TASTY TEMPTATIONS
Experience the flavours of Bermuda, from casual local eats that celebrate the island ’s British heritage to exquisitely prepared multi-course meals.
Bermuda’s blend of flavours is truly one of a kind. The island’s history, its status as a British Overseas Territory, and its geographic location all combine to bring you a unique style of cuisine you won’t find anywhere else in the world. Get ready to savour all that Bermuda has to offer!
LOCAL FLAVOURS
Nothing gets island restaurateurs vying for the top title like the Bermuda fish sandwich. It’s the one local cuisine tradition you must sample whilst on vacation here. The stakes are high, with island chefs hoping their rendition earns them a top spot on various “best-of” lists.
The Swizzle Inn pairs one of the best fish sandwich presentations with another island staple, the Rum Swizzle. The Swizzle Inn’s fish sandwich features a huge portion of local grilled wahoo coated in island seasonings, spicy slaw, lettuce, tomato, and their home-made tartar sauce, all piled high on local raisin bread. The Rum Swizzle, Bermuda’s premier cocktail with a blend of Goslings rums and fruit juices — typically lemon, orange, and pineapple — sweetened with falernum, is the perfect fish sandwich complement. Island lore claims this bright, cheery drink was invented at the Swizzle Inn, with the first one served there in 1932; so it’s a natural destination for those who want to sample the national drink of Bermuda. Bring home a bottle of Rum Swizzle with 9 Parishes’ handmixed, ready-to-drink island cocktail.
One of the best examples of Bermuda’s blend of culinary influences is the traditional Sunday codfish breakfast. This is a hearty meal of salted codfish with a side of boiled potatoes and eggs, bacon and onion cooked with stewed tomatoes, and paired with slices of fresh banana and avocado. As

CODE NAME, EMBODIES THE STYLE, GRACE, AND SOPHISTICATION OF HIS PROTÉGÉ’S FICTIONAL CREATION.
SIR WILLIAM STEPHENSON, a British intelligence agent who established Camp X, a training school to prepare covert agents for clandestine operations, is widely believed to be the inspiration for the James Bond character created by Ian Fleming — who himself is believed to have trained at Camp X. Stephenson went on to head the Allied Forces’ Atlantic censorship station based out of the Hamilton Princess during World War II. He took up residence in Bermuda after WWII, and eventually passed away at his home in Tucker’s Town, called Goldeneye Estate.
Hamilton Princess’ Intrepid, which borrows its moniker from Stephenson’s British intelligence code name, embodies the style, grace, and sophistication of his protégé’s fictional creation. Exclusively serving dinner, Intrepid is an upscale steak, seafood, and raw bar restaurant spearheaded by the Hamilton Princess’ new Executive Chef de Cuisine, Antwan Ellis.
Intrepid is situated in the hotel’s Gazebo Wing, offering a refined steakhouse atmosphere with panoramic harbour views and stylish floor-to-ceiling art deco décor. The new menu’s focus is on steak, including expertly dry aged prime cuts. Seafood fans will also find something to love amongst Intrepid’s temaki sushi station and raw bar, which specialises in oysters, caviar, and freshly caught local fish.
Menu highlights include Lump Crab Cake with Cajun
Remoulade; the Intrepid Maki Roll with lobster, shrimp tempura, and lemon butter; Oysters Rockfeller; and, to finish, the Goldeneye Baked Apple Galette. End your night in James Bond fashion with an Intrepid Martini made with Absolut Elyx Vodka, lemon peppercorn Lillet, and Castelvetrano olive served — how else? — Shaken, not stirred.
Waitstaff at Intrepid deliver service that’s on par with the high level of service travellers have come to know and love at the Hamilton Princess. Attention to detail and a personalised experience for each diner make for an elegant, unforgettable evening. Dinner at Intrepid is sure to be a stand-out experience from start to finish, amongst the top highlights of your time in Bermuda.

dictated by tradition, this dish is generally served only on Sunday at island restaurants, so be sure to set aside your Sunday morning for this Bermudian breakfast tradition. Sample it yourself at White Horse Pub & Restaurant, Pink Beach at The Loren, or Munchies by the Sea, a kid- and pet-friendly venue at the water’s edge in St. George’s.
If you want to go all out, book a table at Fourways Inn for their extravagant, award-winning Sunday brunch. Set in an 18th-century traditional Bermuda building with limestone walls, arches, cedar beams, and surrounding lush gardens, brunch at Fourways is not merely a culinary experience but also a journey back in time.
Bermuda’s crystal-blue waters are home to some of the freshest ingredients around. If you’re here from September through March, when the spiny lobster can be harvested, be sure to give this crustacean a try. This species doesn’t have claws, unlike its Maine counterpart; but there’s plenty of meaty goodness in the tail.
Find superb seafood dishes at Aurora at Newstead Belmont Hills Golf Resort & Spa, a seaside venue with lovely ocean views, or Lost in the Triangle, a casual local eatery that promises to take your taste buds on a culinary adventure.
GLOBAL CUISINE
Bermuda might be microscopic on the world map, but its international food offerings are surprisingly well varied. From Europe to the Far East, culinary traditions from around the globe have found their way to this tiny island. Sushi, Indian food, Italian and Mediterranean cuisine, and even Japanese food make up some of the international options here.
SURE WHERE TO START? THE INDISPENSABLE MAPS OF BERMUDA GUIDE IS AVAILABLE DIGITALLY AT WWW.VISITBERMUDANOW.COM.
Welcome to Bermuda’s premier bar and grill restaurant located in the scenic beauty of the Belmont Hills Golf Course with spectacular views overlooking the Great Sound and Hamilton Harbour. Blû’s cuisine is bold American with generous Italian and Asian influences as well as a delightful sushi menu.
House of India’s menu is extensive and authentic, featuring some of the most popular gastronomic delights from the many diverse regional styles of India. L’Oriental on Bermudiana Road offers guests the combined tastes and delicacies of the Far East from dishes prepared by their Master Teppanyaki Chef to immaculately prepared sushi by their Master Sushi Chef. You’ll also find Asian cuisine at Wong’s Golden Dragon, offering high-quality Chinese takeout food in the Town of St. George.
For Italian eats, check out La Trattoria in the heart of Hamilton with the island’s only wood-burning pizza oven as a centrepiece. La Trattoria is recognised as the best in Bermuda for its hearty Italian food and warm, kid-friendly environment, all at an extraordinary value. Another
Italian option, Little Venice, has been a mainstay for nearly 50 decades, offering unparalleled hospitality, authentic cuisine, and an award-winning wine list.
Speciality Inn has perhaps the widest array of international fare, with Bermudian dishes, Italian pizzas, and Japanese sushi on the menu. Ribs, steaks, burgers, and salads are also on offer, ensuring everyone will find something good to eat.
RESORT DINING
Bermuda’s resorts are known for gracious hospitality, and many serve up that same hospitality at their on-site restaurants, open to their guests and the general public. Enjoy an elegant evening in a setting to match at one of Bermuda’s fine resort restaurants.
At the Hamilton Princess & Beach Club, Intrepid Steak, Seafood & Raw Bar expertly prepares dry aged prime cuts with mouth-watering results.
There are two can’t-miss venues at The St. Regis Bermuda Resort. BLT Steak NY serves up fine cuts of beef and an upscale cocktail menu in a contemporary setting complete with ocean views. Also, a standout at this resort is Lina, named for St. Regis founder John Jacob Astor IV’s mother, Caroline Astor. Breakfast and lunch are served at Lina, where the menu is light and fresh and incorporates local ingredients prepared with a Latin twist.
If you’re looking for another allday dining option, Coco Reef Resort’s Restaurant serves breakfast, lunch, and dinner with international menu items infused with Bermudian flair.

FROM OCEAN TO TABLE
TASTE
INGREDIENTS
EVERY DAY,
executive chef
Aurora restaurant at the Newstead Belmont Hills Golf Resort & Spa, steps into the kitchen and draws inspiration from one of the most incredible restaurant views on the island.
Aurora sits just above Hamilton Harbour and offers a panoramic view across the harbour and the Great Sound, out towards Dockyard and the North Shore, where much of Bermuda’s oceanic bounty is harvested.
From season to season, Bermuda is rich in fresh produce and fish. The Newcastle Upon-Tyne native has drawn much of his inspiration from this proliferation of local goods when creating his seasonal menus at the two-time “Best of Bermuda” award–winning seafood restaurant.
Living in Bermuda for a decade has transformed his cooking, whether it’s spending a day out on the ocean with veteran commercial fishermen and learning the tricks of their trade or relishing in seasonal ingredients such as summer’s sweet Bermuda corn and
fresh goat cheese or winter’s roadside loquats and prickly pears, which have all found their way into his upscale, seafood-forward dishes.
“The Bermudian lifestyle is enviable,” he says. “Pink sands, bluest of oceans, and delicious cuisine. After being on the island for almost a decade now, it’s hard to imagine life any other way, creating new dishes every day and incorporating interesting flavours with all the thriving wildlife that the island has to offer.”
While Chef Adam brings European influences from French and Italian cooking to the Aurora kitchen, the chefs’ diverse ethnic backgrounds allow them to incorporate these influences into the dishes, from Nepalese and Thai to Mexican, keeping the menus exciting and fresh. The menus change two or three times a year, featuring diverse cuisines and delightful reinventions of classic Bermuda dishes like codfish and potatoes.
Being able to sit alfresco and watch a spectacular sunset goes hand in hand with highlighting the island’s freshest ingredients to create a full culinary journey.
“The Aurora team ensures guests are treated to unaltered and fresh items such as the spiny Bermuda lobster, guinea chicks, an array of Bermuda reef fish, and fresh Bermuda
vegetables,” says Chef Adam. “Our menus have been divided by diverse cuisines, cooking techniques, and preparation styles, as well as highlighting hand-crafted items.”
Voted ‘Best Seafood Restaurant’ 2 years in a row, Aurora’s seasonal menu features fresh local seafood and produce from Bermuda’s best fisherman and farmers. We are committed to sourcing sustainable ingredients from local suppliers, ocean to table. We look forward to welcoming you to Aurora at Newstead Belmont Hills Golf Resort & Spa.
THE BERMUDA RUM SWIZZLE
DISCOVER THE HISTORY OF THIS ICONIC ISLAND COCKTAIL.
THE BERMUDA Rum Swizzle is the island’s most celebrated cocktail and a drink locals are passionate about. Although some would debate the merit of the popular Dark ’n Stormy cocktail as the island favourite, there’s one thing most people will agree on: Both drinks owe their success
and popularity to the Goslings Black Seal Rum.
The classification of the drink as a “Swizzle” refers to the drink’s preparation rather than its ingredients. In the early 1900s, Bermudians would use whatever was available locally to create
the cocktail, most often using a combination of Goslings Black Seal Rum and Goslings Barbados Rum with local citrus, Falernum (a rum-based syrup with lime and spices), and Angostura bitters. They would use a swizzle stick made from the allspice tree to froth the mixture.
The Bermuda Rum Swizzle is deeply ingrained in Bermudian culture and is often served at social gatherings, sporting events, and public holidays. Countless locals have worked to perfect their own versions of the drink, resulting in unique recipes served across the island in restaurants, bars, backyards, and beaches where no two swizzles are the same.
One of the most renowned Rum Swizzle makers was the late Sheila West Gosling, dubbed the “Washing Machine Queen.” In the 1960s, she became famous for her unique method of making Rum Swizzle. She made the drink in her brand-new Hoover washing machine at a party she hosted at her Shelly Bay home following a tennis match. West Gosling’s idea was a hit, and her washingmachine Rum Swizzle became a popular tradition. In the 1970s,
she received an upgraded Maytag wringer washing machine as a gift from her three children. The Maytag wringer’s agitator served as a swizzle stick, mixing and frothing the ingredients. She also used the wringer to juice her citrus right into the cocktail. Today, the Goslings keep her Maytag washing machine, which still works and has become a popular tourist attraction. Visitors from all over the world have sampled the iconic Maytag machine’s Rum Swizzle.
The historic Swizzle Inn Restaurant in Bailey’s Bay, which dates to 1932, is known for serving a famous local swizzle. Their catchy slogan, “Swizzle In and Swagger Out,” has become synonymous with the establishment, which is still family-run.
9 Parishes Rum Swizzle, a ready-to-drink version of the Bermuda Rum Swizzle, is now available in three different sizes. Chris Furbert Jr. spent almost 10 years perfecting his recipe and started bottling and selling it in 2017 at various locations across the island, including the airport. Visitors often purchase it as a souvenir to take home to family and friends.

FEAST ON THE VIEW
Many restaurants in Bermuda offer a view that’s as delicious as their dishes. Aqua Terra, serving creative dishes with New World flair, is set atop rugged limestone cliffs overlooking their secluded pink-sand beach and a striking ocean view.
Blû Bar & Grill overlooks the Great Sound, with floor-to-ceiling picture windows elegantly framing the view of yachts and international sailing events. At Coconuts, you can enjoy the view from the main deck overlooking the beach or immerse yourself in the surrounding beauty with a table right on the beach for a romantic meal with your toes in the pink sand. And finally, The Loren’s seaside restaurant, The Pink Beach Club, offers a laid-back, open-air setting where you can enjoy breakfast, lunch, or dinner accompanied by stunning scenery.
FOR YOUR SWEET CRAVINGS
Vacations are for indulging, and Bermuda gives you plenty of ways to treat yourself. Ice cream shops are plentiful, as they should be on a warm, sunny island. Nannini Häagen-Dazs Ice Cream Parlour in Royal Naval Dockyard hits the spot with ice creams, sorbets, frozen yoghurts, sundaes, and milkshakes to choose from. Also in Dockyard, you can pick up a popsicle from Duch Pops, Bermuda’s first home-made popsicle venture that blends all-natural flavours with refreshingly sweet and oh-so-delicious results.
Bring Bermuda’s sweetness home with you in the form of perfectly firm yet light and airy sugar cookies. Confections brings the beach feel to their creations with sugar sprinkles that resemble Bermuda pink sand.
In St. George’s, Ital Beverages serves up fresh, hand-crafted juices with added health benefits from ingredients like lemongrass and hibiscus.
Perhaps the most iconic indulgence is the Bermuda rum cake. These moist, spirit-soaked Bundt cakes are prevalent on the island.
BERMUDA RESTAURANT WEEKS
DISCOVER TANTALISING EATS AND IMMERSE YOURSELF IN BERMUDA’S CULTURE AT THE ANNUAL RESTAURANT WEEKS, FROM MID-JANUARY THROUGH THE END OF FEBRUARY.
OVER SIX WEEKS, visitors and locals can experience a variety of culinary offerings, exclusive tasting menus, and unique experiences from some of Bermuda’s best restaurants and chefs. With over 40 participating restaurants across the island, guests can indulge in prix-fixe two-course lunches or threecourse dinners, either dine-in or takeout.
“Bermuda Restaurant Weeks has been a staple on our annual calendar for over a decade. Restaurateurs from around the island look forward to the opportunity to highlight local ingredients and unique Bermuda flavours whilst presenting fresh twists on Bermuda’s culinary heritage,” says Tashae Thompson, VP of experiences at the Bermuda Tourism Authority (BTA).
The 2023 Restaurant Weeks commenced with the highly anticipated return of the Celebrity Chef VIP Experience with Top Chef contestant Dawn Burrell. Before dinner, ticket holders sipped on specialty-crafted cocktails and explored the interactive exhibits at the Bermuda Underwater Exploration Institute (BUEI), complete with a theatrical performance. For dinner, guests enjoyed a curated, wine-paired fourcourse meal prepared by Chef Burrell, known for her masterful way of fusing African and Asian flavours with locally harvested ingredients.
But Burrell isn’t just known for her knife skills. Before becoming a chef, she had a successful career as a track and field athlete. In 1997 and 1998, she won the long jump title at the USA Indoor Track and Field Championships and competed in international championships, including the 2020 Sydney Olympics. Her athletic career culminated when she won the gold medal at the 2001 IAAF World Indoor Championships in Lisbon with a jump of 7.03 metres, beating her personal best.
After retiring from track and field, she leaned into her passion for food and attended the Art Institute of Houston to study culinary arts. She perfected her cooking skills alongside Chef Tom Aikens in London and Monica Pope in Houston. She then served as sous-chef at award-winning Uchi in Austin before becoming the head chef at the upscale soul food restaurant Kulture
in downtown Houston. In 2020, she was named a semifinalist for the James Beard Foundation Award, “Best Chef: Texas”; and she’s also appeared on popular cooking shows like Cutthroat Kitchen, Chopped, Man vs. Master, and, of course, Top Chef: Portland
The 13th season is slated to return in early 2024, making it the perfect winter getaway for food enthusiasts and cultural explorers. Don’t miss out on the chance to discover new flavours and experience the best of Bermuda’s cuisine and culture!
BERMUDA AFTER DARK
When the sun goes down, Bermuda nightlife heats up in the island’s trademark casually elegant character. The City of Hamilton is the place to be starting at Happy Hour, especially on Fridays when you’ll find all the locals and expats popping in for a friendly banter. Little Venice and Intrepid are two favourites. Outside the city, check out the scene at Swizzle Inn, Aurora, The St. Regis Bar, and The Pink Beach Club at The Loren.
As the night goes on, Hamilton heats up with opportunities to dance with DJs and live music, or lounges and sophisticated cocktail bars. Smart casual attire will grant you entry into most late-night venues. A more casual venue is Snorkel Park Beach & Nightclub in Dockyard where at night the party really starts as Snorkel Park transforms into a massive outdoor nightclub on the beach, with drinks and dancing till late.

FOR THE FOODIES
AS TRAVELLERS SEEK MORE AUTHENTIC EXPERIENCES, BERMUDA IS RISING TO THE CHALLENGE BY APPEALING TO BONAFIDE FOODIES WITH FARM-TO-TABLE EXPERIENCES AND FLAVOURS THAT TELL THE STORY OF THE ISLAND’S HISTORY AND CULTURE.
START YOUR EXPLORATION of Bermudian cuisine at the place where many island restaurants and grocers source their produce and meats — Wadson’s Farm. Founded in 1976, this 40-acre Southampton sustainable farm offers seasonal fruits and vegetables, eggs, and farm-fresh meats. Stop by on a Tuesday or Thursday morning and enjoy a family-friendly tour of the farm led by founder Tom Wadson himself.
Next, sample the island’s bounty and browse the wares of craftspeople, including baked goods, skin-care products, teas, herbal supplements, and more at the Farmers Market Bermuda, held every Saturday from November through June at the Bermuda Botanical Gardens. Bermudians and visitors alike enjoy this homegrown collective of culinary creativity, where you can pick up jams, jellies, local honey, fresh fish, and so much more.
Experience Bermuda’s British connection with the charming U.K. custom of afternoon tea. The Hamilton Princess’ Crown & Anchor restaurant hosts an elegant afternoon tea that combines a sleek, contemporary venue with a family-friendly environment. The resort’s own bespoke teas, blended from ingredients sourced from around the world, are served alongside tasty sandwiches and delightfully dainty sweets.
A children’s menu, complete with offerings like bubble gum tea, ensure your little ones enjoy the experience as much as you do.

This dinner cruise is perfect for a romantic anniversary celebration or for a “just because” evening of excitement.
Finally, every foodie trip
to Bermuda should include a meal at The Pink Beach Club at The Loren. This upscale resort’s culinary team works with a variety of fishermen and small-scale farmers to source ingredients for the resort’s restaurants. The ahi tuna in your poke bowl was quite likely swimming in the Atlantic that same morning. The Loren’s menu follows the seasonality of the island and its closest port of entry — the New England area of the United States — with the goal of using ingredients at their peak of freshness, passing through as few hands as possible and travelling as short a distance as possible. The Loren’s culinary team, with its commitment to seed-to-table and sea-to-table cuisine, is ready to impress even travellers and diners with the very highest expectations.
