• ¼ cup cream, half and half or milk
• 2 tablespoons brown sugar
• ¼ teaspoon vanilla extract
• 1 teaspoon cinnamon

• 2 tablespoons butter
Combine eggs, cream, brown sugar, vanilla, cinnamon and salt in a work bowl. Whisk together for 15–20 seconds until well incorporated.
Lay bread slices in a shallow dish in a single layer and pour the batter over the top. Flip bread over and allow to soak in the batter for about 5 minutes, then flip over and allow to soak another 5 minutes. Nearly all the batter should be absorbed into the bread.

PREP TIME: 20 MINUTES
COOK TIME: 50–55 MINUTES
YIELD: 8–10 SERVINGS
• ½ pound fresh spinach
• 1 tablespoon water
• 1 tablespoon vegetable oil
• 1 cup onion, small diced
• 3 cups cremini mushrooms, small diced
• 8 eggs
• 1 cup heavy cream, half and half or milk
• 4 ounces Swiss cheese, grated
• ½ cup scallions, bias cut
• 4 cups croissants, 1-inch diced
• ¼ cup grated Parmesan cheese
Heat a large sauté pan on medium heat. Add the spinach and water and cover with a lid until just wilted. Remove spinach to a strainer and cool. When cool enough to handle, press any excess moisture out of the spinach with a towel and reserve.
Heat a sauté pan on medium heat. Add the vegetable oil and then the onions. Sauté for 5–7 minutes, until caramelized. Add the mushrooms and cook until all of the moisture has evaporated and mushrooms are beginning to brown. Remove from the pan and reserve.
Heat oven to 325°F.
Mix eggs, cream, Swiss cheese and scallions with the diced croissant. Add the wilted spinach, sautéed onions and mushrooms and toss to combine.
Spoon mixture into a 10-inch round casserole dish or similarly sized baking dish and top with grated Parmesan. Bake for 40–45 minutes, until golden brown and internal temperature reaches 150°F.
If making the night before, follow instructions all the way to filling the baking dish, then cover and refrigerate overnight. Remove from fridge about an hour before baking, then preheat oven to 325°F and bake as directed above.
This strata-inspired take on French toast gets extra flair from a brioche base, sweet cinnamon vanilla custard and individual servings for extra elegance.
PREP TIME: 10 MINUTES, PLUS 10 MINUTES SOAKING
COOK TIME: 18–22 MINUTES
YIELD: 2 SERVINGS
INGREDIENTS
• 4 slices brioche
• 3 eggs, separated
• ¼ teaspoon vanilla extract
• 1 teaspoon cinnamon
• ½ cup cream
• 2 tablespoons brown sugar
• ¼ teaspoon salt
• Butter, to taste
• 1 tablespoon granulated sugar
• 6 ounces fresh berries, for garnish
• Powdered sugar, for garnish
• Maple syrup, for garnish
Heat oven to 350°F. Dice brioche into ¾-inch pieces. Place egg yolks, vanilla, cinnamon, cream, brown sugar and salt in a work bowl. Mix with a spatula to combine. Add half of the cut brioche and toss to combine. Let sit for 5 minutes—the brioche in the egg mixture will almost completely break down.
While the brioche is soaking, grease two 8-ounce ramekins or baking dishes with butter and then coat with granulated sugar.
In a work bowl, whip egg whites to stiff peaks. Fold remaining bread into egg mixture until evenly coated and then fold in the whipped egg whites 1 ⁄ 3 at a time. Transfer soufflé mixture into the ramekins and bake for 15–20 minutes, until soufflé has risen and reaches an internal temperature of 150°F. (Soufflés will fall slightly when removed from oven.)
Soufflés can be served immediately either topped with powdered sugar, maple syrup and berries or turned out onto a dish by gently running a sharp knife around the edge.

PREP TIME: 25 MINUTES
COOK TIME: 20 MINUTES
YIELD: 2 SERVINGS
• 1 pound Yukon gold potatoes, medium diced
• 2 quarts cold water
• 2 tablespoons white vinegar
• 2 tablespoons salt
• 2 tablespoons vegetable oil, divided
• 2 cups yellow onion, medium diced
• 5 cloves garlic, sliced thin
• 1 teaspoon smoked paprika
• Chili flakes, to taste
• 6 ounces corned beef, small diced
• 2 ounces fresh spinach
• 2 tablespoons parsley, chopped
• 1 tablespoon chives, chopped
• Salt and black pepper, to taste
• 2 eggs, poached
Place diced Yukon gold potatoes in a medium sauce pot, cover with cold water and add vinegar and salt. Place on high heat and bring just to a boil. Potatoes should still be slightly firm. Drain in colander and spread on a pan to cool and dry.
Heat a large sauté pan on mediumhigh heat. Add 1 tablespoon vegetable oil then add the onion. Sauté for 3–5 minutes, until beginning to caramelize. Add the garlic and sauté for 10–15 seconds.
Add the blanched potatoes and remaining oil then toss with the onions. Spread into an even layer and reduce heat to medium. Add smoked paprika and chili flakes. Let potatoes brown on one side and then flip with a spatula to brown a different side. Continue this process until potatoes are well browned.
Add the corned beef and sauté for 2–3 minutes to heat through. Add the spinach and fold in until wilted.
Add parsley and chives and adjust seasoning to taste with salt and pepper. Plate hash and top each serving with a poached egg.
Instead of corned beef and Yukon potatoes, try...
• Chorizo and yams with cauliflower florets for a spicy start to your day.
• Mushrooms and red potatoes with broccoli florets and drained chickpeas for vegetarian variety.
