llegretto Vineyard Resort is a place to play, escape from the everyday, and explore. Placed in the middle of 20 acres of lush vineyards and orchards, it’s hard to imagine that you’ve just gotten off of Highway 46 as you’re immediately greeted by courtyards with hand-carved Italian statues, rustic chandeliers, and the wafting aromas from Cello Ristorante & Bar. The Mediterranean theme is embodied throughout the resort down to the dishes that are served by executive chef Justin Picard. Aside from his experience of being in his family restaurant since he was 7 years old, what makes every dish special are the ingredients consisting of organic fruits, vegetables, and meats obtained from local farmers and ranchers. In true farm-to-table fashion Picard said he has a lot at his fingertips as he also incorporates ingredients from Allegretto’s own vineyard, garden, and orchards depending on what’s in season. “We go out to the herb garden every morning and harvest a third of the raised bed,” he said. “Fresh herbs can make a dish go from okay to wow and these fresh herbs that grow right out my back door are big time players in all of my dishes.” Picard has a way of excitingly talking about food that translates to all his dishes. In front of him is a bowl of mussels, that are plump enough to fill the shell, sitting in a vegan-roasted fennel broth with caramelized onions, a splash of pernod, and extra virgin olive oil. “The theory behind everything is that you have to know how to eat it, to have fun with it,” he said. The right way, to Picard, is grabbing
a mussel, splitting it in half, scooping the juice at the bottom of the dish with the mussel in its shell, and slurping it all down. It’s the best way to get the full range of creamy and buttery flavors on your palate at once. “Trying to mess with a fork and being dainty about it,” he said while shaking his head. “Enjoy your food.” Allegretto prides itself on its five-star service, luxurious amenities, and elegant dining experience; the resort opens its arms to anyone and everyone. While you might want to be a little more formal and dine by candlelight in Cello, guests can also dine al fresco to enjoy the sunset outside at a communal table. He’s excited to bring in a clarified rum punch, an infusion of fruit punch with boiled milk and lemon juice, served with a large ice cube and garnished with berries and mint. From sunrise to sunset, Marisol truly lives up to its namesake, “sun and sea.” Aside from the fresh and local foods used to make each meal, the ocean backdrop is the eatery’s biggest draw John Fergus, Food and Beverage Director, said. “Without question, Marisol has one of the best views on the Central Coast,” Fergus said. “And we really take advantage of the beautiful microclimate with our huge selection of outdoor seating.” So grab a seat to catch the sunset whether it’s at a table or ocean front fire pit, any seat is the best seat in the house. Fergus said customers should pay attention to their special menu featuring different local farmers every season. This spring the chefs at Marisol are focusing on asparagus from local farms like Sun Coast Farms. The small plate asparagus menu will capture the freshness of the season in the Lompoc Valley. One of the dishes, an asparagus tartlet plays on Mediterranean flavors, wrapped in a buttery house-made crust. Taking advantage of the proximity to the ocean, the local seafood is always a highlight on the menu, consider the ginger black cod with shaved asparagus, herbs, caramelized leek and asparagus puree, creamy asparagus rice and house-made vegetable gyoza. “Focusing on local farmers and ingredients lets our customers know
their meals are handmade with the freshest ingredients,” John said. A visit to Marisol can only be made better by ordering one of the handcrafted cocktails the bartenders have perfected! In theme with the blue ocean, try the new blueberry thyme spritz, a beautiful cocktail that perfectly matches its environment. Bartenders muddle blueberries with thyme and house-made simple syrup; the mix is then combined with vodka, champagne and fresh lemon juice, shaken with crushed ice and garnished with a little thyme. It’s a refreshing complement to any entrée or simply a perfect cocktail to enjoy while watching the sunset. Marisol takes pride in their cocktails, with homemade syrups and fresh ingredients. “It’s such a difference when you take the time to squeeze your own citrus and make your own sauces that go into the cocktails because it creates a new taste you can’t get anywhere else,” Fergus said. If you’re in the mood for a nice glass of wine, be on the lookout for the restaurant’s collaboration with Malene Wines and their traveling airstream. They post up every so often for events at the hotel and spa, with live music and lawn games accompanying the event, it’s a perfect way to enjoy the California sunshine all year long. hen you think of spring what comes to mind is having a meal outside, checking out the season’s plants in full bloom, wearing sandals to show off your freshly-painted toenails, and most importantly eating garden-fresh produce. If you’re wondering where you can experience all that the blossoming season has to offer, then you need to head over to Thomas Hill Organics. While the restaurant does have indoor seating, ask to sit in the outdoor patio area and enjoy the breeze, potted plants hanging from the ceiling, and know that your meal has been made with the freshest ingredients. That’s what owner Debbie Thomas wants you to take away from your experience at her restaurant. Thomas Hill Organics successfully gets that vibe across the table with the help of local farms and sourced ingredients that chef Kurt Metzger uses in his dishes. “It’s fresh. They’re not sitting on a truck for a month and they’re not picked prior to being ripe. They’re picked ready to eat,” Thomas said. To Thomas it’s important for their produce to be at the peak of harvest season so all the flavors are retained and the natural juices are bursting through with every bite. “That way you don’t have to cover up dishes with other ingredients or sauces to make the meal taste good, it already does,” she said. Take the heirloom tomato and mozzarella salad. Aside from getting the freshest heirloom tomatoes, all Metzger has to do is drizzle a little balsamic vinegar on top and let the distinct sweet and tangy flavor of the fruit or if you want to call it a vegetable— tamayto-tomahto—make its own statement in combination with the cheese and tart taste of the sauce. Rolling with the fresh-ingredients vibe,
Thomas said that Metzger was the perfect fit for the Paso Robles location. Metzger left his mark in San Diego with Kitchen 4140, The Spotted Cow Catering, and Pop-Up Dinner Co. because he utilized fresh organic ingredients from local farmers in Southern California. He’s always capitalized on the draw of simple flavors and letting the ingredients that are at the height of their season transcend to the plate, shining on their own. So, what I’m saying is he knows how to pick ’em. That’s what really sold Thomas on Metzger, his ability to work with the local resources he had. In case you’re wondering, he works very closely with Loo Loo Farms, Gracious Green Farms, and Magnolia Farm to name a few. Just in time for the bloom, Metzger has launched a spring menu that includes a perfectly-crisp baby kale and wild arugula salad. And let me tell you, wild arugula has a bit more of an intense pepper flavor then your average-Joe arugula—again taking advantage of produce at its peak. For an entrée Metzger is serving up a pan-seared arctic char with herb butter, confit garlic cloves, paired with butterbraised leeks. The char is rich with taste and its flavor falls somewhere between trout and salmon with a pinkish color to it. If you’re more of a morning person, they’ve recently rolled out a Sunday brunch menu from 10 a.m. to 2 p.m. that’s got all the classics with a twist and of course they’re serving up mimosas, so, definitely order one or two. Thomas recommendations the French toast made with brioche bread. It’s stuffed with sweet cream cheese, and topped with vanilla whipped cream, then sprinkled with farm-fresh berries. he first thing you’ll notice when you walk into Willow Kitchen and Cocktails in Pismo Beach is the large windows that line the walls of the establishment. It lends for the perfect view of the beach, day or night. If you’re looking for a spot to enjoy your dinner as the sun sinks beneath the bluest waves, Willow is the place to be. And don’t worry about what table you get as there’s no bad seat in the house. You’ll be able to enjoy the views from anywhere in the restaurant. Just think: It’s a Friday night and you’re soaking in the last bit of sun with your special someone and you haven’t really checked out the menu yet. There are so many good choices it’s hard to just settle on one, right? Joe White, the operations officer for Willow, said he would highly recommend the Prime and Wine special that’s offered every Friday, Saturday, and Sunday from 3 to 10 p.m. The main dish is a smoke-andherb crusted prime rib served with roasted potatoes, market veggies and a side of au jus and creamy horseradish. The prime rib is paired with your choice of a glass of the house red or white wine. With this easy choice in hand you’ll be able to enjoy the sky changing to deeper shades of blue as you’re sipping wine and taking a bite of the tender and juicy prime rib. If you’re looking for a happy hour
deal, Willow will do you one better and offer you happy hour specials from 3 to 6 p.m. and a late night happy hour from 10 p.m. to midnight. At these times you can find $6 well cocktails, red and white house wines, and $4 draft house beers. So order up a refreshing Pismo Mule that’s made with pineapple and coconut vodka, orange juice, and ginger beer or if you’re really channeling your summer vibes ask for the Willow Signature Mai Tai made with Cruzan Rum, coconut rum, dark rum, pineapple and orange juice, and grenadine. Of course you’ll have to pair it with $6 chowder fries; pork belly tacos, two for $9; and fried avocados, two for $9. T
he iconic Apple Farm has been serving homestyle meals on the Central Coast for more than 40 years to locals and visitors alike. Over the last few years, you may have noticed a woman gracing the billboards on Highway 101. Who is this mystery woman you may ask? She’s none-other than the famous Betty. The light-brown-haired beauty has been Apple Farm’s ambassador since 2013. She’s the perfect fit to champion the establishment because Betty truly loves everything that comes out of the kitchen. Betty loves to rave about the bakery, where everything is made from scratch, and the abundant salad bar that has the freshest ingredients to choose from. The Apple Farm is the only full-service restaurant left with a salad bar in SLO! Betty has a lot to say about one dessert in particular. Found nowhere else, the Apple Farm’s one and only mouthwatering apple dumpling! The one-ofa-kind delight is made with a Granny Smith apple, wrapped in pastry dough, baked and covered in a butter, cinnamon and sugar sauce. It’s served hot with two scoops of vanilla ice cream beautifully placed on either side. “I can always tell when the apple dumplings are being made bright and early every morning.” Betty said. “The entire property smells amazing!” As a native of the Central Coast, Betty grew up dining at the Apple Farm. She said her fondest memories of birthday celebrations or family outings were created at this establishment. “The menu has changed throughout the years, but one thing remains, tasty
dishes that stand the test of time,” she said. What Betty likes the most is that there is always something for everyone on the menu, from the staff’s favorite Rueben sandwich, to the savory veggie quiche, or the seasonal strawberry salad. Betty loves to hear what inspires Executive Chef Steve Smeets when he designs the seasonal menu. “He is excited about seasonal transitions because he gets to utilize the newly-harvested produce from our local farmers.” she said. What can you expect this spring and summer season? You’ll find Smeets’ unique take on some classic dishes for breakfast, lunch, and dinner. The hash benedict is a brunch favorite, with poached eggs, homemade corned beef hash, tomato, avocado, and hollandaise. Betty is looking forward to trying our daily vegan lunch specials. Yes, you read correctly! Apple Farm has a daily vegan lunch special. She also wants to encourage locals who are looking for a unique Central Coast experience, to check out Apple Farm’s Winemaker Dinners. From May through September, each month’s dinners include a five-course dining experience paired with wine from the winery of the month. The dinner allows you and a guest to not only enjoy a deliciously-exquisite meal but the gorgeous sweeping views of the Central Coast for a truly magical evening! With stone fruit season right around the corner, Betty is also excited to see what new fresh fruit pies pastry chef, Willie Vey comes up with. 2

onstruction items are being checked off quickly as Old SLO BBQ Co sets to open its new restaurant this Spring in the Marigold Center on Broad Street in SLO. Although the rooms are empty and walls are bare for now, you can almost start imagining the wafting smell of Santa Maria style tri-tip being cooked over a red oak pit. Owner and manager Matt Pearce— you might also find him cooking, taking orders, and pretty much in every position of the business—has a similar vision for his second location as he did for the original restaurant front in the downtown area. “We want to create an environment that feels like you’re hanging out at a local backyard barbecue, eager to get a bite,” he said, “Downtown has a big open kitchen where you can hear everything and you can smell the smoke so it feels like you’re just hanging out. I really wanted that piece of the experience.” Although the new location will focus on the restaurant’s production needs, separating the kitchen from the dining area, there will be a large window behind the counter so people can watch their barbecue being made. He also wants his customers to continue enjoying the stellar weather that only the Central Coast has to offer. Though the downtown location has plenty of outdoor seating, the new location will feature a covered patio with a large folding door that will connect the indoor and outdoor dining spaces. That way, customers will have the opportunity to continue having the pleasure of biting into their tri-tip sandwich outdoors. For six and a half years, Pearce has been sharing his love of Santa Maria style barbecue with his beloved community in SLO. It’s a very unique style of barbecue that originated here on the Central Coast. There’s no real secret to his mouthwatering tri-tip. His seasoning is just salt, pepper, and garlic (the exact
recipe comes from a friend’s local family recipe). Matt and his cooks really focus on the simple seasonings and natural flavors of the high-quality black angus tri-tip they use. By buying the meat untrimmed, Pearce and his team have the opportunity to trim off the gristle and leave about a quarter-inch of fat on the meat, which renders and bastes the tri-tip as it’s cooking over the local oak-wood fire, capturing all the smoke as well. But if you have to ask Pearce about what he would recommend to a new customer (aside from his tri-tip, of course), he has to say an item that isn’t quite on the menu yet: Chili Colorado. Turning their barbecue tri-tip into Chili Colorado gives a smoky character to the classic dish. And for a special treat, try it over their fresh cut fries all topped with melted cheese! Or maybe try Pearce’s take on their infamous corn pie—he tops his with salsa, cilantro lime cream, and chopped up tri-tip. Pearce’s love for food and cooking was always there but growing up he wasn’t a big tri-tip fan. Maybe it was because he grew up in Simi Valley, just a few hours south, but had never had authentic Santa Maria style tri-tip? Pearce recounts that his family would overcook it on a propane grill. It wasn’t until he graduated from Cal Poly and was working as an engineer at Diablo Canyon that some friends invited him over for good old fashion barbecue in their backyard. It was then that he realized what he’d been missing, and what was missing from the local dining scene. After his friend taught him how to trim the tri-tip, season it, cook it, and slice it, the rest was history. Pearce started out small, serving up tri-tip at farmer’s markets in Grover Beach and Avila Beach and catering events for friends. “Then I thought to myself ‘I think I might have something here,’” he said. “I think people really appreciated the fact that it was not dressed up; it’s just high-quality food done simply ... Just meat on bread.” 2

After an idyllic drive through Paso’s breathtaking vineyards, taste an incredible lineup of world-class wines perfect for your next tasting adventure. The tasting room ambiance—and the wine—is rich with authenticity and tradition you can sense at first sip. Co-owners Rick Quinn and Dave Nichols bottled their first vintage in 1999, opening their unique hilltop tasting room in 2001. The name “Opolo” is an homage to Quinn’s Serbian heritage, inspired by a lovely rose discovered on the Dalmatian Coast. Of course, “Opolo” also means “fun.” “The team strives to maintain a welcome, friendly atmosphere that encourages guests to embark on a casual tasting experience,” said Opolo Marketing Director Jessica Silvius. “The perfect pairing of knowledgeable, passionate attendants and approachable wines prove that wine tasting can be engaging, enchanting, and educational, all in a single sitting.” Opolo weaves old world tradition with modern day offerings, which is especially evident in the food. Enjoy house made Balkan sausage—or “cevapi”—as well as wood-fired pizza (when paired with views of autumnal vineyards turning orange and red, you won’t miss the white table cloth for a heartbeat). Claiming nearly 300 acres of vines on the east and west side of Paso Robles,
Opolo Vineyards is privy to a wide range in climate, soil, and growing potential, allowing an extensive range of varietals to flourish. The westside vineyard is located in the Willow Creek AVA, offering temperatures nearly 10 degrees cooler than the eastside counterpart. A crisp ocean breeze has a beneficial cooling effect on the grapes. This dynamic soil allows Opolo to produce typically cooler-climate wines such as pinot noir and roussanne. In contrast, the eastside vineyards are arid providing the ideal climate for varietals such as cabernet sauvignon and zinfandel, Opolo’s flagship varietal. Because of the range in terroir, Opolo offers up unique single varietals and strikingly-creative blends (all of which make fabulous holiday gifts).
