The new kitchen is ready for you! Construction on the space began in February and we marked the official opening in June. We know visits to the store last spring were often interrupted by the sound of sawing and hammering as the new kitchen was being built; thank you for bearing with us! If you haven’t seen the finished product yet we would love to welcome you in for a tour. Or better yet, join us for a class! We’ve been hosting regular cooking classes, wine & beer tastings, and product demonstrations. We have a calendar full of events planned for this holiday season! Spicy Black Bean and Butternut Squash Chili By Stephanie Danahy, Now You’re Cooking Kitchen Coordinator

Ingredients •1 ½ Tbsp olive oil •2 onions, diced •8 cloves of garlic, chopped •2 ½ tsp chili powder •1 Tbsp ground coriander •2 tsp dried oregano •2 14.5-ounce cans fire roasted tomatoes
•1# black beans soaked overnight •2 dried chipotle peppers reconstituted, deseeded and chopped fine or 2 chipotle chilies in adobo, seeded and minced •4 cups butternut squash peeled, seeded & cut into ½-in cubes (approx. (1) 2 ¼ pound squash) •½ cup bulgur
•10 cups liquid (vegetable or chicken stock or water or combination) Garnishes •sour cream •cilantro •Monterey Jack cheese •red onion chopped
Heat oil in a heavy large pot over medium heat. Add onions and cook until soft, about 8 minutes. Add garlic, spices, and herbs and cook for a minute, until you can smell the garlic. Stir in tomatoes with juice, beans, chipotles and broth. Bring to a boil, reduce heat to a simmer, cover with lid slightly ajar and cook until beans are tender, about 2 hours. Stir occasionally. Add squash and bulgur, simmer uncovered until bulgur and squash are tender, about 30 minutes. Add broth as needed. Season with salt and pepper. Serve with your choice of garnishes.

Speculaas Cookies

Speculaas are a crisp, German cookie with plenty of spice and character. Stephanie will be making these cookies during our free Cookie Drop-in Event on Saturday, December 3 from 10am-Noon in our new demo kitchen! Ingredients •1 ½ cups all-purpose flour •½ cup almond flour •¼ tsp baking soda •8 Tbsp unsalted butter, room temperature •¾ cup sugar
•1 large egg •1 tsp vanilla extract •3 ½ tsp cinnamon •¼ tsp nutmeg •¼ tsp ground cloves
•₁⁄₈ tsp ginger •₁⁄₈ tsp white pepper •₁⁄₈ tsp cardamom •½ tsp salt
In a small bowl, whisk together all-purpose flour, almond flour, and baking soda. Beat butter and sugar on medium speed, until light and fluffy, about 3 minutes. Beat in egg. Reduce speed to low and add flour mixture until just combined. Form dough into 2 disks, wrap in plastic wrap and refrigerate for 2 hours or more. Preheat oven to 300°F. Line 2 baking sheets with parchment paper. Working one disk at a time, roll the dough to a scant ¼ inch thick. Use any shape cookie cutter to cut out shapes. If using an embossed rolling pin, lightly flour the dough and your rolling pin. Transfer cookies to prepared baking sheets. Refrigerate for 15-30 minutes; this helps the cookies retain their shape while baking. Bake cookies for 20 minutes, until they are golden around the edges. Remove them from the oven. Let them cool on the pan for 5 minutes, then transfer them to a rack to cool completely.
