Welcome to the summer issue of Jamaica Blue Escape. Summer is our favourite time of year, so we thought we’d save our best issue of 2012 until last! This edition we chat to Australia’s own superstar chef, Curtis Stone about his passion for food and his new inspiration in life, baby Hudson. A

Hurstville native for over 12 years, Nitin Verma recently celebrated the opening of Jamaica Blue’s very first franchise at the local Westfield Shopping Centre, and he couldn’t be more excited. “I think it’s just a fantastic product,” Nitin says of his motivation for becoming part of the Jamaica Blue brand. “I used to be a regular customer at Westfield Miranda, and I thought, ‘I want to be a part of this’, and it went from there.” He quickly realised that becoming a franchise owner meant really getting to know the business, inside out. “We had to participate in the franchise training program, which is a three week program,” he explains. “We spent two weeks at the head office and one week in store, so it was quite a comprehensive training program.” Having a love of the bean himself means

that learning how to make the perfect blend for his customers was his number one priority. “I had to go through [the process of learning] how to make coffee in the training,” Nitin adds. “Generally we have experienced baristas make the coffee, however, because I love coffee I kind of jump into it and I’m learning how to do it!” Being a new franchise owner has been a steep learning curve, but Nitin says he’s loving every minute. “I’m enjoying the experience, it’s been great!” he says. “It’s been full on but it’s also been really rewarding.” Jamaica Blue Hurstville has also managed to establish itself very quickly, with Nitin admitting he’s become a favourite with some of the locals already. “We’ve got heaps of nice [customers], heaps of good ones and quite a few that are coming in now every day,” he adds.

e used to manage his own small hardware business, and she worked in marketing – but today, husbandand-wife duo Carlos and Paula Dos Santos have happily traded in their previous careers to operate their new Jamaica Blue franchise at the Belmont Forum Shopping Centre in Western Australia. “We must have looked at 100 different businesses to invest in before deciding on Jamaica Blue,” Carlos recalls. “We had no experience in the coffee business but made the decision because I love my coffee, and Jamaica Blue was the only coffee I truly liked the taste of. My wife also worked in marketing, and she loved the brand and the design.” Their new café is already proving popular with the local clientele, which Carlos puts down to the quality of the coffee and the extensive a la carte menu, available for both dine-in and take-away customers. In fact, they’re already getting rave reviews, with happy customer Annie writing on Jamaica Blue’s official Facebook page: “I was at Belmont Forum today waiting for a shop to open, and thought I’d try the new café that just opened. As soon as I sat

Belmont down, a young gentleman came to clean up my table (which i might add was already reasonably clean). The manager went past and smiled. I got my food – delicious – and the portion was so generous! But the coffee was the highlight! I only usually put sugar in my coffee if it tastes average... This one definitely didn’t need sugar! Thank you for making my morning!” It just goes to show that even though Carlos and Paula have only recently started their Jamaica Blue journey, they’re already onto a good thing. “I’m loving it, I’m really loving it,” Carlos adds. “It’s a lot of hard work but we are getting a lot of regular clients and are surprised by how well the business is doing.”

SunshineCoast Alison and Sjivonne Grimsey-Smit are thrilled to have recently opened the new Jamaica Blue café at Maroochydore’s Sunshine Plaza, on Queensland’s beautiful Sunshine Coast.

T

that it’s about time something came down this end [of the centre],” Sjivonne explains. “It’s away from everything, so you can have your cup of coffee and hear yourself talk.” The pair chose to become part of the Jamaica Blue family to be in control of their own destiny and to take advantage of the lifestyle that living on the Sunny Coast can provide for them, and for their children. “Alison had always wanted to move up the coast to live, so I started looking around for businesses we could buy,” Sjivonne says. “I always prefer to go into a franchise system for added security and there was a site available with Jamaica Blue at Sunshine Plaza. The Plaza is the predominant site on the coast for shopping centres and Jamaica Blue has good ethics that we agree with.” With shopping centres generally boasting a number of options for shoppers to grab a quick latte on the go or to stop for lunch, Sjivonne adds that she feels Jamaica Blue’s range of fresh food, coffee, cakes and snacks really stands out from the crowd. “We do most of our own in-store baking” she says. “I think our point of difference is the quality of our coffee and our food.”

he couple is new to the coffee game, having worked for a Brisbane-based digital commercial printing firm for the past few decades. Alison has clocked up 28 years working with them as a production manager, while Sjivonne has been the financial controller in the same company for 18 years. The decided to invest in a Jamaica Blue café for a “career and lifestyle” change, and so they could become “the creator of our destiny, in regard to financial security.” Sjivonne has kept her old job as the financial controller during the week, and she spends her weekends behind the counter at Jamaica Blue, while Alison manages the café during the week. “It’s been hectic and more demanding than we thought, because we are out of our comfort zone,” Sjivonne says. “But the opening went to plan, it’s been busy and we are on target for sales, so I am pleased.” The new store employs 14 people and is located in a prime spot in the shopping centre, just near Myer – a dream position for any shop owner. “We are getting a lot of people saying to us

What’s not to love about Sydney? Aside from the Sydney Harbour Bridge, the Opera House and the city centre itself, there’s so much to explore in and around Australia’s premier city. So, let us be your unofficial guide (and your radar to track down good coffee, too!)

he first thing to know before you arrive is that Sydney is big. It stretches over 12,000 square kilometres, if you take into account the beautiful Blue Mountains and the wine region of the Central Coast, and as home to 4.6 million people, it is Australia’s most populated city. In the past 12 months, over 22.5 million tourists – both domestic and international – have spent a night in the harbour city, racking up over $5.6 billion worth of spending combined. But why is Sydney the most-visited city in Australia? It’s because there’s so much to see and do, regardless of

Sydney your budget. Sure, you can spend your cash on a beautiful harbour cruise with lunch and fine wine thrown in. But for the financiallyconscious, you can also jump on the Manly Ferry for about $10 and see all of the same sights on the cheap, minus food and wine, although snacks can be purchased on board! The same can be said for the shopping. There’s the high end of town, which houses Tiffany & Co., Bvlgari, Chanel, Versace and the like, but there are also thrift shops and bargain shopping galore if you go for a leisurely wander through Surry Hills, located a short 10 minute walk from the

city centre. Whatever your intentions while you’re in town, one aspect of your trip that is important to factor in is this: don’t plan on dieting when you visit the city! From Café Sydney on the harbour to Adrian Zumbo’s famous macarons at his Balmain patisserie, to the Italian Forum in Leichhardt or China Town in the city, there are so many restaurants to visit, serving an incredible variety of food. You’ll throw your healthy eating plan out of the window – or spend most of your days walking it off as you explore everything that Sydney has to offer.

what to do? Spend the day at Bondi Beach & Bondi Junction It may seem a little clichéd, but no visit to Sydney is complete without a trip to the world-famous Bondi Beach. Catch the train from the city to Bondi Junction, where you can stop and grab a coffee from the local Jamaica Blue café, browse the local shops, and then jump on a bus down to the beach (there’s no train access to Bondi Beach itself). It’s Sydney’s most iconic beach, with the lifeguards from television’s Bondi Rescue overseeing safety on the beach and literally hundreds of dining choices, from simple fish and chips on the beach, to high-end restaurants like Icebergs. Or if you want to take in the sights, we suggest going for the Bondi to Bronte walk along the water’s edge.

Soak in the attractions in the city Over the past few years, the City of Sydney has been busily refurbishing and resurrecting the heart of the CBD, and today it’s quite spectacular! The newly-opened Westfield complex in Pitt Street houses some of the best fashion labels in the world, including the extremely popular fashion retailer Zara, along with smaller shops and discount boutiques for those on a budget. However, it doesn’t have to be all about shopping: a short stroll from Pitt Street Mall is the magnificent Opera House and the historical Rocks area of Sydney, all of which can easily be explored in a day and with a good pair of walking shoes.

The Hunter Valley is well known for its wine producing region and is the perfect day-trip for those who enjoy a drop of vino or three. Located just over an hour north of Sydney, the Hunter Valley produces some of the best wines in the world with samples galore to be tasted. Local tour operators organise daily winery excursions or, if you choose to drive, many resorts and hotels offer great packages for a quick overnighter or an extended stay. On the way through, make sure you take some time to stop and take in the view at the Hawkesbury River, a must-stop on any trip north of the city. Also recommended is a trip to Newcastle to stop in at Kotara, for a quick pick-me-up at the local Jamaica Blue cafe.

Hire a car and go for a drive into the picturesque Blue Mountains. Located about 80km from the CBD, Katoomba and Leura are the main tourism hotspots with a small village atmosphere and a range of local arts, crafts and homeware stores mixed with independent fashion retailers. The vista from the Echo Point look-out at the Three Sisters in Katoomba is nothing short of incredible, and from here you can catch the Scenic Railway – it takes you up one of the steepest railway inclines in the world and delivers spectacular views unrivalled elsewhere in Australia. t comes as something of a surprise when international chef Curtis Stone admits he is still learning new tricks in the kitchen. Curtis, the Australian chef maestro of three continents, says the past 12 months have proven a valuable period in teaching him a vital new skill. “I have learned the art of one-arm cooking,” he confesses with a laugh. With his son Hudson born in November 2011, Curtis has figured a way to combine his new duties as a dad with his work at the kitchen bench. “When we (with his fiancée Lindsay Price) first had Hudson, I quickly found out there are only so many things you can do in the kitchen. But I needed to get work done and he needed to be cared for, so I figured I would take Hudson into the kitchen and would give it a shot. “It was slow to start off with as you have to work very slowly using only one arm, but we would get it done and we have managed to get faster. We’ve both been learning as we go!” Becoming a dad just a year ago has had a profound impact on the life of the man who has conquered Australian, European and North American cuisines, both in the restaurant kitchen and on television. He has also won a legion of fans in the US in recent years, and was named one of US People magazine’s Sexiest Men Alive. But Curtis, 37, admits fatherhood has changed his outlook and had a profound impact on the way he looks at food. “Having a little fella come into the world makes you think about things at a much deeper level and analyse what is important, and that is your health and

happiness,” Stone says. “I have a big veggie garden at home and I can’t describe the feeling when I pick something from the garden, puree it and then give it to the little fella to eat. I am already taking him shopping, letting him get the feel of good ingredients. “It is so simple, but when you peel the layers back, I think it is the simple things in life that can have the most impact.” This constant hunger to discover new information about food has been a driving force for Curtis since his childhood in Melbourne. The journey of discovery about food began as he watched both his mother and grandmother work their baking magic in the family kitchen. Later after he left school, he quit a business degree to instead take on an apprenticeship in the kitchen of Melbourne’s Savoy Hotel. That was in his teenage years. Today,

jamaicablue interview curtis stone over two decades later, Curtis is one of the world’s best-known chefs and has worked alongside the likes of Oprah Winfrey, Donald Trump and Ellen De Generes. While he has now struck the big time, Curtis admits that the earliest lessons he learnt, of the importance of discovering everything he can as a young chef just starting out, have never left him. “One of the most important lessons you can ever learn is about the work ethic,” he says. “I have worked for some ridiculously hard-working people in my career, and there

were three important lessons I took on board from watching them. “One is that the more you put in, the more you do get out. The second is the harder you work, the more you learn. And from that, the more you learn, the better you cook. And that is what I have always wanted to aim for. I think I work as hard now as when I was starting out.” It is hardly a surprising admission, considering his current work agenda. He lives between homes in Los Angeles and Melbourne, and is the host of such TV shows as Take Home Chef (screening on LifeStyle FOOD) and Top Chef Masters, as well as making regular appearances on the US Today Show. In addition to a range of successful books like Surfing the Menu and Relaxed Cooking, and another one due out next year, Curtis is also scouting LA for a location to open his new restaurant. “It’s been a slow process, but we have a few sites we are keen on, so I hope it won’t be too far away,” he says. Time is also proving the challenge in securing a date to walk down the aisle with actress Lindsay Price, best known for her work on screen in Lipstick Jungle and the original Beverly Hills 90210. The couple announced their engagement earlier this year, but have yet to decide on a wedding date. “We also haven’t found a place for that as yet either,” he laughs. “When we figure out where we are doing it, then we can lock in a

date for when.” It has been his ongoing role as an ambassador for Coles that has kept him directly involved with the public in recent years, and the move has proven to be a successful one in his quest to better educate people about food. “An individual voice can be really strong and you end up being able to make a difference,” he says. “By working with Coles, I have been able to work on issues that matter to me. We have had an impact on the oceans in Australia with a sustainable seafood program. We also made available hormonefree beef, and have taught people about the seasonality of fruits and vegetables.” One of the Coles programs he is proudest of is SecondBite, which rescues fresh food from going to waste in supermarkets and restaurants and instead delivers it to people in need. In 2011, SecondBite rescued over 1 million kilos of fresh food that might have otherwise gone to waste. “The food industry is a monster of an industry, and with Coles, we looked at what we do with ingredients,” he says. “So with SecondBite, we looked at what we could do with this perfectly good waste, as it was just a good, socially responsible thing to do. And as a result, people in need are getting regular food to eat.” It is the same lesson about minimizing waste and making the most of the food that Curtis now wants to expand out from big business and into the rest of the community. Curtis estimates that 50 per cent of household food goes into garbage bins every week. “As individuals, we need now to take a big responsibility in the way we eat, as we waste so much food,” he says. “There are things we can all do to have a lighter footprint on the environment, and that can involve recycling, compositing or buying appropriately. There are a whole lot of ways as we can go about it. “I have had an incredible relationship with food all my life and it has made all my dreams come true. I believe if you care enough about the things you do and choose well the things you want to be involved with, then you will do well at them. “This is why food still inspires me, and the best of it comes from its source - the people who put their passion into growing it, fishing for it, farming and butchery. If you can tap into that with the best ingredients we have on offer in this country, then the cooking process becomes so much easier.”

OPRAH WINFREY “She is a pretty incredible individual. Last time I saw her, she went out and selected 20 books for Hudson, as she says reading is the most important gift to give your kids. That makes you understand the way she is.”

ELLEN DE GENERES “Ellen is so creative, and she takes a stand for things. She has been incredible for women. In a climate that could have been against her, she has flown the flag by being her own person.”

DONALD TRUMP “Donald is the most driven man. He will never stop until he gets what he wants. If something is in his way, he will work out a way to get over it and then continue on. Just watching him is a great lesson about being focused.”

or some people, summer is the time of the year when they readily and happily take on the job of being the host with the most at many lunches and dinners. For them, it seems all so easy. The food is delicious, the company is charming and the atmosphere is so relaxed, as all the great tastes are rolled out and served up in the easiest of ways. For many others, however, summer entertaining is a time to dread – it may be done with the greatest enthusiasm, but the process causes enough stress to register on the Richter scale! Three of our favourite top chefs, however, claim entertaining at home should never be that difficult. “If you can do most of the work before your guests have even walked through the front door, then you can have a good time

when they finally do,” Curtis Stone suggests. “If you arrive at someone’s house and they are frazzled and run off their feet and you can see they are not having a good time, then you feel bad for being there and pity the stress it is causing that person. And that is uncomfortable. “Think about this – if you go to someone’s place and they are having the time of their life, then so will you. I always say the best hosts have the most fun.” Adrian Richardson of LifeStyle FOOD’s hit Good Chef, Bad Chef suggests that the work for a Sunday summer lunch should begin the week before. “Start deciding one week before the Sunday lunch how many people you are inviting over and what you are going to cook,” Richardson says. “By Friday, sit down and write up a list of all the ingredients you will need and then head

out shopping. “Make Saturday your work day – get all the food prepared and the house ready, so on Sunday, all you need to do is serve it up, and put it straight on the grill or into the oven. “Many people think you have to go fancy to impress your guests, but I believe there is a golden rule to this – it is the simplest things that are done well, cooked properly and presented with a smile in a fun atmosphere that make the biggest and best impression. Every time.” Damien Pignolet of Sydney’s Bellevue Hotel agrees simplicity is the key to success. “Simple food is always the best when entertaining,” Pignolet says. “Guests are coming to your home to spend time with you, so just be sure what you are presenting makes it easy for everyone – including yourself.”


THE FIVE ESSENTIALS TO SUMMER SUCCESS We asked Curtis, Adrian and Damien for their top tips on making your summer lunch a winner.

ENTERTAIN OUTSIDE

BE READY TO LAUGH

“Go alfresco – everything tastes better in the open air,” Damien says. “This is such a nice time of the year, so make the most of it and after months of having to eat inside, you’ll find most people love the opportunity to eat outside in the fresh air.”

Even the best plans can turn into chaos. “In that case, be the first to laugh at yourself, have a sip of wine and if it is a real disaster, have the phone number of a good local pizza place close by,” Adrian says. “It should be about having fun with friends - that always needs to be the focus. Good food is the icing on the cake.”

GIVE YOUR GUESTS A JOB

HAVE A TEST RUN

“People like to be involved,” Curtis says. “In the choice between watching you run yourself ragged or pitching in, your friends will want to be a part of the day. So when they arrive, give them a job, which will relax you and make them feel they are a part of it.”

“If doing three courses, make the entrée smoked salmon and a dessert of fruit and cheese – you can’t get simpler than that,” Damien suggests. Curtis adds, “The salad, marinated meat or fish and chilled wine should be ready in the fridge, with the table already set. Then cook it up and serve it straight to the table.”

“As a professional, nine times out of 10, I will always test how to make a dish before I then attempt to serve it up for guests,” Adrian says. “That way you can determine what works, what doesn’t and the shortcuts that can make it a whole lot easier for the day of your lunch.”

1. Preheat a BBQ grill to a high heat 2. Drizzle the prawns with a little olive oil and place them flesh-side down onto the BBQ or grill for 30-60 seconds. 3. Turn the prawns over, add chili, lemon zest and parsley, and squeeze over the lemon juice 4. As soon as the prawns are cooked to a solid white color (about another 30-60 seconds), remove from the heat, drizzle a little extra olive oil over them and serve immediately.

Buy 1 or 2 chickens; depending on how many people you have for lunch. 2. Cut into about 8 to 10 pieces. 3. Season with salt and pepper, chili, coriander, parley, lots of garlic and then a generous squeeze of lemon. 4. Quarter some onions, throw them into the pan and then a splash of vinegar. 5. Add a teaspoon of paprika, swirl it all around and leave to marinate overnight. 6. Place the chicken, with lemon, onion and chili, on a wire rack over a baking tray, to allow heat to circulate around the meat. 7. Place into an oven at a high temperature (220ºC) for about 10 minutes. Turn the chicken over and cook the other side for another 5 to 10 minutes, until cooked. 8. Once cooked, place the chicken on a platter, squeeze some more lemon and sprinkle with fresh parsley.

The world turns its eyes to Sydney every New Year’s Eve to witness the spectacle as the first major world city turns on the lights for the New Year. A fireworks display off the city landmarks of the Harbour Bridge and above the Opera House is the main event of the festivities. These icons provide the setting for a sky show which is now world famous and attracts well over one million people to the foreshore to watch the event. This year’s New Year’s Eve celebrations has the added star factor of pop princess Kylie Minogue as the Creative Ambassador. It will mark the final event of Minogue’s K25 year celebrations of her quarter of a century in music. “Coming home to host Sydney New Year’s Eve is a dream come true,” Kylie says.

“The theme for this year’s celebration is ‘Embrace’. It is a wonderful, inclusive theme that is close to my heart. Rio De Janeiro

One of the world’s greatest party cities, Rio De Janeiro turns on the summer heat for the New Year’s Eve celebrations, which is Brazil’s second biggest annual party after Carnivale. Like many of the best events in Rio, the party begins and ends on Copacabana Beach with the Copacabana Reveillon celebrations offering a wild assortment of music genres and dance floors, which stay open all night. Along the waterfront, barges full of fireworks set off the sky decorations on the stroke of midnight to mark the arrival of the New Year.

Officially the first city in the world to welcome in the New Year for its close proximity to the International Time Line, Auckland marks the occasion with fireworks exploding from the city’s Sky Tower, turning the landmark into what looks like a flaming torch. The SkyCity show has grown in popularity in recent years in New Zealand’s biggest city, and has become a focal point for the city’s celebrations, which attracts thousands to the harbour foreshore to usher in the New Year.

The Eternal City puts on a good time on New Year’s Eve, with crowds at two big parties on either side of town. The main party is at the grand Piazza del Popolo, with crowds in the ancient square celebrating by dancing to bands, as fireworks explode overhead. Across town, the majestic Colosseum on Via dei Fori Imperiali is the other place to be to see in the New Year, with live music setting the scene as the crowds count down to midnight when fireworks light up the skies above the ancient monument.

Times Square is called the ‘crossroads of the world’ and it is the location where New Yorkers brave the chill of winter to welcome in the New Year. A giant geodesic sphere sits atop the building at One Times Square, and all eyes are on the ball in the countdown to midnight. When the ball finally drops, it marks the arrival of the New Year and the famous Manhattan city square erupts into party mode as it is showered with tonnes of confetti. An estimated million people gather in the location, with millions more watching on television as the event has become a US tradition.

It dates back to times of old, but the Hogmanay celebrations through the New Year’s period in the Scottish capital are as popular as ever. A torch procession through the city kicks off the celebrations on December 30, attracting crowds of hundreds of thousands and then the party continues through to December 31, with a massive fireworks display above dramatic Edinburgh Castle at midnight. Hogmanay is a pagan ritual which involves such traditions as “first footing,” in which the first person to enter the house in the New Year should be male, dark and bring gifts of whiskey and shortbread!

New Year’s Eve celebrations in Tokyo have been known to last up to a week, as the official dates for the party begin on December 29 and last until January 4. The Tokyo Tower is party central and attracts the largest gathering for the fireworks, music and dancing. The party spread out throughout the city and due to the Japanese tradition of ringing the Watch-Night Bell, as long as you’re near a temple, you’ll be close to a celebration. On New Year’s Day, the gates to the Imperial Palace are opened to the public, one of only two days in the year this occurs.


Dubai

The magnificent sail-shaped Burj Al Arab takes centre stage in Dubai’s New Year’s Eve celebrations as the desert city parties with its New Year’s celebrations. The best place to view the fireworks around the city’s world-famous landmark is on Burj Al Arab Beach, which hosts the most exclusive party in the city. The other top vantage points to see the fireworks and water fountain shows is from the expansive terraces of most of the restaurants around the lake.

The Eiffel Tower is the centerpiece of New Year’s Eve celebrations in Paris. Crowds gather along the Champs-Elysees and the banks of the River Seine for the best vantage points. On the stroke of midnight, fireworks erupt from within the Eiffel Tower, shooting colour and light in all directions, giving the impression the tower is exploding. On the other side of town in the hilly areas of Montmarte at the Sacre Coeur Cathedral plaza, a popular street party ushers in the celebrations while offering a panoramic view of the entire Paris skyline and fireworks display.

The ultimate gem of Asia looks fabulous during the New Year Festival. Unlike other festivals, New Year’s Eve in Singapore is celebrated in Chinese tradition. Based according to the traditional lunar calendar, Singapore’s New Year Festival is celebrated over a period of fifteen days. Besides the decorations, shopping, celebrations and parties, one main feature of Singapore’s New Year’s Eve is Chun Jie. Chun Jie is the tradition that symbolises birth of new hopes and burial of old despairs on this occasion. According to the legends, New Year marks the beginning of new period of good luck and prosperity.

The London Olympic Games A royal cameo in the Opening Ceremony and a Spice Girls reunion in the Closing Ceremony bookended a sparkling Olympic Games. Only London could balance pomp and panache with such expertise. On the track and field we witnessed lightning strike thrice for Usain Bolt, while in the pool, Michael Phelps cemented his status as one of the greatest Olympians of all time. The Aussie women shone, with the Women’s 4x100m freestyle relay team, cyclist Anna Meares and hurdler Sally Pearson all giving us something to cheer about.

2012 had a little something for everyone. Our curiosity – literally - landed us on Mars, we marvelled at sporting prowess at the Olympic Games and on TV, homegrown tales were number one. We celebrate 10 of the best reasons why 2012 will be a year to remember.

Aussie TV brings back the drama

Just when we thought the only thing left on the box were cooking competitions and talent shows, great Aussie drama roared to ratings gold in 2012. Howzat! Kerry Packer’s War hit us for six, Offspring played with our heartstrings and Winners and Losers was a winner week after week. Richard Roxburgh in Rake pushed boundaries and Underbelly: Badness dug up another chapter of dastardly deeds. Finally, new kid on the block, House Husbands, flew the flag high for blokes everywhere.

iPhone 5 Every product released by Apple is an event, but the arrival of the iPhone 5 generated a special kind of buzz. How would they improve on the iPhone 4S? In typical tech fashion, it was loved and loathed in equal measure. The controversial decision to get rid of Google Maps, in favour of the Apple designed (but glitch ridden) Maps, was widely criticised. Despite this hiccup, iPhone addicts across the world still queued for days to get the gadget first.

Landing on Mars Curiosity may have killed the cat, but it also landed us on Mars. On August 6, 2012, Curiosity Rover touched down on Mars in front of the world’s eyes. The robotic rover could not have been more aptly named, as the global community logged on to watch the images from the Red planet beamed back to Earth. Our fascination with NASA’s history making mission didn’t end with Curiosity Rover. Bobak Ferdowsi, a NASA System Engineer, quickly became an additional sensation thanks mostly his fetching Mohawk!

Queen’s Jubilee The Queen’s Diamond Jubilee was a celebration like no other. The Commonwealth polished off its finest china, in honour of Her Majesty, Queen Elizabeth. Kate Middleton may have dominated recent magazine covers, but the Diamond Jubilee was the Queen’s time to shine. After 60 years on the throne, Her Majesty still knows how to wow the crowds, hosting a suitably civilised concert outside Buckingham Palace. Republicans and Monarchists applauded an undeniably impressive milestone - a diamond celebration for a golden oldie.

In 2012, the World Expo made its way back to South Korea for the first time since 1993. In the intervening years, the environment has become a major political issue and this was reflected in the theme The Living Ocean and Coast. Korea added a dash of innovation to their hosting duties, making Expo 2012 Yeosu, the world’s first floating fair. It was a glimmering spectacle, capped off by Fluid – a massive whale shaped pavilion, which formed the Expo’s centrepiece.

It didn’t take long for Australia to fall in love with The Voice, and we fell hard. The Voice had a secret ingredient and his name was Keith Urban, who quickly became the program’s breakout star. Equally entertaining was the soulful Seal, the jumpy Joel Madden and the delightful Delta - each judge bringing something special to their spinning chair. It also didn’t hurt that The Voice unearthed genuine talent, with Karise Eden taking out the crown.

The Sapphires This heart-warming story about four indigenous women, with big voices and even bigger ambitions, is everything we love in an Aussie film. At the box office, The Sapphires raced to an opening weekend record, while overseas, it charmed the fancy pants off the Cannes crowd. Deborah Mailman and Jessica Mauboy sparkle on screen, but the real star of the show is the music score. The soundtrack album held firm at the top of the charts.

Fifty Shades of Grey Not since J.K. Rowling introduced Harry Potter or Dan Brown with the Da Vinci Code has one book caused so much worldwide chatter. E.L James’ naughty novel sent shivers through 21st century suburbia, thanks mostly to the dominant Christian Grey and oh-so-submissive Anastasia. The sexually explicit nature of their relationship had readers lapping up the literotica. The trilogy of books has already sold over 40 million copies and with a film in the works, don’t expect to have seen the last of Fifty Shades.

Silver Screen Anniversaries: Paramount and Universal turn 100! In 100 years of film making, Universal Studios and Paramount Pictures have given us some of the greatest movies to ever grace the silver screen. Paramount delivered what many claim is the screen’s finest drama in The Godfather, while Universal frightened a generation of beachgoers with Jaws. Paramount and Universal Pictures have now both spanned a cinematic century, taking audiences from silent films, shot in black and white, to 3D blockbusters with surround sound. Hooray for Hollywood!

Walk to the Louvre and be there in time to see the sun set across the Pyramid while sitting at Café Marly in the colonnaded arcade. “Order a glass of rosé and watch the sun reflect off the Pyramid,” Rachael says. “The Pyramid was controversial when it was built because people thought it was a travesty and now it’s become one of the most beloved landmarks of Paris. A walk up the hill to the Republique area is worth the effort for the Marche des Enfants Rouge, a sprawling local market. “They have a whole lot of food stalls, where you can grab a table and order whatever you want,” Rachael says. “My favourite is Moroccan food, and I love a Pastille de Poulet, which is filo pastry stuffed with chicken and orange flour and covered with sugar. I also like the ambience of eating good food surrounded by organic produce.”

“If you want to hit a museum, go in the morning because they get crowded in the afternoon,” advises Rachael. One of her favourites is the modern art Pompidou Centre – and for three good reasons. “The building itself is an architectural icon and there’s nothing like it in Paris,” she says. “Secondly, the permanent collection is excellent. Thirdly, once you have gone through the building, go up to George’s Restaurant on the top floor and look out on the view – you can see all across Paris.” http://www.centrepompidou.fr

Jump aboard the Metro and alight at the Champs Elysees Clemenceau stop to take in world famous buildings, like the Arc de Triomphe, the Palais Royale as well as the Champs Elysees. “Everything is here, and while it is always busy, they are all worth seeing,” Rachael says. Towards the River Seine is the beautiful Jardin des Toiletries. “Paris is very dense with narrow streets, so open garden space like this is just wonderful.”

At Christmas, Paris turns on a celebration of lights, the best of which are along the Champs Elysees. “It’s very festive,” Rachael says. “Along the Champs Elysees, they have particularly beautiful lights and it’s bookended by the lights at Concord and at the Arc de Triomphe.” And if the weather turns, Rachael says it is not the time to stay indoors. “The most wonderful thing about Paris at Christmas when it snows is it turns the city into a fairytale.” For the best views, head to the majestic Eiffel Tower. “It is best seen from a distance, but it still offers the best view in the city.” www.eiffel-tower.com

time to dine Head back to the Republique area for dinner at Hotel du Nord. “The thing about Paris is that it can be quite difficult to get the right ratio of good food, reasonable prices, good services and lovely atmosphere and I think Hotel du Nord is one of the places where you can get all of them.” The cuisine is Modern French, and the setting is more comfortable than fussy. “It’s warm and cozy but it is also buzzing – it is the kind of Parisian place you will remember.”

“Swimming is so many different things combined into one. That makes it such a great exercise. There is a cardio aspect that gets your heart rate pumping which is the whole point of exercising. Swimming is also a strength exercise, works on the core, and is a perfect way to strengthen and tone up muscle. It is also low weight bearing and ideal for people with injuries who can’t handle the impact of running or other sports. “The thing to remember is to start small and build at your own pace. If you get in the first time and all you can do is just one lap, then that is fine. The next time, aim to make those two laps. In a week, try to work towards three laps and go from there. “No one should be in a race when you are taking on a fitness regime. It is a matter of staying with it. As long as every time you get into the pool, you are enjoying it and setting yourself a small goal, then you’re doing the right thing. “What I love about swimming is the challenge. At the elite level, it can be grueling but you always see yourself improving. I feel great every time I push myself beyond my comfort zone. “Swimming at the London Olympics was an experience of pure joy. I experienced the ultimate high with our gold medal (Women’s 4 x 100m freestyle relay) and I will treasure that for all time. But I hope in four years time at Rio, there might be a few more moments of joy to come!”

It is one of those sports it can take a lot of time to get the hang of because you are in a moving environment, and things happen so fast. Just paddling a board is a skill, and learning how to turn the board whilst sitting on it is a great drill to practise. “I would suggest doing drills of lying on your stomach to getting to standing to your feet. This will develop the fundamental skills and the strength necessary for catching a wave and riding it. Get out in the waves as much as you can. Even start off body surfing to gather wave knowledge. Surfing is all about timing with the wave, so it is vital you have good understanding of it “The aerobic system is heavily used when you paddle out through the breakers. When you are out in the ocean you are in the midst of nature’s creation, and it’s an awesome feeling.”

“Being a surf lifesaver means that you’re required to be on patrol at the beach once every three weeks during summer. But being on patrol is only one part of being involved with a surf lifesaving club. “I am a surf lifesaver at Tamarama beach in Sydney, and surf lifesaving is great for cardio, strength and improving overall fitness. Most of the improvements in fitness come from working with training groups. There are usually groups that train in surfboat rowing, running, ocean swimming and board paddling. There are also regular competitions and races to get involved with too. “Training is individual and larger clubs have members from a wide variety of ages and fitness levels. Most clubs have a Nippers program for children to improve their water safety skills. “To get involved, contact your local surf lifesaving club to find out about training for the Bronze Medallion, which is the requirements for new members, and then start some cardio training in preparation. Swimming and running are great strengths to have. Work on improving your swimming in the pool to begin with and when you feel confident, start swimming in the ocean. “What I love about surf lifesaving has been meeting other people who share a love for being outdoors and spending time in the ocean. It’s also been really great to volunteer time for the community. The ‘beach’ is such a significant place in Australian culture, so it’s been great to help make it a safer environment.”

As the weather hots up it’s important to keep an eye on what you eat and drink to ensure you keep yourself looking and feeling great over the summer period. Maintaining your energy levels by drinking enough fluids, and managing your weight while lazing on the beach, are just two areas to keep an eye on this summer. Here are some tips for effectively battling the heat with a healthy eating and drinking regime!

Drink up Drinking enough fluids every day is essential for good health and for maintaining your energy levels, but is even more important when it’s hotter outside and you’re likely to spend more time in air conditioning. Water is the best fluid as it doesn’t contain any kilojoules and is additive free. However all drinks including juice, flavoured drinks, milk, smoothies, tea and coffee all count toward your daily fluid requirements. Foods that have a high water content like fruits and vegetables, salads and soups can also contribute significant amounts of water so make sure to include plenty of these as part of your healthy Summer eating plan. Drinking enough fluid and staying hydrated has many benefits including making it easier for your body to maintain energy levels, helping with the transport of nutrients, removing waste products and maintaining your body temperature, helping you to keep cool. If the body doesn’t get enough fluid, dehydration can occur and even mild dehydration can cause serious side effects, such as headaches, tiredness, light headedness, and dry, flushed skin. Most of the time it’s fine to let your thirst guide how much you drink, but when you’re in the sun or exercising it’s important to keep your fluids up even if you’re not thirsty. Two litres of fluid a day (8 glasses) is an average recommendation for adults, although this can change depending on your body weight. And you’ll definitely need more than this if you’re spending time in hot weather or if exercising. In both of these cases, aim to add an additional 2 glasses of fluid (500ml) for every hour you’re in the heat or spend exercising.

Vegetables have less natural sugar (and kilojoules) than fruits, so if you’re keen for a fresh-squeezed juice, opt for more vegetables in the drink such as carrot, beetroot and celery. 

Lighten up Summer is a great time for putting away the baking dishes and opting for fresh, light meals like quick and easy salads, barbecues and stir-frys. Salad vegetables are full of essential vitamins, minerals, antioxidants and fibre and are perfect teamed up in simple dishes with some lean meat, legumes (like chickpeas, lentils and kidney beans) or eggs for protein. Ingredients  500 gm linguine  6 slices pancetta sliced  3 cups baby rocket  1/4 cup basil pesto  4 tbs walnuts chopped  Shaved parmesan  Salt and pepper

Ingredients  150 gm potato  100 gm green beans  1/2 punnet cherry tomatoes  1/2 cup pitted kalamata olives  1/4 large red onion  4 eggs hard boiled  400 gm tuna (canned) - drained  2 cups mixed lettuce  1/4 cup balsamic dressing to serve

Method 1. Cut potatoes into 4cm pieces and cover with cold water in a saucepan. Bring to the boil and then simmer for 10-15 minutes or until tender but still retain their shape. 2. Remove ends of beans and cut into 3cm pieces. Bring a small saucepan of water to the boil and blanch for 1 minute, drain and refresh under cold running water. 3. Thinly slice onion and cut cherry tomatoes in half. Peel eggs and cut into quarters. 4. Combine all ingredients except balsamic dressing and toss gently to combine. 5. Drizzle with dressing and serve immediately. Serves 4

d Summer 10 MINUTE TACO SALAD Ingredients  2 tomatoes, diced  1 cup cheddar cheese, diced  1 large onion, diced  1 iceberg lettuce, shredded  500g lean minced beef, browned and crumbled  1 cup salad dressing  6 – 8 taco shells, crushed  1 cup salsa  1 tub (225g) sour cream  2 tbsp oil  1 large (200g) bag corn chips Method 1. In a hot pan, pour the oil and then fry the beef until lightly brown. 2. Combine the tomatoes, cheese, onion and lettuce in a large bowl. Crumble beef and add to mixture. 3. Pour in the salad dressing, making sure to mix ingredients thoroughly. 4. Just before serving, add crushed taco shells, tossing well to combine with other ingredients. 5. Top each serving with generous helpings of salsa and sour cream. Finally, serve with corn chips.

COFFEE GRANITA Provided by Jamaica Blue Facebook fan, Veronica Sison, from her blog http://fromacrossthekitchentableblog.blogspot.com. “When Jamaica Blue asked its fans to post their favourite Jamaica Blue dish, I immediately thought of the coffee granita and tiramisu I’ve made using the Jamaica Blue take-home packs. I love using them for my desserts and sweets recipes. It’s got superior taste and fine flavour, a splendid coffee indeed. Granita is an Italian semi-frozen dessert and it’s one of those desserts that are so easy and fun to make. The first time I tried a coffee granita was in La Casa Del Caffè Tazza D’Oro in Rome where locals and tourists queue for Rome’s most famous granita di caffè. That pretty much got me hooked.” Ingredients  2 cups strong (double strength), freshly brewed coffee  1/2 cup brown sugar  1 teaspoon ground cardamon  pinch of salt Method 1. Put a baking dish 9 x 13 x 2 inch into the freezer. 2. Stir the sugar, salt and cardamon into the hot coffee until dissolved. Set aside to cool. 3. Pour mixture into the baking dish and cover with plastic wrap. Freeze for about 45 minutes or until ice crystals starts to form around the edge. Remove from the freezer then scrape the mixture with a fork to flake. Repeat the process two more times. 4. Cover and return to freezer and freeze for another 3 hours or overnight.

Serve the granita in pre-chilled glasses with the cream mixture and scatter with chopped pistachios.

For the cream  1/2 cup thickened cream  1 tablespoon icing sugar  1/8 teaspoon ground cardamon  1/4 teaspoon vanilla extract  Whip the cream, icing sugar, cardamon and vanilla in a large bowl until soft peaks form. Refrigerate until required.
