Here come the brides I think it must be a rule: brides are beautiful. Always. Maybe it’s the fact that they are radiant with happiness, or the fact that they are dressed in probably the most expensive garments they will ever own, surrounded by gorgeous floral arrangements and accompanied by heavenly music; whatever it is, there is no celebration in life more special than a wedding day, and no one more beautiful than the bride. This issue is devoted to brides and the celebrations they have planned. We’re featuring a number of weddings in this issue, some over the top and expensive and others simple, inexpensive and elegant. Our hope is that those of you who are planning nuptials of your own will get new ideas, and the rest of you will appreciate the planning and attention to detail that made each of these brides a princess for her day. There’s also good news for parents: everything you need to put together a wedding can be found here in the Shoals! Jimmy Czermak is always smiling. If you worked in a place that smelled as good as Sugarbaker’s, you probably would smile all the time, too. The smell is kind of what you’d expect Heaven to smell like. It’s part sugar, part baked goods, and part buttercream. It’s a beautiful mix of the good sweet things your grandmother used to make, and it’s comforting, enticing…and it makes you smile. After you get past the smell, it takes a minute to take in everything in the bakery. This wonderful smelling place is tucked away on the outskirts of St. Florian, not really on the beaten path, but that doesn’t seem to stop the steady parade of people who are stopping by this morning. Someone comes in to pick up cupcakes for his daughter’s class; the phone rings with a birthday cake order. Jimmy is decorating a Bear Bryant hat for a groom’s cake, painstakingly creating herringbone patterns and creating a big “A” with the sweep of a tube of icing. People don’t mind the short drive from anywhere in the Shoals, not for this kind of goodness. Sugarbaker’s is a family business, started 18 years ago. Jimmy is the baker; his wife, Dawn, a hospice nurse by day, handles the books and meets with brides on the weekends. The girls, Jamie and Maggie, both spent lots of time working at the bakery as they were growing up, even though both are grown and away from home now.

“My favorite part about baking custom cakes is the customer’s reaction when they pick it up. If they scream, I know they like it.”

“Our first wedding cake was a disaster,” said Jimmy, smiling. Because Jimmy is always smiling, you have to pay close attention to know whether he’s joking about their first venture into the cake business or whether it was really true. Apparently, he is not kidding. “When we delivered it, it looked terrible, and we wondered if we were in the right business,” he said. “Our second job wasn’t much better; we delivered the cake to the TVA Reservation, and it looked okay but we forgot to bring cutting knives. The family ended up cutting the cake with their fingers.” That was then; needless to say, they know what they are doing now. They have baked thousands of wedding cakes since that first one, and even more birthday cakes. And the Czermak formula for cake success means the product tastes wonderful and looks good, too. Jimmy and Dawn had a restaurant before they started a bakery, cook-

ing up hamburgers, French fries and pizza. When their oldest daughter, Jamie, had a birthday one year, they looked everywhere for a special cake—and couldn’t find what they wanted. The grocery stores with bakeries were cranking out the same old sheet cakes, but the Czermaks wanted something more special. They baked one of their own, and it was good; the idea for a business was born. Which brings us to the scream factor. “My favorite part about baking custom cakes is the customer’s reaction when they pick it up,” said Jimmy. “If they scream, I know they like it. I also love it when a customer comes back to the bakery to tell us how much they liked the cake, and tell us it was delicious. That’s what we like most.” That far outweighs the downside of living right next door to the bakery and being on call 24/7. Jimmy tells stories of being called in from mowing the lawn to handle a last-minute order or to help repair a homemade

wedding cake that, predictably, has not turned out very well. You wouldn’t think the cake business would change much over the years, but it has. These days, with television shows such as “Ace of Cakes,” there is a lot of emphasis on custom design and a lot of interest in elaborate creations. That’s good, but it’s also bad. “The good news is that there is a lot of interest in creativity,” said Jimmy. “The bad news is that people generally don’t realize that creativity comes with a price tag attached. We also find that people see all of that on television and think it’s so easy to throw together something wonderful in thirty minutes to an hour. Those television shows don’t show you the time and effort that really goes into those cakes!” But with a smile, Jimmy explains why that is a good thing for his business. “When they try it for themselves and see how hard it is, they’re much more willing to pay us


“Be honest with the baker about your budget, and know how much you want to spend.” to create the cake for them,” he says. “After all, we’re the ones who taught those people on TV how to decorate a cake!” Is he kidding this time? Maybe—but maybe not? When you come by to talk about your special birthday or wedding cake, ask to see the photo albums. The Czermaks have kept photos of their creations, and can show you their baked designs to help you decide what you want. Flipping through the book is fun. “One of the most complicated cakes we ever made was a sculpted dog we did for a groom,” said Jimmy, “but the most

fun cake we ever did was for a 93 year old man. It was a sheet cake, decorated with a road on top, and there were these milestones along the road that corresponded with events in his life. The cake served 500, and that was very special.” Wedding cakes are a Sugarbaker specialty, and one entire wall is filled with samples. “About seventy five percent of the cakes we make are these styles,” said Jimmy, “because the bride can see it. We call it point and pay.” For the other twenty five percent, a one-on-one meeting with Dawn will determine budgets and styles. A consultation

Those television shows don’t show you the time and effort that really goes into those cakes!” costs $40, and the cake itself ranges from about a dollar per serving to $7.50 per serving and more, depending upon the complexity of the design and whether the icing is buttercream or fondant. Fondant has gotten more popular due to the cake shows on television, but it’s more difficult to work with and more expensive. Groom’s cakes are also a specialty, and range from sheet cakes to specialty cakes, based on the groom’s interests and personality. “The most popular are sports themes,” said Jimmy, “and the most popular flavor is chocolate with fudge icing.” The Czermaks stopped making birthday cakes for awhile and concentrated on wedding cakes alone, but that was just temporary. The

demand for birthday cakes was just too great, so they returned to their roots. Jimmy also produces a delicious line of granola, which he sells through other local outlets, including Le Beau’s, Rivertown, Coldwater Books and others. The muffins, coffee cakes, candies and other goodies found in the bakery are too numerous to list…and they are all delicious. Over the last 18 years, Sugarbakers has made and delivered cakes all over north Alabama and southern Tennessee. There doesn’t seem to be an off season either. The first part of the year is usually busy meeting with brides who have gotten engagement rings for Christmas. Spring, through June and beyond, is wedding season, and the holidays are also popular for

weddings. That doesn’t take into account the birthday cake business, which remains fairly consistent and strong all year round. When it comes to the wedding, the cake is one of the most important features…and Jimmy has some advice for the bride. “Be honest with the baker about your budget,” he said, “and know how much you want to spend. That saves everyone time, and the baker can design the best cake for the money you have to spend. The cake will be in your wedding pictures and is an important part of an event you will remember for the rest of your life. Take some time to do it right, and you’ll never regret it.” Jimmy is smiling when he says that— but we know he isn’t kidding. N

radley and Jordyn Dean served up a family style wedding, complete with chicken and dumplings, corn

casserole and apple butter biscuits. Martha Stewart would have been envious. The couple spent months prior to the day, scavenging antique and thrift stores and family curio cabinets for accessories that would make the wedding unique. No detail was too small, from antique radios and personalized church fans to lace doilies with pictures of the bride and groom hung on string with wooden clothespins. The wedding cake was baked by an aunt, but decorated by the couple. “Our wedding was definitely unique and all about family,” said Jordyn. “Our two biggest expenses were the location rental and the cost of my dress,” she said. Even with those expenses, the total cost was less than $5,000, and that included the Southern feast. “Because we did everything ourselves, without a coordinator, it was a little challenging to put it all together that day,” said Bradley, laughing. “We only had a few hours January/February 2010 | 45


to get it all ready, and before we knew it, Jordyn was walking down the aisle.” The music was from a iTunes playlist the couple put together, and included everything from French music to Frank Sinatra standards, all designed to sound like they came from an old fashioned radio. Even the modern music held to the Southern theme. The wedding took place outdoors at Burritt on the Mountain in Huntsville, a special place for both Bradley and Jordyn. The fact that the July day was unusually mild, with bright blue skies and temperatures only in the 70s, was icing on the cake, so to speak. It was the perfect culmination of planning, luck and the artistic talents of the bride and the groom.

After Weeks of Rain, the Clouds Parted for a Shoals Couple’s Dream Wedding

t was the wettest month on record, and Mareth McGee Poag had planned an outdoor wedding. “I had been thinking about my wedding for a long time,” said Mareth, “and rain or not, the one thing I always knew I wanted was a laid-back party where everyone would feel comfortable and have a good time.” That’s just what she and Parker had, even despite showers that very morning. The wedding was held at a spectacular home on the banks of Lake Wilson, a family friend’s house that Mareth’s father had been remodeling. “The rain made us all so nervous,” she said, “and they weren’t January/February 2010 | 53


even able to lay the sod until a week before the wedding, but my dad kept saying ‘we’re going to be able to pull it off,’ and he was right.” Dish catered the gourmet meal that followed the ceremony, and Lola’s Gifts and Flowers prepared the bridal party’s bouquets. Otherwise, it was pretty much a family affair: Mareth and Parker’s families pitched in to decorate, led by Audwin and Sandi McGee and Robert Rausch, and friends even added special dishes to the after-wedding meal. But the biggest surprise of the day was—the absence of rain. “We lost my grandfather two weeks before the wedding, and I think he must have been watching down on us and keeping it dry for the ceremony,” she said. The rain stopped a couple of hours before the wedding and didn’t resume until after the guests had left. “The most special part of the day was when I saw Parker for the first time that day,” said Mareth. “Everything was so surreal and crazy, but when I saw him I knew it would all be okay. Then, dancing with him and then with my dad, when everything was over, I realized how much we had all enjoyed it.” Her advice to brides-to-be is to stick to what you want. “Most women have thought about their weddings for a long time,” she said, “so communicate your dreams to your family and then relax and enjoy the day.”

She was a vision in white. I was a nightmare in dusty rose. While most girls dream of being a bride, few dream of being a bridesmaid. The call to bear a bouquet, therefore, took me by surprise. An old friend from high school, a girl I hadn’t seen in years, was getting married. Inexplicably, she wanted me to be in the wedding, which would take place in my hometown. “Do you want to be a bridesmaid?” she asked, clearly expecting an enthusiastic response. I hesitated. I had never been in a wedding. Not overly fond of pomp or pantyhose, I had attended a scant handful of blissful unions. Bridesmaids, I knew, served little purpose other than to pump up the wedding party and make the bride look good. Still. We had been friends, once. You can’t say no to someone with whom you shared a beefcake-bedecked high school locker. Maybe I could do this. It seemed unlikely that I would be required to launch into a quavering solo, mid-aisle, or read something profound from the pulpit. All I had to do, it appeared, was stand around in a fancy dress. Foolishly, I uttered the fateful words: “I do.” And that is how I found myself covered in puke-pink sateen, a giant bow affixed to my rear, praying for death. My seamstress mother had made my dress from the bride-approved pattern which included not only the buttenhancing bow, but puffy sleeves and a plunging back. Instead of a basic bra, I was forced to wear a bustier-like contraption which did little to support my womanly bounty. Afraid of falling into the punch, I decided to augment things with a little duct tape. This proved to be a poor decision. Standing at the back of the church, waiting to billow up the aisle, I felt the tape become one with my tender skin. The puffy sleeves itched. I was a giant cupcake of misery. The ceremony began. As the soloist warbled a whitewashed version of “Lady in Red,” I joined my awkward escort. He held his crooked arm so high that we resembled a strained hook and eye. “Oh, bless her heart,” I imagined the wedding guests whispering as we staggered past. “But doesn’t the bride look beautiful!” The sermon seemed endless. Periodically, I pressed a hand to my aching rack, seemingly overcome with emotion. Not to be outdone, the flower girl broke into a coughing fit that progressed to choking gags. The priest plowed on. Mercifully, before I could rip open my dress and run jiggling away, it was over. The bride, tears in her eyes, rushed to hug me. Crying for two entirely different reasons, I returned the embrace. “Next time, I’ll remember this,” I thought, sharing a misty smile with my friend. “And I will say, ‘I don’t.’”

20 Questions for Faye Mann, Wedding Planner

The most unusual location for a wedding I’ve ever planned was… in Atlanta, Georgia, at a Greek Church. The bride’s family had invited me to stay at Lake Lanier in a beautiful suite for the week of the wedding. During the stay, I was invited to attend brunch each day and a party every night. On the last night before rehearsal, we learned to do the Greek Dance. The gates in the church were 14k gold and the mosaic tile was inlaid with gold. This was one to remember. I plan weddings because… I enjoy meeting new people. Some of my best friends are the brides, parents, and grandparents. I’m now directing many of the children of my brides from the past forty years. There’s nothing like… getting thank you notes from parents and Christmas cards with their children’s pictures. I still keep in touch with some of my brides. When a bride gets nervous, I always tell her… just be as calm as possible and let me take care of any problems that may happen. After all, if a bride is going to be nervous, this will be the day it will happen!

The best “something borrowed” was… the great grandmother’s pearls and the Bible she had used at her wedding. A bride should never… listen to someone who has recently wed and wants her to do the same things she did. Every wedding should be just like the bride has dreamed of all her life, and tailored to her taste. If you have to skimp on something, make it… the guest list. I encourage each bride to have a budget. One of the first things in planning a wedding is to decide on the number of guests on both sides. This will determine a large part of your budget.

After all of these years, I still am thrilled when… I get a call from a Mother of the bride asking if I have the date open—culminating with a meeting on location. Most people have no idea… what goes into planning a wedding if this is the first one in the family. The economy has affected so many of us this year. Most everyone has made some sacrifices this year, but you can still have a beautiful wedding with careful planning. After all, it’s not the money, but what’s in their hearts that counts. Sometimes, the best part of a wedding is… the reception. Everyone is excited to meet the bride and groom. The stress of all the planning is over. The most touching thing I’ve ever witnessed was… a wedding where the bride and groom’s parents, four sets of grandparents, and four sets of great grandparents attended. My favorite part of wedding planning is… helping the bride plan every phase from the gown, mother’s dresses, reception, photographer, and groom’s attire.


Seeing the happiness in the bride’s eyes is worth it all. This is what makes my work such a pleasure. My LEAST favorite part is… I do not have a least favorite part! Every wedding is a new experience and I enjoy every one of them. God has truly blessed me with a job of which I love every minute. No matter how much money you have to spend, always… stay as close to your budget as possible. There will be unexpected expenses and changes to your original plans. Make allocation for this. Shop locally. We have wonderful merchants. It saves time, gas & money. It’s not the size of the bridal party, it’s… the love and support that the members of the wedding party give to the bride and groom. When you plan an outdoor wedding, always… consult your Farmer’s Almanac and have an alternative location nearby. This has been a record year for outside weddings, and with all the rain we’ve had—most people in this business could write you a book this year. Don’t wait too late to make changes on the location. The funniest thing that ever happened was… the younger brother of the bride took the flower girl down the aisle while they were making pictures and pushed her in the Baptistry. It’s really more than a wedding; it’s… a celebration of love, not only with the bride and groom, but the union of two new families. If you could whisper something to the mother of the bride, it would be… “If you need to cry—go ahead. There are as many kinds of tears as there is love.”
