omeone looking to experience the pinnacle of Paso Robles’ sophisticated wine and food culture would do well to spend a weekend at Allegretto Vineyard Resort. It has pretty much everything. The stunning hotel sits on the very edge of town with its own hilltop vineyard and walking trails through the grounds, orchards, and gardens. There’s a sparkling outdoor pool with bar service and shaded cabanas near a courtyard with a sculptured fountain and fire pits. They offer fitness classes, massage services, and have tandem bicycles available for guests to explore the town. There’s more, but all of these amenities really just set the stage for the true star of the show: elegant cuisine paired with decadent wines. The resort’s restaurant, Cello Ristorante & Bar, serves locally sourced ingredients elevated to new heights under Justin Picard, who was hired as executive chef two years ago. Since taking the helm, he has since redefined the restaurant’s purview to include the entire Mediterranean region with Italy as its anchor point. The expanded scope reflects Picard’s passion for traveling the globe in search of exciting flavors and turning them into creative cuisine. Cooking is in Picard’s blood. His father was a chef in Vermont, and as a boy, he thought doing prep work in the kitchen was the coolest thing in the world. He was working the line at 12 years old and graduated to the grill when he turned 15. “I think I was conceived in the kitchen,” he joked. Right out of high school, he studied cuisine at the Culinary Institute of America and quickly took an internship at a restaurant in Aspen that catered to wealthy and renowned clientele. When Picard felt he’d skied every slope and learned every skill that Aspen had to offer, he journeyed clear across the planet to Guam to explore Asian flavors for three years before settling in California. “People eat all over the world. There’s always something new to learn, a new technique, a new flavor,” Picard said. “It never gets old.”
When it comes to creating dishes, Picard said he strives to find the highest quality ingredients available each season and focus his attention on five or six at a time so that each flavor can pop and compliment the others without getting muddled. The resulting menu reads like poetry. This summer, for instance, he served locally raised, pan-roasted chicken breasts with a lemon and caperberry white wine sauce, roasted red bell pepper, and mint over a gold potato hash. He was still crafting the autumn menu when he spoke to New Times, but he did say he’d recently connected with a local, small-scale pork producer and was eager to incorporate Taylor Made Livestock’s “phenomenal pork” in the menu. Picard said that farmers with small operations have a stronger connection to their land; he said it makes a huge difference in the quality of his ingredients, and ultimately in his dishes. “You can only put so much lipstick on a pig, so you better start with a beautiful one,” Picard said. To pair with Picard’s cuisine, Cello’s Director of Food and Beverage Thomas Humphrey scours the region to compile an extensive list of fine wines and draft beers, while mixologists create artisan cocktails made with locally distilled liquors and house-made syrups. Humphrey is the current president of the local chapter of Chaîne des Rôtisseurs, which is the world’s largest, oldest, and most prestigious gastronomical society. This connection gives him incredible insight and access to the best drinks the country has to offer. “It’s all about camaraderie in food and service,” said Humphrey. “We do philanthropy through food, raising money for culinary programs and developing an appreciation for great food and wine.” As a resort/hotel restaurant, Cello may be easy for local residents to overlook, but the staff’s mastery of infusing fresh ingredients with technical skill produces plates and drinks that demand discovery. Diners don’t have to stay at the resort to enjoy the finest food Paso Robles has to offer, but they’re more than welcome to indulge in a little staycation if the mood arises. 2

n the heart of downtown Paso Robles, there’s a patio table waiting for the opportunity to make your wildest foodie dreams come true. Shaded from the hot north county sun but open to fresh air and summer breezes, the elegant décor of this patio in paradise immediately sets the mood for a wonderful experience. Debbie Thomas, owner and founder of Thomas Hill Organics, designed every element to ensure that guests are relaxed and comfortable as they begin their culinary journeys. “I love dining out, so I know what makes people happy,” Thomas said. “We sell experiences, not just food.” Thomas fell into the restaurant industry almost by accident. For most of her life, she worked in the corporate sphere, travelling the world to handle accounts for the likes of Adidas and Foot Locker. It wasn’t long before her far-flung travels and exposure to unique cuisines and varied wines transformed her into an avid foodie, always seeking interesting restaurants and new flavors wherever she went. She was ready to retire and settle into a quiet life in wine country when she moved to the Central Coast, but that’s not quite how things worked out. In her quest for the best possible flavors, she planted a 10-acre organic farm, and she couldn’t help but want to share those flavors, which she said led to the first true farm to table restaurant on the Central Coast. Although the farm no longer exists, Thomas continues to get all of her produce and proteins from organic, local sources. The goal at Thomas Hill Organics has always been to highlight the local bounty of fresh, simple ingredients in stunningly sophisticated dishes. The restaurant’s new Executive Chef Libry Darusman has taken that challenge head-on since joining the team this September.
Himself a world traveller, Darusman was born in Indonesia and spent his youth in France and Germany, exposed at an early age to fine dining. He formally studied the culinary arts in southern California, cooked at Sinatra inside the Encore in Las Vegas, and ran the kitchen for Los Angeles’s Roomforty, which catered star-studded events like the Emmys and Golden Globes and hosted private tasting dinners for dignitaries like President Bill Clinton. “Chef Libry has extensive experience working in high profile restaurants, but he also has a worldly palate and a willingness to get creative in the kitchen,” Thomas said. “With the bounty of the Central Coast at his fingertips, we look forward to watching Chef Libry’s creativity flourish.” He’s off to a stunning start. The current menu features starters like sweet corn ravioli with beurre fondue, brioche salad, housemade duck bacon, and pickled parsley stems. For main dishes, he serves grilled pork chops shishito pepper hash and smoked tomato jam and black cod with a brioche bread puree, charred scallion vinaigrette, summer squash confit and horseradish ash. The menu changes seasonally to keep up with the availability of good ingredients, so check back often for updates. Thomas Hill Organics is located at 1313 Park Street in Paso Robles and open Monday through Saturday for lunch and dinner and Sundays for brunch. They offer Burgers and Beers every Monday, when draft beer and glasses of wine are half price with the purchase of a burger, and entire bottles of wine are offered at half price every Tuesday with no minimum purchase. Overall, Thomas hopes to offer her guests a little taste of refined elegance and a better appreciation for locally sourced ingredients. “I want our customers to leave knowing they have great memories to take with them,” Thomas said. 2

SLO Staple Finds a Second Home

hat started as a small farmer’s market stand and catering company in 2010 (using a rented kitchen in Atascadero) Old SLO BBQ first made the jump to a restaurant space in 2012, offering walk-up window service in downtown SLO. With an evergrowing demand for their classic Santa Maria style BBQ, owner Matt Pearce needed to expand. After almost a year of planning and construction, Old SLO BBQ Co. opened their second location in the Marigold Center in mid-August. “We needed to build a bigger production kitchen but wanted to keep the open, fun, community vibe of the downtown location,” Pearce said. “We came up with this covered patio concept to help us stand out within the shopping center. The patio pushes out onto the sidewalk area to give more dimension to the space.” “We do our best to operate by the K.I.S.S. model for business,” Pearce said, referring to the acronym for Keep It Simple, Stupid. “We only have a few things on our menu and we’re going to make sure that those things are the highest quality that we can put out.” With the Marigold location now in full operation, Pearce says his restaurant might be seeing some exciting new menu additions in coming months. “We are looking to add tacos and ribs to the menu. Simple street-style tacos using BBQ meats are truly authentic Santa Maria BBQ style food,” he said. But staying true to his existing recipe for success, Pearce says his new location will keep doing what has always worked: local ingredients, unbeatable quality, an accessible price range and, of course, delectable bites. “We purchase ingredients from Brian’s Bread and Edna’s Bakery, Cattaneo Bros., and a few farms down in AG. We get our ingredients locally as much as possible,” Pearce said.
The new location also boasts 33 taps, six of which will pour wine and the others tapping beer and cider. With a focus on craft beverages, Old SLO BBQ Co. constantly rotates what’s on tap, reaching as far as Texas or Maine domestically, and Germany, France, or New Zealand internationally to bring in the best. “But we always have incredible local stuff on tap too,” Pearce said. With such an extensive beverage menu, there’s a drink for everyone. “Everything is going to go with something on our food menu,” Pearce said. “Even though our menu is simple, the flavors can go from bright and tangy to savory and succulent— and there’s always a drink to go with that.” For a non-alcoholic option, try the fresh-squeezed strawberry lemonade, a sweet and refreshing balance to a savory pulled pork sandwich with a side of their cool and subtly spicy apple-cucumber coleslaw with jalapeños. With lots of options at around a $10 price point, Old San Luis BBQ is all about cooking up quality local cuisines in an accessible way. “Being able to share Santa Maria Style BBQ in an authentic way that represents SLO’s unique take on BBQ—that’s what we’re going for,” Pearce said. “It’s neat to be able to share a piece of the local culture in a simple, accessible, inexpensive way.” “I’d also like to thank everyone that has helped me along the way,” Pearce said. “Building the first restaurant was an exciting challenge and I am very thankful for the place we’ve been able to establish in SLO’s restaurant scene. pple Farm knows how to balance innovation with what has always worked. Between their signature Comfort Classics and their creative seasonal offerings, there’s something for both lovers of tradition and for those looking to taste a totally fresh flavor combination. If you are not a fan of Brussels sprouts, well, let’s just say you haven’t tried Apple Farm’s. Flash fried and served with bacon, pecans, blue cheese and topped with a bourbon maple glaze, it’s difficult not to drool over this healthy but decadent fall offering. Another seasonal favorite that this comfort food haven is bringing back is their famous fried chicken tacos. What Executive Chef Steven Smeets calls “a mash up between Mexican and American cuisine classics,” the tacos feature hand breaded buttermilk fried chicken strips. The dish is topped with a housemade chipotle crema, heirloom tomato pico de gallo, guacamole, and a healthy serving of cilantro. Brand new this fall season is Cajun crab cakes. Made with fresh Maryland Blue Crab, the flavorful dish is served up with Creole aioli and an arugula salad tossed with Meyer lemon vinaigrette. For folks who prefer to stick to the classics, Apple Farm still has you covered. Served year round, the restaurant’s signature Comfort Classics are always there to satisfy that savory, cooked-at-home craving. “The Comfort Classics taste great year round,” Smeets says. “But they just seem to taste better when you’re in that fall mode, when you want that comforting feeling.” Whether it’s their house meatloaf served with mashed potatoes and sauteed vegetables, or the braised beef stroganoff over egg noodles, you can expect to find something that feels like home on the Comfort Classics menu. Apple Farm may be known for its
plethora of meat centered dishes, but Smeets emphasizes that vegetarians and vegans will also find something delicious, whether it’s breakfast, lunch or dinner. Items on the menu are conveniently marked with dietary restrictions. In fact, Smeets says that one of Apple Farm’s vegetarian offerings is his favorite item on the menu right now. “I love the beet and goat cheese salad,” he said. “It’s got fresh local beets from a farm in Arroyo Grande, mixed greens, and we make a blood orange vinaigrette. It’s served with fried goat cheese balls—we bread the cheese and then quickly flash fry it so it’s crispy on the outside and nice and soft and gooey on the inside.” To pair with its wide variety of food offerings, the restaurant boasts a full bar with craft cocktails, local wines—including their own house wine—and an extensive beer selection. And to finish off a warm and savory meal, Apple Farm pulls out all the stops on their dessert menu. “The apple dumpling is one of our signature desserts that we’ve had for a really long time,” Smeets said. “We have the classic dumplings, made with Granny Smith apples, stuffed with cinnamon and butter, then wrapped in our pastry dough, and served warm with cinnamon sauce and vanilla ice cream. But we are also reinventing it with an apple dumpling of the month, like chocolate peanut butter or crumbly streusel with a bourbon sauce.” While San Luis Obispo doesn’t experience what some might call “true autumn,” a visit to the Apple Farm might just trick you into forgetting the eternal summer of the Central Coast. “It doesn’t feel like fall outside necessarily, but when I’m in the restaurant I get that warm fall feeling from the decorations in the gift shop and the restaurant,” Smeets said. “It makes it feel very homey.” 2

s the days grow shorter and the warmth of summer wanes to cooler and (hopefully much) wetter weather, wine enthusiasts near and far are rolling up their pant sleeves for the biggest party of the year: Opolo Vineyard’s Harvest Festival Dinner and Grape Stomp. As one of Paso Robles’ premier vineyards and winemakers, Opolo has a lot to celebrate every October. This year, they won a barrelful of awards at international and regional wine competitions including a “Best of Class” and “Double Gold” for the 2018 iteration of their signature Rosé at the 2019 Central Coast Wine Competition. While a victory like that can taste delightfully sweet, the main push to party comes from wrapping up another season of planting, growing, monitoring, and harvesting nearly 300 acres of the highest quality grapes vines can produce. With that in mind, co-owners Rick Quinn and Dave Nichols are going all out for this year’s harvest festival, as Quinn’s Serbian heritage drives the themes of the party. An Eastern European folk band will provide tunes so toe-tapping guests will hardly be able to resist the urge to climb inside the several giant tubs of grapes and stomp juice to the rhythm. Fine ethnic food not often found on the Central Coast—think succulent lamb and sarma (little rolls of stuffed cabbage) alongside delicacies like fresh oysters— will be served in a giant event tent set
on a scenic hilltop overlooking acres of breathtaking vineyards. Of course, it goes without saying that all kinds of wine will be flowing throughout the evening. As a Sustainability in Practice (SIP) certified operation, Opolo strives to establish a cooperative relationship with the land and environment, employing unique and industryleading techniques to ensure that precious resources aren’t wasted. Staff members have erected owl boxes throughout the vineyard so that predatory birds can take care of rodents and pests instead of poisons. Barley grows between the rows of grape vines to hold moisture in place and prevent erosion during winter rains. Rather than harvesting the barley crop and depleting the soil, Opolo simply mows the barley in place and returns beneficial nutrients to the dirt. Whether or not guests are interested in sustainability, a bumpy ride through the vineyards makes for a fun diversion between dinner courses. The harvest party takes place deep in the hills west of Paso Robles on Friday and Saturday nights October 18th and 19th from 5 to 10 p.m. Tickets are available at opolo.com and cost $100 for wine club members and $120 for the general public. This yearly event tends to sell out, so get your tickets now before your hopes of a wonderful evening among the vines are crushed like little grapes. 2
