Welcome to NOFA Vermont’s Organic Farm and Food Guide! Vermont continues to lead the way as we develop a vibrant, diverse food system. We were recently rated the #1 state in the country for local foods (for the third year in a row), and we are fortunate, here in Vermont, to be able to eat local and organic food—we don’t have to choose. This guide is your key to finding Vermont’s certified organic, locally grown bounty. Inside, you will find all of the certified organic producers in your community and the farmers’ markets, farm stands, and Community Supported Agriculture (CSA) farms closest to your home—you can find everything from maple syrup to raspberries, fresh peas to chicken. If you have followed our successful campaign for a labeling law for foods containing genetically modified organisms (GMOs), you know that Vermont will be the first state in the country to mandate the labeling of GMO foods. Did you also know that certified organic foods are always GMO-free? In addition, the organic seal means that your food is free from synthetic pesticides, that livestock have access to the outdoors, and that farmers are working to build the health of their soil, crops, and animals. The number of organic farms and processors continues to increase in Vermont, so there are many farms and businesses to explore—in 2013, there were 585 certified organic farms and processors producing organic food on 103,893 acres in Vermont, and over 20% of the dairy farms in Vermont are now certified organic! Those certified organic producers are participating in local and regional markets, maintaining working landscapes, and contributing to the success of other local businesses. You can find certified organic products at farmstands, stores, restaurants, through mail order, or you can ‘pick your own’ at the farm—there are so many opportunities to support Vermont’s farmers and processors. NOFA Vermont has worked for more than forty years to grow organic farms, healthy food, and strong communities in Vermont. Whether you are a shareholder in a Community Supported Agriculture farm (CSA), purchase organic milk produced on Vermont pastures, or serve as a parent volunteer to support local food served in your child’s school, you too are strengthening Vermont organic farms. Program, which helps limited-income Vermonters afford produce from local farms; development of direct markets through farmers’ market and CSA coordination; and organic certification.
Provide Food and Farm Education to all Vermonters through our annual winter conference, on-farm summer workshop series and technical conferences. In addition, NOFA Vermont works in collaboration with Shelburne Farms on the VT FEED (Vermont Food Education Every Day) project, which increases farm and food education in schools; we have nine Farm to Community Mentors who work statewide to develop relationships among schools, communities and farms; and our apprenticeship program places farm workers and aspiring farmers on farms.
Strengthen Commercial Organic Farms in Vermont through farmer education and technical assistance. Our technical assistance programs provide information and services to commercial organic growers throughout the state on topics such as pest and disease management, production issues, and business planning.

NOFA Vermont’s Organic Certification Program
Vermont Organic Farmers (VOF), the certification program of NOFA Vermont, was created in 1985 to help producers and concerned consumers define what it meant to farm organically. These standards for organic production in Vermont were created by the farmers who were dedicated to practices that used a holistic approach to soil fertility, pest control, and plant and animal health. In 2002, with input from the organic community, the United States Department of Agriculture (USDA) implemented the National Organic Program (NOP), which created national standards for organic food. The role of VOF is to certify farmers and processors to the NOP standards, which ensures that producers are achieving the necessary requirements. Our purpose is to provide a highly credible program for independent third-party verification of organic food production, and to assist Vermont farmers and processors of 4

What is “Certified Organic”? Ten things you should know
Certified organic farmers & processors are committed to a food system that works with natural systems to improve soil, protect your health, and produce great-tasting food. Below are some of the requirements they follow to become certified.
1
Prohibited pesticides, herbicides, and synthetic fertilizers cannot be used in crop production. Furthermore, producers must maintain buffers that prevent contamination drift from prohibited substances and neighboring GMO crops.

Organic production prohibits genetically modified organisms, including seeds, livestock feeds, and ingredients used in processed products.

Livestock are fed 100% organic feed. They do not receive conventional, genetically modified corn and soybeans, hormones or antibiotics. They also must obtain a significant portion of their diet from certified organic pasture grasses during the grazing season.

Farmers maximize animal welfare by raising livestock in an environment where stress is minimized and where they are able to exhibit their natural behaviors such as grazing, rooting, and scratching. Animals are given daily access to the outdoors, year round.

Farmers use land management practices that protect natural resources, conserve biodiversity, and improve the health of their soil.

Meat from animals treated with hormones, antibiotics, or synthetic parasiticides cannot be sold as organic. Farmers use preventive healthcare practices and only approved treatments when necessary.

For maple syrup production, sap is collected using practices that ensure the long-term sustainable management of the sugarbush and promote forest ecosystem health. Maple syrup is tested for lead levels, and synthetic defoamers may not be used when boiling.

Processed foods (such as cheese, bread, or jam) are produced with certified organic ingredients. Artificial colors and flavors, preservatives such as nitrates, and other synthetic additives are prohibited.

Certified organic products are randomly subject to pesticide residue tests. The allowable limit of pesticide residue on organic food is just 5% what the EPA allows on conventional produce.

Organic certification is the only label backed by clear legal definitions and independent third-party verification. All certified operations participate in an annual inspection of their premises, purchases, and practices to ensure the integrity of the organic seal.

W
e chose to have our company be certified organic because we believe that a basic right is to choose what goes into our bodies. Certified organic assures us and our customers that our ingredients and production methods provide food that is unadulterated: free of GMO and petrochemicals, nothing but what nature has created. From our experience in the medical field (Thora is from a family of physicians, and Ed is a practicing anesthesiologist), we know that health and vitality are largely dependent on our personal choices. The choice of clean food from vibrant soils, the food that has nourished humanity for eons, is something that should be supported and cherished. Before we developed our company, we focused our food choices on organic and locally produced ingredients as much as possible. So we did a lot of cooking from a pantry of basic ingredients. As our children grew and life became even busier (how does that happen every year?) we found ourselves struggling to keep our meals interesting. We would decide that tonight is the night for something new, find a great recipe and then go digging through our spice drawer full of baggies and half pint mason jars from the local bulk bins searching for the dozen

spices that we needed for a great new curry dish. Have you experienced the “What is this?” and “How long have we had this?” and “When did we run out of…?” of going through a spice drawer? That was our typical conversation. We looked but couldn’t find any packaged spice blends that matched our needs of interesting flavor combinations, organically produced, no fillers, no flow agents, no anti-caking compounds, and with all of the ingredients listed. So we started making our own blends to have in bulk at home for easy use. Having solved our own problem, we realized that although we are unusual, we aren’t that unusual, so there must be other people out there with the same challenge that we had….Teeny Tiny Spice Co. of Vermont was born. Certified organic. Conventional was never even an option for us. Our ingredients come from around the world since most are not grown in northern temperate climates like Vermont. We are glad that we can support organic farmers who we likely will never actually meet by providing them an outlet for their production. We also have a goal to support local farmers in all bioregions by making it simple and easy for people to cook from scratch. We have found that despite the number of cooking shows and magazines and cookbooks around,

many people have little idea of what to do to turn basic ingredients into a delicious meal. The path of least resistance for many people is to walk by their fantastic local produce, meat, and dairy, and pick up something prepared, packaged, and highly processed. We want to be part of changing this pattern and getting people to refocus on real crafted food. In this effort, we develop recipes based on a few simple steps and basic ingredients to encourage people to just plain cook. Once they gain a little confidence and positive feedback hopefully they will then pick up that lamb shoulder and those golden beets grown by a farmer that they know, get in the kitchen, play with their food, and make something wonderful. We have also branched out from the retail origins of our business to support other processors who focus on organic ingredients, such as Vermont Bean Crafters in Warren. Recently, we have been contacted by a few different small farmers looking for spices to flavor their farm-made sausage, so our newest venture is a line of spice kits for sausage making. We know that valueadded products are often a key to the economic viability of small farms, so this product line honors the care and quality that goes into a small farm by giving the farmer an additional tool to help set their product apart from the crowd. So why Teeny Tiny? Growth for the purpose of growth is not our goal. If we become Biggy Wiggy because we are doing something great, that is OK, but our focus is and will continue to be on the details of our product, the quality of our ingredients, the personal connection with our customers and vendors. Teeny and tiny are the details that an organic farmer, producer and processor need to focus on. Without the sledge hammer of petrochemical fertilizers, insecticides, herbicides and cleaners, the organic community looks for small signs to direct them: observing the small changes that show we are improving the health of soils, plants and livestock; watchful for the early signals that we need to change strategies; willing to make the small movements and changes that are essential to dancing in harmony with nature.
What about other labels? Certified Organic is the only label with a clear legal definition and mandatory, third-party inspection. What about all the other labels out there?
Federally Defined Some food labels have standard definitions under the USDA. Producers can request a voluntary inspection to verify their practices—look for the “USDA Process Verified” shield logo to ensure that the standards have been met. However, producers can still use these labels without being inspected. Free-range. Used for poultry, this label indicates that the flock was provided shelter in a building, room, or other area with continuous access to the outdoors during their production cycle. It does not limit the use of antibiotics, hormones, or pesticides. Natural. Meat, poultry, and egg products labeled as natural must be minimally processed and contain no artificial ingredients. The natural label does not regulate farm practices and only applies to the processing of meat and egg products. There are no standards or regulations for the labeling of natural food products if they do not contain meat or eggs. Grass-fed. Grass-fed animals receive a majority of their nutrients from grass throughout their life, while organic animals’ pasture diet may be supplemented with grain. The grass-fed label does not limit the use of antibiotics, hormones, or pesticides.
Defined by the State of Vermont Local. The state of Vermont defines “local” products as those that originated within Vermont or 30 miles of the place where they are sold. However, the state does not conduct inspections or actively enforce this definition.
Not Legally Defined or Regulated Cage-free. Used for poultry, this label indicates that the flock was able to freely roam a building, room, or enclosed area with unlimited access to food and fresh water during their production cycle. Pasture-raised. Due to the number of variables involved in pasture raised agricultural systems, the USDA has not developed a labeling policy for pasture-raised products. Humane. Multiple labeling programs make claims that animals were treated humanely during the production cycle, but the verification of these claims varies widely. Local Recipe
Oven Roasted Lamb Shoulder with Root Vegetables This recipe from Thora and Ed of Teeny Tiny Spice Co. spices up local ingredients with international flair.
W
e made this beautiful roasted lamb shoulder with lamb from Open View Farm in New Haven and our homemade raw-grass-fed farmer’s cheese. (If you are interested in sourcing locally made cheese with certified organic milk from Vermont dairy farms, please see page 12 of this directory.) We used Teeny Tiny Spice Co. Montreal Seasoning, but you could use any one of our spice blends for this dish.
3 to 4 pounds lamb shoulder, bone in 4 tablespoons Teeny Tiny Spice Montreal Seasoning 2 large onions, big chunks 6 carrots, peeled and chunked 6 potatoes, washed and quartered 8 ounces mushrooms, cleaned and halved ½ cup fresh mint, stemmed and chopped 1 cup fresh farmer’s cheese or other soft cheese
Pre-heat oven to highest heat. Combine the chopped mint and soft cheese, and refrigerate until ready to serve. Place the vegetables in a roasting pan. Rub the lamb shoulder with Teeny Tiny Spice Co. blend. Place the lamb on top of the vegetables and cover the pan tightly with foil. Place the roasting package into the hot oven, turn the temperature down to 350˚F and cook for 3 hours or until the lamb is falling off the bone. When the lamb is cooked, remove it to a serving platter along with the cooked vegetables, sauce it all with pan drippings if you like, and accompany with the minted cheese. 2014–2015 VERMONT ORGANIC FARM & FOOD GUIDE
