-intentioned, wellprepared, wannabe homebuyers looking for a roost in what has to be one of the most lopsided Seller’s Markets anyone can remember. Late last year you decided to take a break out of sheer frustration or extreme buyer-fatigue. Or both. But it’s just the beginning of a New Year. You’re battletested and rested. Ready to stretch your wings and get back in the game with all the other circling birds out there competing for the same miniscule supply of fresh listings. It’s a daunting task. Everyone has their eyes and ears peeled. Property parameters primed. Search engines set. Loan approvals dialed in. Watching. Waiting. Ready to swoop in on the next best thing that comes on the MLS. Something about the early bird and the worm... While you are out there circling…what can do in the meantime? How can you avoid burning out again? Here are a few things to keep in mind: Patience. Perseverance. Preparation. There’s no simple fix or shortcut. Buying a home is hard work. Set your expectations accordingly. Be Vigilant/Don’t Hurry. Every new listing will go through one set of open houses. It’s not a race. If something sells before you see it, then it sold at a price you weren’t willing to pay anyway. Forget Foreclosures. Zillow will keep sending emails about upcoming foreclosures. Unless you’re prepared to make all-cash bids against savvy flippers at the courthouse, let it go. Foreclosures are a distraction people indulge in to take their focus away from the task at hand. Local Lender/Local Agent. If you don’t understand why this is important, get educated before you go further down the road and realize you made a wrong turn. Dual Agent Double-Down. Don’t drop your agent in midstream because you think a listing agent is going to give up their commission to get you the house. You’ll self-destruct without real representation. Online/In Person. Don’t just look at properties online. Visit them in the flesh. That’s the only way you’ll be comfortable with the compromises you’ll have to make. As they say, folks, the definition of inanity (silliness) is doing the same thing over and over again, expecting different results. Now’s the time to question your own assumptions and readjust your approach. Call for more details.
