Mycality Mushrooms has been providing mushrooms for local stores and restaurants for over 10 years. Michael Egan has found his niche in farming locally by growing a variety of mushrooms in his facility in Samoa, CA. Year round he produces shiitake and oyster mushrooms, as well as others during warmer times. There are four stages of growing mushrooms, starting with the preparation of the bags containing the medium, mainly sawdust and wheat bran. After the bags of medium are sterilized and inoculated with mushroom spores, the bags are placed in the incubating room until the mushrooms are ready to sprout. The bags are removed from the blocks of sawdust and moved to the fruiting greenhouse, where the mushrooms grow. When the mushrooms are just right they are harvested and delivered.
