This is the kind of dining experience you should expect at Cello Ristorante & Bar at Allegretto Vineyard Resort in Paso Robles, a local favorite coveted by tourists. With creative dishes made from regionally farmed and foraged ingredients—alongside an extensive domestic and international wine list, garden-to-glass cocktails, and craft beers— Cello is an upscale, casual Mediterraneaninspired restaurant that welcomes locals and visitors alike. “Allegretto is a place of joy and discovery,” General Manager Rich Verruni said. “Nowhere is that more evident than in the act of breaking bread together here at Cello, among an abundance of fresh flavors, good company, and the beauty of our surroundings here in Paso Robles.” Recalling an era when the local inn was a regional destination for the finest culinary delights, Cello boasts a Mediterranean menu reflecting visionary Douglas Ayres’ global travels. Guests can enjoy dining by candlelight at intimate tables or join the communal tables, sit fireside at the outdoor fire bowls, or take on a game of bocce ball alongside the restaurant’s comfortable heated patio. Whether in jeans and cowboy boots or dressed up for a night out, guests are encouraged to escape from it all and come just as they are. Cello is open daily from 7:30 to 11 a.m. and 11:30 a.m. to 2 p.m. serving breakfast, lunch, and small bites and open for dinner 5 to 8:30 p.m. Sunday through Thursday; and until 9 p.m. on Friday and Saturday. Executive Chef Justin Picard prides himself on deep relationships and knowledge of the local farmers and purveyors with whom he works on a daily basis. The restaurant’s open kitchen design encourages spectators, while the outdoor chef’s garden supplies herbs and produce for Cello’s vibrant fare. “We have some really fun seasonal changes to the menu this fall,” Picard said.
“The heat has subsided a bit, and our local farms are in full production right now. I have several farmers that back up their trucks and I choose what I want to create with. That means I might craft a seasonal special for just the day or the weekend.” The interplay of food and wine is key to the Cello experience. The extensive wine list features exceptional wines from the Central Coast, especially Paso Robles, as well as producers from around the globe. Cello showcases bottles from the Allegretto’s proprietary wine label, sourced from the estate vineyard surrounding the property and the Willow Creek District vineyard. Additionally, Cello offers several craft beers on tap and a menu of signature cocktails sourced from top-shelf spirits and ingredients from the chef’s garden. Cello Food and Beverage Director Thomas Humphrey is excited to roll out a round of new fall drinks, including some secretive collaborations with local distilleries like KROBĀR and Azeo (the latter is a vodka made from apples). “Fallen off the Tree” is a perfect Autumn beverage, made with Azeo vodka, apple juice, St. Germain Elderflower liqueur, simple syrup, fizzy egg whites, shaved nutmeg, and a spiced apple garnish. With sumptuous touches from the bar to the restaurant, it’s no wonder why Condé Nast Traveler readers voted the resort No. 6 in Northern California and the restaurant has been awarded the AAA Four Diamond Award. Taste for yourself this fall, and hey, maybe even book a little staycation of your own. Harvest time at Allegretto is particularly special, with produce from the Chef’s garden starring in the cooking and mixology programs. Expect lavender, honey, grapes, olives for oil, figs, persimmons, lemons, mandarins, edible flowers, and so much more. “You may not want to leave, and that’s fine by us,” Picard said. “We invite the community to dine for the evening or stay till breakfast.” 2

e’s been called “The King”— of comfort food, that is. Apple Farm’s Executive Chef Steven Smeets loves nothing more than creating modern renditions of classic favorites at SLO’s iconic Americana restaurant. There’s a reason this cozy stop has remained a local institution for more than four decades. “These are flavors that are tried and true, but with a farm-fresh twist,” Smeets said. “Paired with local wine and a cozy ambiance, there’s really no better way to sample all that the bountiful Central Coast has to offer, especially during the holidays.” Smeets can also be called a chef for all seasons, as he’s always working up creative dishes featuring fresh fruits and vegetables the moment that they’re available. “I love to create seasonal dishes that appeal to all, especially those with specific vegetarian, vegan, or plantbased diets,” the chef said. “This is not your grandma’s menu, although I think grandma would totally approve of our from-scratch philosophy.” Plant-based pleasures include vegan entrees available for breakfast, lunch, and dinner, like Apple Farm’s house made granola with coconut milk yogurt, fresh berries, and toasted coconut. Also ask about subbing vegan sausage patties for any breakfast. When it comes to lunch and dinner, you can get your hands on an “Impossible Burger,” a meatless beef burger substitute; or go for a rotating
vegan special, like veggie sandos, lasagna, and satisfying salads. Fall is an exciting time for the time-honored establishment, which is partnering with Vina Robles Amphitheater to cater events. Wine club members and season ticket holders can purchase a wide variety of Apple Farm entrées from a rotating selection (which always includes one meat entrée and one vegetarian entrée or a filling entrée salad). Of course, dining out at Apple Farm is not complete without satisfying your sweet tooth. With baked goods made daily, you can always expect a killer mini cake, chocolate stout cake, carrot cake, New York style cheese cake, or classic cookie. Really, the cookies are more than “cookies” here: Choose from extensive flavors like chocolate chip, English toffee, Willie’s signature bacon twist, or chocolate brownie. Wash it all down with some fresh-brewed coffee and start your day off right. For those seeking an authentic wine country experience, look no further than Apple Farm’s monthly winemaker dinners, always featuring local winemakers on the restaurant’s scenic patio. You can also choose their limited service buffet style option, complete with staff onsite to slice the protein and manage the buffet, rustic serving displays, and smiles all around. “You’ll still get the same highquality food—seasoned and cooked to perfection—but at a much lower price than other cooked-onsite catering options,” owner Matt Pearce said. At Old SLO BBQ Co., it’s all about the warm, inviting lifestyle of the Central Coast. The creekside business expanded in 2017 to accommodate growing demand. The renovated taproom is decked out with a clean modern-industrial style, big TVs, bright windows, and a beautiful limestone wall. Did I mention the new arcade machine and shelves stacked high with

Their new taproom offers craft beer, wine, and cider from around the world. “Come in and hang out; stay a while,” Pearce said. “We always have a new beer on tap, and we only get one keg of anything we bring in. That means the beer is always fresh, and sometimes off the beaten path. The trick is getting in before the special stuff is gone.” Old SLO BBQ Co. utilizes the Untappd app to notify their customers of new offerings. ith panoramic views of the Pismo Beach coast, The Marisol at the Cliff’s Resort sights are only rivaled by its tastes. The market-driven menu and seaside atmosphere are a fantastic fusion of high-brow and low-key, capturing the Central Coast’s signature laid back elegance. With locally-sourced ingredients, including seafood, produce, and naturally raised meats and poultry, this is coastal cuisine, reimagined. The ambiance is complemented by an awardwinning wine list, happy hour specials, and live music. “The Cliffs bar is something really special, featuring handcrafted cocktails inspired by the talents of our chef and bartenders,” Food and Beverage Manager John Fergus said. The lively bar is truly an amazing place to lounge and catch an epic fall sunset (especially during happy hour, which runs daily from 4 to 7 p.m.). There’s plenty to sip, and I’m not talking about your average cocktails. Crafted by Cliffs Pastry Chef Jeniece Grimshaw, The SLO Mule is a cool mix of ginger, lemon, and citrus. The bubbly, refreshing tonic is always house made, with a nice note of lemongrass that lingers on the tongue. Thursdays are home to the restaurant’s popular “karmic pizza” night, which features wood fired pizzas made with house made dough and sprinkled with crave-worthy toppings (proceeds go toward a different local charity each
month). Football fans should know they can get their fill during the weekly Monday burger bar, laid out with all the fine fixings you could ever desire. Got company over for the holidays? Friends and fam will love to linger over a feast-like Champagne brunch, held each Sunday from 8 a.m. to 2 p.m. Cruise an omelet station, waffle bar, chef ’s carvery, salad buffet, and seafood market all in one stop. The fine dining restaurant’s fall menu caters to a comforting vibe, with unique items you’ll want to try, like a pan seared scallop dish with house made carne seca (think gourmet beef jerky) or cozy root veggie succotash. “Here on the Central Coast of California, we really do have all the best local produce available every month of the year, but we’re really trying to highlight seasonal produce and hit the farmer’s market as much as possible to grab the freshest ingredients the moment they become available,” Cliffs Chef Brian Riegle said. That goes for the seafood, too. “Marisol literally means ‘sea and sun;’ our entrees and appetizers really cater to the local environment and the amazing seafood and produce within reach,” Fergus added. here aren’t many restaurants that make you feel at ease, from your casual experience at the bar to a table for a high-end meal. The ebb and flow between grabbing a drink while watching a Dodgers game and the intimacy of cutting into your steak with the ocean waves crashing to shore right out the window, isn’t something that’s achieved by most. But these pleasantries can be found at Willow Kitchen and Cocktails in Pismo. The newest addition to Price Street’s growing eatery line-up strives to make the high-end dining experience a little more casual to match with the coastal city’s relaxed vibe. The location is the second for Willow but it stands apart from its parent location. Joe White, the operations officer for both locations, said the focus of this location differs from its first in Nipomo, which centers its seating area primarily outside to surround its customers with scenic greenery. Willow in Pismo instead takes advantage of the natural beauty of the ocean and brings that causal vibe to the floorplan of the restaurant. It also provides its customers a place to meet up after hours as the restaurant is open until midnight daily. Customers can take a seat at the bar and catch a football game, as NFL Sunday Ticket is displayed on all eight big screen TVs. Or they have the opportunity to sit in the lounge area
for appetizers—the daily happy hour is from 3 to 6 p.m. The restaurant also offers tableside service with all the trimmings. If that’s not enough to entice a visit to the eatery, Willow has nightly specials in its bar and cocktail area from 5 to 10 p.m., Monday through Friday. If you’re feeling the Monday blues, stop in for $6 New Amsterdam martinis and $1 oysters. Looking for a mid-week pick me up? Check out Wing Wednesday for $3 signature wings and $3 house IPA and blonde beers. As the sun sets from your tableside view and you decide to pair the lovely evening with a look at the wine list, you might notice the affordable price next to your favorite pinot noir or sauvignon blanc. Traditionally, restaurants industry-wide mark up their wine bottles an average two and a half to three times the wholesale cost. But Willow’s wine list policy is to sell wine by the bottle at a retail price, so the average cost for a bottle off the shelf will be the same at the restaurant table. For all you brunch lovers, Willow offers a brunch menu from 9 a.m. to 2 p.m. Saturday and Sunday. For just $15, a group can get together and order a bottle of champagne and a carafe of orange juice to pour their mimosas just they way they like them. Cheers to good eats on the weekend and every day in between at Willow. 2

ue a medley of saxophone, trombone, and clarinet while donning your finest beaded dress and lapels for Paso Robles’ newest cocktail lounge, 1122 Speakeasy and Cocktail Lounge. The owners of Pappy McGregor’s, Troy Larkin and Donovan Schmit, invite you to their newest venture that’s not far from Pine Street but takes you to another era. 1122 might sound familiar, as it is the address of the beloved Pappy McGregor’s and the speakeasy is the newest addition since the duo opened Fish Gaucho a few years ago. Although 1122 is Pappy’s address, a second doorway adds to the mystic appeal, and people are surprised when they step inside the otherwise anonymous building. “We discovered a few years ago that a lot of speakeasies were attached to existing restaurants and they kind of made like an extra space or turned a kitchen room into the speakeasy,” Schmit said. “In that case you have to walk through the kitchen and into a secret refrigerator door to get in which is something so unique.” This speakeasy was created out of Pappy’s garage but you wouldn’t realize it at first glance or upon entering. Your intimate night out for a cocktail or two is just at the rear of the restaurant, but it’s more than just a bar—it’s a vessel into the past. You’ll find yourself on the industrail side of Railroad Street, a change from the bustle of downtown Pine Street. To the left you’ll find a door with two gas lanterns and a button to discretely alert the host that you’re standing outside.
In true prohibition style, a small sliding window opens and the host asks how many are in your party. Once a table is ready for you, you’ll be allowed in to a small lobby where the host welcomes you to the speakeasy, advising you that the only way out is a door to the left and that no phone calls should be taken during your stay. As the host swiftly pulls away the curtain, you’re immediately transported to an intimate dimly lit speakeasy. Instantly, your eyes are drawn from the glass chandelier to the wall behind the bartenders that is filled from bottom to top with local and well-known spirits to fulfill your cocktail desires. You won’t have to worry about the feds stopping you from sipping bourbon, neat. While there isn’t standing room ... the facility can house 30 people at a time ... the few booths and bar seating lends to the atmosphere. A small party or a couple can easily relax, talk, and enjoy the background music that fills the room. The trimmings really bring the place to life. Flying monkey light fixtures line the wall while golden candleholders add a little shimmer to your table. Bartenders work on their lavish trimmings by adding liquid nitrogen to chill your glass or fire to torch the rosemary for your drink. Schmit shared this locals-only secret: The best time to get in the lounge with a limited wait is on weekdays. Sunday and Tuesday through Thursday, the lounge is ready to delight from 7 p.m. to midnight and Friday and Saturday from 5 p.m. to 2 a.m. 2

The tasting room ambiance—and the wine—is rich with authenticity and tradition you can sense at first sip. Co-owners Rick Quinn and Dave Nichols bottled their first vintage in 1999, opening their unique hilltop tasting room in 2001. The name “Opolo” is an homage to Quinn’s Serbian heritage, inspired by a lovely rose discovered on the Dalmatian Coast. Of course, “Opolo” also means “fun.” “The team strives to maintain a welcome, friendly atmosphere that encourages guests to embark on a casual tasting experience,” said Opolo Marketing Director Jessica Silvius. “The perfect pairing of knowledgeable, passionate attendants and approachable wines prove that wine tasting can be engaging, enchanting, and educational, all in a single sitting.” Opolo weaves old world tradition with modern day offerings, which is especially evident in the food. Enjoy house made Balkan sausage—or “cevapi”—as well as wood-fired pizza (when paired with views of autumnal vineyards turning orange and red, you won’t miss the white table cloth for a heartbeat). Claiming nearly 300 acres of vines on the east and west side of Paso Robles,
