The Perfect Chocolate Chip Cookies
I discovered this recipe in one of my favorite books, "Maman: The Cookbook." The combination of buttery, sweet dough with chunks of chocolate is unbeatable; it perfects the classic chocolate chip cookie with crispy edges and a soft, chewy center. What You Need
11 ounces of dark chocolate baking wafers (such as Guittard)
2 sticks (8 ounces) of unsalted butter, at room temperature
– 1 cup of raw unsalted macadamia nuts
– 1/2 cup of sliced raw unsalted almonds
– 1/2 cup of raw unsalted walnut halves
–
1 3/4 cups of packed light brown sugar – 2 1/4 cups of all-purpose flour
– 2 teaspoons fine sea salt
– 2 large eggs
Directions
– In a mixer with paddle, combine baking wafers, butter, macadamia nuts, almonds, and walnuts, and mix on low speed for approximately 30 seconds to break down nuts and chocolate. Add brown sugar and mix on low until the butter and sugar come together.
– With mixer running on low, add flour and salt and mix until incorporated.
– Add eggs and scrape the sides of the bowl, mixing until the dough sticks to the sides of the bowl. Continue scraping the bowl, ensuring an even distribution of the nuts and chocolate.
– Turn dough out onto a large sheet of parchment paper and flatten into squares roughly 1 inch thick. Fold parchment paper to cover and wrap the dough and place in a resealable plastic bag. Refrigerate for at least 1 hour (up to 7 days).
– Set a rack in the center of your oven and preheat to 350°F. Line a sheet pan with parchment paper.
– Divide chilled dough into 14 equal portions (about 3 1/2 ounces each). Using your hands, roll each portion into a ball. Arrange 7 balls of dough on the prepared sheet pan, spacing them about 3 inches apart. Use the palm of your hand to flatten into disks roughly 1/2 inch thick. Bake for 6 minutes. Rotate the pan as needed for even baking and bake until edges are brown but the centers remain a bit gooey (6 to 7 minutes longer).
– Cool on the sheet pan for 10 minutes and enjoy! Repeat with all of the remaining cookie dough.
