Fruity Fall Sangria BOTH TANGY AND SWEET, THIS ALCOHOL-FREE FRUITY FALL SANGRIA COMBINES CRANBERRY RASPBERRY JUICE WITH ORANGE JUICE AND FRESH-PRESSED ROSEMARY CITRUS JUICES FOR A LIGHT AND REFRESHING DRINKING EXPERIENCE. Prepare the sangria as a large batch, but make sure to dose each drink individually for consistent dosing, add a splash of club soda for a light sparkle on the palate, then garnish before serving.

ingredients: - 2 capfuls of Good Stuff™ cannabis-infused Raspberry Lemonade (dose each drink individually) (4 mg of Sativa Energy) (1 capful = 2 teaspoons = 2 mg of THC) - 2 Oranges

- 2 Limes

- 1 cup pulp-free orange juice

- Club soda

- 4-5 Medium Strawberries, Sliced

- 1/2 Cup raspberries

- 1/2 cup fresh-squeezed lemon juice, pulp removed

- 4 Cups cranberry raspberry juice

- Lime wheel, floating raspberries, strawberry slices, and rosemary leafs to garnish

Target dose: 4 mg THC = 2 capfuls

How To Make

Servings:

Begin by preparing the fruit. Slice the oranges and limes into rounds, leaving the peel on. Add the citrus to the bottom of a serving pitcher, then add strawberries and raspberries. Top with cranberry raspberry juice, orange juice, lemon juice, and lime juice. Stir to combine then let the sangria chill in the refrigerator for 1 to 2 hours. The longer the sangria rests, the better the flavor as the juices and fruits soak in the flavors!

Once you’re ready to serve the sangria, use a ladle to scoop out a few pieces of the macerated fruit, then add the fruit to the bottom of a stemless wine glass filled with ice. Add two capfuls of Good Stuff Raspberry Lemonade, then top with a splash of club soda for some added bubbles. Stir to combine, then garnish with a lime wheel and floating raspberries and strawberry slices before serving.

he Avocado Shack in Morro Bay stocks more than avocados— although it definitely has plenty of those on hand year-round. “We are going all organic. We are making that commitment to the community, and this is your next generation of organic farmers, right here,” owner Michael Wolfe said as Andy O’Brien from Surfside Farm pulled into the parking lot. “We want to get the message out that we’re going that extra mile, as it should be.” Surfside Farm, located just inland from Morro Bay, planted 5,000 strawberry plants for the Avocado Shack this last year, Wolfe said. It’s a true local partnership. O’Brien pulled tomatoes, strawberries, and melons out of his van, carrying them over to a section of the shack dedicated to Surfside. The goal, Wolfe said, is to build a direct pipeline to local produce, cut out the middle man, and develop relationships with the farmers and suppliers who he sources from. That way, he can feel good about the way the farmers he sources from treat the land, his carbon footprint, and the quality of the produce that lands in his customers’ hands. Ultimately, he wants the Avocado Shack filled with produce grown no more than 40 miles from the shop. Why? “It’s fresher. And you’re seeing it right in front of you now. He [O’Brien] picked these a couple of hours ago,” Wood said. “It’s more nutritious. It just tastes better, because they can pick things riper for us. If things have to be transported, they have to pick them greener.” And Wolfe should know. He worked as a produce manager in local grocery stores for 20 out of his 40 years in the

produce business, starting in Los Osos at Willams Bros. in 1983. Vons acquired the coastal grocery store chain in 1992. Wolfe worked for Vons stores all over North County, as well as Spencer’s Fresh Markets and Cookie Crock Markets. Wolfe is now stocking his own shelves. In addition to produce, the Avocado Shock has organic groceries such as Santa Cruz peanut butter, Muir Glen tomato sauce, Baba Small Batch hummus, and Straus Creamery dairy products. And the year-round avocados in his store are often grown in the hills along the coast, including Hass avocados from Hearst Ranch north of Cambria and Traceland Organic from Cayucos. Ron and Gail Trace from Traceland brought avocados into his shop last year and told him about their farm—that it was organic and sustainably farmed— so he went out to the farm and walked all through their orchards. “I wanted to see for myself,” Wolfe said. “The land’s being handled correctly. It’s a sustainable farm. They’re not just talking.” His relationship with Traceland, similar to all of his relationships, is deeper than those avocados. Etto Pastifico, for instance, comes over from Paso Robles once a week to sell him pasta. And while there, Etto picks up produce, some of which Tracland grows specifically for Etto, Wolfe said. This includes squash blossoms, edible flowers, and chard. “The point is we’re connecting all these dots. So [Etto’s] able to get things that [Etto] really wouldn’t be able to get anywhere,” Wolf said. “To me, it’s just really cool to be able to pull it off, and everybody’s happy.” ❉

he cool thing about the Gardens of Avila Restaurant at Sycamore Mineral Springs Resort is the garden that feeds the menu. Just a short walk over the bridge, corn, tomatoes, squash, green beans, peppers, radishes, pumpkins, and more ripen in rows tended by Oscar, who works with Executive Chef Edward Ruiz and Secret Garden tender Cory Lund (who works in human resources) to keep both the restaurant at the resort and the produce stand next to the Bob Jones Trail stocked with fresh vegetables. You can buy flower bouquets and produce from the Secret Garden trailer, which is set beneath the trees right next to the resort’s garden, or head into Gardens of Avila to see that produce used at its brightest. “Keeping it simple is where it’s at for me,” Ruiz said, “kind of letting the vegetables speak for themselves and highlighting the taste and really the freshness of it.” This includes the Maize Tostado— roasted corn with spicy aioli, queso fresco, chili powder, lime, and microgreens—and flash fried Brussels sprouts with garlic aioli, goat cheese, balsamic glaze, and toasted almonds. As to be expected, some of the menu items change seasonally based on what’s ready for harvest. At the tail end of summer, Ruiz was plating up pappardellestyle pasta, made fresh daily, with garlic cream sauce, shrimp, and veggies from the garden (green beans, corn, zucchini, squash, cherry tomatoes, and spinach). For fall, he was thinking about processing the remainder of the garden’s tomatoes into a sauce that can be used for something like a bolognese.

Ruiz said the fresh vegetables he’s able to use on the menu remind him of how his Grandma would cook for him and his cousins. “She grew up on this strawberry ranch … and we always had fresh fruits and veggies,” he said. “A lot of my stuff is from there, ... and everything she made would come fresh from her garden—soups with zucchini and squash, roasted tomatoes.” He added that some of the ingredients he works with are also from local producers, such as the Morro Bay oyster mushrooms, which are battered in Cajun buttermilk, deep fried, and served with Sriracha aioli. Gardens of Avila’s kitchen also plates up pastries, muffins, and salads for the Secret Garden’s refurbished trailer as well as an artisan cheese plate with fresh fruit, honeycomb, and housemade crostinis. You can grab one of those things to nosh on, shop for fresh produce, and grab an adult beverage or kombucha while you relax at one of the tables next to the chef’s garden. With cornhole available and games on each table, it’s also a good spot for the kids to run around, Lund said, and on Thursdays, the Secret Garden sometimes has live music. Right now, there’s tomatoes, beets, carrots, jalepeños, poblano peppers, sunflower seeds, and lettuce alongside the flower bundles. And the pumpkins are growing and will be ready for harvest just in time for Halloween and Thanksgiving. “Everything comes from the garden. I try to use everything that’s in there, if possible,” Lund said. “A couple of times a week, I go out there and work with Oscar—our head farmer—to figure out what I need and what to harvest and get what needs to go in to the stand.” ❉

riginally opened in 1942, Vic’s Cafe celebrates 80 years as a fixture on Paso Robles’ 13th Street in 2022. In those eight decades, the diner has had three owners and two locations. After original owner Vic Buckley passed away in 1972, Larry and Janet Eastwood took over, moving the diner into the larger space directly next door to its first home in 1973—where it continues to serve classic diner fare for breakfast and lunch including eggs, hash browns, pies, reubens, and more. Three years ago, Dee Aud and Brett Skinner took over Vic’s, keeping the vibe and fan favorites much the same as they’ve been for years. Booths on one side, low bar on the other, nostalgia in the middle, and pies in the cooler. “There’s a lot of high end [in Paso]— and there’s a lot of room for that kind of food—but I think these kinds of places are dying out,” she said, adding that she and her husband Brett Skinner have revamped part of the menu. “We took a lot of the favorites that Larry was serving, and probably Vic before him, and kind of updated it for modern times.” Skinner and Aud dish up food that’s fresh and made from scratch daily, such as the sausage gravy and biscuits for breakfast or the brown gravy and meatloaf for lunch. She highlighted the gluten-free options, which the couple expanded, in part, due to the celiac disease running in Skinner’s family. “We make our own gluten-free Johnny cakes; it’s a buckwheat pancake,” Aud said. “My husband worked really hard on that, and people really like it.” Salad dressing, buns, tortillas, pie crust,

and chocolate chip cookies are all gluten free. Vic’s sausages don’t have gluten filler in them either, which Aud said is pretty unusual. The gluten-free bread has its own toaster, and those Johnny cakes have their own side of the grill, Aud said, to ensure there isn’t a trace of gluten in the food they plate for gluten-free customers. Scrambles—such as the chorizo scramble: eggs with chorizo, bell pepper, onions, and jack or cheddar—come with hash browns or home fries and bread of your choice. Trainwrecks—such as the Goat on the Tracks: eggs, Italian sausage, feta, black olives, and green onions—are scrambled with hash browns. Aud said Vic’s is one of the only places still selling things like liver and onions or trout for breakfast. “I’ve had people order liver and onions at 7 o’clock in the morning,” she said. But breakfast is only half of the menu. Skinner and Aud have expanded the lunch side of things, keeping favorites like the veggie pesto melt and openfaced sandwiches with turkey or meatloaf (smothered in gravy) and added new sandwiches such as the Italian Job – capicola, pastrami, chopped pepperoncinis, mayonnaise, lettuce and tomato. Even with the changes Vic’s Cafe has experienced over the past 80 years, the spirit of one of the oldest diners in SLO County lives on. Occasionally that spirit even knocks over pots and pans or swipes a plate of food that’s ready to go out to a table, but he always leaves cash in the register. “Really weird little tricks. It’s usually when you’re busy,” Aud said. “Since Larry’s still alive, it has to be Vic.” ❉

t Old San Luis BBQ, owner Matt Pearce knows how to get the classics right, from their famous Santa Maria-style tri-tip to the classic pulled pork sandwich. Focusing on quality and value, SLO BBQ is happy to support several local suppliers: all their bread, strawberries, lettuce, linguica, and the majority of the beer and wine on tap come from SLO County. The two-location restaurant works tirelessly to offer a consistent product and awesome guest experience: delicious options can be found across the menu and both locations offer a friendly and welcoming atmosphere. “We start with high quality products, like angus beef and artisan bread and linguica, then we try our best not to mess it up,” said Pearce. Pearce said it’s nice to have more people back inside the restaurants to utilize things like the tap wall or games, but the business still offers to-go and delivery options for those who want to eat at home. Old San Luis BBQ is also ramping its catering back up as more events happen. The food menu stays consistent yearround, but offers a couple signature, seasonal milkshakes: the delicious pumpkin pie milkshake for the fall, and a chocolate chip candy cane milkshake in the winter. While pandemic challenges still exist, Pearce said he is thankful for his customers. Weathering the difficult time was easier with a loyal following and growing demand keeps him optimistic. In the future, Pearce hopes to expand the restaurant to SLO’s South and North County and beyond. “We’re excited for the future,” he said. “We’re looking forward to continuing the return to ‘normal,’ and continuing to staff up and grow.” ❉

ncomparable flavor on a charred, bubbly, gorgeous crust. That’s what Della’s brought to Paso Robles this summer—flour, yeast, salt, and water fermented for 72 hours until it tastes of sourdough before becoming a satisfyingly delicious wood-fired pizza. “We have this big, giant, beautiful wood-burning oven,” said Maggie Cameron, who owns Della’s and The Hatch Rotisserie & Bar with her husband Eric Connolly. The two run both restaurants alongside Executive Chef Cory Bidwell. “Chef plays a lot with differing textures and flavors,” Cameron said. For instance: Next One Meets Your Ex One comes with The Hatch’s infamous fried chicken, blue cheese, buffalo sauce made from The Hatch’s hot sauce, and cold, crunchy celery served on top. Smoke Show’s topped with house-smoked short rib, pickled pineapple, and roasted jalapeño. “It smells so insane coming out of the oven. It’s like smoking meat and the sweet fruit—but also a pickled element, which kind of cuts through all the fat from the short rib. It’s a winner,” Cameron said. As someone who’s obsessed with pizza, Cameron said it was only right that their next venture focus on the thing that she loves. Plus, The Hatch serves up woodfired comfort food, so wood-fired pizza was a logical step. And luckily, she said, they found a place right on the other side of the wall from The Hatch, which the couple opened in 2015. Before taking the pizza plunge, though, the trio did their research. They went everywhere, because there are so many styles of pizza—so many pizza options out there in the world already. And,

Cameron said, everyone has their favorite. She’s from Connecticut, so they visited and ate at some “super famous” New Haven pizza joints; they also ate their way around New York City, Seattle, Phoenix. “We went to all of these different places to try to figure out what was us: What fits us and what fills a need in Paso. We’re not an Italian pizza joint. We’re California; we can put anything we want on a pizza,” Cameron said with a laugh. “I just love that sort of unchained spirit of the West. You can be sort of rooted in tradition and also do whatever you want.” And that spin on tradition is about more than just pizza. It’s about gin, too. Because Della’s likes to think of itself as a little bit of a gin joint. With an excellent selection of California gins, you can play around with the effervescent aromatics of a good ol’ G&T with Della’s mix and match gin and tonic bar. Select your gin. Choose your tonic—and there are several flavors on hand. Pick your aromatic (burnt rosemary, orange peel, rosewater, edible flowers … ). And enjoy. “The whole thing—soda and pizza. It’s a grown-up version of what we had as kids,” Cameron said. “It’s delicious. It’s light and sparkling and bright. It’s just a perfect foil for all of our pizzas.” Of course, Della’s also has a full bar with a well-crafted cocktail menu, just like its sister restaurant, The Hatch, which counts itself as more of a whiskey kind of place. She describes Della’s as the gin to The Hatch’s whiskey. “It’s this yin-yang of light and dark. Dark and sexy vs. bright and bubbly,” she said. “We want everyone to feel welcome walking into this joint.” ❉

he first ingredient at @bites is family—one in which everyone gets input on what goes into the food on the Vietnamese-inspired menu. A lot of those menu items are influenced by personal experience, Front House Manager Khoa Nguyen said. “Food wise—the street food—when we go back to Vietnam, the night scene in the street, the food scene is very prominent, and we want to bring that here,” Nguyen said, adding that some of his aunts and uncles had small shops or restaurants in Vietnam where they sold street food such as spring rolls before moving to America. “As far as some of our main dishes—bahn mi and pho … That is very endearing to us and something we wanted to share with the people here.” Pho from @bites has a little something from every member of the family in it, Nguyen said. His Uncle Six (aka @bites chef Ly Ngoc Chi) put together a base pho recipe that all Nguyen’s aunts and uncles tasted. And each person gave their take on what it should taste like or include. “And so we just combined the best of everybody’s recipes in the family into what we are serving here,” Nguyen said. “We’ve gotten our pho to the point here— aside from the toppings on top—that this is pho that we all want it to be.” It includes beef bones baked overnight and dropped in water, where they cook for at least 14 hours. That broth is seasoned with sugar, fish sauce, Vietnamese herbs, spices like coriander, and, of course, two cents from aunts, uncles, and cousins. Uncle Six—who taught five-star hotel chefs for years while working in hotels in Vietnam, has dished up food to U.S.

presidents, and most recently was a fivestar hotel chef in Austin, Texas—and his brother—who lives in SLO—put their heads together and found a spot to open a restaurant. In February 2019, the family started renovating the building on Santa Rosa Street that once housed a Carl’s Jr. Calling it @bites is a nod to the family’s other local business, @nails, which has a couple of locations in SLO. The goal, Nguyen said, was to open businesses that could reunite the family. In Vietnam, he said, the family all lived near each other. As people trickled over to America, one family (aunt and uncle) at a time, everyone did what they needed to do to survive. Family members moved all over the country for work, based on the jobs that were available. “The ultimate goal was to have family that live near each other. … It just took my two uncles to have a business strong enough to support multiple families,” Nguyen said. “When the first nail salon opened up, we all rushed here to help him get that up and running.” With @bites open as well, everyone from Nguyen’s mother’s side of the family is here. Nguyen, who has a culinary degree from the International Culinary Center in Campbell, said the family has been a part of the San Luis Obispo community for more than 10 years. And now the family is pursuing its dream of working together to serve up Vietnamese-inspired dishes that they can share with SLO. “They’ve always had an eye for the restaurant business,” he said. “When the opportunity came to all live in one area, we took it.” ❉

f you walk into The Roots Dispensary in Lompoc a little uncertain about the products that are available, the cannabis budtenders there will help you feel at ease. Product Manager Alex Orozco said education is one of the big things he asks for when Roots brings new items in. Roots wants to know everything it can about the products, so the brand sends a representative to teach dispensary employees all they can. “All of our budtenders are educated. Most of them have personal experience with the products,” Orozco said, adding that they can help customers with any level of cannabis experience. “Especially with edibles, we let them know that it’s definitely something you want to ease into.” And with edibles, there’s something for everyone. You name it, Orozco said, “almost any item you can find in a regular grocery store as a treat, you’re going to find in the cannabis industry.” Roots has mints, tinctures, drinks, sprays, lollipops, gummies, candies, chocolate, and more, focusing on products that don’t break the bank and are packed with flavor. Edibles often have a lot of sugar in them, Orozco said, which makes them inedible to some. So he tries to find products with less sugar and the right kind of dosage. For instance, Click—“The incredible, edible cannabis spray”—is made for discreet use during the day with a super low dose. In flavors like lemon gingergrass, the daytime use spray incorporates nanotechnology, which creates smaller more water soluble molecules that mean you can feel the effects of the cannabis quicker, in 5 to 10 minutes. Dosage doesn’t just mean THC, either. It also includes cannabinoids such as CBN,

which Orozco described as a more recently discovered cannabinoid that helps with sleep. Camino gummies come in many flavors and dosages, but the Midnight Blueberry contains 5 milligrams of THC and 1 milligram of CBN per serving. Alongside relaxing terpenes and chamomile and lavender extracts, you can “settle in for a smooth slumber by a serene lake and let all of your worries go,” according to Kiva, which produces gummies, mints, and artisanal chocolate bars made with cacao and cold water hash. “It’s really a confection—chocolatiers that are really masters and mask the taste of cannabis,” Orozco said. Roots dispensary co-owner Luis Castaneda said in addition to providing education to customers about the products they carry and focusing on bringing in affordable products, one of the biggest goals the dispensary has is to give back to the community. With deep roots in Lompoc, Castaneda said he’s lived in the city since he was 4 years old and is focused on outreach and making a difference. Roots often holds direct fundraisers for families in need or for Lompoc residents who may have lost loved ones to violence or COVID-19. Families sometimes hold bake sales outside of the dispensary, or Roots will donate meals, supplies, and more to local nonprofits. Most recently, Castaneda said, the dispensary held an in-house drive for back-to-school supplies, offering discounts to customers who brought supplies into the dispensary. “We’re known as a dispensary that allows pretty much everyone to hold fundraisers,” he said. “We like investing in actual change that we can see on a daily basis and not so much donating to places where it will get lost in the shuffle.” ❉

llan Hancock College’s Viticulture and Enology Program is the epitome of hands-on learning: Students not only learn the science behind grape growing and winemaking, but also how to harvest the crop, turn it into wine, and operate a winery. Inside the college’s winery—which offers occasional wine tastings and even a wine club membership to the public— wine-stained barrels are stacked on top of one another, and a large egg-shaped wine fermenter sits against a wall. This is where students get their hands dirty, learning how to turn grapes into wine using the same modern equipment, technology, and techniques that they’ll find in the industry. After more than a year of being away from the in-person classroom, Program Coordinator Alfredo Koch, Ph.D., said he’s ecstatic to have students back this fall. In addition to the winery, the college has its own vineyard that students can use to hone their skills, from the field to the tasting room. On an average school day, after a harvest morning, students sat in the classroom later in the afternoon learning how to perfect the nitrogen levels in their wine. “I think it’s one of the only community colleges that offers a program like this in the country, so as far as that goes it’s extremely unique,” student Jeff Hevert told me during class. “I’ve had several different degrees prior to this, but I wanted to learn winemaking and viticulture, and found this program to be excellent in terms of the courses

offered, the professors being working professionals.” What most drew Hevert to Hancock’s program was the fully operating winery on campus. “It produces wine that’s even available for sale, and has won awards,” Hevert said. “It allows the students to be hands-on, and learn the craft through the winery and then the vineyard as well, which is exemplary for local Chardonnay and Pinot Noir, but also does experimental growth of varietals from all over the world.” Student Eli Escobar has been with the program for two years. “You get to experience everything, from the vineyard all the way to the winery: to pick the grapes, crush them, all the science,” Escobar said. Kumar Ramajayam, another student in the program, works in the wine industry simultaneously with his studies at Hancock’s program. “There’s no substitute for the touch and feel, and being part of it, and being totally immersed in the program, so that learning becomes second nature,” Ramajayam said. “I’m able to validate what I’m learning at a winery in Paso, and also I have a small vineyard where I grow my own grapes. So I’m able to take all this knowledge and synthesize it, by putting it into practice.” No matter what stage someone is in their wine and viticulture career, there’s something new to learn with Allan Hancock College’s Viticulture and Enology Program. MISTURA

A mix of bold flavors and cuisines By Malea Martin

O

ne of the hallmarks of Peruvian cuisine is the variety of cultures it represents. That’s why Nicola Allegret ta named his restaurant Mistura, which translates to “mixture”: the owner and chef said Peru is “a country full of diversity and culture from all over the world,” and the food is equally diverse. Located in The Creamery in downtown San Luis Obispo, there’s something for everyone at Mistura. “We serve small dishes, so people can try a bit of everything,” Allegretta said. “Most of our food at Mistura is gluten free, superfoods, and locally sourced, from vegetables to meat to seafood. We also serve a variety of vegetarian and vegan options.” Allegretta’s personal favorite on the menu is the tiradito, Peru’s take on sashimi. The dish celebrates Japanese culture and its impact on Peruvian cuisine. The Mistura Tiradito features thinly sliced sustainable yellowtail, ají amarillo, yams, andean cancha, and soft-shelled crab tempura. Sustainability is a big focus for the restaurant. “More than anything we try to be sustainable, where we are able to support the local economy, and at the same time serve healthy, thoughtfully sourced food,” Allegretta said. A customer favorite during the fall and winter months is the Seco de Cordero on the entrées section of the menu. New Zealand free-range lamb shanks are marinated in a beer ají panca for 24 hours, before being cooked in a mild

cilantro chicha de jora reduction. The gluten-free dish is served with golden yucca and tacu tacu. A llegr e t ta said tacu tacu, a traditional Peruvian way of cooking rice and beans, is an all-around popular pick. It’s also found in Mistura’s Bistec a lo Pobre, which features Hearst Ranch grass-fed top sirloin steak. The meat is grilled and served over tacu tacu with fried plantains and sarza. The gluten-free dish is topped with an organic fried egg. Mistura also boasts a full bar with all the classics, but also in-house specials. The Pisco Sour features house-distilled pisco (a type of brandy), cold-pressed lime juice, egg whites, and bitters. One of Allegretta’s personal favorites is the Eclipse, with scotch, blackberry, basil, lemon juice, and St-Germain. In the spirit of the holiday season, the Cóctel de Algarrobina features the house-distilled pisco, cold-pressed lime juice, condensed milk, egg yolk, and cinnamon, which Allegretta said tastes a bit like eggnog. Finish off your meal with desserts that are as visually appealing as they are tasty. La Flor is a flourless chocolate cake with a maracuyá mousse and dark chocolate ganache that resembles a blooming flower. “We want it to be an experience,” Allegretta said of his restaurant. “We want it to be like you’ve been teletransported to Peru.” Head to misturarestaurants.com to see the full menu, and reach the restaurant at (805) 439-3292. ❉
