WELCOME to NOFA Vermont’s Organic Farm and Food Guide! This is an exciting time to be an eater who is seeking local and organic food, or an organic farmer seeking a local or regional market —there is a mutual interest to meet the demand for a vibrant food system. We are fortunate, in Vermont, to be able to eat local and organic food—we don’t have to choose. You’ve probably heard the term localvore for someone who eats locally; we’d like to invite you to become a NOFAvore: someone who eats local and organic food. This guide will help show you how fun and easy it can be. Here you will find all of the certified organic farmers in your community, the farmers’ markets closest to your home, and tips for year-round local eating. You can even find organic hay and forage producers, for those of you who raise a few chickens or other livestock at home. The number of organic farms and processors continues to increase in Vermont, so there are many farms and businesses to explore—in 2010, there were 580 certified organic farms and processors producing organic food on over 102,000 acres in Vermont, and over 20% of the dairy farms in Vermont are now certified organic. These farmers are participating in local and regional markets, maintaining working landscapes, and contributing to the success of other local businesses. You can find them at a farmers’ market, you can visit their farmstands, you can purchase their products at stores, you can eat their food at restaurants, you can purchase food by mail order, or you can pick your own on the farm—there are so many opportunities to support farmers in Vermont. NOFA Vermont has worked for forty years, since our founding in 1971, to grow local farms, healthy food, and strong communities in Vermont. Whether you are a shareholder in a Community Supported Agriculture (CSA) farm, shop at the farmstand in your neighborhood, or serve as a parent volunteer to support local food served in your child’s school, you too are strengthening community-based farms. VERMONT ORGANIC FARMERS, LLC NOFA Vermont’s Organic Certification Program

Vermont Organic Farmers (VOF), the certification program of NOFA Vermont, was created in 1985 to help producers and concerned consumers define what it meant to farm organically. These standards for organic production in Vermont were created by the farmers who were dedicated to practices that used a holistic approach to soil fertility, pest control, and plant and animal health. In 2002, with input from the organic community, the United States Department of Agriculture (USDA) implemented the National Organic Program (NOP) which created national standards for organic food. The role of VOF is to certify farms and processors to the NOP standards, which ensures that producers are achieving the necessary requirements. Our purpose is

to provide a highly credible program for independent third-party verification of organic food production, and to assist Vermont farmers and processors of all types to achieve the highest possible organic standards. ORGANIC FOODS DEFINED

Vegetables, Fruits, and Grains A Crops must be harvested from land that has not had prohibited synthetic fertilizers, herbicides, or pesticides applied within the last three years. A Farmers must manage soil fertility through crop rotation, cover cropping, manure, and compost additions, and approved mineral applications. A Tillage and cultivation must be done in a way to minimize soil erosion and preserve water quality. A Producers must use organic seeds and planting stock and may only use approved disease, pest, and weed control measures.

Milk and Other Dairy Products A Dairy animals must complete a one-year transition period before becoming certified. A Livestock must be fed a ration consisting of 100% organic feed, which means they are not receiving conventional, genetically modified corn and soybeans, and obtain a significant portion of their diet from pasture grasses during the grazing season.

A Ruminant animals (beef, sheep, goats) must also obtain a significant portion of their diet from pasture grasses during the grazing season. A Pigs and poultry must have access to the outdoors and be able to exhibit their natural behaviors such as rooting and scratching. A Meat from animals treated with hormones, antibiotics, and synthetic parasiticides cannot be sold as organic.

Maple Syrup A Maple syrup is considered a “wild crop� and sap must be collected in a way that ensures the longterm sustainable management of the sugarbush and the forest ecosystem overall. A A forest management plan must be completed and guidelines must be followed that keep taps evenly distributed and separated by large areas of healthy white wood. A Maple syrup must be tested for lead levels and synthetic defoamers may not be used when boiling.

A Farmers must rely on preventative healthcare practices and use only approved treatments when necessary.

Processed Foods

A Milk from animals treated with hormones and antibiotics cannot be sold as organic.

A Processed foods must be produced with organic ingredients. A small number of non-agricultural ingredients and non-organic ingredients are also permitted.

Meat and Eggs

A Products may not contain ingredients that have been genetically modified, irradiated, or produced with sewage sludge.

Organic and Pasture-Raised “E

at less meat.” That is the phrase heard by many Americans trying to maintain a healthy diet. So, if Americans are eating less meat, why aren’t the incidences of heart disease and other chronic ailments decreasing? Maybe it’s not about the quantity of meat that we eat, but rather the quality. If we are what we eat, aren’t we also what our animals eat? Modern livestock production has changed significantly in the last 50 years. Large farms across the country have consolidated and adopted an industrial method of production, with livestock as part of the assembly line. The true costs have been to animal well-being and the environment. Thankfully, more and more conscious eaters are turning to pasture-raised and organically produced meats as an alternative.

Why Pasture-Raised? When we took animals off of pasture, we changed their very nature. A cow, for example, has a unique digestive system that allows it to do what other animals cannot – digest grass. The rumen is one of four stomach chambers and where microbes break down the tough cellulose structure of grass, making it digestible. Pasture-based management can include a range of feeding strategies for ruminants, where animals may be entirely ‘grass-fed’ with no grain; fed some supplemental grain in addition to pasture and forages; or finished with grain before slaughter. Although non-ruminant animals, such as pigs and chickens, do not have the same digestive system as a cow, they also thrive in pasture-based systems. In addition to consuming plant products and grain, pigs will root up the soil and chickens will scratch and peck at the ground. These natural behaviors can be fully expressed when on pasture. 6

A quality pasture consists of a variety of grass and legume species, which in turn provide varying amounts of energy and protein to the animal. A diversity of species will also be individually adapted to various seasonal changes and weather conditions ensuring an abundance of pasture all season long. Many farmers practice what is called ‘rotational grazing’, meaning that animals are frequently moved to fresh areas of pasture. Animals move around the farm allowing the pastures to remain productive. Pasture-based management is the system that nature intended, so it’s probably no coincidence that this system produces high quality animal products. For example, the fat from animals on pasture is higher in Omega-3 fatty acids. Omega-3s have gotten a lot of attention as beneficial fats that prevent cardiovascular disease by lowering high blood pressure and preventing excessive clotting. Commonly found in fish oils, Omega-3s are also present in pasture-based products including meat, dairy products and eggs. However, the feed that supplements the pasture is just as important. For example, ‘conventional’ or ‘industrial’ pigs are often fattened from processed bakery waste (like donuts). Consuming this kind of pork is a sure way to mainline huge quantities of trans fats into one’s diet. The healthfulness of pork fat, as well as other animal fats, has to do with the complete diet and lifestyle of the animal.

Why Organic? Just because pasture-raised meat is raised locally, does not necessarily mean it is organic. One of the biggest management differences between ‘local’ meat and ‘certified organic local’ meat is the type of grain fed. Organic livestock must be fed a ration of 100% organic feed. Why is this significant? Approximately


70% of the U.S. corn crop and 90% of the U.S. soy crop is genetically modified. However, genetic modification is prohibited in organic agriculture. Therefore, if the animal’s grain isn’t certified organic, then there is a high risk the non-organic feed is a product of genetic modification. To date, genetically modified crops have not been proven to be safe, in our diets or in nature. Organic grain costs are roughly double those of non-organic grain. As a result, the costs of production are much higher in organic systems. However, the consumer may find in the marketplace that the price of the ‘local’ product and the ‘local organic’ product is similar. It pays to know exactly how the livestock was raised. Overall animal husbandry for organic farms must ensure quality of life and encourage the full expression of natural behaviors. Housing must provide adequate ventilation, clean water and bedding, and daily access to the outdoors. Although pasturing is only required for ruminants (cows, sheep, goats), typically organic pigs and poultry in Vermont are also raised on pasture where they may root and forage for worms and insects. But there is more to organic livestock production than the animal’s feed and housing. In the big picture, an organic farm must maintain or improve soil fertility, while also implementing management practices to prevent and minimize soil erosion. The farmer must be able to manage animal manure in a way that does not negatively affect water quality. Animals play an important role in the farm system, providing nutrients to help maintain biologically active and mineralized soils. In turn, healthy livestock are a reflection of the whole farm’s health, including healthy soil and crops.

When a package of meat says it is certified organic, that means that the farmer has completed the certification process, which provides third party verification of his or her farming practices. NOFA-VT’s certification program, Vermont Organic Farmers, LLC (VOF), provides that service statewide. Organic certification guarantees a third party verification of individual management practices. Other labels, such as ‘natural’ and ‘pastured’ have no certification process, and therefore the authenticity of these label claims may not always be clear.

Preparation and Cooking When cooking with pasture-raised organic meats, the first thing that you may notice is the full flavor of the meat. It is in the simple preparation of foods where the quality of the ingredients is the most apparent. It really pays to buy the best quality meat you can find and learn how to cook it. Thankfully, there are some fantastic books to offer cooking suggestions for these products. One of the newer books on the scene is Vermont-based author Deborah Krasner’s Good Meat. This hefty tome has an impressive selection of recipes accompanied by mouth-watering photos covering everything from beef, pork and poultry, to rabbit and lamb. Krasner says, “Grass-fed beef and pastured lamb taste meatier‌with less fat and more flavor. Pastured chicken and pork have a distinct taste and texture. There are variations in flavor due to the breed of the animal, its age at processing, the climate, geography and quality of the pasture.â€? Please use this guide to find farms that sell organic meat. But wait, there’s more! The benefits to you and your family get even greater when you add another factor into your food buying habits: choosing Certified Organic. Certified Organic guarantees that the food you are purchasing has been grown in a way that is ecologically sustainable, does not contain harmful levels of pesticides or genetically modified organisms, and that animals have been raised under humane conditions. A Organic Grain: All organic animals are fed organic grain which means they are not receiving conventional, genetically modified corn and soybeans. Grain makes up a significant part of many animals’ diet so it is important to make sure that the grain they receive is of the highest quality.

A The Local Economy: You are helping to ensure the future of farming since supporting local farms keeps money in the community. If all Vermonters purchased 10% more local food, it would result in $376 million in new economic output, including 3,616 new farms! A Food Safety: Organic food is clean and free from disease causing bacteria because Organic farmers must follow strict food safety requirements. For example, vegetables are washed in tested drinkingquality water and manure may not be applied to the fields within 90-120 days of harvest. A Climate: Choosing local and organic food is one way to do your part to reduce global warming. In addition to reducing the distance food travels before reaching your plate, the Rodale Institute found that by using cover crops, composting, rotating crops, and mulching, organic farms can sequester 1,000 pounds of carbon per acre per year.

Benefits to Choosing Local and Organic A Environmental Health: Keep toxic chemicals out of our bodies and the environment since organic farming standards prohibit the use of synthetic fertilizers, pesticides and genetically modified organisms. A Open Space: Animals are healthier. Organically raised animals must be able to go outdoors, unlike many conventional farms where animals are confined to barns or feedlots. In addition to access to the outdoors, organic ruminants (such as cows, sheep, and goats) must actively graze on pasture during the grazing season. D LOCAL RECIPE d Bistro Burger Topped with a Poached Egg from

I

nspired by a story I read by Jane Sigal in the

New York Times on Paris burgers, this is based on a recipe from Café Salle Pleyel, which uses classic beef tartare ingredients in a slightly cooked burger. I like to serve it on split half baguettes or on a bed of tiny salad greens that include peppery arugula or watercress, both of which go wonderfully with the egg. —Deborah Krasner 1 teaspoon red wine vinegar 4 pastured free-range eggs 1/ 4 cup sun-dried tomatoes 1/ 4 cup capers, drained and rinsed 1/ 4

cup fresh tarragon leaves cup fresh flat-leaf parsley leaves 1/ 2 teaspoon kosher salt 1/ 2

Freshly ground black pepper 1 pound ground grass-fed beef 1 tablespoon plus 1 teaspoon extra-virgin olive oil 2 ounces Parmigiano-Reggiano, thinly sliced into curls with a vegetable peeler

Bring a frying pan half-filled with salted water to a simmer, then add the vinegar. Break each egg into a ramekin and then slip the egg into the simmering water. Using a slotted spoon, gently lift each egg out of the water when it is cooked to your liking (a slightly runny center is good—that takes about 3 minutes). Shake the spoon to drain as much liquid as pos-sible, and gently put each poached egg in a separate small bowl until needed. Chop the sun-dried tomatoes with the capers, tarragon, parsley, salt, and pepper to taste, pulsing in a food processor or by hand. Using your hands, and working the meat as lightly as possible, combine the meat with the tomato-and-herb mix-ture and the 1 teaspoon olive oil. Shape the meat firmly into 4 patties, each about 1⁄ 2 inch thick. Heat a cast-iron skillet, add the tablespoon olive oil, and wait until it thins and becomes fragrant. Add the burgers to the pan. Cook over high heat for about 2 minutes per side for very rare. Set on a platter of split baguettes or salad greens; top each burger with a poached egg and then a couple of cheese curls. Serve at once. Serves 4.

HOW TO SUPPORT OUR VERMONT ORGANIC DAIRY FARMERS Vermont Organic Farmers (VOF) certifies 202 Vermont dairy farms as organic. These farmers ship fluid milk, bottle their own milk, or make various dairy products including award winning cheeses, yogurt, and ice cream. The best way to support these farmers is to purchase their products. Farmers who process their own dairy products include:
