inemaking is one of the most important industries in California, and Allan Hancock College provides an opportunity for students to get their foot in the door, Viticulture and Enology Coordinator Alfredo Koch said. “You learn about growing grapes, making wine and the wine industry. We have a lot of experience in the industry, we teach all the basics to work in the industry. It’s convenient, flexible and inexpensive,” Koch said. “It’s a big industry here, there are lots of opportunities. It’s related to hospitality, food, friendships, and a lot of good things. It’s nice to be in the industry.” In viticulture, students get to learn about the plant’s life and biology and, in winemaking, students will get to learn about the chemistry behind turning grapes into wine, he said. Hancock has its own vineyard and winery on campus for students to get hands-on experience in their majors and work under the guidance of professionals in the industry. By the 2024-25 school year, students can sign up for a new online certification program on vineyard and winery administration that could be complete within a year. “There are many students who have asked to see if we have classes online. Everything [for this certificate] is online, you can take it any time, anywhere, and that’s special,” Koch said. “The industry is so vast and so many people come from different backgrounds and they need basic knowledge of viticulture, winemaking, and the business side. It opens up many entry level positions in the industry.” Students can get credits that will transfer to either the University of California, Davis; California State University, Fresno; Cal Poly, San Luis Obispo; or Sonoma State. Hancock also has a partnership with the University

of Bordeaux, France, where at least one to two students go to complete their bachelor’s degree. “It’s the largest research center for wine and viticulture, and there are also famous wineries. It’s a big industry with 6,000 wineries there. It’s great to have a different perspective,” Koch said. Members of the public can also expand their own knowledge through a food and wine pairing class taught by Wesley Hagen from Santa Rita Hills Winery, he added. “The food and wine pairing class is great because of the instructor. He has so much experience, many stories to tell, and he makes it very interesting,” Koch said. “Having a good wine and food combination always makes something very special. It makes something out of the ordinary.” Hancock’s vineyards are currently growing grapes for pinot noir, malbec, chardonnay, Syrah, cabernet sauvignon, Touriga, and Albariño. Members of the public can visit AHC Winery for tastings every Friday from 2 to 5 p.m. For those interested in seeing more of what AHC and other wine programs are doing, the public will have more tasting opportunities at the West Coast College and University Wine Festival on June 8. “It’s cool to see what the colleges are doing with the wines. It’s a lot of community restaurants represented, it’s a nice event and low cost,” Koch said. “You get to taste a lot of wines and lots of food and see students from all over in different wine programs. The taco truck spent the summer at SLO Blues’ baseball games dishing up Santa Maria-style tacos, which can be as simple as a corn or flour tortilla topped with Old SLO’s perfectly cooked tri-tip or loaded down with bacon jalapeño carnitas (pulled pork roasted with jalapeños, garlic, and lots of bacon). A restored 1966 Ford F100 hosts eight taps in its long bed, able to pour local beers, wines, and ciders—or even draft cocktails at weddings and other private events. “It’s great for the client because we’re able to have the capacity to feature a lot of local breweries and wineries and the variety they offer,” he said. “Nothing pairs better than barbecue and beer, and a nostalgic 1960s Ford truck reminds our clients of the history of the barbecue we serve.” With every change that comes at Old SLO BBQ, though, Pearce said the company will always stay true to its roots. “The focus will always be on quality and consistency,” he said. “And a key focus of our business is supporting our community.” On Oct. 28, you’ll find the Old SLO Taco Truck at Woods Humane Society for the Wiggle Waggle Walk. And customers recently helped Old SLO raise almost $1,000 to donate to Maui restaurant relief after the devastating wildfire that swept through Lahaina. TITO’S RED TACOS

T

he only place to get a red taco on the Central Coast opened in Pismo Beach in August. What makes them red? Chiles. Every morning, Tito’s Red Tacos’ employees roll up their sleeves and mix up a special blend of chiles into masa before pressing out the red-colored tortillas that will later get grilled, loaded with cheese and slow-cooked beef birria, and served with a side of fresh fried chicharrones, birria consomé, salsa, and pickled habaneros and onions. The birria is braised for 10 hours in Tito’s unique blend of spices and chiles, which also colors the beef red. Tortillas slide through the oil on top of the consomé before being slapped on the griddle. Complemented by a roasted habanero salsa; a tomatillo, serrano, and jalepeño salsa; and some consomé to glide your taco through before taking a big bite, you really can’t go wrong. “It’s unbelievably good. It’s very tasty,” owner Roger Sharp said. “They’re a little messy, but they’re awesome.” While the quesabirria taco may be Tito’s star, it’s not the only high-ranking performer on the menu. Most menu items come with a choice of meat: birria (of course), carnitas, pollo, shrimp, creamy papas (blended russet potatoes), or pulpo (slow-braised, then marinated octopus). The puffy rolled tacos look like fat, fluffy taquitos with a tamale texture. After the masa is pressed into a tortilla, it’s stuffed with your choice of birria, carnitas, or papas; rolled up; and thrown in the deep fryer, where it inflates into

deep-fried, fluffy goodness before being topped with lettuce, pico de gallo, sour cream, guacamole, and Cotija cheese. Vampiros tacos are baked corn tortillas with cheese melted onto both sides. You can get birria fries, carnitas fries, or shrimp and octopus fries topped with melted cheese, pico de gallo, guacamole, sour cream, and Cotija. The fries are the best kind of fries, Sharp said: battered. And then there’s the ramen. Ramen! At a taco joint. The ramen noodles are cooked in the birria consomé and come with birria, onions, cilantro, and red salsa or carnitas, onions, cilantro, and green salsa. That was an experiment, which really worked, Sharp said. The goal with Tito’s was to keep the menu short, dialed in, and focused. The vibe is similar to what you would find in a beach town like Ensenada, mellow with tacos made to order, and served up quickly for you to take to-go or eat there. A graffiti artist from Fresno freehand spray-canned the Day of the Dead-style murals and other art donning the walls both inside and out. It’s a quick stop for a delicious pop of flavor, and it’s open daily from 10 a.m. to 9 p.m. except for Wednesdays (when it’s closed). “Tito’s is an amazing little place with extremely good and unique food,” he said. “This specific spot, Tito’s Red Tacos, was literally designed for Pismo Beach. We just felt it was the right theme for the right location for the right demographic. It would be great for locals and tourists alike.” ❉

he Hub on Monterey Street is now open, the end result of a two-yearplus push and collaboration between KROBAR Craft Distillery and Central Coast Brewing Company. “It’s the full experience that I’ve always wanted, and having the space to do multiple things is very nice,” KROBAR owner Steve Kroener said. “The location is great. ... I love seeing families walk by.” Families, tourists, students, travelers, and locals fill the neighborhood surrounding The Hub, which took the place of what was once Standard Motors Cadillac dealership and most recently Daylight Home and Gardens. To pay homage to the building’s past, a Cadillac greets customers who meander in from Monterey Street. With multiple outdoor areas, cornhole, an indoor space for music, a mini arcade, food trucks, at least three bars, and plenty of space to mingle and sit, The Hub is possibly what SLO has always needed: A communal space with room to grow, ample entertainment, locally crafted adult beverages, and bites to satiate those hunger cravings. “There’s a lot to discover,” Kroener said. Central Coast Brewing and KROBAR’s spaces are separated with a small distillery and educational tasting bar on one side and a brewery and pub on the other. A giant bar sits in the middle, serving up specialty KROBAR cocktails, Central Coast Brewing’s beer, and a selection of other local brews, ciders, and wines. Kroener said it’s family friendly and dogs are absolutely allowed, but, he

added with a laugh, “it’s not a day care.” Eventually, the plans include a truck full of succulents for sale, more food options, a coffee cart, specialty spirits just for The Hub (with the first to be released this October), and more. For now, CCB and KROBAR are both serving up delectable selections from the bars and their food trucks. Whiskey, vodka, gin, rum, tequila, and mezcal are all featured on the specialty cocktail menu. KROBAR’s orange gin delicately flavors the tropical White Sandy Beach, which tastes like vacation, goes down easy, and includes grapefruit juice, lemon juice, coconut cream, suze, and fresh grated nutmeg. The Shark Bait’s fun with a floater of red swirling it’s way down a tall glass filled with KROBAR vodka, lemon juice, housemade cantaloupe honeydew syrup, hibiscus, and lemon bitters. You can also make your way through a smoked brisket quesadilla with KROBAR’s slow-smoked brisket, cheddar and Monterey jack cheeses, cheese sauce, pickled onions and jalepeños, cilantro, onions, and chipotle crema. The ahi tartare comes comes with toasted sesame seeds, cucumber, green onion, spicy soy, ginger aioli, and wonton chips. And the smash burger is grass-fed beef on a brioche bun with all the fixings. KROBAR food truck’s menu is chock full of delectable items. You really can’t go wrong when picking from barbecue plates, hearty salads, sandwiches, and nosh-worthy appetizers to pair with your cocktail. ❉

E

very move that Mason Bacot made in his career took him a step closer to his dream—from his first job as a busser at Tahoe Joe’s in San Luis Obispo to opening a restaurant in Washington, D.C., that would later receive a Michelin Star. “All my years I was just looking for each little nugget to bring together so I could just run my own restaurant and not need to depend on other sources,” Mason said. “And then Humble Oven came about.” Humble Oven Food and Company opened in January 2022 at the SLO Public Market. The spot that he owns and operates alongside wife, Grace Bacot, dishes up Neapolitan-style pizza courtesy of a stone-fired oven at the center of their 450-square-foot corner of the market, alongside fresh pastas, salads, and other specials from the deli case. “It’s a rad pizza oven,” Grace said. “We cook everything in that oven.” The Marana Forni oven is like a gasand wood-fired hybrid with a giant stone in the middle that rotates to help the pizzas get an even, consistent cook. Mason added that Humble Oven couldn’t do what it does without that oven. Similar to many of the ingredients Humble Oven relies on, the oven was imported from Italy. The “00 flour” that goes into the pizza dough (with a 36to 48-hour fermentation) and the San Marzano tomatoes that help make their pizzas Neapolitan-style are also imported from Italy. We want people to know that they can get quality food that you’d find in a nice sit down restaurant, in a down-to-earth counter serve setting.” Grace said. “It’s bridging the gap between fancy and fun, and keeping our playful, creative juices in the mix.” Mason, Grace, and their staff collaborate to fine-tune dishes into the good food Humble Oven wants to be known for. “We gain so much inspiration from our co-workers, regulars, and other business owners in the restaurant space,” Grace said. “It’s never competition, just collaboration. And we have a lot of exciting things to come.” Similar to Mason, Grace also spent most of her adult life in the restaurant industry, starting at Louisa’s Place and moving onto Black Sheep Bar and Grill after spending six months in South America—always enjoying the community that the local spots generated. “I just knew how much I loved being around people, connecting with people, serving people,” she said. “That was the kind of career I knew I always wanted; creating a place and an atmosphere that people felt drawn to and a part of.” Af ter working in Hawaii and Washington, D.C., Mason eventually made his way back to San Luis Obispo, where he worked at Giuseppe’s and Mint and Craft and eventually met Grace. About six months into dating one another, the couple had a moment where they told one another that they could see each other running a little place together. “And five years later, we’re doing it,” Mason said. ❉

ay’s Orcutt Country Kitchen isn’t just for breakfast and lunch anymore. Now open for dinner from Wednesday through Saturday evening with full bar service to boot, the Kay’s experience extends seamlessly from Aperol Spritzes to Old Fashions—from biscuits and gravy to surf ‘n’ turf. “We’re just trying to have fun with the menu and still have it to cater to everyone’s needs, whether it’s their taste buds or their budget,” Kay’s/R Bar owner Shiloh Flagg said. Flagg purchased the restaurant from her mother Kaylynn Tims in 2022, and Kay’s is still the delicious breakfast/lunch house it has always been with the same friendly staff, palate-pleasing menu, and comforting atmosphere that Flagg grew up waitressing in. But Flagg has added a few personal touches in the last year and a half, such as setting up R Bar, which boasts a full liquor license, talented bar tenders, and amazing adult beverages. Tucked away in the back of the restaurant for now, with plans to pull it into the front of the restaurant eventually, the cocktails are constantly changing, the games are almost always on, and R Bar opens at 8 a.m. daily. “A lot of people like it, because you can go back there and not everyone is going to see you,” Flagg said. “It’s like a hidden speakeasy.” Crafty concoctions include the Maple Old Fashion with Knob Creek Smoked Maple Bourbon, bitters, orange, and Luxardo Maraschino cherries and R Bar’s Star Martini with Absolut Vanilla Vodka, passionfruit, lime, and brut cuvee.

Similar to the cocktail menu, the dinner menu includes rotating specials with new items to keep it fresh and interesting. Entrees such as the surf ‘n’ turf (grilled jumbo shrimp with your choice of steak) come with veggies and the best mashed potatoes that Flagg has ever had. “Better than my late grandma’s!” she said. You can also snag beer-battered Alaskan cod, a smash burger, or the best fried chicken sandwich for less than $20. If you’re looking for something different, try the lobster mac ‘n’ cheese roll. It’s black truffle mac ‘n’ cheese with cheddar and lobster on a brioche roll. Maybe a hearty salad will do the body good? The roasted beet salad comes with avocado, arugula, candied walnuts, feta, and a champagne vinaigrette. The wedge holds baby romaine, pork belly, red onion, and blue cheese crumbles with a blue cheese and Russian dressing. To indulge that sweet tooth, Flagg said the toffee and caramel ice cream waffle sandwich will send you to the moon. As autumn descends on the Central Coast, Flagg said Kay’s will bring some fun fall items onto the menu and take bookings for holiday parties. ary Eberle chuckled while saying that he used to tell people he made white wine to get red wine out of his clothes. “My whole philosophy was a wine’s first responsibility was to be red. We made some white wines, and in all honesty, I never paid as much attention to them as I should with the exception with viognier, which is a white wine that behaves like a red,” Gary said. Bu t E b e r l e W in e r y ’s cur r e n t winemaker Chris Eberle (no relation to Gary) changed all that for Gary, who was sipping Eberle Winery’s gold medal winning Viognier on a recent summer afternoon. “Chris has brought such a wealth of information and a real passion for making white wines,” Gary said. “Our white wine program is damn near equal to our red wine program.” The winery’s 2021 Estate Viognier, 2021 Cotes-du-Robles Blanc, and 2022 Cotes-du-Robles Rose took home gold medals from the LA County Fair this year. While the winery’s 2021 Estate Cabernet Sauvignon took home a gold and the 2021 Cotes-du-Robles Rouge and the 2021 Barbera both took home golds and Best of Class wins. Gary started the Eberle label in 1979, and the Paso Robles wine industry pioneer is in his 50th year in the region, where he also co-founded Estrella and pushed Paso to become the wine destination it is today (including cofounding the Paso Robles American Viticultural Area—the region’s first appellation designation). He still

greets every day with the philosophies he inherited from one of his mentors, Robert Mondavi. “You never charge Americans for tastings, Americans are fair people. Your job is to make the wine so good that you don’t have to beg people to buy it,” Gary said Mondavi told him, adding that his is one of the last wineries in Paso that still offers free tastings and free cave tours. “We take walk-ins, we love reservations, we don’t charge for tasting, we offer complimentary tours through the entire winemaking process, to the crush pad and down into the caves to the barrel room.” Eberle’s recently renovated wine deck means would-be tasters get to enjoy the perks of the great outdoors for longer with heating, cooling, and shades that block the wind. If you make good wine, Gary added, people will buy it—something he said his sales demonstrate. The winery puts out almost 30,000 cases a year, but rarely has enough on hand to actually make it through the full year of sales before running out. About 500 people visit the winery’s tasting room most Saturdays, he said, and he greets almost each and every one of them. On most days, you can find him out front with Sangiovese and Barbera, his standard poodles, and a glass of his flagship cabernet doing the thing he says is vital to Eberle. “This is the hospitality industry, and making friends is almost as important as making great wine,” he said. “Almost everybody I meet is someone I think, ‘Hey maybe they could be my friend, I’d like to get to know them better.’” ❉

ver the last year, SLO Wine and Beer has worked hard to enhance the experience of its customers. “Here at SLO Wine and Beer, we offer an eclectic elevated experience of great wine from all over the world, local/imported beer, delicious food, talented live music, and a friendly relaxing ambience,” Manager James Springfield said. Open Tuesday through Saturday from 11 a.m. to 8 p.m., SLO Wine and Beer’s 3 to 6 p.m. happy hour gives customers 10 percent off adult beverages imbibed on site. The shop offers more than boutique wines from all over the world for sale off the rack and the international selection of beer available in the cooler. You can grab a glass or half glass of wine from the bar, as well as a beer. And if you’re looking to do a little tasting, SLO Wine and Beer also offers flights: customers can choose a selection of five 2-ounce pours from a list of 10 different varieties to taste their way through some of the shop’s offerings. If you really, really like what they have to offer, Springfield said the buyer’s club is a good way to go. It offers a 10 percent discount exclusive for members who make an initial purchase of $150 and receive “a curated three-bottle shipment of exquisite wines” twice a year. “All reviews for the wine selections and club have been exceedingly positive,” Springfield said. You can find the Wicked Garden food truck out front daily. Chef/ operator Stan Kelly dishes up a little something different from the standard

SLO County food truck fare, with his brand of Caribbean, West African, and Southern fusion. You can nab fried chicken sliders with Napa cabbage and pickled sweet peppers; jerk chicken tacos with Napa cabbage and a pear, apple, and jicama slaw with lime-curry dressing; or a crispy potato salad with a tarragon-whole grain mustard dressing. “I want to feature food that represents me to a certain extent and represents who I’ve been through my journey in life and the people I’ve come across,” Kelly said. “People have been loving the food. It’s always the same compliment: ‘Man, the food is great. The different flavors, the different texture, I’ve never tasted these flavors before.’ And that’s the kind of reaction that I want.” Born in Charleston, South Carolina, Kelly grew up outside of Philadelphia, where he met many people from Saint Croix, Jamaica, Senegal, Puerto Rico, and the Dominican Republic. All of them taught him how to cook, how to eat, and through his food truck, he tries to offer the gamut—the diaspora—of flavors from those places. After Philadelphia, Kelly worked in Los Angeles for more than a decade before relocating to San Luis Obispo to chef at a downtown restaurant. But he took a break from the busy kitchen during the COVID-19 pandemic, and realizing how great it felt, Kelly decided a food truck was the way to go. It’s a place where he can dig into his creativity, express his history, shed a little stress, and serve customers great food. ❉
