If this stifling hot weather isn’t enough to get you screaming for ice cream, consider that July is officially National Ice Cream Month, declared in 1984 by President Ronald Reagan, so it’s the law. And if you like to cook, making ice cream desserts is fun to do, even with kids, while keeping the kitchen cool. Why settle for plain ice cream in a bowl or cone when you can create so much more? A Pecan Ice Cream Roll puts a spin on the traditional summer treat.

One of the easiest ideas comes from Shatto Dairy. It’s a twist on strawberry shortcake. “It’s simply delicious,� says Matt Shatto. “And fabulous for a summer party dessert.� Bisquick shortcake recipe baked as directed Shatto butter Strawberries, cleaned and sliced Shatto strawberry or vanilla ice cream Shatto heavy cream (optional) Split cake and top with Shatto butter. Top with sliced strawberries and Shatto Milk Co. strawberry or vanilla ice cream. For added decadence, pour a half cup of heavy Shatto cream over the top.

It’s made with orange sherbet, chocolate ice cream, chocolate fudge and a vanilla wafer crust with peanut brittle crumbs on top. 1/2 cups vanilla wafer crumbs 1/4 cup butter or margarine, melted 3 pints chocolate ice cream, softened 1 12-ounce jar chocolate fudge syrup (Smucker’s preferred) 1/2 pint orange sherbet, softened 2 cups peanut brittle Combine crumbs and butter and press into the bottom of a 9-inch springform pan. Bake in 350-degree oven for six to eight minutes. Cool, then chill. Layer half the chocolate ice cream over the crust, then drizzle with half the chocolate syrup (freeze if necessary between layers.) Then layer the orange sher-

bet, the remaining syrup, and remaining chocolate ice cream. Sprinkle peanut brittle over the top. Freeze at least three hours or overnight. Remove side of pan, slide onto serving plate, if desired, and cut into wedges. Serves 10 to 12. Note: The consistency of fudge topping can vary depending on what brand you purchase. If the fudge topping mixture is too thick to spread easily, stir in 1/4 cup milk.

Ice Cream Truffles Tired of truffles? Try these ice cream truffles made with your favorite ice cream. We used “To Die For Chocolate� by Belfonte, and they were. Make sure your ice cream is frozen solid before scooping the balls. 2 cups ice cream 6 ounces bittersweet (or semisweet) chocolate, chopped 6 tablespoons unsalted butter, cut into pieces

1½ tablespoons light corn syrup Line a flat dinner plate or baking sheet with parchment paper and place in the freezer. Once the plate is chilled, use a dough scoop or ice cream scoop to shape mounds of ice cream, making sure that the mounds are solid. Brush any dangling bits of ice cream away so the surface is completely smooth. Place each mound on the chilled plate or baking sheet. Freeze the shaped mounds thoroughly before proceeding. When you are ready to dip the truffles, combine the chocolate, butter and corn syrup in a heatproof bowl set over a pan of simmering water. Heat, stirring occasionally, until the chocolate is completely melted and the mixture is smooth. Working quickly, dip one ice cream mound at a time into the chocolate mixture, moving between two spoons until the coating is smooth and the excess has dripped off. The International Ice Cream Association came up with this yummy recipe that turns plain vanilla ice cream into a dessert roll. 1/2 gallon vanilla ice cream, softened 1/2 cup chopped pecans 6 chocolate cookies, crushed Caramel or hot fudge topping Whipped cream 6 maraschino cherries, chopped Divide ice cream into six equal amounts and spread into an 8-by-8-inch square on plastic wrap. Sprinkle 2 tablespoons cookie crumbs down center of ice cream. Roll up ice cream to form log shape. Freeze for half an hour. Pull back from plastic wrap and sprinkle each log with pecan pieces. Rewrap in plastic and freeze for two hours or overnight. Remove plastic wrap and place on serving dish. Drizzle with topping. Garnish with whipped cream and cherries. Option: one large roll can be made in lieu of 6 small rolls.

Ice cream cake When local hostess Bea Dobyan wants to make something cool and creamy, she likes to use this recipe for ice cream cake she got from her mother-in-law. 2 rolls Ritz crackers (about 80) 1 stick butter melted 2 packages instant coconut cream pudding 1½ cup milk or half and half 1½ quarts French vanilla ice

cream 1 large container Cool Whip or La Creme Toasted coconut Roll crackers fine into crumbs and mix with melted butter. Press into 9-by-13-inch pan. Beat milk or half and half and instant pudding then add ice cream that has been softened enough to work with. Spread on crumbs and chill about 30 minutes. Add Cool Whip or La Creme on top and sprinkle with toasted coconut. Reserve some of the Ritz crumbs and those can be used instead of the coconut.

Oreo Ice Cream Fudge Pie What’s better than Oreos and milk? How about this Oreo ice cream fudge pie? 1/2 cup hot fudge ice cream topping, warmed 1 tub (8 ounces) Cool Whip Whipped Topping, thawed, divided 1 package (3.9 ounces) JELLO Chocolate Instant Pudding 8 Oreo cookies, chopped (about 1 cup) 12 vanilla ice cream sandwiches Pour fudge topping into medium bowl. Whisk in 1 cup Cool Whip. Add dry pudding mix; stir two minutes. Stir in chopped cookies. Arrange four ice cream sandwiches, side-by-side, on 24-inch-long sheet of foil; top with half the Cool Whip mixture. Repeat layers. Top with remaining sandwiches. Frost top and sides with remaining Cool Whip. Bring up foil sides; double fold top and ends to loosely seal packet. Freeze four hours or until firm. There are still three or four good months left of cycling season. So, if you haven’t dusted off your old bike yet, now’s the time to do it. Just make sure you protect your melon when you hit the pavement. Based on professional reviews and tests for impact, absorption, weight and ventilation, these bike helmets have been deemed the best on the market. Check ‘em out.

BEST HELMET FOR MEN Reviewers from Consumer Reports and Mountain Bike Rider magazine say the Bell Slant (est. $55) is a versatile bike helmet that won’t break the bank. The Slant comes with a removable visor, so it’s suitable for both road and mountain biking. The Bell Slant has 21 wind vents, so testers say it keeps their head relatively cool on hot days. Unlike more expensive bike helmets, which come in multiple sizes, the Bell Slant is available in only one universal adult size that fits head sizes from 21 to 24 inches. Even so, reviewers say the ErgoDial fit system is easy to use, and most testers are able to adjust it appropriately to ensure a comfortable fit.

Although it is certainly not cheap, the Specialized S-Works Prevail is lightweight and has excellent ventilation. In fact, a number of reviewers say the Prevail model has better ventilation than any other helmet they’ve tested. The helmet comes in three sizes, which ac-

commodate heads from 20 inches to 24.75 inches. It also includes a micro-dial fit-adjustment system, which testers say easily ensures a snug fit.

BEST HELMET FOR KIDS The Bell Trigger (est. $35) has performed well in crash testing and has a huge number of vents — 23 in all — for a kids’ bike helmet. Parents are fans of the Trigger’s pinchproof buckle, and the rounded profile has few snag points that can catch during a crash. The Trigger comes in one size that can accommodate head sizes between 19.75 inches and 22.5 inches. The helmet bears no cartoonish images, so it resembles an adult helmet that older kids won’t be embarrassed to wear. Reviews from both Consumer Reports and the Bicycle Helmet Safety Institute praise this helmet.

Technology restores freedom

Eight and a half years ago, Susie Lawson’s doctors placed her on oxygen 24/7 because of a lung condition. Mrs. Lawson says the diagnosis sent her into denial, and her once active lifestyle came to a screeching halt. She avoided going out. Mrs. Lawson says everywhere she went she was treated like she was sick and dying because of the nasal cannula, the small plastic tube which delivers oxygen. Worst of all, Mrs. Lawson says instead of looking her in the eyes, people were staring at the tube stretching across her face. Mrs. Lawson decided she had to change something. She found her answer in a pair of glasses. Mrs.

Lawson says she has worn glasses or contact lenses nearly her whole life, but when she discovered a pair which discreetly delivered oxygen, she got a whole new outlook on life. These glasses are one of the technological advances helping those with diseases and disabilities live more normal lifestyles. Devices, such as Mrs. Lawson’s glasses, can give people a few extra degrees of freedom, which can make a world of difference. At first glance, Mrs. Lawson’s glasses don’t appear to be anything more than eyewear. Small, clear plastic tubes loop from the inside of her glasses, which sit on the bridge of her nose down into her nostrils. The oxygen is delivered through a tube hidden in the glasses frame. ears. Mrs. Lawson runs the tube down the back of her shirt and into her purse or bag where she stores her portable oxygen tank. Since getting the glasses eight years ago, Mrs. Lawson says she enjoys an active lifestyle she didn’t think was possible with traditional oxygen tanks. Technological advances are a part of how Carla Rickabaugh, Midland Empire Resources for Independent Living coordinator of accessibility services, helps people achieve their mission of living barrier free. MERIL uses special cell phones with different volume controls to help people with hearing impairments. “With these phones, people are able to talk to their grandkids and loved ones,” she says. “We want them to be able to not be

isolated.” In recent years, Ms. Rickabaugh says a variety of applications for different electronics have improved the quality of life for people with disabilities. These programs can help people communicate with others, write notes or even read books. These advances are an important step toward helping people with disabilities achieve the level of independence they desire, she says. For Mrs. Lawson, an independent lifestyle includes frequent boating trips with her husband on the Missouri River and Table Rock Lake. Her oxygen glasses also gave her the freedom to take dance lessons and perform in a dance recital. Most of all, Mrs. Lawson says the glasses restored a quality life she thought she lost.
