L
usso Della Terra, luxury of the land, is the incarnate dream of winemaker Edward Cholakian and with the help of partner Megan Van Hook, Lusso Della Terra Cellars, or LDT, now has a tasting room in downtown Paso Robles that could make any hip coffee shop jealous. The tasting room, more of a lounge according to the partners, comes complete with intimate couches, ample bar seating, those little hooks you can hang your purse on, rotating artwork, chandeliers and ambiance to boot and provides plenty of space for gatherings,

meetings or getting some time by yourself. Cholakian, a former wine industry accountant, turned to winemaking to escape the boredom of his previous profession and found that, though he had to start over from the bottom, he slowly but surely made his way to the top. “I used to be an accountant in the wine industry and I hated it so much,” Cholakian said about previous profession. “All the winemakers were in the office next to me and they always had all the fun. I pretty much asked them how I could be a winemaker and they told me I had to go back to school and work your way back up, and that’s what I did. I went back to Davis, got a degree in enology and I

slowly worked my way from cellar rat all the way up to the lab and then to wine making.” Cholakian made wine for years as a personal hobby, but became more serious about the venture in 2011 after one of his biggest vintages in 2009 led him to devote more time to the process in the midst of his still ongoing, full-time job. Now, Cholakian makes award winning Paso Robles Zinfandel and Sangoivese as well as Paso Robles Cabernet Sauvignon, a new venture for the winemaker, along with his more well-known Sonoma Coast Chardonnay, Russian River Valley Pinot Noir. The new Paso Robles varieties suit the winemaker well and are proven by LDT’s 2013 Zinfandel, which won a gold medal at the 2015 Critics Challenge International Wine Competition, and the 2011 Sangiovese, which won gold medal from the 2015 Central Coast Wine Competition. While Cholakian excels at winemaking, he proclaimed that it is his partner Van Hook, a realtor of 15 years, who runs the show, calling her the “face of the tasting room.” “I’ve been in real estate for 15 years,” Van Hook said. “Now that I’m switching over, I’m learning a lot, it’s fun. I still work in the morning and I don’t have to be in an office.” The office-free air of the tasting room and lounge has allowed Van Hook to spread her wings to expand what the tasting room offers including live music on Saturday afternoon, pick-up parties that strongly emphasize the party and keeping the operation open late, when most tasting rooms downtown close. “We’ve been doing live music, featured artists, pick-up parties, wedding parties,” Van Hook said of the array of possibilities the lounge offers. “We’re one of the largest tasting rooms downtown, we can fit around 60 people. We want to be the late-night lounge by staying open a bit later.” Among the goodies, the tasting room also offers complimentary cheese pairings with the help of Vivant Fine Cheese, free Wi-Fi for those wanting to hang out and work on a laptop with a beverage in hand and beer offerings, one of the few tasting rooms downtown to do so. “We’re trying to make it an experience,” said Cholakian of the unique wine tasting lounge. “We want people to know they can hang out if they want to. We have free Wi-Fi, they can hang out for hours drink some wine and do work.”

The friendly, Paso Robles downtown community is what drew the partners to choose Paso Robles as their base of operations after the two spontaneously decided to open the tasting room together and it was Van Hook’s realtor experience that spurred on the decision knowing that she could easily find the right spot for the tasting room. The two agreed that they were both nervous to open the tasting room at first, knowing that even though Cholakian had been selling wine to restaurants for a few years, opening a tasting room would truly test the wine’s palatability with the public. “It’s really cool, because I really liked the wine before we opened, but it’s kind of scary because you don’t know if others will,” Van Hook said about striking out into the new venture. “We never knew if everyone else would agree with us,” Cholakian added. “We think this wine is awesome, but does everyone else think it’s good, too? We’ll find out,” After three months of business, the partners are starting to feel comfortable in their new location and they are slowly updating and adding elements to the tasting room to continue to spruce it up after a relatively quick, two-month build out. The LDT partners have also become close with the other downtown wineries and have joined the Paso Robles Downtown Wineries, a group that is constantly planning events and referring customers to each other. “We have an amazing relationship with all of them, we refer back and forth all the time,” Cholakian said about their friendship with other downtown wineries. The Paso Robles Downtown Wineries put on several events throughout the year including the Midsummer Wine Stroll and the Sip and Swing, a harvest time event where each winery comes together to pour and dance at one location. Cholakian excitedly reported that this year’s crush took place at Midnight Cellars this year for the first time, something he exclaims will be fun. As for his time in Paso Robles so far, Cholakian said he’s hooked and he’s had nothing but a good reception from friendly residents and out of town visitors. “The community, the people, basically everything about it,” Cholakian said about his liking for the town. “The lifestyle around here, the small-town feel, I’m loving it.”

P
ipestone Vineyards owner and winemaker Jeff Pipes has been growing grapes and making wine in the Paso Robles region for more than 20 years and he owes his passion for farming and winemaking to his grandfather. Pipes’ grandfather fought in WWI and decided to stay in France for a year after the war ended to spend time with a new girlfriend and it was during this time that he fell in love with French wine and food. He returned to the U.S. during the prohibition years and, unable to purchase wine, he decided to learn to make his own — a skill that he would eventually pass on to his grandson. “He really sparked my interest,” Pipes said. After earning a degree in environmental engineering and another in law, Pipes went to work as an environmental lawyer, but said he found the work to be unsatisfying. “I was just shoving papers from one pile to another and it was terrible,” he said, adding that he’d always been interested in farming and decided to give it a go, eventually settling on grapes as his cash crop. “That’s the only way that I could make a farm work is to find something I could turn into a high-value product. If you’re not feeding your kids off of your winery, it’s really just a hobby.” Pipes takes a very hands-off approach when it comes to winemaking, allowing nature to take its course. “When you’re working on this kind of small, handmade scale, there’s really no mystery to it,” he said. “People have been making

wine since the beginning of time. The farming is the most important. Grow the grapes properly and don’t put on too big of a crop.” Due to a lack of nutrients in the Monterey shale beneath Pipestone vineyards, Pipes said that his grapes are not the biggest or the sweetest, but are smaller with a nice, thick skin. “Really all of the flavor and color comes from the skin, so we manage the vineyard for those specific grapes.” Pipes said he does very little to alter the chemistry of the wine after the fruit is harvested. “Our philosophy is not to focus on the chemistry of the wine,” he said. “If you work for one of the big wineries, you need more training because you’re having to fix mistakes, while we avoid them to begin with. Winemaking just isn’t a big mystery. You could throw some grapes in a five-gallon bucket; walk away and you’d have wine. If you control the cleanliness and the temperature you really don’t have a lot of problems.” Pipestone focuses on Rhone varietals — the same wines that sparked Pipes’ grandfather’s love of wine in Southern France. Pipestone produces Grenache, Syrah, Mourvedre, Zinfandel and Viognier and a blend of 40 percent Syrah, 30 percent Grenache Noir and 30 percent Mourvedre called Rhone Red. “Mainly we want to make it taste good,” Pipes said when asked about his blending techniques. “But there are other factors as well. Does it taste like it’s a typical Rhone wine? Is there a balance to the wine? Does anything stick out? And we also want to make sure it doesn’t have any faults.”

Pipestone Vineyards co-owner and winemaker Jeff Pipes learned to make wine from his grandfather, who fought in WWI and lived in France for a year.
Pipes said he also likes to try for consistency in his wines, something that has become increasingly difficult with the current drought going on in the area. While the extreme weather has led to decreased yields, Pipes said that his customers actually like that they can taste the difference the weather makes in the finished product. “They know that it’s going to taste very close to the wine coming out of Southern France, but with more of a fruit burst because it’s from California,” he said. “I like to see the smile on people’s faces when they drink it.” While working as an environmental engineer, Pipes worked at National Superfund sites, some of the most ecologically damaged sites in the nation, which led him to use sustainable farming

practices including using horses as beasts of burden during harvest time, and using all-natural pest and weed control techniques. “I really saw some of the worst that people could do,” he said. “There’s a lot of food in the world and it can certainly be grown organically. I don’t want to be the guy out there spraying the vines — I don’t think it’s necessary. The truth is, organic farming is more about balance. If you think of it as a holistic system and about balance then you’re going to be successful.” Pipestone is open for tastings and tours from 11 a.m. to 5 p.m. Thursday through Monday at 2040 Niderer Road, Paso Robles. oxo Port Cellars co-owner and winemaker Jeff Steele is passionate about Port and pays homage to its Old World roots by adhering to the Portuguese method of making the wine. The Indiana-native says his passion for Port began roughly 25 years ago when he moved to California. He didn’t have any friends or know anyone, but he wanted to venture out of his comfort zone, learn about wine and visit the Napa Valley. Little did Steele know where it would lead. “I was raised on Pabst Blue Ribbon and Stroh’s,” Steele says. “So I went to Napa and one of the first wineries I visited was Prager Winery and Port Works, a long-time family operation and they have a passion for Port-style wine and I was introduced at the time at the ripe old age of 22 or 23 to Port-style wine and fell in love with that style of wine. I kind of had to research and find out what Port is all about. I gravitated obviously to Porto and the Douro River and the styles of wines that they produce, Ruby, Vintage, Tawny, and Colheita.” True Port or Porto is a Portuguese fortified wine that is produced exclusively in the Douro Valley in northern Portugal. It’s typically a sweet, red wine. Everything else is technically a Port-style wine. Steele and his wife Kim started Roxo Port Cellars in 2005 and now produce 700 to 1,000 cases per year from their cellar at Limerock Orchards on the corner of Peachy Canyon Road and Vineyard Drive. The Roxo Port cellar sits in the back of the property behind a tasting room that they share with Brochelle Vineyards. “Roxo in Portuguese is purple,” Jeff says. “So we are tying the name back to its roots in Porto and the color purple is associated with wine. We also have the term Metodo Portugues on the label, which means in the Portuguese method.” Roxo Port has seven to eight Port-style blends available for tasting on the bar today, including their flagship blend Magia Preta, which translated from

Keeping five generations of tradition
alive in Pozo

D
riving stakes, tilling the earth and planting the vines is how Joey Arnold, winemaker at Vintage Cowboy Winery, developed a passion for his trade, helping parents Steve and Debbie Arnold plant the vineyard in 1995. After 20 years producing grapes for commercial use, the Arnold family is reserving some of crop for their own winery operation. Joey and his sister, Michelle Pascoe, run the winery together with the help of their spouses Jessica Arnold and Ryan Pascoe, kids, Laney and Josie, Reagan and Emery and parents. Joey and Michelle are both graduates of Cal Poly, San Luis Obispo, majoring in viticulture. Joey has been making wine for about 10 years. Not only does he make the wine, he oversees the ranch’s cattle herd and helps with farming. Joey also enjoys team roping and golfing. “Our family has owned this land since 1919, raising cattle, growing feed and eventually grapes,” Joey said. “I talked my dad into giving me a ton of Zin in ’02 or ’03 and that was okay so we decided to go from there. We all enjoy making wine and it goes along with our beef program. It is nice just to sit down and drink your own bottle of wine with a great cut of beef, there is nothing better.” Joey said that everyone plays his or her part in making the winery a success. His wife, Jessica, designed the Vintage Cowboy label.

For him the keys are not just having family to bounce ideas off of, but staying true to the vineyard and grape to make something wonderful without overly manipulating it. “We sit around the table of the old ranch house with the entire family for dinner every week,” Joey said with a smile. “I bring in the graduated cylinders and some different wines and we blend and taste and decide what we like over a great steak with good company. It is really the best way to make wine with the entire family involved.” Joey went on to say that because they have been producing grapes for commercial use for 20 years the vineyard is well aged. It rests on land that was once rich cattle grazing land. He said that it was reasonable to attribute the quality of the grape to the land it is grown on, explaining that he does very little to the grapes other than harvest, press and barrel age to get the quality he is looking for. “We grow Merlot, Zinfandel, Cabernet Sauvignon and source Grenache Blanc and Chardonnay for our whites,” he said. “With our grapes I really don’t do much to them to get a great bottle of wine. I use new oak both American and sometimes French and really don’t even need to mess with the PH levels either. I have just been lucky to have great crop to use, growing on land with a rich soil and even in the drought we find that the flavors are solid. I really don’t doctor it.” Joey went on to describe the favor profiles of the Merlot, Cabernet Sauvignon and Zinfandel, explaining that they are all products of their environment and may exhibit different flavors as the

Each is complex and a vivid representation of the flavors present in the soils of San Luis Obispo County. “The Merlot is complex with a nose of rose, plum, and cherry blossom and it has a velvety mouth feel of toasted coconut, almost caramel flavor with a bit of spice,” Joey said. “Our Cab is distinct with fresh black cherry, vanilla and wild black berry aromatic notes. These are all very much Pozo-driven attributes. It has a great finish of chocolate and herbs to it that people really seem to enjoy. The Zin we planted most recently of all our blocks. It has a dark nose of savory plum, coconut and cinnamon and tastes of red berries with a hint of clove and stone fruit. Our Zin is definitely not your typical jam, heavy fruit based wine like you get in Paso it has more complexity and a spice to it that is very much representative of the wines we grow in Pozo.” This family is in the business of preserving its history as well as making a great bottle of wine. The ultimate goal is to produce 5,000 to 6,000 cases and the new location will go a long way toward facilitating this. The tasting room and crush facility has been open for a year and with the new location there are big plans in the works for events in conjunction with the Pozo Saloon.

Michelle, who manages the day-to-day operations for Vintage Cowboy with the help of Jessica, is kicking off celebrations and débuting the new branding and tasting room at an open Fall Winemaker’s Gathering, Saturday, Oct. 10. “The event will begin at 5:30 p.m. at the Vintage Cowboy Tasting Room with hand-passed appetizers, bocce ball and a working cow dog demonstration, something special to share our heritage with visitors,” Michelle said with excitement. “This will be our first-ever open winemaker’s dinner and we would like to invite all to come and enjoy a taste of the good life out here in Pozo.” The main event for the Fall Winemaker’s Gathering will be hosted at Pozo Saloon at 6:30 p.m. Award-winning wine will be paired with food from Bonnie Marie’s Catering and live music from The Matt Nino Band, a local performer out of Templeton. ass Vineyard and Winery, the Central Coast Wine Competition’s 2015 Winery of the Year, is located between Paso Robles and Creston and offers a relaxing getaway among rolling, oak-studded hills where visitors can relax in the quiet serenity of the vineyard-laden valley. The location’s environment is ideal for growing Rhone varieties and the 145-acre vineyard receives the cool Templeton Gap breezes while still absorbing the east Paso Robles heat. serves up delectable menu items by Chef Jacob Lovejoy ready to be paired with Cass’ elite wine selection. Owner Steve Cass wasn’t always the purveyor of an estate winery; he began Cass Vineyard and Winery 15 years ago after retiring from his career at Charles Schwab, not to be confused with Charles Shaw, a.k.a. two-buck chuck. “I worked at Charles Schwab for 20 years,” Cass said about his previous career. “By the time I had been there 15 years, the company had grown from 600 employees to 26,000 employees. So I started thinking about what a second career would look like.”

Cass, a self-proclaimed wine drinker, but not wine expert, had only toyed with the idea of opening a winery and was more interested in buying property to build a home in Paso Robles at the time. His trip to the area to scope out property left no doubt in his mind that starting a vineyard was his next career move. “I was totally flabbergasted by what I saw,” Cass said of his Paso Robles trip. “There were vineyards everywhere, wineries everywhere, mild weather and it was 20 miles from the ocean. On the drive home I told Alice, my wife, ‘Maybe what we should do is buy property down here, we’ll plant a vineyard, hire a vineyard manager, and maybe someday there will be a winery.” It wasn’t long before Cass became business partners with Ted Plemons, the man responsible for building the Cass residence and barn, and they hired their first vineyard manager, Lood Kotze, on a celebratory trip to South Africa. From there the partners have strived to grow the best wine grapes possible and soon they developed a taste for making wine as well. Cass, which initially only sold grapes to other wineries, eventually expanded and started making their own wine. Today, Cass is still considered a boutique winery, producing only about 10,000 cases per year and mostly distributing through wine club shipments and winery sales; only 10 percent is distributed in stores. The Cass estate vineyard is entirely ENTAV certified, which is a special certification from the French government that ensures the vines are free of viruses, mature evenly and can be matched with the best possible soil type. The certification wasn’t allowed in the U.S. until 1996, when the USDA and ENTAV allowed the clones to be distributed selectively to nurseries in the states. vineyards to be completely ENTAV certified. Cass also receives first pick of their estate vineyard wines, keeping 25 percent of the grapes grown for their wine and selling the rest to area winemakers. Sterling Kragten, Cass’ new head winemaker replacing Kotze in 2014 after working as assistant winemaker since 2013, finally got the full immersion benefits of making wine at Cass. Kragten’s hard work went into every bottle seen at the 2015 Central Coast Wine Competition, the event that named Cass its Winery of the Year, and Steve Cass couldn’t be happier. “All these wines that were judged were wines that he (Kragten) personally made,” Cass said about Kragten’s winemaking after expressing how easy it was to transition him into the Head Winemaker role one year ago. Kragten’s start in winemaking came from wanting to become a chef, majoring in food science at Cal Poly and eventually taking a life-changing school trip to Australia. It was in Australia where Kragten discovered his love for wine, as well as the love of his life, his future wife. “It suddenly made sense,” Kragten said about his winemaking epiphany. “The sensory perception and the chemistry of my degree, I kind of thought this is what I should be doing.” Kragten went on to pick up a wine and viticulture minor at Cal Poly and was able to travel back to Australia to work for a winery before moving back to the Central Coast to work for JUSTIN Winery and eventually coming on at Cass. He also married the girl he met in Australia. Cass Winery resides a bit off the beaten path — not quite in the middle of nowhere, as Steve Cass would say, but close enough that you could see it — and the winery hosts several special events Published by the Paso Robles Press
throughout the year including weddings, Rhone Ranger tastings and winemaker dinners to draw people out to the Linne Road location. Cass also hosts several events during the Paderewski Festival, a yearly festival celebrating virtuosu pianist and Paso Robles local, Ignacy Paderewski. “We’re off the beaten track,” Cass said. “From day one we’ve been focused on getting people out here. One way of doing that is by doing events and offering a food service. We’ve got a full-time chef, he’s got a couple sous chefs that help him and we serve a café meal where foods are suitable to be paired with the wines that we have. We do our share of winemaker dinners. We try to focus on direct-toconsumer sales. We do extremely small amount of distribution sales, virtually everything goes directly to consumers here or through the wine club.” The winery, snuggly located in the Geneseo District in east Paso Robles, recently celebrated 10 years since opening the tasting room, though Cass and Kragten know the real success of the winery lies in the vines. “The Cass motto for a really long time has been ‘great wine starts in the vineyard,’” Kragten said. “So being small enough, I’m not trying to produce a consistent product every year, I’m producing what the vineyard gives us, and we take care of the vineyard, I try to emphasize that through the wine. That’s a big deal. Our wines are a little bit lighter style, it’s not over ripened, so you actually get to taste our growing region and what we can produce here.” Cass Winery is open from 11 a.m.–5 p.m. seven days a week and is located at 7350 Linne Road in Paso Robles. The Hatch Rotisserie and Bar
Simple, wood-fired California comfort food By Beth Bolyard Of Vino Magazine ringing a little bit of chic Southern flare to a fresh California menu, The Hatch Rotisserie and Bar, a newly opened restaurant at 835 13th St. in downtown Paso Robles, combines local organic with Southern charm to create a new menu for comfort food lovers of all kinds. The vision for the new restaurant, owned by partners Maggie Cameron and Eric Connolly, was a combination of wanting to create a menu with simple, quality products that could be easily enjoyed at the restaurant or to-go with a wood-fire component and the product that transpired is what the owners now call “California with a Southern accent.” “We set out to make food that people wanted to eat, the food you crave, and it turned into Southern flare,” Cameron said about the partners’ decision to make comfort food. “It’s not something you see around here, but it’s something people love, no matter who they are.” The Hatch puts its spin on old favorites by providing classics like rotisserie chicken, burgers and meatloaf along with other comfort sides like fried green tomatoes, butter beans and grits that are regionally sourced, organic and quality crafted. “We use organic chickens on the rotisserie with lots of great sides,” Cameron said. “Its comfort food, but with a very fresh California, Central Coast, locally sourced twist.” Cameron and Connolly considered several options when deciding the restaurant’s overall theme, knowing they wanted a wood-fire component, and couldn’t resist the idea of a rotisserie when the option kept popping up. “It was all about wood fire at first,” Connolly said. “Then we started looking at equipment and rotisseries were there, and then for some reason we just kept talking about rotisseries, rotisseries kept coming up in conversation, and we looked a little further and said, ‘Yeah, rotisserie, why not?’” With Executive Chef Mateo Rogers on board with the restaurant,

rotisserie and wood-fired comfort food are available for locals who want to make the spot their hangout as well as visitors trying something new on the Central Coast. “That’s the real draw here,” Connolly said. “Chef is doing a great job here. It’s real simple foods prepared over wood fire. It creates a local hangout atmosphere.” Connolly also quoted a recent Facebook comment the restaurant received that stated, “You know when it’s a good place when it takes 10 minutes to get to your table because you have to stop at every bar stool to say hi.” “We are trying to create a community hangout, which is fun,” he added. The organic, quality products are what drives the new restaurant, and each offering is selectively picked from local growers and farmers as well as handmade, quality products from other parts of the country, including hand milled grits from South Carolina. “We wanted to use producers we really respect,” Cameron said. “We know how they do things, and if we did what they do, we’d do it the same way.” A full bar with liquor, wine and beer are available and with a wine menu that offers mostly local wines, but includes several quality, out-of-the-area wines as well. “We did a mix of local wines and producers we like from elsewhere,” Cameron said. “We have favorites from around here, but because we do want this to be a local’s place, we want to try other wines that are done really well elsewhere.” The restaurant owners’ vision is to create a welcoming atmosphere for locals to hang out, get a drink after work and take food home if they need to as well as cater to an ever-growing tourist population. “We want this to be the local’s joint,” Cameron said. “We know from that we’ll get people from out of town, too.” Now in its second month of being open, The Hatch is picking up steam as well as local support and the restaurateurs are gearing up for new phase two offerings like a late night dining menu and

rotating daily specials. “It’s been amazing, there has been so much local support. We’ve had bed and breakfasts’ referring people in and wineries referring people in, so it’s been a cool show of support from the community, it’s been awesome.” Cameron said. The Hatch Rotisserie and Bar offers dinner 5–9 p.m. Monday through Wednesday and 5–10 p.m. Thursday through Saturday and the bar is open at 3 p.m. Monday through Saturday. T
he summer green of Kiler Ridge Olive Farm’s crop isn’t the only thing that is green about owners Gregg Bone and Audrey Burnam. With solar panels in place and a straw-bale building named the Frantoio for their mill, Bone and Burnam are sustainably functioning in the olive oil business. Bone, who has an extensive technical and engineering background, was looking for a new career. A bicycle tour with Burnam, where they pedaled by fields of olive trees in the Tuscany region of Italy, convinced him that he had found it. They decided to look for property on the Central Coast of California and found an impressive 57 acres at the top of a hill on the west side of Paso Robles. Here in 2005 they planted 835 trees of five varieties of Italian olives and built the environmentally

friendly processing mill. By 2010 olive oil production was underway. Today they have increased to 2,700 trees and seven Italian olive varieties. Bones and Burnam purchased the Pieralisi milling equipment imported from Italy and thanks to his engineering background he fashioned a new machine to raise the hopper and dump the olives into the mill. This eliminates the use of forklifts and cuts the amount of time from harvest to processing. Bones was adamant that their olives were going to be processed within four hours. On the tour that he gives every Thursday through Sunday he explains why this is important. “Olives are stone fruit, the same as other fruit trees,” he said, “but instead of storing energy with sugars they store it with oil. Fruits with sugars can last longer. As soon as an olive is picked, it begins to die. Within 45 minutes after picking the skin starts to go, so Published by the Paso Robles Press
the length of time from harvest to pressing is critical.” Olive oil flavors should be fruity, peppery, and pungent and all these flavors should be balanced in each type of oil. Bones does make a special batch of estate Tuscan oil he names “Gregg’s Reserve” that gets to the mill really quickly. “We do one special harvesting where we rush the crew,” Burnam explained, “and the fruit gets into the mill in 45 minutes. This is fruit from our oldest Tuscan orchard and processing it this fast means you will taste all those green flavors.” Bone says this oil does not have that pungent peppery taste. It’s an olive oil good for dipping bread. There are different grades of olive oil, the best being extra virgin, and then in descending order, virgin, refined and pomace. with no heat or chemicals used. There are few if any regulations in the United States in regard to olive oils and many that are on the shelf in the market labeled extra virgin and are not truly processed as extra virgin. This can be especially true with foreign olive oil. “Many California olive oil producers participate in the California Olive Oil Council (COOC) certification program and we do too,” Burnam said. “We submit our olive oil to their lab for chemical analysis and to a COOC tasting panel.” The COOC accepts only oils for testing made from 100 percent California olives that meet program standards. These are then awarded the COOC certification. Burnam advises consumers to look for that certification seal when buying olive oil. A tasting at Kiler Ridge is an interesting, informative and fun experience. It starts with sniffing oil that is commonly carried in the

supermarket. Tasters are quizzed as to what aroma this oil has and the answers are usually “motor oil” and other non-appetizing scents. Then tasters are moved on to Kiler Ridge’s 2015 Cook’s Choice Extra Virgin Olive Oil that has a grassy aroma and a mild peppery flavor. This oil is a good choice for everyday cooking, dipping and for salads. The 2015 Miller’s Tuscan Extra Virgin Olive Oil is tasted next. This oil is from Tuscan varietals farmed by two local Paso Robles families specially selected by Bone for their quality. Great for salads, pasta, rice, roasted vegetables and grilled meat, this oil has a fresh mowed grassy aroma and a pungent peppery flavor. Last but not least tasters try Kiler Ridge’s 2015 Estate Coratina Extra Virgin Olive Oil that has a fruity, mildly peppery flavor and is great on blanched or steamed vegetables, seafood and as a dressing for salads. uests staying at the Canyon Villa — nestled in the hills just south of Paso Robles — can expect to find not only world-class, Italian-inspired lodging, but also a unique culinary experience courtesy of new owners William Carter and his wife Katherine who took over management of the business in April. William is an accomplished chef, spending more than 30 years as the Executive Chef and Beverage Director at the Playboy Mansion in Los Angeles, and currently serving as the Executive Chef at Beacon Vatel Hospitality Group. The couple has had an affinity for entertaining guests since hosting their first dinner/wine party in 1987, after which they received flowers and hand-written thank you notes from many of their guests. “We said ‘whoa, we must be on to something,” William said. “So, we’ve always had that in the back of our minds to do something to work together and do something sophisticated that offered a place for people to stay as well as enjoy the food

that I prepare here.” After deciding that they wanted to entertain professionally, William and Katherine began looking at properties in wine regions all over the state including those in Napa, Mendocino County, Sonoma and Santa Barbara County before a friend in the area let them know about the Canyon Villa Property. They moved from an unincorporated area in Ventura County in April and have been living onsite and operating the bed and breakfast since then. “We really like the area,” William said. “We like the people and that it has agriculture and that there’s a great opportunity for growth.” William brings his passion for Italian cuisine to the Canyon Villa, creating a complete and authentic Italian experience for guests. He personally cooks a three-course breakfast for each guest every morning featuring a fresh fruit parfait made with locally sourced fruits, fresh yogurt and mint clipped from the onsite herb garden; Gorgola, a Italian banana beignet; and a rotating entree
consisting of traditional Italian breakfast fare such as frittatas, crespo (Italian crepes) or quiche. “I’ve always embraced Italian cuisine for its freshness, its simplicity,” he said. “So this was a perfect fit for us.” Each day, the Villa hosts a wine hour from 5 to 6 p.m., inviting all guests for wine and a light snack. “We do more than just cheese and nuts, we do small plates,” William said, adding that a typical wine hour dish might be his seared duck breast with agro dulce, a sweet and sour sauce. On Saturdays, when the Villa is full, the wine hour is relocated to the back pergola where Chef Carter fires up the pizza oven and serves flat bread pizzas with a variety of fresh vegetables. “We make some really sophisticated and fun pizzas,” he said. “I don’t really use meat in the pizzas at all. I like to keep it light because it is wine hour and it’s technically a snack. It’s not dinner.” Carter says that his most popular pizza

It’s breaking bread with friends and strangers, it’s really cool.” Carter said that he maintains an open-door policy in the Villa’s kitchen, inviting guests to watch him prepare food for breakfast, wine

Sometimes our guests don’t want to leave, and that’s OK.” But the food is just one of the elements that go into making a memorable experience for their guests, Carter said — a lesson he learned while working at the Playboy Mansion. “What I came to find out is, it’s not just the music or the DJ — that was one element — the food was another element, the décor, the lighting, the sound system, they’re all elements,” he said. “So here, the food is an element. And the beauty of the building and the grounds just speaks for itself, so that’s

probably the biggest element. The warm welcome is an element — I’ve learned a great deal about how important being gracious to your guests are. It’s all these simple little touches. When people come here, they come here for a reason — they’re celebrating an anniversary or whatever and it’s a lot of fun to be a part of their life for that moment. The once downtown Burbank Ranch tasting room has moved to its newly built 19,000-square foot processing, storage and tasting facility. The new tasting-room overlooks 46 acres of vineyards, has a deck for lounging and an oak bar inside. The new facility is located at 5685 El Pomar Drive in Templeton.

estled in a valley surrounded by rolling vineyards is Burbank Ranch Vineyard and Winery’s new winemaking facility and tasting room. Owners Fred and Melody Burbank opened the doors at their dream location in July of 2015 and are ready to share the Templeton Gap experience and their wines in this picturesque location. Burbank Ranch moved its tasting room from downtown Paso Robles to its newly built 19,000-square foot facility that will be used for processing and storage. The change in venue is the next stage of development for the Burbanks. It allows them make the wine and sell the wine all at the same venue. “We were making our wines all the way in Paso Robles,” Meloday said. “So we would have to truck them in for crushing and processing and then truck them out again for bottling. Now we can do everything in-house and have catered the facility to our winemaker, Steve Anglim’s, needs and our vision. It is really just a dream come true for us to have found this wonderful land in such a beautiful venue.” The tasting room overlooks 46 acres of vineyards with a deck for lounging and an oak bar inside for tasting. The new facility is located at 5685 El Pomar Drive in Templeton and will be the newest addition to the Pomar Drive wine trail. The Burbank vineyards were planted at the Templeton ranch location in 2008. According to Hospitality and Marketing Director Mallory Spann the family and staff always knew that the property would make a gorgeous site for a tasting room. “Visitors can take in the views and experience our wines while really being immersed in the lifestyle and atmosphere of wine country,” Spann said. “It wasn’t until November of 2013 that we broke ground and began this crazy adventure here in the vines.” The Burbanks obviously have a passion for wine and it shows in every detail of the new facility. Both Fred and Melody expressed how happy they were about the outcome of the construction and couldn’t be more excited about inviting people to the Ranch to see what their wine and the Templeton Gap are all about. Fred said that the level of sustainability, and environmental responsibility built into this site was part of the vision to create a space that would meet their needs without inhibiting the natural growth and beauty of the landscape. Amenities include a tasting room large enough to hold around 250 people, with a large patio and views of the rolling hills and

vineyards of Templeton wine country. The Ranch also boasts a full kitchen and is offering a few options for lunch throughout the week. The Burbank Ranch tasting room hosts lunch every Friday and Saturday and pair wonderful wines with a revolving menu. Spann said the crew has big plans for events and wine experiences at the new venue. “We now sit right on top of our winery, so things like tours and barrel room dinners are in the works,” Melody said. “We look forward to having friends and family out, as well as guests who would like to see what we have to offer here.” Also in the works are monthly events such as yoga on the crush pad and winemaker seminars. With 16 different varietals growing on the Ranch, these events will not only be informative, they will provide a scope of what is being grown in Templeton. The 83-acre ranch was planted to 44.5 acres of wine grapes based on the site and the Burbank’s tastes. Winemaker Anglim said that the varietals include the Bordeaux reds Cabernet Sauvignon, Merlot, Cabernet Franc, Petit Verdot and Malbec. The vineyard also boasts Sauvignon Blanc, Rhone reds — Syrah, Petite Sirah, Grenache and Mourvedre — and Grenache Blanc, and the Burbank’s personal favorites, Sangiovese and Arneis, both Italian varieties. They also grow Tempranillo, Albariño Spanish varieties and of course Zinfandel. “Working for an up-and-coming facility like this is a great way to make wine because I was able to cater the facility to my needs as a winemaker,” Anglim said. “Now that the vineyard and winemaking facility are on the same grounds myself and our team will be able to provide even better quality control, experiment a bit more and provide our patrons with a look at the full process going from grape on the vine to wine.” Fred explained that after extensive soil sampling, the chosen 44.5 acres were planted with grape varietals using sustainable vineyard practices. “We both love wine and have been avid visitors of the Paso Robles AVA for many years,” Fred said. “We just love the area and now here we are with our very own winery and tasting room.” For more information, visit burbankranch.com or call the tasting room at 227-4538.

A celebration not only of the beauty of the vine, but also of the hard work and dedication to the winemaking process itself; Harvest Wine Weekend is a celebration of everything wonderful about winemaking. Celebrations range around the region from small, relaxed food pairings to lavish winemaker’s dinners, to a few fun, out-of-thebox events. Everyone has something planned for the weekend and below is a showcase of a few of the more unique events happening this year.

Perfectly situated early in the afternoon before most winemaker dinners, Sip & Swing is the perfect opportunity to taste wines from a number of downtown Paso Robles wineries all in one location. Derby Wine Estate’s tasting room, located in the recently converted Paso Robles Almond Growers Association warehouse at 525 Riverside Ave. in Paso Robles, boasts plenty of space for lounging, wine tasting and dancing as well as ample parking, which will be partially utilized by local food truck vendors for the event. The participating food truck vendors, which include Next Door Bistro, Just Between Friends Catering and Pulcinella Wood Fired Pizza, will provide an extra special lunch element to the event. Downtown winery participants will attend in their best ’20s attire and event attendants are encouraged to dress up as well, though flapper skirt, long beads and a feather headband are not required, but could be fun. Swing dancers will also get a chance to swing to the tunes of The Viper Six, a jumpin’ swing Jazz band. Derby Wine Estate’s Hospitality Manager, Shirona Thomas, was excited to host this special harvest event, now in its second year, stating that it was a great way to feature, not only downtown wineries, but also other downtown food purveyors. “We’re happy to bring awareness to everything that’s going on downtown,” Thomas said about the downtown winery event. “We’ll just keep evolving and we’ll keep getting better and better every year.” All proceeds go to benefit the Paso Robles Recreation Enhances Community Foundation, a local nonprofit organization that works to provide programs, places and open spaces for recreational experiences in Paso Robles and is responsible for hosting a number of popular downtown events throughout the year. “They do so much for the community, I don’t think people realize,” Thomas said about the REC Foundation’s community contribution. “Being apart of the downtown wineries, we really wanted to do something that supports them. They’re bringing business downtown and we wanted to say, ‘Thank you for supporting us.’” The Sip & Swing participating wineries include Arroyo Robles Winery, Asuncion Ridge, Bodegas Paso Robles, Chateau Lettau, D’Anbino Cellars, Derby Wine Estates, Frolicking Frog Cellars, Grizzly Republic Wines, LDT Cellars, LXV, Pianetta Winery, and The Rabbit Hole. May the odds ever be in your favor at Broken Earth Winery’s first-ever Harvest Games, which will take place from 1–5 p.m. Saturday, Oct. 17. This year, Broken Earth is challenging its harvest weekend participants to team up and race each other down the obstacle course to see who can fill their bottle with freshly stomped grape juice first. Each team will have one team member ready to stomp juice out of a bucket of grapes while other team members wait to run the course with a cup of the freshly stomped juice. The running teammates will have to navigate a variety of obstacles to get to the end of the course including stepping through barrel halves, walking the low balance beam and avoiding the barrel walls all while trying not to spill their juice. The opposing teams will then race to see who can fill their wine bottles first. Bragging rights and prizes will be awarded to the winning team. Team entry is $25 per person and $20 per person for Wine Club members and participants will receive a Harvest Games T-shirt and a glass of wine. Broken Earth Winery’s Events Manager, Michelle Kraker, was searching for something different to do for this year’s Harvest Weekend when she happened upon the idea after seeing similar events at other California wineries and realizing Broken Earth had the perfect space to accommodate the Games. “We have a big area,” Kraker said. “I thought, ‘this year let’s do something interactive.’ People always like to do things that are a little more interactive. It’s just about being fun and kind of involving them in something instead of just tasting.” Kraker is hopeful that this year’s first Harvest Games event will take off and grow and expand each year. Wine tasting will also be available for those looking to relax Saturday afternoon. Burning James and the Funky Flames will play and, back by popular demand, Broken Earth’s famous complimentary Aussie Lamb Sliders will also be available. Broken Earth will also hold a recovery brunch at 10:30 a.m. Sunday, Oct. 18, with a delectable menu including pastries, cheeses, fresh fruits, gourmet sausages and shrimp and grits by Chef Charlie. The Sunday morning offering will also include a traditional grape stomp and tickets are available for $50 per person or $45 per person for wine club members. Raymond Smith, owner of Indigene Cellars, takes the power of diversity and runs with it when making wines and when creating a label that shares this mentality.
P
icking up a new bottle of wine can inspire the buyer to make a purchase based on the label and familiarity with the varietal of wine. Many wineries are creating terroir-driven art to draw the buyer in with an artistic representation of what the wine would taste like. Raymond Smith, owner of Indigene Cellars, eats, drinks and dreams about grapes and after his daughter said, “he has grapes on the brain,” the impetus for the label art was born. Smith said that because of his bottling business he developed great relationships with growers and producers, who shared the intricacies of the wine business. “When I started I was a bottler for a number of years and still own my own company,” Smith said as he sipped some wine. “I had been interested in getting into making my own wines and for years, spent time researching and picking the brains of people that I worked with as I bottled their wines. In the middle of this I started my label. I was sitting down talking to my daughter about it one day and she was saying, ‘that is all you’re starting to think about, all that is in your head is grapes and wine.’ So we sat down and drew this concept out with a crayon and I thought about it. I figured this is something I can do to express the Indigene direction and experience, illustrating my rich history in winemaking.” Smith said that Paso Robles graphic designer Zach Mansfield helped bring the design to fruition. The label is an abstract representation of a person that denotes an asexual form pulling a mask away from its face, exposing an opening where a cluster of grapes fills what would be an empty space. The lights and shadows of the form depicted in white makes this label art pop off of its black background. Smith said the label was thought provoking and representative of diversity. “The name of the winery and labels were conceptualized to express as much diversity as I could in every wine I make, illustrating the subtleties to tell the story of the wine and how it was made,” Smith said. “Bottling I tasted a ton of different wines in a ton of different areas and it gave me an idea of terroir and what wines do better in certain regions. The label shows an image that is thought provoking. It depicts a human being but you can’t tell if it is a man or a woman and it illustrates diversity. There is just as much diversity in my winemaking process, in my wines and in the direction I take the wines. This was a way for me to tell my story in label form.” The name Indigene is derived from the French word indigene, a verb for native grown. Smith says that this illustrates his search for native fruit in terroirs in California. He is trying to inspire a sensory memory with his wine and labels by capturing the place it was grown and allowing the experience to shine. All of the red Indigene wines are contained in a bottle with the label art depicting grapes on the brain, but when Smith started making a white wine he

designed something completely different. The white, I=MB2 provides a juxtaposition when placed side by side with the red wines. The red wine label is seemingly depicting night with its even toned whites, grays, greens and purples. The white wine label with its hot sunrise colors depicting day is illustrated in reds, oranges, yellows and maroons. The white wine label is very much reminiscent of a Salvador Dali painting in its sweeping lines, color and juxtaposition. “This is another image that we created that represents balance and spirituality,” he said. “It represents my approach to winemaking in my organization, and perception of the world. It is a man and woman, their bodies intertwined to illustrate the way people interact with each other and the way a blend interacts. The bottle is in earth tones as well so we chose these colors to balance the packaging. The wine in the bottle is very light, fruity and bouncy. F
rosty Old World hop-driven beers, with malty buttery caramel notes are Dunbar Brewing Company’s bread and butter. Dunbar owner and brewmaster Chris Chambers has been making frosty libation since 1997 in Santa Margarita and putting the little town on the beer map in the process. Now he is expanding, opening a separate 6,000-square foot, 10barrel brew house at 22815 El Camino Real at the end of September. He will still be serving beer down the street at the original location, 2200 El Camino Real. As far as hops go, he uses the older, more traditional varieties. He plays around with some of the newer ones, but primarily sticks to older world hops, those used in Scottish, English and Irish ales.

He imports hops, gets some direct from the farmers and uses Hop Union, a broker of hops. “Nowadays hop farmers have really been working to come up with new varieties and strains to produces fruity hops,” Chambers said. “Traditional hops are a lot earthier, herbal and grassy and really can be all over the spectrum. As far as styles go we all pretty much do it the same way. I just put my own twist on it, keeping it pure and handle my hops the old-fashioned way by using whole hops as opposed to pellets.” Dunbar boasts four signature beers — Fear Naught IPA, Scottish Heavy, Brown Porter and Johnny Mash black IPA. some insight into what light means to him. “I think light is a very interesting term,” he said. “Everyone has a different philosophy of what light is. For me when people ask what our lightest beer is I always recommend our brown porter. It is opposite of what most people would think of as light, but it is 5.5 percent alcohol, easy drinking. So even though it is darker in color that is our go-to light beer around here. Light alcohol, light body and it’s easy drinking and that is what we focus on. So we try to get everyone to think a little different around here and not being so focused on terms that don’t necessarily represent the beer.” So light hops, light alcohol, and caramel and malty flavors are the focus and then with the India Pale Ale (IPA) Dunbar goes hoppy, but balances the bitter with a malty flavor. They also make double and triple IPAs that even IPA haters love. “My thought process with the IPA is to cut the bitter with the sweet and earthy flavors,” he said. “It is heavily hopped with a lot of IBUs in it with about a 10 percent alcohol content that counteracts the hops with a malty flavor. Rich flavors can be derived from lower alcohol beers but you will definitely get a thicker-bodied beer and a lot more malty sweetness with a higher alcohol beer.

To get the sugar up we use malt and then the yeast will eat the sugars and produce alcohol. That is where the magic happens, in the fermentation room.” Chambers has always had a love for beer and started home brewing with some friends in their garage. He said that everyone was coming over to drink beer at his house and this inspired him to open Dunbar. After 18 years he is expanding and said that the four signature beers would still be the focus at the new location. “The idea is that producing those beers at a greater capacity will give me the ability to increase distribution,” he said. “With at least five venues pouring our beer in San Luis Obispo County I am aiming to increase distribution not only within the county, but also throughout California. The sky is the limit with a big space like this to work with. erry Hoage Vineyards announced in August that, as part of a planned expansion, it is rebranding as TH Estate Wines. The rebrand includes a new, iconic logo, which exemplifies the wines it produces and creates a foundation for further diversification, including the introduction of a new label, Decroux, in 2016, which will focus on elegant, cool climate Pinot Noir, Syrah and Grenache. TH Estate Wines was founded by Terry Hoage, a twotime All-American, who spent 13 years as an NFL player, including a 1992 Super Bowl win, and his wife, Jennifer. Since 2002, the winery has focused on the production of Rhone-style wines from its organically-sustainably farmed estate in the acclaimed Willow Creek District of the Paso Robles AVA. The winery has received numerous accolades

from publications such as Robert Parker’s Wine Advocate and “The Wine Spectator,” and is noted for its complex wines expressing exceptional fruit that is forward and focused. According to Jennifer Hoage, the new name is part of an overall initiative to evolve the acclaimed winery to the next level of growth, with a new and innovative customer experience for wine club members, a new tasting room (including a private tasting room), expanded case production and distribution, and a new website thestatewines.com. “Our philosophy has always been to respect our land, our grapes and all our customers. Our expansion, and the development of our new brand, has evolved carefully and with this mission top of mind,” said Jennifer Hoage. “Our focus is on bringing the TH Estate Wines experience to more

consumers, without sacrificing our roots and overarching goal of excellence.” The TH Estate Wines portfolio includes its classic lineup of estate red and white Rhone-style wines, bottled under TH Vineyards, including both cuvee and varietal bottlings of Syrah, Grenache, Mourvedre, Grenache Blanc, Picpoul Blanc and Roussanne, with labels (i.e. ‘The Hedge’, ‘Skins,’ ‘the 46’) that reference coowner and winemaker Terry Hoage’s NFL past.

New to the portfolio is the Decroux label, which will be introduced in 2016. Decroux wines are vinified by Jennifer Hoage who, in addition to being a winemaker, is also an artist, journalist and a former student of the renowned French corporal mime Etienne Decroux. Like their namesake, Decroux wines will seek to exhibit finesse and elegance in the essence of existence. The folio will focus on varietals from cooler Central Coast climates. TH Estate Wines is a key player in the artisan winemaking movement that has helped raise the profile of the Central Coast of California as one of the greatest wine producing areas in the world, and benefits from the Willow Creek District’s rare confluence of climate and calcareous soils. In its early days, the winery also benefitted from the mentorship and input of two of the area’s most renowned winemakers: noted Rhone Ranger and winemaker John Alban, who designed and planted TH’s original five acre Syrah vineyard, and celebrated winemaker Justin Smith of SAXUM Vineyards, who made TH’s first two vintages (2002 and 2003). Since 2004, Terry and Jennifer have shared winemaking duties and the farming of the 26 acre, organically farmed Rhone varietals. The Hoage’s commitment to growing and processing only the highest quality fruit, coupled with their dedication to traditional winemaking, has enabled their wines to consistently achieve scores above 90. “Our winery from inception is, at its core, the labor and passion of the Terry Hoage family but, as our business continues to evolve and our wine family expands, we wanted to find an expression that would put the emphasis squarely on the wines and provide a springboard for the development of our new labels,” said Terry Hoage. “We believe our new look and name reflect both our minimalist and nuanced approach to winemaking, as well as our commitment to producing world-class and sophisticated wines.”
