A
nyone who’s stepped inside Captain Bill’s Subs in downtown San Luis Obispo during the height of lunch rush knows that this sandwich shop means business: owners Kris, Julie, and Raymond pride themselves on being able to satisfy every sandwich lover, even if it’s 1,000 customers in 2 hours (a feat the family has achieved more than once). It all boils down to “quality and speed,” Kris said. But perhaps even more impressive is the story behind how Captain Bill’s got its name. Julie’s father, Bill, became the owner of the submarine shop after he converted it from a dying sandwich chain into a thriving, independent sub shop, originally based in Phoenix, Arizona. “He couldn’t come up with a name,” Kris said as he told the now infamous family story. “But one day, Bill was at the bank making a deposit and there was an elderly woman ahead of him in line making a hefty withdrawal from her savings. As she left the bank, she was robbed.” Immediately springing into action, Bill managed to chase down the culprit and hold him under a citizen’s arrest until the police arrived. The money was returned to its rightful owner, and Bill’s employees bought a cake to celebrate. “The frosting read, ‘Our Hero, Captain Bill!’... And the name just stuck.” Ever since that fateful day, Captain Bill’s has been serving up nothing but the highest quality meats and cheeses on daily fresh bread, and often locally
sourced veggies—not to mention a unique selection of sandwich spreads, breakfast sandwiches, soups and much more. “While it’s tough to pick a favorite on the menu, one of our most famous subs is the Italian Munchie,” Kris said. “It’s stacked with ham, salami, pepperoni and provolone, with your choice of the works, and topped with our house Italian dressing.” Captain Bill’s slogan—“Food & Fun since 1981!”—sure rings true with this one. But in classic Captain Bill’s fashion, there’s an option for everyone. If you’re not feeling this meat lover’s choice, the Garden Goddess sandwich is sure to please. Artichoke hearts, olives, sun-dried tomatoes, sweety drop peppers, sprouts, Goddess dressing, and dill havarti top this mouth watering vegetarian delight. Make it vegan by dropping the cheese and adding Captain Bill’s signature cashew sun-dried tomato spread. Captain Bill’s is more than just a grab-and-go sandwich joint: It’s an inviting place for the community to gather, Julie said. “We have free wi-fi, it’s fun, it’s definitely flavorful, both the atmosphere and the food. Paso’s Farm-to-table Gallery of Food By Beth Giuffre
F
rom its humble beginnings as a CSA, Thomas Hill Organics remains one of the first authentic farm-to-table restaurants in SLO County. The choice Paso Robles downtown destination, Thomas Hill ranks among the top restaurants in the nation for locally-minded ethos—with a focus on organic ingredients and a wine list that will entice both the epicurious and the loyal. The green and breezy center courtyard remains the favorite spot to sit, though the famous restaurant and bar is now becoming a hot spot for a wine flight or sweet bite. The latest editions include a dessert bar and a Piano Lounge set up for live acoustic music. Served in the relaxing, freshly decorated front bar and lounge area, the Dessert Bar welcomes guests of all ages to enjoy a selection of treats crafted both in-house and by local purveyors, paired with local coffee, tea, beer, and wine. New Chef Libry Darusman has been leading the way with his exciting culinary artistry. “Chef Libry has extensive experience working in high-profile restaurants,” owner Debbie Thomas says, “but he also has a worldly palate and a willingness to get creative in the kitchen.” The chef has a flair for the exotic, balancing acid and heat,
and incorporating the main ingredients into the sauces and gels he drizzles and dots his plates with. “I am a big fan of dishes that are hot and cold,” said Darusman, who invented a version of s’mores for the dessert bar that creates a steamy fog when you open the s’more inside a mason jar. Watching him make this dish is an extraordinary experience. He creates our favorite campsite treat on a wood round with a torch. Other times, Darusman is concocting one of his new creations using liquid nitrogen. “Whether it’s a hot dish that has a cold component to it or a cold dish that has a hot component to it, I think the contrast of those two when you’re eating it is fun and it’s only something you can get from temperature,” Chef says. “At the restaurant we try to use any byproduct we have—whether it’s from veggies or herbs. We try to use as much as we can,” Darusman said. “Fresh pasta is something we do a lot of. It’s something I’m very passionate about. ld SLO BBQ’s philosophy is simple, much like the food on its menu—unpretentious, high quality, consistent, and built by and for the community. “We don’t complicate any of the dishes that we serve,” owner Matt Pearce said. “Our tri tip sandwich is meat on a buttered bun. Our pork sandwich is meat on a buttered bun. And, of course, the buns are made local ... We try our best to stay true to the heart of the Santa Maria-style. It’s a bare bones, simply seasoned, meat should taste great on it’s own kind of BBQ. All the sauces come on the side.” SLO BBQ’s commitment to this simplicity shines in every meal they serve. Meat is king. They only use hand-trimmed black angus tri-tip, seasoned with a family rub, grilled over red oak, and delicious every time. Pearce hopes his restaurants’ food represents the cuisine and the culture of the Central Coast in an affordable and accessible way. Culture is an important part of what Old SLO BBQ does, and the culture isn’t just about the food they serve. It’s imbedded into the connections they foster within the community they’re a part of. The restaurant supports as many local businesses as possible. Digital West provides their phone and internet service, Tognazzini provides beverage service, and Sentinel Security provides alarm and monitoring service. They get their all their bread from Edna’s Bakery and Brian’s Breads. Cattaneo Brothers provides their linguiça. Produce comes from Bautista Farms and Green Gold Organics has a strawberry field dedicated to producing berries for the restaurant. Pearce said they try to help out lots of community organizations too. SLO BBQ is a part of fundraisers and provides discounted meals for
nonprofits, churches, schools, and more. They’ve partnered with Wood’s Humane Society, Family Care Network, Operation Surf, and the Central Coast Autism Spectrum Center, to name a few. Being involved with the community is an important part of why Pearce said he opened the business in the first place. “I feel like the most enduring companies are companies that are focused outward, allowing them to make big impacts on cultures and communities they’re in.” Pearce said. “SLO impacted the culture of my business before we ever opened the doors. People in SLO care about each other. So, I constantly ask myself, ‘how does Old SLO BBQ benefit the most people?’ Through benefiting the most people, I hope my business can be sustainable and enduring.” He was intrigued by what a business could do and why some businesses succeed and some fail. Pearce used the example of Arthur Guinness to explain. The Irish entrepreneur who founded St Jame’s Gate Brewery in 1759—and yes, brewed that luscious Guinness Irish stout—was a man who focused on making his workers’ quality of life better. Guinness created workforce housing for his employees, encouraged education, and paid a fair wage. Thus, Pearce said, he believes in paying a fair wage and providing opportunities for advancement within his company, which now has two restaurants in San Luis Obispo and a large catering operation. “The business isn’t just about supporting me and my family. It’s about being able to support my employees and generously support our community,” Pearce said. “It’s important to me to have a business structured this way so that it’s sustainable. I hope my business can encourage others to do good in the community too.” ❉

ot many people know that Allan Hancock College offers a phenomenal Culinary Arts and Management Program. Those who graduate with a Certificate of Accomplishment can find immediate work in the service industry, whether it be general manager of a SLO County hotel or restaurant or managing a catering company. Allan Hancock graduates are usually hired on the spot “sometimes even before they graduate. “You’re career ready after two years,” Ron Lovell, Allan Hancock College Assistant Professor of Culinary Arts said. “You can get a living wage job right out of the gate. “The number of jobs for hospitality and culinary are forecast to increase by 30 percent in the next ten years,” Lovell added. “There will always be a high demand for hospitality employees..” The Allan Hancock culinary program isn’t all about becoming a cook. The jobs in hospitality span a wide range of management positions as well. “We’re demanding high wages for reasonable work hours and if you have a degree you’re really treated like a professional,” he said. “Sometimes people think the hospitality industry is like the old days of less educated employees and a lot of grueling hours and no benefits—but that has changed.” The Culinary Arts and Management Program at Allan Hancock consist of four majors that end in certification: Baking, Catering and Events Management, Food Production Supervision, and Food Services Production and
Restaurant Management. Most programs can be finished in one to two years. The Food Services Production and Restaurant Management Program, for instance, requires 32 units in classes that range from Beverage Management to Basic Nutrition for Health. Students will learn about culinary professions and food sanitation, while also gathering knowledge on life management and food production costs. Recommended electives include: Pairing Wine and Food, Marketing, and Food Science. Programs partner with local hotels, restaurants, and nonprofits for handson practical experience for students in the Hancock culinary program. One day they may cater a lunch for some business professionals, and another day they are making and serving soup for the Empty Bowls fundraiser. At Allan Hancock College, there is an understanding that living on the Central Coast may mean some students don’t have the luxury of not working while they further their education. The Career Technical Classes allow students to begin working immediately so they can pay rent and their tuition while they’re in school. “Students can get placed in a job in the industry and actually work on the weekends while they go to school during the week,” Lovell said. Allan Hancock also offers the Hancock Promise, which provides local high school graduates with a year of free tuition. The promise includes more than $1,200 in tuition and fees during their first year. ❉

Elevated California Coastal in Pismo Beach By Beth Giuffre
T
he new Vespera on Ocean luxury hotel restaurant Somerset Grill is the next best thing to a getaway vacation on a tropical island, yet the expertly prepared comfort food makes you feel right at home. Modeled to be a neighborhood place, the restaurant provides relaxation to unwind over drinks and coastal, regionally-inspired, locally-sourced American food, but with that theatrical open kitchen and wood fire centerpiece. Located along Pismo Beach’s famous stretch of sand, with a stunning panoramic view of the pier, Somerset Grill is sits inside the Vespera on Ocean, a brandnew 124-room upscale hotel which opened last October. The restaurant provides market-fresh, Oceanside Americana cuisine for breakfast, lunch, and dinner, with an oceanfront poolside bar and breezy al fresco dining. Wherever you’d like to sit, you are offered craft cocktails, local beer and wine, and a gorgeous sunset view. What makes Somerset even better, is world-class chef James King, who moved to SLO County from Santa Barbara to open Somerset. “We’re the newest edition to Pismo Beach,” King said. “We have all sorts of space and we need people to come and fill it … and you can’t come unless you have a good time.” The dining room decor is sophisticated custom furnishings
and plush booths, with a high-energy showcase kitchen and wood-fired grill that also acts as a rotisserie oven. Inside is warm and convivial, but for a coastal experience, the beachfront bar is the place to be. During the day you can people watch as locals and visitors walk along the wooden boardwalk. The poolside patio is dotted with fun little camps of light brick fire pits and white Adirondack chairs. Guests find the atmosphere perfect for catching up on some conversation, and ideal for taking a breather. The seafood choices are many: The already famous Central Coast Lobster Roll, Seaside Chowder, a Spicy Poke Stack, or Crab Cakes are featured for starters. Oysters on the Half Shell are popular, and the chef uses caviar to flavor many of the plates. One of King’s signature dishes is the Brewer’s Half Rotisserie Chicken brined in a German wheat beer and served with herb-roasted baby potatoes and corn succotash. King takes a simple and honest approach to the plates he serves at Somerset. He will make the plate look gorgeous, but his goal is not to go overboard with fancy aesthetics. “I like chicken pot pies and baked potatoes,” he said, and he lets the fresh, local ingredients speak for themselves. “Next time you come to Pismo Beach, please stop by and say hi,” King said. “I’m always in the kitchen, so we’d love to have you.” ❉

he first ingredient for his pho is beef bones, which are cleaned before being baked overnight. “It’s a good smell,” @bites chef Ly Ngoc Chi said. Dropping them in water after pulling the bones out of the oven, the pho cooks for at least 14 hours to maximize flavor. Then, the broth is seasoned with raw sugar, fish sauce, Vietnamese herbs, and spices like coriander. The whole process takes at least 24 hours. It’s not just authentic. “It’s a real pho,” Chi said. And he should know. Chi’s been teaching people how to cook it for more than three decades. Chefs in Germany, Switzerland, France, and Texas all know how to make the real deal because of Chi, who cooked at five-star hotels for years, including Saigon’s New World Hotel. As part of his job, he taught his secrets to chefs at sister hotels all over the world, trading Vietnamese recipes for those from other nationalities. “We all worked together,” Chi said. They combined flavors and figured out what worked well together and what didn’t. Those trips helped build the menu of international cuisine that Chi and his fellow chefs in Saigon dished out to guests like American President Bill Clinton. Chi served beef brisket pho to Clinton, who also noshed on more international fare, such as fried food, burgers, and waffles. “They ate everything ... . Every time the group came, hundreds of people came with him,” Chi said. “When we were cooking for them, it was very difficult. So many people.” President George W. Bush also made a trip through Saigon’s New World Hotel, and yes, Chi dished up some fine food for Bush as well. Eventually, Chi found his way to Austin, Texas, where he continued to work as a five-star hotel chef, but he was ready for change—something and
somewhere with a little less heat. “Texas is too hot, very hot, and here the weather is good,” Chi said. “I worked in the hotel for 35 years already, so maybe I can open my own business here.” And that’s exactly what he did. Chi and his brother, who lives in SLO, put their heads together and found a spot to open a restaurant. In February 2019, the family started renovating the building on Santa Rosa Street that once housed a Carl’s Jr. Calling the new restaurant @bites, the place is family-owned and operated, but run by Chi. “And he can make the final decision,” his nephew Vince Tran said with a laugh. “He’s the boss.” Pho is definitely on the menu, as is a little bit of fusion from Chi’s worldly exposure and a lotta bit of grilled meats. Grilled shrimp. Pork ribs. Korean beef. Shaking beef. Kabobs. Plus the fabulous flavors of Hot Salted Grilled Chicken. That poultry is seasoned with a mix of chilies, salt, some secret Asian spices, and garlic, that’s tongue-tingling, and like all of the meaty meals, it comes with your choice of sides. Fried rice, chow mein, mashed potatoes, fries, steamed rice, beans, soup, salad. The choices are endless, really. “So we have pho and we have something for other people too,” Tran said. With that focus on grilled protein, you could definitely say that @bites is also a little bit Texas. With Texas-sized portions, too, all for around $15 to $16 per meal. One thing’s for sure, @bites is different than your standard SLO foodie fare. “We mix together everything,” Chi said. “Not only Vietnamese food, not only Asian food, we mix it with Western food to make new items.” Visit the newly opened @bites in San Luis Obispo’s University Square off Foothill Boulevard and Santa Rosa Street. ❉
