WELCOME to NOFA Vermont’s Organic Farm and Food Guide! This is an exciting time to be an eater who is seeking local and organic food, or an organic farmer seeking a local or regional market—there is a mutual interest to meet the demand for a vibrant food system. We are fortunate, in Vermont, to be able to eat local and organic food—we don’t have to choose. If you have followed our work on a labeling law for foods containing genetically engineered (GE) products this year, you also know that eating certified organic food is the only way to guarantee your food is GE-free. In this guide, you will find all of the certified organic farmers in your community, the farmers’ markets closest to your home, and tips for year-round local eating. You can even find organic hay and forage producers, for those of you who may raise chickens or other livestock. The number of organic farms and processors continues to increase in Vermont, so there are many farms and businesses to explore—in 2011, there were 582 certified organic farms and processors producing organic food on 112,534 acres in Vermont, and over 20% of the dairy farms in Vermont are now certified organic. Those certified organic farmers are participating in local and regional markets, maintaining working landscapes, and contributing to the success of other local businesses. You can find them at a farmers’ market, you can visit their farmstands, you can purchase their products at stores, you can eat their food at restaurants, you can purchase food by mail order, or you can “pick your own” on the farm—there are so many opportunities to support farmers in Vermont. NOFA Vermont has worked for more than forty years to grow local farms, healthy food, and strong communities in Vermont. Whether you are a shareholder in a Community Supported Agriculture farm (CSA), shop at the farmstand in your neighborhood, or serve as a parent volunteer to support local food served in your child’s school, you too are strengthening community-based farms. VERMONT ORGANIC FARMERS, LLC NOFA Vermont’s Organic Certification Program

Vermont Organic Farmers LLC (VOF), the certification program of NOFA Vermont, was created in 1985 to help producers and concerned consumers define what it meant to farm organically. These standards for organic production in Vermont were created by the farmers who were dedicated to practices that used a holistic approach to soil fertility, pest control, and plant and animal health. In 2002, with input from the organic community, the United States Department of Agriculture (USDA) implemented the National Organic Program (NOP) which created national standards for organic food. The role of VOF is to certify farmers and processors to the NOP standards, which ensures that producers are achieving the necessary requirements. Our purpose is to provide a highly credible program for independent third-party verification of organic food production, and to assist Vermont farmers and 4

ORGANIC FOODS DEFINED Vegetables, Fruits, and Grains

Meat and Eggs

! Crops must be harvested from land that has not had prohibited synthetic fertilizers, herbicides or pesticides applied within the last three years.

! As with dairy animals, livestock must be fed a ration consisting of 100% organic feed which means they are not receiving conventional, genetically modified corn and soybeans.

! Farmers must manage soil fertility through crop rotation, cover cropping, manure, and compost additions, and approved mineral applications. ! Tillage and cultivation must be done in a way to minimize soil erosion and preserve water quality. ! Producers must use organic seeds and planting stock and may only use approved disease, pest, and weed control measures. ! GMO seeds are prohibited in organic production. In addition, producers must ensure buffers are adequate to prevent contamination drift from neighboring GMO crops. ! The allowable limit of pesticide residue on organic food is 5% what the EPA allows on conventional produce, resulting in safer food for you and your family.

Milk and Other Dairy Products ! Dairy animals must complete a one year transition period before becoming certified. ! Livestock must be fed a ration consisting of 100% organic feed, which means they are not receiving conventional, genetically modified corn and soybeans, and obtain a significant portion of their diet from pasture grasses during the grazing season. ! Farmers must rely on preventative healthcare practices and use only approved treatments when necessary. ! Milk from animals treated with hormones or antibiotics cannot be sold as organic. ! Farmers must maximize animal welfare by raising livestock in an environment where stress is minimized and where they are able to exhibit their natural behaviors such as grazing.

! Ruminant animals (beef, sheep, goats) must also obtain a significant portion of their diet from pasture grasses during the grazing season. ! Pigs and poultry must have access to the outdoors and be able to exhibit their natural behaviors such as rooting and scratching. ! Meat from animals treated with hormones, antibiotics, and synthetic parasiticides cannot be sold as organic.

Maple Syrup ! Sap must be collected in a way that ensures the longterm sustainable management of the sugarbush and the forest ecosystem overall which includes managing forests to encourage diversity in species and age of trees. ! A forest management plan must be completed and guidelines must be followed that keep taps evenly distributed and separated by large areas of healthy white wood. ! Maple syrup must be tested for lead levels and synthetic defoamers may not be used when boiling.

Processed Foods ! Processed foods must be produced with organic ingredients. A limited number of non-agricultural ingredients and non-organic ingredients are also permitted. ! Products may not contain ingredients that have been genetically modified, irradiated or produced with sewage sludge. ! Artificial colors and flavors and other synthetic additives are prohibited.

W

hy do I choose to farm organically? Well, for many of the reasons people would expect. Of course, I want healthy food for myself and my family, free of chemical contaminants and genetically modified feed. I also believe the production of our food should give back to the land, not just take from it. I don’t want polluted soil, water, and air to be a part of our farm, so being organic means not only that we carefully manage our land, but that the land that supports our farm through off farm inputs is managed without degradation as well. For me, eating and producing organic food is as much about an environmental ethic as it is about the personal health of my family.

The more interesting question to ask might be, “Why do we choose to be certified organic?” I must say this is a question that crosses my mind when the thick application lands in my mailbox. (By the way, thank you very much VOF for starting to fill in the database to have these forms arrive partially filled out with unchanging information.) But we do choose to go through the certification process, which requires a good deal of extra recordkeeping and paperwork. I’m sure certification helps a little with marketing our goat cheese. Just as when I purchase food, our customers are assured that a certified organic product is from a farm managed to a certain standard. In reality though, we do our own deliveries and sell most of our cheese through Farmers’ Markets and CSAs. We interact with most of our customers and they can ask us the questions they want to about our farm. Although it helps, marketing is not why we choose to be certified.

I have to say, I like being certified organic because it makes me a better farmer. Ideally, I would do the very best that I could for our farm all of the time—but in reality, I am human. I get overworked and overwhelmed and there are times that the organic standards give me the extra push I need. There are many examples of this, but one that stands out is a case of pneumonia in a doeling a few years ago. Of course it always seems that you have so much to do when an animal becomes sick. She was quite ill and it seemed to come on suddenly. It was winter, and the young stock were housed in a large greenhouse with what we thought was adequate ventilation. We quickly determined that her illness had progressed too far and we opted to treat with antibiotics. Under organic standards, this meant that we had to then sell the doe from the herd. This is a blow to any organic livestock producer. There is just so much invested in


raising a yearling that, at least in the world of goats, can never be reclaimed by the sale of a healthy animal. They are always worth so much more to us. Because we had just lost an animal from our herd, we became acutely aware of the health of the rest of the youngstock, and noticed some others were starting a cough. Faced with the prospect of losing more animals, suddenly everything else was put on hold. Despite all the other pressing jobs on our dairy, remedying the youngstock situation became priority number one, including new housing in a better ventilated location and extra vitamin, mineral, and immune system supplementation. After this additional care, no other animals needed to be treated with a prohibited substance. Had we not been certified organic, I think I may have let myself get caught up in our busy-ness and treated our sick doe as an isolated incident. Without addressing the root cause of the problem, we would have had more sick animals that needed treatment. The organic animal health standards really force me to be on the ball, ready to act and change what is needed as soon as a problem occurs. The stakes are too high to do otherwise.

BENEFITS OF ORGANIC CHEESE Cheese has many nutritional benefits, including protein, calcium, phosphorus, zinc, vitamin A, and vitamin B12. But in order to make outstanding cheese, you need the most nutritious and high-quality milk. Animals raised on organic farms produce exceptionally creamy milk high in flavorful butterfat, making some of the most amazing and award winning cheeses in the country. Much of the flavor and nutrition in cheese comes from its high concentration of butterfat. However, non-organic dairy production can use synthetic fertilizers, pesticides, antibiotics, and hormones, which concentrate in butterfat. Choosing organic cheese reduces your exposure to these products, as well as the genetically engineered grains found in most conventional livestock feed.1 In addition, organic dairy has more healthful benefits, including increased levels of vitamins, antioxidants, and healthy fats like Omega-3s and conjugated linoleic acid (CLA).2 Organic cheeses of all varieties can be found at farmers’ markets, cheese shops, food co-operative stores and large supermarkets across Vermont. The Vermont Cheese Council is a great resource to plan a tasting trip and get information on all of the cheese producers in Vermont (www.vtcheese.com).

I have occasionally heard livestock farmers use animal welfare as a reason why they don’t choose to become organic, citing the inevitability of withholding treatment from an animal in need to maintain certification. This upsets me, because not only is withholding treatment forbidden by the organic standards, I really don’t think it happens. As farmers, we all have to make critical animal health decisions, and as farmers, both conventional and organic, we sometimes make mistakes. I feel that being certified organic really pushes one to analyze those mistakes and make the changes necessary for a healthier, and more humanely raised herd. I do not argue when people say to me that there are times when a goat needs a deworming or antibiotics. On our farm I have found this to be true. But as I have traveled this slow road to “be a better farmer,” I have found fewer of these cases. I am grateful we have chosen to be certified organic because I feel we have made greater strides along that road than we would have otherwise.

CHOOSE Local Organic!

!

P

eople choose local and certified organic foods for

many reasons: superior taste, better nutritional value, a desire to eliminate toxic persistent pesticides from their diets or avoid genetically modified organisms (GMOs), or because they want to support Vermont’s family farms. Whatever the reason, making the choice to purchase local and certified organic foods makes sense on many levels. The data supporting the benefits of organic food is significant. The latest recommendation to choose organic food comes from the President’s Cancer Panel Report, released in May 2012. The report recommends consumers choose food grown without pesticides or chemical fertilizers, antibiotics, and growth hormones to reduce their exposure to environmental toxins that can increase their risk of developing cancer. The good news is that it is easy to find local and certified organic food in Vermont—use this guide to find an organic farm near you today.

Benefits of Choosing Local and Organic ! Healthy People: Organic farming prohibits the use of synthetic fertilizers, pesticides and genetically modified organisms, keeping those products out of our bodies and the environment. That’s even more important when considering the health of our children. Pesticides pose special concerns to children because of their high metabolism and low body weight. A recent study found a dramatic decline in children’s pesticide levels after a switch to organic diets.1 ! Healthy Soil: Organic farmers nourish the soil that feeds our food. Because of the focus on building fertility naturally, organically-managed soils are healthier and much richer sources of nutrient-dense, biological life. In addition, the Rodale Institute found that by using cover crops, composting, crop rotation, and mulching, organic farms can sequester 1,000 pounds of carbon per acre per year. ! Healthy Animals: Organic practices promote animal health by providing outdoor access and the chance to express natural behaviors. On organic farms, chickens get to scratch and pigs get to root. Ruminants (such as cows, sheep, and goats) actively graze on pasture during the 36

grazing season. In addition, animals are fed high-quality forages and organic grains, which means no genetically modified organisms (GMOs) such as corn or soybeans. Certified organic meat, eggs, and dairy products are raised without the use of antibiotics and synthetic growth hormones.

! Healthy Economy: Today there are over 112,534 acres of certified organic farmland in Vermont; the most organic acreage, per capita, of any state in the nation! Purchasing local organic products helps ensure the future of farming by keeping money in the community. The organic food industry generated more than five hundred thousand American jobs in 2010.2 That sends a strong message that doing what’s good for the environment is also good for our local economies. ! GMO-Free: Because GMOs are prohibited in the organic standards, choosing certified organic products is one of the only ways to ensure that you are eating foods that do not contain genetically modified ingredients. The call for transparency in our food isn’t a passing fad. According to JustLabelit.org, a national campaign for GMO labeling, nine out of ten Americans want to know what is in the food they are buying and eating, and want genetically engineered foods to be labeled.

It’s easy to find local and certified organic products. Look for this logo the next time you shop. Vermont Organic Farmers, LLC, NOFA Vermont’s organic certification program, requires farmers to keep extensive records and inspects farms annually, so you can trust the food is grown according to organic methods. 1. ! LOCAL RECIPE " Spinach Salad with Pumpkin-Seed-Crusted Goat Cheese

Excerpted from Cooking Close to Home by Diane Imrie and Richard Jarmusz, available now from Chelsea Green Publishing.

Salad 1 tablespoon olive oil 1⁄2 cup onion, finely chopped 1 teaspoon fresh garlic, finely chopped 2/3 cup pumpkin seeds 6 ounces goat cheese 9 cups fresh spinach, washed 1 carrot, peeled and shaved (about 1 cup loosely packed) Dressing 3 tablespoons olive oil 2 tablespoons balsamic vinegar 1 tablespoon honey 1⁄2 tablespoon Dijon-style mustard Fresh ground black pepper to taste

Preheat the oven to 350°. In a small saucepan heat the olive oil over medium heat. Add the onion and garlic and sauté until slightly browned, approximately 8 minutes. Set aside. In a food processor, coarsely chop half (1/3 cup) of the pumpkin seeds. Cut the cheese into 6 wedges or rounds, depending on the shape of the cheese. Roll the cheese in the chopped pumpkin mixture. Thoroughly coat all sides of the cheese. Place the cheese on a small baking sheet and bake in the oven for 5 minutes, until the cheese begins to visibly soften. At the same time, on a small baking sheet, bake the remaining 1/3 cup pumpkin seeds until lightly toasted. To prepare the dressing, in a small bowl whisk together the olive oil, vinegar, honey, mustard and pepper. In a large bowl toss the spinach with the dressing, the onion and garlic mixture, and shaved carrot. Serve on salad plates. Top each salad with one piece of cheese and the remaining toasted pumpkin seeds. Serves six.

HOW TO SUPPORT OUR VERMONT ORGANIC DAIRY FARMERS Vermont Organic Farmers (VOF)

So how can you support the other 192 organic dairy

certifies 199 Vermont dairy farms as organic. These farmers ship fluid milk, bottle their own milk, or make various dairy products including award winning cheeses, yogurt and ice cream. The best way to support these farmers is to purchase their products. Farmers who process their own dairy products include:
