President/ CEO Dear friends, As the holidays near, all of us at Nugget Markets hope you and yours are staying healthy and safe. Whether you’re celebrating Christmas, Hanukkah, Kwanzaa, the solstice or any other occasion, there’s no doubt we could all use a little holiday cheer. 2020 has been a trying year in so many ways, yet we continue to rally through it together, finding—and often fighting for— the silver lining through every new challenge. Now more than ever, we’re craving the ability to rekindle joy with those we love. Although it’s likely we will be celebrating the holiday season in a very different way and in much smaller groups, our teams have been working hard to create new, innovative and delicious options for your holiday celebrations. I encourage you to explore our new Holiday Meal for Two (p. 14) and the additional safety measures we’re taking to ensure the safest and most enjoyable foods possible (p. 4). Along with the hard work our teams have been putting into make your holidays special, our community giving team has also been working hard to ensure we’re doing our part to support those who need it 2 • T H E F I E L D G U I D E • H O L I D AY 2020

most. Earlier this year, Nugget Markets contributed more than $100,000 to local food banks and disaster relief funds, and hosted a $25,000 matching fund drive for wildfire relief. We also donated $100,000 to nonprofit organizations devoted to social justice that were selected by our associates. And, as is our company tradition, we’re continuing to support food banks in our neighborhoods to ensure hungry families and individuals in our communities are taken care of during the holidays.

You can take comfort in knowing our kitchen associates are meticulous about wearing both masks and gloves, washing their hands between every task and sanitizing their work stations throughout the day. Food Styling Tips FROM OUR PROS

Instead of serving your food in the containers they came in, transfer to your own dishes to complete the elegant eating experience. Break out the fine china, light the candles and use these simple styling tricks from our own talented team to make your holiday meal as gorgeous as can be. Herbed Carrots: Plate in a shallow bowl or plate, then use tongs to place in the same or alternating directions.

Rolls: Place a cloth napkin or dish towel in the bowl or basket before the bread. Bonus: If the rolls are heated, you can close the cloth to keep them warm.

Mashed Potatoes: Spoon into a bowl and use the back of a spoon to swirl the top to desired texture. For extra flair, add chopped chives or parsley and a pat of butter.

Sauces & Gravy: Pour into a gravy boat or attractive bowl with a spoon.

Which Dish? You can’t go wrong with classic white! Use colors and shapes to create variety that will make the food pop, and choose platters that will make the food look bountiful without having to force too much onto a small platter.

Meat: For best results, let meat rest for 10 minutes after heating. Cut across the grain to create ½–¾-inch slices. Slice completely on a cutting board, then slide your knife underneath and lift onto the platter in one or two sections. Spread slices out in a layered effect, or au cheval (shingled), then embellish as desired with some of the accompanying sides or fresh herbs.

One-Plate Wonder: Choose a proportional amount of each food, and keep each item in its separate area. Top with sauce or gravy when you’re ready to shoot, then use a damp paper towel or dish cloth to wipe up any drips. Shoot from above to show the whole plate. Don’t forget to tag #nuggetmarkets!

A Few Extra Pro Tips: • Always have a bit of greenery like fresh herbs on hand to finish the look. When it comes to garnishes, think about colors and textures to create diversity. • Style the least time-sensitive foods (likes carrots or Brussels sprouts) first and the most time-sensitive foods (like gravy) last. • Have fun with it and remember that it’s also okay to just sit down and enjoy the meal! Mixed Tape: Flex your flower power by taping off the top of your vase in a grid pattern, then placing stems in the outer holes followed by the center, and finally working around the vase to fill in any empty spots.

Pro Tip: Hold a stem upside down when cutting so you know just how tall it will be in the vase!

The Lowdown: To make a low-profile arrangement you can see over at the dinner table, try using a long, narrow container and decorating with seasonal produce on kitchen skewers cut to your preferred height.

Seeing Double: Using one vase inside a larger vase gives the illusion that it is full of seasonal produce, yet dry. Fresh cranberries and crabapples are great for a festive display.

Float On: Once your arrangement is done, drop seasonal produce such as grapes, cranberries and orange wheels along the side of the vase to create layers of color.

What Comes in the Meal? BRAISED BEEF B R I S K E T: The centerpiece of this amazing meal is a fully cooked beef brisket, expertly braised by our chefs until perfectly tender, rich and flavorful. PREP TIME: 10 MINUTES, PLUS 1½ HOURS PROOFING COOK TIME: 5 MINUTES YIELD: ABOUT 30 PIECES

These bite-sized Israeli donuts are traditionally eaten during Hanukkah. Deep fried, filled with jam and dusted with powdered sugar, they’re addictively easy to eat—once you perfect the frying process, you may never want to stop! INGREDIENTS

1 cup whole milk 2 teaspoons active dry yeast 2 egg yolks ¼ cup crème fraîche 1 tablespoon triple sec (or another orange liqueur) Zest of ¼ orange 2½ cups flour ¼ cup granulated sugar ¼ teaspoon salt

Preparation Heat milk until just warm to the touch in a microwave or on the stove. Add the yeast and stir to combine. Whisk in the egg yolks, crème fraîche, triple sec and orange zest. In a separate bowl, combine the flour, granulated sugar, salt and nutmeg. Add the milk mixture and butter to the flour mixture and stir using a wooden spoon until combined. The dough should be sticky. Turn dough out onto a floured work surface and knead until smooth and elastic, about 1–2 minutes. Dough will still be slightly tacky to the touch. Transfer dough to a bowl and cover with plastic wrap. Allow to rise for 1 hour 15 minutes.

Let dough rise for 15 minutes before frying. Fill a heavy-bottomed pot or cast iron skillet with 1½–2 inches of vegetable oil. Heat to 350°F. Carefully place 6–8 pieces in the oil and fry for about 20–30 seconds per side until they are puffed and golden brown. Transfer to a rack to drain. Place the preserves in a piping bag. With a paring knife, make a small slit in the side of each Sufganiyot. Pipe a small amount of preserves into the center of each and dust with powdered sugar before serving.

Each player rolls 2 dice and makes their way across the gameboard. If a player lands on a food space , they gain 1 point. If a player lands on either a or a space, they are on the chopping block, and must roll the dice again to determine their fate (refer to chopping block lists).
