At the end of every summer we like to pause and enjoy the company of our staff and their families at an annual picnic. This year, because our 20th Anniversary blow-out bash was cancelled in 2020, we decided to do a little something different. So we contacted our friends at The Maine Maritime Museum in Bath to help us charter a sunset cruise down the Kennebec River. It was a perfect night, and it was wonderful to spend quality time with our colleagues.
We’re so grateful for this special team. We love what we do and we enjoy helping you find just the right gadget for the task, pot for the recipe, and wine to wow your guests at dinner. Ingredients 4 Tbsp Butter, unsalted 2 Red Onions, diced 4 Garlic Cloves, minced 2 Carrots, peeled and chopped 2 Celery Stalks, chopped 10 Button Mushrooms, sliced
Adapted from the section, ‘Big Pots’ in Sam Sifton’s, See You on Sunday. Feeds a crowd and also freezes well!
3 lbs Stew Meat, in pieces Salt & Pepper 1 Rosemary Sprig, fresh 2 Tbsp Flour 2 12 oz cans of Stout 8 oz Cheddar Cheese, grated
How to Make It
Set oven to 375°F. In a large, oven-safe pan (like Le Creuset!), heat 2 Tbsp of butter over low heat. Add onions and garlic. Cook until soft, stirring frequently.
Add the carrots, celery, mushrooms, and remaining butter and cook over medium heat, stirring frequently, about 15 min. Season the beef pieces with salt and pepper. Add the beef and rosemary to the pan, then sprinkle in the flour and cook on high heat, stirring often, for about 5 min. Add enough stout to just cover the beef. Cover the pan and put in the oven for 1 ½ hrs. Give it a stir and then cook for another hour. If the sauce remains thin, set pot over low heat, remove lid, and reduce. Season to taste with salt and pepper. Fold in the cheese and stir to combine. Serve with buttered noodles or mashed potatoes.

Introducing: Kikuichi Cutlery Kikuichi Cutlery was established in the 13th century when the Emperor chose their family ancestor, Shiro Kanenaga, to be one of his swordsmiths. The Emperor was so pleased with the quality of Shiro’s blades, that he granted him the right to use the royal symbol, the Chrysanthemum flower (kiku-nomon), on the blades he produced. The use of this mark not only signified the blades were made for the emperor, but also the superb quality which exceeded royal standards. Today, Shiro Kanenaga’s hand-forged swords are considered national treasures in Japan and the company is in the 4th generation of family ownership.

Dutch Baby with Lemon Curd 2 Tbsp Butter 3 Large Eggs, at room temp ½ C Milk, at room temp 2 Tbsp Sugar ¼ tsp Salt

How to Make It Place the 2 T of butter in a cast iron skillet. Preheat the oven to 425°F. When it reaches this temperature, put the pan in with the butter, and start mixing the batter. Whisk together the eggs, milk, sugar and salt, then add the flour and mix. It should be a little lumpy. By this time, the butter should be melted. Carefully remove the hot pan from the oven, pour the batter in, and immediately return the pan to the oven. Bake 15 minutes, or until it’s golden brown and puffy. Allow to cool long enough for the center puff to settle down, then spread on the curd, sprinkle with berries and garnish with lemon curd, blueberries, and mint. You can also sprinkle with powdered sugar. Eat immediately! (serves 4-6)
