Welcome to Our Community Kitchens A Fond Farewell from Our Outreach Coordinator, Lauren Fawcett

W

e hope you are enjoying the return to the quarterly cooking class schedule and the new online registration system. For the last six

years I have worked in the capacity of Community Kitchen Coordinator

and then Outreach Coordinator here at the North Coast Co-op. It has been such a pleasure meeting so many great people in the community and being actively involved in the cooking classes, workshops and events. I have thoroughly enjoyed this rewarding adventure and am delighted to announce that I have accepted a new position here at the Co-op as our Prepared Foods Manager. While it is exciting to embark on this new chapter, I will sincerely miss interacting with so many of you on a regular basis but look forward to staying in touch. Thank you for being a part of our Co-op Community Kitchen experience!

Sign Up for a Class or Workshop Registration begins September 1, 2014 Classes are Held in Our Community Kitchens

Registration Options Register online, by phone or at Customer Service. Please note that pre-registration and payment are required for all classes and workshops. See our Cancellation Policy on back cover.

Register online: Go to our website: www.northcoast.coop. On the home page, scroll down and click on the “view classes and register” button. This will take you to the calendar of cooking classes and workshops. Click on the name of the class you’re interested in to bring up class descriptions and to see openings. If you would like to register for a class or workshop, press the “add to cart” button located to the right of the class description. At this point you’ll see a field to enter a “gift certificate, coupon, or voucher code.” This is where you’ll enter your membership information to receive your 20% discount. Enter your first and last name with your member number. Example: janedoe12345 (with no spaces). After your information has been entered into the field, press the apply button to see your discount reflected. You can then keep shopping or proceed to checkout. Once there, first time users will need to set up an account and returning users will need to log in to their account. Payment and registration confirmation can then be made. Register by phone at (707) 443-6027 ext. 102. If asked to leave a message, please include your class request(s), phone number and member number if applicable. We will return your call to assist you in setting up an account with the Community Kitchen. Register at Customer Service in either store location. Use your member number, if applicable, to recieve your 20% discouint.

Chef Alex Begovic $45 Treat yourself to this scrumptious seasonal menu. Black Bean and Pumpkin Soup finished with Cilantro-Lime Sour Cream; Wilted Escarole with Ham, Croutons, Onions and Apple Cider Vinegar; Polenta JalapenoPulled Pork Cakes with Maple Reduction; and Chocolate-Cinnamon Pot de Crème.

Sara Borok $45 Learn the basics of pressing apples & pears, canning the juice (for pasteurizing) and turning it into hard (alcoholic) cider. This process takes minimal equipment and you’ll be home brewing in no time! Everyone takes home one quart of cider to continue fermentation (airlock included) and two pints of freshly canned cider. Please bring: 8 pounds of organic apples and/or pears, one quart jar and two pint jars with lids and rings (available for purchase at the Co-op).

A Taste from Morocco Betty Thompson $45 The featured dish of this deliciously aromatic menu is Chicken Tagine with Olives and Homemade Preserved Lemon. Betty will also create for the class: Pinchitos (spicy grilled meat skewers) served with Harissa (hot sauce); Citrus and Carrot Salad; Spiced Zucchini Relish; and a Date and Almond Tart for dessert. Cozy Cuisine Chef Jon Hoeschen $45 Spend an appetizing evening enjoying this satisfying seasonal meal. Roquefort and Pear Strudel Served with Mixed Greens; Farfalle with Roasted Golden Beets, Beet Greens and Pine Nuts; and a luscious dessert of Mexican Coffee Pudding with Kahlua Whipped Cream.

Three classic recipes are featured: Lebkuchen (honey cake with spices, ground almonds and citron); Pfeffernusse (chewy little pepper cookies with a sugar glaze); and Leckerli (a honey base with spices, slivered almonds and orange peel). Master Food Preserver Demo: Edible Gifts

Nicoletta Leonardo $20 Learn how to make nutritious and whimsical, no waste Japanese-style bento lunches for your kids. We’ll explore easy lunches, as well as artful and elaborate bentos. Find out what supplies you’ll need, types of boxes, tips and more for making lunches that kids will look forward to eating! Bring your own bento box or use one of ours. Students will eat their creations at the end of class.

MFP Instruction / Free Time to get a jump on creating delightful and delicious gourmet treats that are sure to please friends and family. This workshop will cover a variety of preserved gifts that can be made in advance for the upcoming holidays and more.

Kids Gone RAW: Come Get Spooky! Dr. Pepper Hernandez $25 Kids Gone Raw is a spooktacular Samhain/Halloween treats celebration! In this hands-on activity class, kids will create several healthy and nutritious simply rawsome recipes that are sure to get a scary thumbs up from everyone at your party! Price includes one child (age 5 and up) and one adult.

Health & Wellness: Fire Cider — How to Make and Use Medicinal Vinegar Bethany Staffieri $20 Now is the time to focus on immune health, before heading into the cold and flu season. Learn how your body’s acidic and alkalinity levels can be contributing factors to becoming ill. Bethany will share methods on how to balance your body’s PH and we will make Fire Cider; a traditional cold remedy with deep roots in folk medicine. This apple cider vinegar remedy is beneficial for strengthening the immune and respiratory systems as well as digestion. Bethany is a trained and certified Western Herbalist. Bring one pint mason jar with lid (available for purchase at the Co-op) to take a sample home with you.

The North Coast Co-op’s Cook & Save Club hosts free monthly meetings to develop recipes that include items from our sales flyer. Meetings are free and recipes emphasize items from our economical and environmentally-friendly Bulk departments. At each meeting, class attendees make and test a few different recipes and then vote for their favorite. The winning recipe is published in the Co-op News, the North Coast Co-op’s free member newsletter. Join us for an upcoming meeting of Cook & Save Club!
