California Avocado Corn Salsa Yields 6 Servings
Corn kernels are lightly cooked just to develop their flavor and then mixed with chunks of smoky roasted chiles, luxurious avocado and crunchy sharp scallions. This mild salsa is an ideal finishing touch to dress-up grilled meats such as marinated skirt steak or chicken breasts. 4 cups fresh corn kernels (about 5 ears) 3/4 cup olive oil, 1 tsp. salt, 1/2 cup red wine 3/4 tsp. freshly ground black pepper 2 California avocados, peeled and seeded 1 large red bell pepper, cored and seeded 4 poblano chiles, roasted, peeled and seeded 4 scallions, white and light green parts, thinly sliced on the diagonal Heat 1/2 cup of olive oil in a large skillet over medium heat. Saute corn with salt and pepper, about 5 minutes. Transfer to a large mixing bowl and set aside to cool. Cut avocados, bell pepper and roasted poblanos into 1/4-inch dices. Add to corn along with scallions, red wine vinegar and remaining 1/4 cup olive oil. Mix well and let sit 20 to 30 minutes to blend the flavors.

Sweet Potato & Chocolate Cake
2 cups all-purpose flour, 1 cup sugar 2 cups canned sweet potato, pureed or equivalent of fresh potatoes, stewed & mashed 1/4 cup vegetable oil, 1/2 teaspoon salt 1/2 teaspoon orange zest 2 teaspoons baking powder 2 teaspoons baking soda, 1/2 teaspoon cinnamon 1 cup dark-chocolate chips Preheat oven to 350 F. Grease and flour a bunt baking pan. Put sweet potatoes in a bowl and blend until mostly mashed and soft. Add the remaining ingredients, except for the chocolate chips. Mix on medium power for two minutes. Add the chocolate chips and fold into the batter. Pour the cake mixture into the bunt pan. Bake in the center of the oven for 60 minutes. For extra chocolate flavor, melt 1/2 cup of the chocolate chips in a double boiler, or microwave on low until melted. Pour over the cooled cake as a drizzle.

6 ounces freshly squeezed orange juice 4 ounce simple syrup (see below) 2 ounces freshly squeezed lime juice 2 ounces freshly squeezed lemon juice 6 ounces white rum, 6 ounces dark rum 1 25 fluid ounce bottle of champagne Orange, lime and lemon slice for garnish Ice (in block form if possible; if not, large chunks) 1. Add the ice to a large punch bowl. If using chunks (as opposed to a large block of ice), fill the bowl just under halfway. 2. Add the orange juice, simple syrup, lime juice, and lemon juice. With a large spoon or ladle, stir 10 times. 3. Add the light and dark rums. Stir 10 more times. 4. Add the champagne, but not too quickly. Enjoy the moment. Add a goodly amount of orange, lime and lemon slices. Stir, but only once. 5. Ladle into punch glasses or festive goblets. Try to ensure that every guest gets a slice of fruit and a smile. Simple Syrup ~ Makes 41/2 cups 21/2 cups water, 3 cups sugar 1. Add the water and sugar to a medium-size saucepan. Stirring occasionally, bring the mixture to a boil over medium-high heat. Lower the heat a bit, keeping the mixture at a low boil for 5 minutes, stirring occasionally. 2. Turn off the heat, and let the syrup cool completely in the pan. Store in a clean, airtight container in the refrigerator.

In a large bowl, combine the turkey, onion, basil, parsley, ginger, garlic, salt, fennel, oregano, and red pepper flakes. Mix well. Shape into desired sizes of patties. 3 cups fresh blueberries, washed and drained 1/3 cup granulated sugar 1 tablespoon cold butter, cut into pieces 1/4 cup melted butter 1/3 cup brown sugar 2/3 cup sifted all-purpose flour Dash salt 1/4 teaspoon baking soda 2/3 cup quick cooking rolled oats
Heat oven to 325 F. Butter an 11 x 7 baking dish. Combine the berries with the sugar and stir to coat. Place in the baking dish and dot with the cold butter. Mix the remaining ingredients and spoon over the berries. Bake for 45 to 50 minutes until the fruit is tender and the crisp has started to brown. Slice and serve warm with ice cream on the side for a real treat.

Recipe Corner Grilled Chipotle Steak Sandwiches Marinade 1/2 cup favorite steak sauce or Worcestershire sauce 1/2 cup lime juice 1 medium tomato, chopped 1 chipotle pepper in adobo sauce (chopped) 1 tablespoon oil 1 clove garlic (minced) 1/4 teaspoon cayenne pepper 1/4 teaspoon paprika 1 tablespoon brown sugar Salt and pepper to taste 1 flank steak, or favorite steak (about 1 lb) 1 loaf crusty French or Italian bread Butter for spreading 1/4 cup shredded Monterey Jack Mix all marinade ingredients in a bowl. Reserve about one-third cup of the marinade and pour the rest into a resealable plastic bag. Add the steak to the bag and allow to marinate for an hour or more in the refrigerator. Spray the grill with nonstick cooking spray. Heat the grill to medium heat. Remove the steak from the bag and place on the grill. Allow to cook 17 to 20 minutes for medium-rare doneness, or until desired doneness. Brush the steak while cooking with the reserved marinade -- don't use the marinade that was in the bag with the meat. Remove the steak and let it rest for 10 minutes. Slice the bread lengthwise and butter each half. Sprinkle on the shredded cheese. Put bread on the grill to toast slightly and melt the cheese. Slice the meat and place on the bread. Cut into serving-size portions and enjoy with your favorite side dish.

Sweet Onion Soup Servings: 6
2 sweet onions, peeled, cut in half and sliced thin 2/3 cup extra virgin olive oil 2/3 cup sparkling white wine 1/2 cup heavy cream 2/3 cup water Salt to taste Combine sweet onions and olive oil in cold pot. Put over low heat and let onions sweat. Salt slightly to prevent onions from caramelizing. Stir occasionally. When onions have released most of their juices (about 2 hours), add sparkling white wine and cook another hour. When all alcohol is cooked off, remove from heat and blend in blender, then strain through a fine sieve. Whisk in cream and water, and add salt to taste. Chill or serve hot.
