Bone-In Pork Loin Roast

Large, lean and mild, this roast can be cooked whole or cut into chops. Brining helps keep the meat moist and imparts extra flavor. For best results, opt for dry heat cooking methods, such as grilling, roasting or broiling.

Established in 1861 near the Sacramento River in Butte County, Rancho Llano Seco has a legacy of responsible family farming six generations in the making. Dedicated to environmental stewardship, they humanely raise their pigs in open air with GMO-free, vegetarian feed grown right on the ranch and with no antibiotics or added growth hormones. Through their holistic approach to ranching, they produce premium pork while taking care of their people, land and animals.


Grilled Mojo Pork Loin This classic Caribbean flavor combination is loaded with garlic and balanced by citrus, olive oil and oregano.

INGREDIENTS

P R E PA R AT I O N

1½ cups orange juice

Combine orange juice, lime juice, garlic, onion, oregano and salt in a blender. Puree for 15–20 seconds, then add oil to emulsify.

1 pork loin roast (3 pounds)

2 tablespoons salt

Place pork loin roast in a resealable plastic bag, add the marinade, squeeze out any excess air and seal. Place in a container to catch any leaks and refrigerate overnight. Heat grill to medium-high heat. Remove roast from marinade and discard marinade. Grill on all sides to achieve grill marks, then turn heat down to 250°F and cook covered for approximately 1 hour, or until the internal temperature of the roast reaches 145°F. After grilling, let roast rest 20 minutes before carving.

Spread cut sides of the roll with mustard. On the bottom half, layer pork loin, ham, pickles and Swiss cheese. Cover with the top half of the roll and place in the panini press. Cook for 3–4 minutes or until the sandwich is heated through and the outside is crisp.

Jamaican Jerk Chicken Escape to paradise with the bold, flavorful blend of citrus and heat in this sweet and spicy marinade. PREP TIME:

INGREDIENTS

6 habanero peppers 2 tablespoons ground allspice 2 tablespoons fresh thyme leaves 2 tablespoons brown sugar 2 tablespoons kosher salt 1 tablespoon coarse ground black pepper 1 tablespoon ground cinnamon 1 tablespoon ground nutmeg 1 tablespoon ground ginger 1 tablespoon fresh ginger, chopped 7 cloves garlic, chopped 3 yellow onions, chopped ½ cup extra virgin olive oil 1 cup distilled vinegar ½ cup tamari ½ cup fresh lime juice 1 cup fresh orange juice 1 whole chicken, cut into quarters P R E PA R AT I O N

To make the marinade, puree all ingredients except the chicken in a blender until smooth and well incorporated. Refrigerate for 2–24 hours to allow flavors to develop, then use within 7 days. Pour marinade over chicken, reserving approximately ¼ of the marinade for basting and dipping. Refrigerate chicken and reserved marinade for at least 12 hours. When ready to roast the chicken, preheat oven to 400°F. Roast chicken in a roasting pan, basting frequently with reserved marinade, for approximately 45–60 minutes, or until a thermometer inserted into the thickest part reads 165°F. Serve with fried plantains.

Gently muddle mint in a highball glass, then fill with ice. In a cocktail shaker filled with ice, add rum, lime juice, coconut water and simple syrup, then shake for about 10 seconds. Strain contents into highball glass and stir. Garnish with a lime wedge.

While the rum was originally made in Cuba, the original recipe was sold to this producer in Puerto Rico. Apricot & Blueberry Hand Pies

30 minutes 20–25 minutes 8 servings

INGREDIENTS

1 pound apricots, pitted and cut into wedges 6 ounces blueberries ¼ cup sugar

For an extra sweet treat, serve these fantastic fruit-based hand pies with sweetened whipped cream.

¼ teaspoon salt ¼ teaspoon cinnamon ¼ teaspoon lavender 3 tablespoons corn starch 1 batch Pie Dough 1 egg, beaten P R E PA R AT I O N

Heat oven to 350°F. Mix fruit, sugar, salt, cinnamon, lavender and corn starch in a bowl until well combined. Lay dough circles out and brush the outer 1 inch of each with beaten egg. Place approximately ¼ cup of fruit filling in the center of each circle, then fold the dough in half over the filling and gently press the two edges together. Use a fork dipped in flour to crimp the edges, then transfer to a lined baking sheet and brush with egg wash. Bake for 20–25 minutes or until the crust is golden brown. Remove hand pies from the oven and let cool for 45 minutes before serving.

Pie Dough INGREDIENTS

2½ cups all-purpose flour ½ teaspoon salt 1 teaspoon sugar 8 ounces unsalted butter, cold 8–10 tablespoons ice water P R E PA R AT I O N

Combine flour, salt and sugar in a work bowl. Cut in butter with a pastry cutter or fork, making pea-sized pieces. Add ice water and gently mix until the dough just begins to come together. Turn dough onto a floured work surface and roll out to between ¼–1⁄8 inch thick. Cut dough into 6-inch circles, rerolling dough scraps as necessary, then refrigerate.

THE HAND P I E ’S TA L E Sweet or savory, hand pies are a deliciously portable way to enjoy good home cooking any time, anywhere. Whip up this simple dough recipe and choose your favorite filling, or make a double batch and do both!


Tomato & Caramelized Onion Hand Pies For a savory spin on hand pies, balance the sweetness of caramelized onions and roasted tomatoes with the tang of fresh goat cheese. PREP TIME:

25 minutes

P R E PA R AT I O N

Heat oven to 250°F. Place all tomatoes cut side up on a lined baking sheet. Season with thyme, ½ teaspoon salt, sugar and olive oil. Bake for approximately 1 hour, or until tomatoes have lost about half of their moisture, then remove from oven and let cool to room temperature.

1 pint Sun Gold cherry tomatoes, halved

In a 2-quart sauce pot, melt butter, then add onions and 1 teaspoon salt. Cover pot and cook over medium heat for 20–30 minutes, or until onions have released all of their liquid. Remove lid and continue to cook, stirring frequently, until all of the liquid is gone and the onions begin to caramelize. When onions are completely caramelized, remove from heat and chill to room temperature.
