Need some inspirat ion for assembling the ultimate charcuterie board? Here are some tricks (and a bit of science) to getting it right.
•
Start with a great serving piece – make sure it’s big enough to fit all the ingredients on without looking crowded.
•
Include flavours and textures that compliment each other. You want an assortment from all the flavour groups: salty, sweet, sour, bitter and savoury. The combination of these flavours enhances each bite.
•
Have at least 8 options on the board, and include extras like pickles and dates that act as palate cleansers and sweetness between different meats.

Local “elf” makes ornaments to treasure Ken Fedoruk has been crafting kenfolks since 1989 By Niki Hope
kefield Photos Mike Wa
N
orth Vancouver artisan Ken Fedoruk believes – if such things exist – that he may have been an elf in a past life. He loves Christmas so much that, just like Santa’s helpers, he spends the entire year building and sculpting ornaments for the line of holiday decorations called kenfolks. Nestled in a comfortable chair, wearing red bootie slippers with attached bells, that, of course, jingle when he walks, Fedoruk discusses his foray into the holiday décor world from his cozy North Vancouver rancher, which has a Christmas feel, even though it’s November and the decorations haven’t yet gone up. Ken and his wife, Joan, traditionally decorate on Dec. 1, which also happens to be Fedoruk’s birthday (perhaps explaining part of his love for the holidays). There is a bit of a wrench in the month-long festivities this year though, as Fedoruk was invited to a massive 800-vendor strong craft show in Toronto, which ran through the first week of December. As he has done in previous years, Fedoruk also participated in Vancouver’s Circle Craft Market, where he sells his handcrafted creations, including his bestseller: Jolly Old St. Nick, who comes in all of his forms: traditional red-and-white coat and an earthy burlap coat – both looks come with an accompanying Mrs. Claus in matching attire. There are festive snowmen, Mother Mary and baby Jesus, sugar plum fairies, shepherds, tree-topper angels, countless
elf folks – vibrant, happy-faced characters with smiles that sum up the season of cheer, and more. This year, Fedoruk created a charming seven-figure series based on Dickens’ classic, A Christmas Carol, which he displays in a shadow box. Fedoruk uses real Swarovski crystals for decorative pieces on his creations, which come in various shapes – torsos, heads, full bodies. For Santa’s presents, or accessories for the female figures, he uses hand-medown jewelry from friends and family. “My sister-in-law sent me a bunch of watches and the bands on them are beautiful; I use them as pocket watches for the elves,” says Fedoruk, who started creating his “folks” after he and a group of friends promised to give handmade gifts versus store-bought. Fedoruk, an advertising executive with an arts degree and a long background of launching successful branding campaigns, has been crafting kenfolks since 1989. Each creation takes about a day to make and starts at about $150. Unique and handcrafted, kenfolks are the kind of quality ornaments that get pulled out every season, treasured for the warmth they bring to holiday décor, and likely handed down from generation to generation – special holiday treats from North Vancouver’s very own elf.

The spirit of giving Holiday season sparks generosity on the North Shore
T
Dierdre Ert, Tina Rowntree and Barb Lunter collect gifts for the Family Services of the North Shore Christmas Bureau each year.
he Christmas decorations go up early at Tina Rowntree’s house. This year, she transformed her West Vancouver home into a winter wonderland in late November in preparation for the annual holiday brunch she organizes with a small group of other women. On Dec. 3, more than 100 guests descended on her decked-out home to eat, drink, socialize and, most importantly, to contribute a gift to the Family Services of the North Shore Christmas Bureau. The bureau helps low-income families with children 18 and younger, seniors and people with disabilities to have a happy holiday. “We invite everyone that we can possibly think of to come to my home and we have a brunch for them and they all visit and they bring toys,” Rowntree says. “It’s a lovely cause.” The group usually collects anywhere from $4,000 to $5,000 worth of gifts for the Christmas Bureau. Rowntree hesitates to call their event a “toy drive” because they always hope for more than children’s playthings. Tweens and teens need presents too and Rowntree says gift cards for clothing stores and coffee shops are much appreciated. “So that the kids can actually go out to Starbucks and have a cup of coffee,” she says. “That’s a nice thing that’s hard to do for a lot of people.” Rowntree volunteers year-round and is also involved with Covenant House and the Vancouver Aquarium. She’s been part
of the West Vancouver gift drive brunch for a decade now. “You remember Christmas when you were a kid and how excited you were about presents,” she says of why she helps out. The event is more than just a way to give back to the community. It has also become a treasured holiday tradition for Rowntree and her family and friends. “There’s a lot of planning for this, but it’s lovely planning because it’s Christmas and it’s getting family together and friends together. It’s really fun.” The Christmas Bureau opened at 129 West Esplanade, North Vancouver in November. It operates a toy shop, where parents and guardians can select new gifts to wrap and put under the tree on Christmas morning, and it also organizes a hamper exchange whereby one family sponsors another and prepares a hamper filled with presents, toys and grocery store gift cards. “We reach out to the community and encourage people to sponsor families, so it’s families helping families, essentially,” says Christmas Bureau manager Janet Quenneville. “It’s really important that we have that support of the community and we’re so fortunate here on the North Shore to be in a good position for that.” The bureau hopes to assemble 740 hampers this year. “Last year we had 714 families come through and so we’re targeting a little higher this year. I think the need is greater

“We reach out to the community and encourage people to sponsor families, so it’s families helping families, essentially ...” this year,” she says. “We’re just finding people are really strapped.” “We don’t tend to think of much poverty here on the North Shore, but there are people who are really, really struggling at this time,” she adds. “We’re fortunate to have our generous community.” From donating time to contributing money and in-kind gifts, the holiday season seems to spark generosity. “I think people become a bit more giving-oriented during holidays, whether it’s Thanksgiving or Christmas,” says Nancy Hollstedt, manager of information and volunteer programs at North Shore Community Resources Society. “There’s a lot of people who are looking for ways to give back.” North Shore Community Resources

operates Volunteer North Shore. The centre helps find volunteers for organizations that need them and helps people who want to volunteer find positions. While there are lots of visible volunteers at this time of year, from Salvation Army kettle fundraisers on busy street corners, to shopping mall gift wrappers and Christmas tree lot attendants, Hollstedt says there isn’t actually a huge influx of volunteers
during the holidays. “Volunteer demand is pretty consistent throughout the year. What we get are a few more people who maybe are looking for opportunities to volunteer that are holiday related.” Meanwhile, North Shore organizations look for help year-round, so Hollstedt always encourages would-be volunteers to drop by the centre or check their online database at nscr.bc.ca to find opportunities that might be a good fit.

T
his season has been a fresh sheet of ice for North Vancouver skater Liam Firus. The talented 23-year-old who captured the Canadian junior title in 2010 and qualified for the Sochi Winter Olympics in 2014 admits memories from the previous year needed to be Zambonied. “It was rough. From the Olympics up until the end of this past season,” he explained. Firus realized a dream when he qualified for the Olympics but it wasn’t a storybook ending. “I froze on the ice and I had a bad Olympic experience when I was competing,” he said. “That skate at the Olympics, I didn’t even qualify for the long program, it just kind of put me into a downward spiral both physically and mentally. I just could not get motivated for the next season.”
Firus questioned his future as an elite skater in the sport he’d been committed to since age nine, when he took figure skating lessons to improve his hockey play and ended up sticking with it. “Nothing was clicking. I didn’t know if skating was what I needed to be doing, if I would ever get my jumps consistent, if I could ever get out of this rut or I would always be known as this Canadian who unfortunately didn’t qualify for the long program at the Olympics.” Looking back, Firus says that year of adversity made him stronger. “Without it I wouldn’t have become the athlete and person I am today.” His on-ice turnaround began with bringing a different attitude to the rink. “I changed my mindset a lot this year, just learned to enjoy the process, enjoy this amazing opportunity.” He feels strong on the ice and trains full-time in Colorado with Christy Krall, the former coach of Patrick Chan. Placing third at nationals last year was a turning point for Firus. “To come third at nationals on a year that feels rough was a really big accomplishment for me.”
Taking the positives from that finish into this season he feels back on track. “Things are going great. I’ve added a quad to my repertoire of jumps, and just my overall jumping ability is a lot more consistent.” Firus has made the 2015-16 Skate Canada national team and is preparing for an international competition in Zagreb, Croatia, in December. After that, focus will shift to Canadian nationals in late January, which determine which skaters will represent the country at the Four Continents Championships and World Championships. “I’m feeling very strong about this year.” He would like a chance to represent Canada again at the Olympics. “I really feel I need to go back one day and do the job that I was meant to do there.” To get back to the top of his sport, his intense training regime in Colorado means arriving at the rink at 10 a.m. and leaving around 6 p.m., after hours on the ice and in the gym. When he does get home, it’s not quite
time to relax. “I have to try and fit in studying and recovery,” said Firus, who has passed his Canadian Securities Course and is now studying finance. And while a career in the capital markets is likely in his future, skating is the present. “Prime for a male skater is probably right now for me,” he explained. “Skating is the focus right now.”

lide over craft beer, the microdistillery movement is on its way, and two local North Shore companies are getting into the spirit. North Shore-based Sons of Vancouver Distillery and Deep Cove Brewers and Distillers are two small-batch distilleries garnering a lot of attention for their flavourful spirits. Twenty-somethings James Lester and Richard Klaus opened Sons of Vancouver Distillery earlier this year, making Vodka, Chili Vodka and No. 82 Amaretto using local grains. “My business partner, Richard, and I had been brewing beers for years,” Lester says. “The cocktail hadn’t really changed, and we were inspired to make a few things differently.” One of those creations is the fiery Chili Vodka. chilies, this spicy spirit mixes nicely in a Caesar (you can hold the Tabasco with this mixer) or with fresh pineapple juice. Business has been so busy for the pair, they have been able to quit their night jobs and focus solely on meeting the ever-growing demand for their popular products. The tasting room is only open Saturdays and Sundays because the rest of the time they are trying to make enough product to keep up. Deep Cove Brewers and Distillers opened about two years ago, bringing its craft brewery and spirits. The company offers five core beer brands, along with spirits that rotate with the seasons, but vodka and gin are the mainstay. Along with washing down a candiedbacon Caesar or rosemary and olive gin gimlet, Deep Cove Brewers and Distillers
patrons can enjoy a charcuterie board, or house-made Italianstyle meatballs, along with heartier plates like beersimmered cottage pie or elbow pasta smothered and baked in ale-infused cheese. The distillery recently won accolades in the United States for its “Claire” vodka, which is flavoured with rosemary and olives. “We went for a Mediterranean version and it turned out really, really well,” says operations manager Matt Eberhardt. As for the popular “Oliver” gin, Eberhardt says the spirit has similar elements as the vodka – rosemary and olives, but is also infused with juniper, an essential ingredient in gin that brings the bright, earthy flavour. Deep Cove Brewers and Distillers uses local, sustainable ingredients in making its premier spirits. Now’s the season to try out a few new flavours to help make the holidays tasty and bright.

orth Shore first responders aren’t always home for the holidays – sometimes duty calls. Whether it’s rushing out on a just-served turkey dinner with their family and relatives to help rescue a boater in distress, fighting a Christmas Day fire, or a routine graveyard shift patrolling the streets to ensure that North Shore residents are safe, these men and women understand the holiday sacrifices that come with job. Fortunately, there’s always a turkey, stuffing and cranberry sandwich to look forward to when they arrive home after their holiday shift.

What are your favourite Christmas traditions?
What’s your most memorable on-call moment during the holidays?
photo Mike Wakefield
Christmas Eve is always my favourite. We have family over and do appetizers by the Christmas tree and then we walk around our neighbourhood streets to see the amazing lights/ decoration. Lastly, we put the cookies out for Santa and his reindeer!
This or that?
✚
✔Real Tree or Artificial Tree Late Christmas evening, after finishing a call and clearing Burnaby ✔Wrapping Paper or Gift Bag hospital, my partner and I came ✔Hot Chocolate or Eggnog across a small dog who was running ✔Santa or The Grinch around Boundary Street. He was ✔Sugar Cookies or Gingerbread scared and lost. After a long time, we managed to get the dog to come to us so we could read his name tag and address several blocks away. When we arrived at the house, the family was so grateful that he was returned ‑ he was a member of their family on a family holiday. It’s not often people are so “happy” to see paramedics, so this call was memorable for me. What’s on your Christmas wish list this year? Snow! A holiday song that you put on repeat? “Baby, It’s Cold Outside.” festive 2015 / north shore living 21

Creating aboriginal flavours Chef Paul Natrall specializes in traditional cuisine By Justin Beddall
P
aul Natrall’s forearm tattoo says a lot about him: it’s a large kitchen knife adorned with First Nations imagery. Natrall, a member of the Squamish Nation, is an accomplished chef who specializes in aboriginal cuisine. His unofficial kitchen apprenticeship began when he was just 12. “I used to cook for my younger siblings, that’s how I started off. Pretty basic stuff,” he said, laughing. “Nothing like today.” Natrall was close to both of his grandmothers and watched and learned as they prepared family meals. After learning the basics he began cooking breakfast for the entire family on the weekends. “Ever since I was young, I like to hear people enjoy the food. Food brings happiness and full stomachs.” Later, Natrall enrolled in a culinary aboriginal speciality program at Vancouver Community College, where the aspiring chefs learned classic French cuisine for eight months and then spent the last four months focused on aboriginal cuisine, using traditional ingredients and cooking methods to prepare dishes. Natrall, who has also earned his Level 1 Culinary Arts Apprenticeship at VCC, is also a core member of the Culinary Aboriginal Team Canada, which promotes aboriginal cuisine both

locally and internationally at cooking competitions and shows. He was on the team that travelled to Germany for the World Culinary Olympics 2012. “That was an awesome experience. We were the first aboriginal team to go there since 1996.” These days Natrall has got all his burners on. He cooks full-time at Capilano University and also runs his own catering company, PR Catering Creations, which serves up traditional aboriginal flavours as well as a variety of other cuisines. “Authentic traditional cuisine is more wild meats and seafood,” explained Natrall. “Traditional stuff would be smoking and drying meats, curing meats, there’s just so many different techniques that you can do that is aboriginal.” If Natrall could choose only one protein, he’d pick venison. “It’s healthy and the flavour is there if you cook it right.” Of course, no matter how busy his cooking schedule gets, Natrall makes sure there’s kitchen time with his five children. “Just spending time . . . they do things like peeling veggies, just things like that and they have fun. We do baking like muffins and cookies. It’s just spending time together and after having a bite to eat. Full bellies.” For more information: prcateringcreations@gmail.com

Do the holidays give you heartburn? If you suffer from digestive concerns, the holidays can be a difficult time. Bloating, indigestion, nausea and bowel symptoms are all indications that the digestive system is out of balance. Adding rich foods, too much food, alcohol and sweets can worsen symptoms and increase discomfort. Normally we take a bite of a sandwich, chew, and swallow. If you don’t chew your food properly, or drink a lot of fluids with your meal, this can dilute digestive enzyme and acid levels, inhibiting digestion. Also, if you use antacid medications, antibiotics, eat a diet high in processed foods, or have a parasitic infection, all of these factors can affect digestion. Poorly digested food travels through the digestive system, and reaches the cells in the digestive tract. The foods are not adequately digested and may produce inflammation in the colon. This leads to gaps in the cells of the colon, and indigested foods leaks into the blood stream in the form of antigens, or immune cells that the body doesn’t recognize. The immune system produces antibodies to the antigens, and thus each time the food is consumed, the immune system recruits cells to respond. A simple blood test measures the immune system’s reaction to 95 foods and the levels of antibodies produced to these foods. Once these foods are identified, nutrients are given to make sure all of the building blocks are in place for healthy digestion. Determining food sensitivities can be beneficial for the treatment of eczema, rosacea, IBS, migraine headaches, interstitial cystitis, as well as
weight gain. Avoidance of these foods allows the inflammation to heal and more healthy digestion to take place. Marine Drive Naturopathic Clinic offers food sensitivity testing for 95 or more foods. Dr. Cathryn Coe has 10 years of experience helping patients with various disorders of the digestive system. Why not make this your happiest of holidays and 2016 your healthiest year yet! Gale force winds and crashing waves along the Pacific coast make for spectacular viewing
S
Ucluelet, B.C.
Legendary for surfing and storm-watching, Tofino is a destination that’s worth the drive. The Michelin Road Atlas rated the trip from Victoria to Tofino (which takes approximately four to five hours) as one of the top-three drives in Canada. If you take the ferry to Nanaimo the aweinspiring drive will take two to three hours. At Tofino you’ll be greeted by miles of sandy beaches, rocky outcroppings and the natural splendour of Pacific Rim National Park and Clayoquot Sound Biosphere Reserves. The quaint seaside town has award-winning restaurants, cool coffee shops and tons of other outdoor activities - from surfing to beach yoga. Accommodations range from modern resorts to rustic cabins and campgrounds. One of the perennial favourites is the Wickaninnish Inn, which offers ocean or beach views from every guest room. The Wick Inn, as it’s called, dates back to 1955 and helped put Tofino on the map as a winter storm watching destination. Info: wickinn.com and tourismtofino.com
Ucluelet, which is a First Nations word that means “safe harbour,” is about a 30-minute drive from Tofino. The laid-back town is situated on a peninsula and offers breathtaking coastlines that are perfect for outdoor activities, from surfing, storm watching and beachcombing to kayaking and biking. As well as miles of ruggedly pristine coastline, Ucluelet also offers a variety of restaurants, unique artisan shops, galleries and a must-see aquarium. You can also check out the Wild Pacific Trail and Amphitrite Lighthouse, go on a boat tour or just grab a coffee and enjoy the moving scenery of the working harbour. There’s a variety of accommodation options, ranging from B&B, camping and RV, cottages and cabins, lodges, hotels and resorts. Black Rock Resort offers stunning suites and breathtaking views from a dramatic perch above the Pacific Ocean. The award-winning resort, which is extremely popular as a wedding destination and retreat, also offers a signature spa and exceptional dining - the perfect end to a day of hiking and watching the waves. o, you weren’t able to book your favourite Maui vacation rental this season and you’re looking for a lastminute holiday destination. Don’t worry, you’re in luck: it’s storm watching season on the West Coast. So pack up your raincoats and wellies, it’s road-trip time. From November to March you can watch dramatic winter storms pound the coastline of the Pacific Northwest, and after the calm sets in, explore pristine, uncrowded beaches and rainforests, and savour some fresh local cuisine — all without ever making a trip to the airport.
Long Beach, Washington State The winter wave frenzy that brings waves crashing down along the west coast of Vancouver Island is equally dramatic along Washington State’s rugged coastline. photo inn at discovery coast One spot worth visiting is Long Beach, a destination renowned for its expanse of white-sand beaches (great for winter storm watching, exploring, and beachcombing), and its enviable list of local restaurants serving up fresh local seafood. After you’ve watched the waves come crashing down, there’s lots of other local attractions, from museums and lighthouses to art galleries and bird-watching. Accommodations run the gamut from B&Bs and resorts and lodges. The Inn at Discovery Coast, opened in 2004 by Brady and Tiffany Turner, offers a unique beach getaway. The boutique inn has 12 cozy rooms, good amenities and affordable rates. Steps from the ocean and Discovery Trail, the inn even has beach cruiser bikes to explore the peninsula. The adults-only property is designed as a quiet getaway for couples but if you want to bring the whole family, don’t worry. Right next door, its sister property, Adrift Hotel, is a modern and unique 80-room spot that’s suited to everyone. Info: innatdiscoverycoast.com, adrifthotel.com and funbeach.com
For all your winter apparel needs
Cannon Beach, Oregon Oregon isn’t just about oversized book stores and craft brew (although that is great too). The rugged coastline offers great storm watching, and Cannon Beach offers some of photo George Vetter the most scenic vantage points, especially during storm season. Dubbed as a “Most Beautiful Place in the World” by National Geographic Magazine, Cannon Beach offers a stunning mix of long secluded sandy beaches and dramatic, craggy formations that send waves crashing skyward. One of the most popular landmarks is Haystack Rock, a massive natural wonder formed by lava rock. Along with the ruggedly beautiful scenery and hiking and outdoor activities, Cannon Beach is also renowned for its arts and culture scene and has great shopping, galleries and restaurants. Hallmark Resort & Spa in Cannon Beach is a great place to watch the storms roll in. The oceanfront resort is located nearby Haystack Rock which can be seen from most of the rooms at the resort. The resort has an onsite spa and other amenities, including a heated indoor saltwater pool, with spa, sauna and fitness room. Pets are also welcome. North Shore artisans create an eclectic mix of holiday messages By Niki Hope We may be in the midst of the digital age, but no amount of technology can replace the tactile experience of finding a card in the mailbox – peeling open the envelope, gently pulling out the card to have that first peek at the image, then turning the cover to read the kind message inside. It’s a ritual that forces us to slow down, to look, to read, and to feel. Check out three North Shore card designers whose lovely works will definitely leave a strong impression with the receiver this holiday season.
Holiday cards with bark Stand out from the pack with a charming handmade card from North Vancouver’s District Dogs Designs. The company creates its trademark cards (along with posters and prints) by designing images and carving them into linoleum blocks, which are printed on hand-cut paper using a century-old letterpress that makes a striking impression, adding depth to the tactile image. The team behind District Dogs Designs, Jarin and Catherine Bossert (parents to two furry babies), combine oldworld processes with sustainable materials to produce cards that are as fun to read as they are to feel.

A witch with a message West Vancouver artist Glynda Fitzgerald sells her scenic and beautiful cards from her shop, Glynda the Good Witch (remember, from The Wizard of Oz) near the beach on Marine Drive. The former script supervisor turned mother-of-three discovered her passion for card creation through Photoshop. She ended up designing a line of almost 400 greeting cards. With a collection of holiday cards that evoke the warmth of the season, with views of local ski mountains, the lighting of the menorah, and peaceful settings, along with hits of humour; it’s worth a visit to the Good Witch for a seasonal card. Find her locally crafted cards, and a bounty of other artworks from around the globe, at 1425 Marine Dr.
Wooden cards that endure pieces are built to last and would likely become one of the receiver’s holiday décor staples.
The North Shore’s Reclaimed Print Co. creates darling handmade cards on locally sourced, sustainable wood and stone. Designer Kat Walker’s wooden Christmas cards come with quotes from famous holiday movies (including everybody’s favourite fumbling father Clark Griswold), along with more subdued – but sweet – options, like deer silhouettes. The enduring
Visit reclaimed-print-co. myshopify.com, to see the goods, which can also be bought on the North Shore at 32 Books & Gallery, Favourite Gifts, and at the upcoming Got Craft, from Dec. 12 to 13, as well as the North Shore Green Markets (Christmas market), from Dec. 18 to 20 – both events are at the Pipe Shop building in The Shipyards.
