Since 1957, International Market Place has served as a gathering place for kama‘āina and visitors from around the world to meet, talk story, and be entertained. The history and culture of Waikīkī are woven throughout International Market Place with its flowing water features symbolizing the ‘Apuakehau Stream, indigenous landscaping, and iconic banyan tree that is more than a century old. The story continues with Banyan, which celebrates our signature banyan tree and landmark located on Kalākaua Avenue, as well as the nostalgia of the past. The large Indian banyan tree, dating back to the mid-
1800s, is among the oldest historic trees in Waikīkī and is designated an “exceptional tree” by the City and County of Honolulu. Many generations have walked under its broad canopy; imagine the stories it could tell. From the original tree house, where Donn Beach “Don the Beachcomber” had his office that later evolved into a local radio station, to performances by world-famous entertainer Don Ho, who got his start at International Market Place, we invite you to rediscover International Market Place. These stories we share with you today, while new, will always have a connection to our roots.

About Banyan and the Roots of International Market Place
Known as Kaluaokau in the days of Hawaiian royalty, International Market Place possesses an allure that is much the same now as it was back then—attracting not only locals but also entertainers, celebrities, and visitors from around the world. That allure has existed at International Market Place since its opening in 1957. For decades, the charm of this wahi pana (storied place) was present in the display of cart vendors selling tropical trinkets, the array of exotic eateries, and the famous venues for live entertainment. Fitness is a major component of Ashley Perkins Showers’ lifestyle. The small-town Maui girl played sports throughout high school, excelling in basketball, soccer, and track. A Living Landmark
This 160-year-old banyan tree is an enduring Waik ī k ī institution rooted in history.

“It’s been here since the beginning,” says Steve Nimz, craning his neck to gaze up at the 60-foot-tall Ficus benghalensis, or Indian banyan, that grows from the center of the International Market Place. Its impressive thicket of branches spirals upward, stretching across the entire courtyard and offering much-needed shade. “Any tourist from any time that visited Hawai‘i would have had to visit this tree.”
Nimz has been caring for the tree since 1971. Back then, the International Market Place was a 4.5acre maze of carts hawking kitschy treasures and tourist souvenirs, a vestige of Donn Beach’s tiki-themed fantasy. “I was excited because it was a challenge,” Nimz says. Originally from Michigan, he moved to O‘ahu in 1967 to study tropical agriculture at
the University of Hawai‘i at Mānoa. Since then, he has acted as the chief consulting arborist for projects throughout the state, including tending to this iconic banyan. “It has such a unique shape and structure, and such a rich history,” he says. Indeed, the banyan’s roots run deep. Even before Donn Beach uttered the words “International Market Place,” the tree already occupied the space. It had been planted by New Zealand hotel entrepreneur Harry McFarland in the mid-1800s, when the property hosted his family’s home. Endemic to India, the banyan’s role in Hindu culture as a symbol of shelter for travellers made it a fitting choice for the future mecca of tourism. In 1957, when Beach imagined this site as the International Market Place, the tree was an integral element.

Kiosks and restaurants were built around it, rather than it being torn down. A treehouse was built atop its branches that acted as Beach’s office. From it, Hal “Aku” Lewis broadcasted his popular radio show in the 1960s. (Today, one can visit a replica built at the original site.) In the following decades, the banyan’s expansive canopy became part and parcel of the International Market Place’s aesthetic.
In 2014, when plans for a reimagined International Market Place were proposed, preserving the nearly 160-year-old banyan was high on the list of must-dos. Classified as one of Honolulu’s exceptional trees, which are defined as “a tree, stand or grove of trees with historic or cultural value … worthy of preservation” in the state’s Exceptional Tree Act, the banyan could not be cut down or altered without expressed permission from the city.
Caring for a celebrity tree is no easy task. While Indian banyans are extremely resilient according to Nimz, with tough bark and winding roots that let them withstand almost anything, measures still needed to be taken to ensure its health. For the 18-month period of development, a tree protection plan Nimz designed was put in place. Orientations were mandated for everyone involved with construction, and any handling of the banyan needed to be first approved by Nimz. Sensors were placed throughout the tree to monitor its moisture levels, like checking its vital signs, so that he could act quickly if it was under stress.
Indian banyans are quite common sights in Waikīkī. “But what makes it special is its unique background, its unique history,” Nimz says. For more than a century, this banyan has been a constant
fixture during the area’s continuous evolution. When visitors walk through its tangle of aerial roots or sit at the base of its trunk, they’re interacting with history.
The tree, naturally, has a symbiotic relationship with whatever is happening around it. It too celebrated the grand opening of the newly reimagined center in August 2016. Just before, it had shed its leaves and sprouted new ones—as if ushering in a new era for the International Market Place and affirming its steadfast status amid the constant flux of Waikīkī.

Once you’ve seen them, they’re hard to forget: boardshorts with vibrant splashes of electric yellows and reds, psychedelic florals, and bold brushstrokes painted across back pockets. We’re talking about the 1980s sensation Jams by Surf Line Hawaii, a company that defined a generation of beachwear. This company is still making waves, and its latest swell is the playful new Surf Line Hawaii boutique, which comes with a brand new house collection, Surf Line Hawaii Archives, composed entirely of reproduction shirts, separates, and dresses culled from the company’s half-century of designs. The location, which debuted in December 2017 at International Market Place, is a reimagining of the company’s original surf shop, Surf Line Hawaii, which founder Dave Rochlen opened on Kona Street in the 1960s.

In 1964, he debuted the iconic Jams boardshorts. Inspired by a photo he saw in a magazine of a tourist wearing pajamas, Dave bought some bright floral fabric and asked his wife, Keanuenue, to make him a baggy pair of shorts sewn up at the fly, cut off at the knees, and tied with a string. “It was right at the same time as Gidget and the Beach Boys,” remembers Heather Rochlen, Jams World’s executive vice president and Dave Rochlen’s daughter-in-law, of the era. This beach-centric, groovy vibe made it perfect timing for unique psychedelic swimwear that was handmade, the standard at the time in the islands.
The look made waves around the country in the form of a full-blown apparel line dubbed Jams World. “I was a middle school kid in New Jersey, and all the kids were wearing Jams. It was huge, huge, huge,” Heather says. Jams World is the name the company has been using since the 1980s to headline
its seasonal collections of locally manufactured, all-new designs. It’s from these archived patterns and fabrics of past seasonal releases that the new Surf Line collection draws from, remaking them into new cuts and silhouettes that reflect the current decade.
The use of the word “world” in the Jam’s World name is a nod to the fact that its limited releases are made with hand-painted art sourced from across the globe. Far from sticking to the typical aloha shirt model of tropical florals and lush ferns, the Jams and Surf Line goods go for vivacious, statement-making creations by artists living beyond Hawaiian shores. The art gets printed onto fabric and is fashioned into button-downs, dresses, and breezy separates.
“Art comes from as far as Japan,” Heather says. “Buttons are handpainted by an artist in California in his barn. We just went on a trip around the world. We went to Paris, we were in Tokyo to visit our fabric people.”
Heather and her team’s vision for the reincarnation of Surf Line at International Market Place was a boutique that celebrated the brand’s heritage. “Surf Line is either dead stock or reproduction from our archives, or we’ve created new products inspired by our archives,” Heather says. Both the clothes and the store’s interior design boast a fun, punchy palette and vintage vibe that pay homage to the colorful 54-year history of the family-owned business. The vision for Surf Line Hawaii was a nostalgic space that celebrated the history of an American heritage brand. Old family photos and vintage magazine covers featuring Jams pepper the space, and a rainbowcolored timeline of the company’s development adorns one wall.
But Heather also looks to the present for other Surf Line designs, taking a cue from her daughters’ modern tastes. That means partnering with local creatives, including flower designer Meleana Estes and swimwear brand Issa de’ Mar, for Surf Line Hawaii, resulting in fun, new silhouettes made with vintage patterns selected by the designers. It means a redesigned look with a fresh feel that hits just the right note between contemporary and vintage, past and present. It’s all a nod to the brand’s iconic history, alongside a firm sense of today’s style.
“It’s not just your grandma’s Jams,” Heather says. “How do we take those principles that aren’t just for Grandma and retell the story? By giving them something with some history, a handdone element—and color!”

Mililani aquaponic farm brings its bounty to Waik ī k ī .
Burbling tanks containing catfish, swai, and tilapia dot the landscape, working in harmony with the many rows of plant tables that rest atop them. Curly kale, candy cane beets, carrots, and rainbow chard take water fortified with fish waste and bacteria up through their roots, filtering it before it is returned to the tanks. When the tanks are drained and scrubbed, the resulting nutrient-rich water is given to the mango and longan trees planted along the ditch. To the largest aquaponic farm in the state, water is precious.
Fred Lau purchased the 17.5 acres that make up Mari’s Gardens, formerly Watanabe’s Nursery, for his family-run landscaping business in 2007. But he had ideas to make it more than a home base for the company. Concerned about Hawai‘i’s food security, Lau wanted to provide locally grown produce for the people of Hawai‘i while making the least amount of impact possible on the ‘āina (land). A decade later, Mari’s Gardens is an aquaponic and hydroponic showcase farm that offers

educational tours for neighborhood schoolchildren, provides produce for several markets, and supplies ingredients for a dozen O‘ahu restaurants, including a couple at Waikīkī’s International Market Place. Aquaponics, as described by production manager Tanya Candido, is “the use of fish and plants growing together in balance, getting what they need from each other, to realize the entire cycle.” Hydroponics is the technique of growing seeds from water containing liquid vitamins and nutrients, rather than rooting them in soil. (At Mari’s Gardens, such crops grow in plant-friendly cubes atop water-conducting channels, and many are also part of the aquaponics operations.) Lau chose these methods because of their sustainability: They require less water than conventional farming and are free from any toxicity remaining in Mililani’s ground from sugar cane cultivation.

grown onsite. “[Lau] wanted to build something that bridged farm to table and brought the chef to the farm,” Candido says as she walks among the canopied outdoor seating. One tent is ready to host guests at transparent tabletops that rest on shallow troughs of circulating water. Underneath, fish flit by. A second space highlights the edible landscape by seating diners in front of long planter boxes growing herbs, edible flowers, and rows of the crisp lettuce for which the farm is well known.
The farm’s vibrant produce is also available to chefs on O‘ahu via a third-party refrigerated service. Two restaurants in Waikīkī’s International Market Place take advantage of this fresh option. For dim sum, there’s
the elegant Yauatcha tea house. Its crispy duck salad features a generous tuf of Mari’s microgreens atop fried lotus root, shaved shallot, tart pomelo, pomegranate, and pine nuts. For an extraordinary weekend brunch, try Herringbone Waikiki’s eggs Benedict. Pillows of sweet bread cradle braised Mari’s spinach, which is topped with poached eggs, thick bacon, hollandaise, and then the flair: succulent king crab, uni, a spoonful of caviar, and finally, an orchid. The flower grounds you, reminding you where you are. Afer a bite, you might require that.

Since he pioneered farm-to-table eating in Hawai‘i more than two decades ago, Roy Yamaguchi has continued to help grow the local food movement.
Chef Roy Yamaguchi looks out at the blue-green pastures of Nalo Farms in Waimānalo on O‘ahu’s east side. Naturally he’s thinking about growth, not just of the leafy lettuce varieties specialized in by this 11-acre family farm at the foot of the Ko‘olau Mountains, but also of the farmto-table model that has blossomed across Hawai‘i’s restaurant scene.
“Thirty years ago, it was a different story,” Yamaguchi says. “It’s just amazing to see.”
Yamaguchi, an advocate for using locally grown ingredients, was already considered a farm-to-table pioneer when he started working with Nalo Farms owner Dean Okimoto in the early 1990s. It was a bountiful pairing, Yamaguchi recalls, that sprung from a straightforward question: “Hey, do you think you can grow that?”
At the time, Yamaguchi was referring to turnips and parsnips, then later Tokyo negi and even carrots. All were for Roy’s, his breakthrough
Hawaiian fusion restaurant. Not everything proved to be plentiful at Nalo Farms (those persnickety carrots, for instance), but from months of field trials, Okimoto found his niche in seven types of lettuces and eight types of other greens, including arugula, tatsoi, red mustard, and pepper cress. Okimoto discovered that his vegetables had a zesty flavor profile unique to Waimānalo’s terrain that he believed would appeal to island chefs. Having already proselytized about the potential of produce grown locally by small farmers to his circle of Hawai‘i chefs, Yamaguchi was able to help Nalo Farms provide produce for about 20 restaurants. Today, its network has grown to more than 200.
Yamaguchi credits this direct farmer-chef connection for farmto-table’s development in Hawai‘i. “That’s the great thing with local farmers, it’s a relationship,” Yamaguchi says. “In order to be creative, you have to be inspired, and

when people start talking and get excited, you come up with something beneficial and you work as a team to find solutions.”
On this early Wednesday morning, Yamaguchi and Randy Bangloy, the executive chef of Eating House 1849 at International Market Place, walk through Nalo Farm’s rows of lettuce, mint, and basil. At one point, they bend down to survey a bushy growth of nasturtiums. They consider how its edible flowers, with a taste reminiscent of watercress, could be used to top off a lava cake dessert. “Everything is a work in progress,” Yamaguchi says, as he brushes his fingertips over the pillowy blossoms. Recipes that do get perfected end up on the menu. In a touristfrequented area like Waikīkī, diners are looking for some sort of experience they can’t have back home, Yamaguchi claims. At Eating
House 1849, located on the Grand Lānai, that experience is translated in its array of flavors defined by Hawai‘i’s plantation history and multicultural heritage. “We want our guests to be inspired by our creativity,” Yamaguchi says.
Bangloy, who is new to Eating House 1849, plans to infuse the menu with more Filipino fare. You could say these potential recipes are also sourced locally, as they’re inspired by ingredients Bangloy remembers were always stocked in his mother’s kitchen during his O‘ahu childhood. “Tomatoes, eggplants, marungay, long beans, squash,” Bangloy says. “Something I’m looking at is changing a few dishes and bringing in some bitter melon.” He hopes to source those bitter melons locally.

Within the past decade, the farm-to-table movement has gone from fringe food culture to mainstream menu fare. For many foodies, the bar scene is the trend’s final frontier. Leading the way is The Myna Bird Tiki Bar. Tucked inside The Street, chef Michael Mina’s contemporary take on the food court, Myna Bird serves quality spirits and fresh ingredients
in cocktails that harken back to the original tiki bars of the 1930s.
When conceptualizing cocktails, head mixologist Andrew Woodley strives to feature ingredients from local farms and distilleries. The bar’s rum-based cocktails are mixed using the traditional tool of a simple cocktail shaker, rather than a blender. “That wouldn’t work if we didn’t use as many fresh ingredients as we could,” Woodley says. “And you can really taste the difference.” Guests can choose from a rotating array of drinks based
