New surprises from Old SLO BBQ

OldSan Luis BBQ owner Matt Pearce is reinvigorating his Santa Mariastyle eatery.

Starting this fall, SLO’s residents and visitors can keep an eye out for the Old SLO BBQ food truck coming to the Thursday Farmer’s Market.

“Back in May, we bought a food truck and have since debuted it for the Blues baseball season,” Pearce said. “We used it to serve barbecue-inspired tri-tip and carnitas tacos.”

Pearce takes pride in Old SLO’s homage to Santa Maria-style oak-grilled fare. Their tacos are a callback to California vaquero (Mexican cowboy) history.

“Back in the day, Santa Maria-style barbecue was just meat grilled over a fire, served with corn tortilla. That’s why pico de gallo is traditionally a condiment for Santa Maria-style barbecue. We’re taking it all the way to those roots,” he said.

Hungry patrons can tuck into their Santa Maria-style tacos. They come either a simple tri-tip or as their now-famous bacon jalapeño carnitas – pulled pork that’s further roasted with jalapeños, garlic, and plenty of bacon.

“About the only way to make fried pork better is to add more fried pork!” said Pearce.

Progress isn’t a stranger at Old SLO. From their advanced self-serve beer walls to creative twists on menu items. During the height of the pandemic, they launched a Southwest Quinoa Salad as a vegan protein side dish, and it’s now a popular choice.

“In the near future, we’re looking at offering our signature pork spareribs in the restaurants. We do it as a catering item and

they’re very popular,” he said. “We have space constraints, but with some upcoming reorganization and the second location opening recently, we believe we can bring them on in the next three to six months.”

Even though the upcoming ribs aren’t traditional to barbecues in Santa Maria, customers expect ribs on a BBQ menu, and Old SLO does their best to meet their customers’ needs.

“We don’t serve brisket either, it’s not Santa Maria-style... but we can do an excellent rib and make it Santa Mariastyle. We use the same seasoning and cook it over the oak fire,” Pearce said.

Now, Pearce isn’t limiting himself to just a food truck and new menu items. Old SLO is about to unveil a mobile bar in the form of a beer truck.

“It’s an old 1966 Ford F100 truck with a cool eight-tap draught bar, and we’ll be featuring it at community events and renting it for private events like weddings,” he said.

Depending on the event, the beers will be completely customizable. At public events, Old SLO plans to pour local bestsellers like Firestone 805 and Barrelhouse IPA. Still, they can offer any beer that catering clients want, even wine, hard ciders or kombuchas, non-alcoholic drinks like lemonades, iced teas, and carbonated waters on tap.

Old SLO has two locations – the original downtown restaurant on Higuera Street and the newer addition in the Marigold Shopping Center on Broad. The ribs and tacos aren’t available at the restaurants yet, but Pearce said it’s in the works along with other restaurant improvements. ❉

Ice beating against the metal walls of a shaker is such a sweet sound.

If you’re at KROBAR Craft Distillery and Tasting Room on Higuera Street in San Luis Obispo, the cocktail you’re about to drink is made with one or more of the distillery’s award-winning small batch spirits.

The seasonal cocktail menu features drinks for every palate, whether it’s the alcohol you want to taste or a pleasant mixed beverage that accentuates the flavors of KROBAR’s gins, whiskeys, vodkas, and/or bitters. Plus, if you love your cocktail so much you want to re-create it at home, chances are you can find all the base spirits and mixin’ fixin’s at the distillery shop in the corner.

With three production stills in the back, a full bar in the front, and owner Steve Kroener’s 25-plus years in the local alcohol-making industry, a visit to the distillery and tasting room gives you the full spirits experience, from still to glass. Celebrating 10 years of crafting amazing spirits in October of 2022, Kroener is constantly trying to make KROBAR Craft Distillery even better than it already is.

The distillery recently released its first malt whiskey, which Kroener said is made from 100 percent malted barley and its first American single malt whiskey, which is fermented, distilled, and aged in a single location in American oak barrels.

Adding to its growing pantheon of gins, KROBAR now has the brightness of local citrus peel in an orange gin. Each of KROBAR’s gins is unique, Kroener said, adding that the Orange Gin and the Butterfly Pea Gin (It’s purple!) are made with different recipes than KROBAR’s Pink Gin, Original Gin, or Barrel-Aged Gin.

KROBAR was established in 2010 with the first location up in Paso Robles in 2012. Now in SLO with Kroener at the helm, the craft distillery is also a partner in The Hub on Monterey Street with Central Coast Brewing and Whalebird Kombucha, which is slated to be open by the end of the year and will feature a small production facility, tasting rooms, food, and fun.

On Higuera, you can belly up to the bar and get a spirits flight or slurp a cocktail, take a tour of the distillery and hear about the process, and get your hunger fix with a quick hit of KROBAR’s bourbon nuts, tacos, or sliders. Kroener’s famous 24-hour smoked brisket is always available in taco form with queso fresco, thinly sliced red onions, and a tangy slaw.

Meeting the challenge

As inflation drives the prices of groceries ever higher, Michael Wolfe wants you to know something about shopping at the Avocado Shack in Morro Bay: deals, deals, deals.

He posts three a day on the shop’s Instagram page, where you can also find great ways to prepare the local produce, dairy, bread, and other kitchen staples on his shelves.

“We found that Instagram is a platform to integrate and communicate to the people in our tribe,” Wolfe said.

The tribe he’s describing? That can be anyone who wants to put nutritious, tasty food in their belly and wants to know where it comes from; those folks out there who keep their body moving and love nature; and residents who try to connect with their community.

Wolfe cares about the shoppers who pull into the parking lot, hopping out with eyes for what’s in season today. A message board greets them as they walk under the roll-up doors into a wonderland of produce. Push pins hold event notices and highlight the next North Coast Hiking Club meet-up. Kids can pick up a good read in the book exchange. And he shares the lot with the Estero Bay Kindness Coalition, an organization that distributes groceries to families in need.

As the bright orange and red tomatoes of summer give way to autumn’s kabocha and spaghetti squash, Reed avocados from a few miles up Highway 1 are $1 a piece on a recent September day. You should eat these avocados, he explained, when you almost can’t stand it anymore.

They should be squishy and wrinkly.

“Then it’s ready to eat,” Wolfe said. “Perfect on the inside, and the top comes out like a pin. You just push it out with your finger.”

That’s a tip from a produce profes sional.

Wolfe can offer prices like his because of how he builds relationships with local producers, and he’s trying to fight inflation by sourcing even more local items than he has in the past.

Similar to everyone, the Avocado Shack has had to make choices about what and how it purchases. The choices that Wolfe is making are driving him even deeper into his philosophy of having the right relationships with people who grow food in the right way as close to the Shack as possible.

His relationship with Hearst Ranch is a great example. From October through March, Hearst’s Hass avocados roll through the Shack and Wolfe also sells Hearst beef, from rib eyes and flank steak to ground beef and chuck roast.

That ground beef is $5.99 a pound. Eggs from Los Osos Ranch? $3.99 a dozen. Brian’s organic bread made in Atascadero? $3.99 a loaf. A 12 ounce bag of locally roasted coffee from someplace like Joebella or SLO Roast? $9.99.

“We take care of our own, give them good food, ensure good quality while keeping prices down,” Wolfe said. “That’s my challenge.”

Winemakers of tomorrow

students enrolled in Allan Hancock College’s Viticulture and Enology Program, learning isn’t limited to the classroom.

For

“Today, we started at 6:30 a.m.,” Hancock Viticulture and Enology Program Coordinator Alfredo Koch said on a Wednesday afternoon in October. “We went to the vineyard, and normally we have a few students harvesting. We harvest, and then the other students continue working at the winery, processing the grapes.”

Many students enter the program directly from high school as full-time students, Koch said, but others are working in the industry, so they take one or two courses. The beauty of Hancock’s Viticulture and Enology Program is that it’s flexible.

With a vineyard and winery on campus, students get to experience all aspects of viticulture (the science of making wine) in one place. From growing to harvesting to wine marketing and sales, students receive a holistic, multidisciplinary education.

“The students can learn from our instructors, who have masters’ and PhDs, but they have also worked in the industry,” Koch said. “All of us can convey the real experience from working at vineyards, wineries, all over. Some have close to 40 years of experience.”

Students who graduate from the program can go straight into the industry or can continue their education at a fouryear university. Koch said many of his students go on to attend Cal Poly, UC Davis, or Fresno State.

Nic Tasca, a viticulture program graduate and once co-president of the student Viticulture Club at Hancock, graduated with his viticulture associate

degree in 2019. He loved the experience so much that he pursued another degree in agricultural science at Hancock, continuing his involvement with the viticulture and enology program.

He said he often met people in the area and would speak with folks who attended the program’s wine tastings.

“I always encourage them to take one class and say ‘You’re going to meet so many great people,’” Tasca said. “The instructors here are willing to meet with you in their office hours and actually talk. They really want to see the students succeed.”

For students who wish to experience another country’s winemaking techniques, Hancock partners with the University of Bordeaux in France.

“We have an agreement so our students can actually finish their degree and get their bachelor’s in France if they want to,” Koch said. “it’s maybe one of the largest universities in the world for wine and viticulture.”

But students don’t have to leave the country to get that international taste.

“We have visiting professors from Australia, France, Spain to teach how we do things in other places,” Koch said. “It’s great to get exposure from different areas.”

The Viticulture and Enology Program is also distinguished by its cutting edge winemaking technology, which includes a focus on sustainability—decreased pesticide use and organic/biodynamic farming.

Hancock continues to churn out award winning wines: Koch said that Wine Enthusiast Magazine has given top-notch scores to six of the programs wines, which can be purchased at hancockcollege.edu/ winery.
